We had 8 kids attend the tournament with all of them receiving metals! Our team gave their all and did phenomenally. Congratulations Manny, Eric, Sam, Ival, Brenn, Jacob, Reagan, and Gianna! All of these kids also earned another stripe post tournament on August 20, 2018! Our coaches are extremely proud of the kids and credit their wins entirely to the heart of each one. When asked if she could pin point the main reason behind their success coach Fava said, Hard work. We are extremely proud here at Dan Henderson s to watch our Jiu Jitsu team grow with such potential and hard work from our young fighters. UPCOMING PRO DEBUT S We have two Team Quest fighters here at Dan Henderson s that are approaching their Professional Debuts this month. Ritchie The Butcher Rodarte and Trevor Wishing Wells will both be fighting at California Cage Wars 8 September 16th in Valley Center. Buy tickets now! 2 Page 2 HENDO HAPPENINGS DAN HENDERSON S FIGH T NIGHT The first ever Dan Henderson s Fight Night will be happening September 29, 2018 right here in our very own, Dan Henderson s Athletic Fitness Center! We are excited for this amateur event that will have talent from all over Southern California including a handful of our Team Quest fighters. We are extremely proud to be bringing this event into our gym and look forward to seeing all of your faces joining us! Tickets will be ranging from $45 $100. Doors open at 4pm and fights will start at 5pm. There will be food, music and fights! Come in, or call with any questions you might have!

3 Page 3 SEP TEMBE R UPCOMING PROFESSIONAL FIGHT S Tim Riscen will be continuing his 6-3 professional career on September 16 at California Cage Wars in San Diego. We are looking forward to watching this talented fighter continue in his professional career! Tickets are available! Sam Alvey will also be fighting in September on the 22 in UFC Fight Night 137. Alvey will be facing Antonio Rogerio Niguiera. Sam is currently ranked 15 in the light heavyweight division and is Tune is and cheer him on! Ashley Yoder will be continuing her UFC professional career in November of this year in UFC 139 against Amanda Cooper. Yoder is 5-4 in her professional career as a very well rounded fighter. Stay tuned for more details! INTRO TO BOXING! As of September 1st, 2018 we will be adding an Intro to Boxing class at 9:00am with our exemplary boxing coach Gustavo Pugliese. This class will cater to the members that are extremely new and need the basics and fundamen- tals broken down. We are extremely happy to announce this class and all the benefits it will show for our starting athletes. We look forward to seeing your bright faces in there learning the basics! Focus on the positives is what I teach my kids. The rest takes care of itself. - Dan Henderson THE LAB HAS GROWN! Although we are extremely sad to not see the Lab s smiling faces in our side of the building we are extremely proud to announce they have officially moved into their own space at the front of the building. The entrance to The Lab faces Jefferson Ave and they are officially open! Feel free to go check them out when you get the chance! Their new facility is furnished with a plethora of new treatments and recovery options.

4 Page 4 Coach Spotlight JIU JITSU- Tom Gallicchio & Joe Stevenson Joe Stevenson is an extremely experienced and skilled fighter. He has had successful fighting career under multiple professional fighting companies. He has competed mainly in the Lightweight division, even having a title fight against BJ Penn in the UFC in Stevenson has been training in Brazillian Jiu Jitsu since he was 13 years old.. He is an extremely skilled black belt with a passion for the sport. Joe Daddy Stevenson has earned Fight of the Night 4 times in the UFC as well as Submission of the Night twice. He has shined in every aspect of the sport and will bring that light to each of his students. Stevenson has successfully ran his own MMA gym in Victorville for 10 years and is Tom Gallicchio is a very skilled black belt as well. As a coach he is calm, patient, detail driven, and motivated. His fighting career has given him top of the line experience and knowledge that he is passing on to all of our fighters beginners to pros. Tom has been the MFC Lightweight champion, M-1 Global WW Champion, RoC WW Champion, and USKBA WW Champion. Gallicchio also was on the Ultimate Fighter Series for both season 22 and season 25. Tom is known as Tom Da Tank Gallicchio because despite the amount or how strong the hits he takes are he just keeps coming forward. He has continually proven to be worthy of this nickname. We are extremely proud to have him here as a part of our Dan Henderson coaching staff. excited to bring his knowledge and skill to the Dan Henderson Athletic Fitness Center. His knowledge and skill is an extraordinary asset to our team and students. He is extremely motivated, supportive, and dedicated to helping our students grow and learn to the best of their abilities. He brings a new outlook that is full of top of the line knowledge to each and every class. We are extremely excited to have hi m on our team here at Dan Henderson s teaching Jiu Jitsu on Mondays and Wednesdays!

BUFFALO CHICKEN ZUCHINNI BOATS Ingredients 4 small-medium zucchini about 1¾ pounds 1 lb. ground chicken 1/2 cup Buffalo Wing Sauce not regular hot sauce 1 cup shredded mozzarella cheese Instructions Preheat oven to 400 degrees F. Spray a 9x13 inch baking dish with cooking spray. Place a large non-stick skillet over medium-high heat. Add the chicken and break it apart with a wooden spoon. Cook for 7-9 minutes, until the chicken is cooked through, stirring occasionally. Remove the skillet from the heat. Stir in the buffalo wing sauce. As the chicken cooks, cut the zucchini in half lengthwise. Use a spoon to scoop the seeds and center out of each zucchini half, leaving a ¼ inch thick zucchini boat. Place the zucchini in the baking dish cutside up. Spoon the chicken mixture into the zucchini boats. Sprinkle the zucchini evenly with the cheese. Cover the baking dish with foil. Bake for 35 minutes.
