2 A Word From The Publisher Well the new year has arrived with lots of drama. It is very hard to focus on positive things and bright new beginnings when all you see and hear on the TV and radio is doom and gloom. Most folks I know are tired of it. Regardless of what the folks in Washington do and what those around us do, the sun still comes up every morning. Last week I was able to enjoy that sun on the shores of South Alabama. Some of you may have enjoyed a sunrise in the duck blind. There are places we can go and get away from the worries of the world. If you haven t done that recently, you need to do just that. Get away, even if it is just for a morning and recharge your batteries. We spent the last week of 2012 in Gulf Shores enjoying family time and making memories. Son Michael was home on leave from Okinawa so we took him and our daughter Kathleen, her husband Patrick and our grandson Simon to the beach. We ate lots of good food and even got in a quail hunt. You can read about some of those adventures in these pages. There is an old saying that goes something like, When life gives you a lemon, make lemonade may be a year for making lemonade. Let s get busy squeezing and make sure we don t let it be sour! This year may be tougher than we have seen when it comes to growing our sport. We will all have to work harder to get people interested in Skeet shooting at our local clubs. At the Red Chute Gazette, we are happy to help you promote your shoots. Just send us your flyers and we will post them on our website for all to see. Now is the time to get those done and get them sent in. For best results, do not wait until the month before. If you are not taking advantage of the free advertising we offer to promote your club, you should be. We want to thank Randy Brownlee and Clark Hartness for sharing photos with us from the Holiday Open in Biloxi. We send out thanks to Patrick Wickham for his photographic contributions in our story on Alabama Quail. We also want to thank Mark and Kate Porter for their hospitality and for steering us to Jesse s Restaurant in Magnolia Springs.. We send to you our Best Wishes for a Healthy, Happy and Prosperous New Year! Doug Frey Until we meet again in these pages or on the Skeet field, I am wishin you 8. Doug Frey Page 2

11 Alabama Quail In December, I had the pleasure of hunting pen raised quail at Rhodes Quail Farm near Bay Minette, Alabama with my son Michael. As a youth, I enjoyed hunting wild quail with my father. Dad loved to hunt and fish. In hunting season, he focused on quail. He preferred using English Pointers and we always had several. At one time, we started keeping my Uncle s dogs. He preferred Setters. We used both. There were many birds and it was a great time. Then the birds disappeared and Dad took up hunting turkeys. Dad died in 1982 and he never got to meet his grandkids. Some years ago I had the opportunity to hunt pen raised quail and Michael went along. He did not hunt that first Doug and Michael time, but he indicated an interest and in due time we took the hunter s safety course together and we were able to go quail hunting together. Michael has never developed a passion for Skeet, but he has very good hand eye coordination. When we went on our first hunt at Wild Wings in Downsville, Louisiana, we warmed up with Sporting Clays and he did very well. He did well on that first hunt as a teenager. Apparently, shooting machine guns and rifles in the Marines has not hurt his wing shooting abilities at all. Michael was home on leave from Okinawa and we planned a family vacation in the Gulf Shores area right after Christmas. Michael loves to hunt quail and the hunt I had scheduled in October of 2011 for us fell through due to a misunderstanding (mine) as to just when he was leaving for Okinawa. I scheduled a hunt for the day after he left, so we missed out in Patrick and Michael This year, I worked very hard to get it right. A quick Internet search lead me to Rhodes Quail Farm which is run by Jack and Peggy Rhodes near Bay Minette, Alabama. Jack had an opening in his schedule and pegged the date for us. Fortunately, Michael s leave from the USMC was approved and he made it home, as hoped. My son-in-law, Patrick Wickham, accompanied Michael and I to act as our photographer. Patrick did a great job and we are sharing his work with you in this article. Page 11

12 Alabama Quail Rhodes Quail Farm is only about 50 minutes from Gulf Shores. It is right off HWY 59 and is almost easy to find. I put the address in my GPS and it took us right to the mailbox. The camp house is off the road and we weren t sure we had gone down the right path until we passed an old quail pen and saw the cabin. Not having been there before, we left early to make sure we found the place on time. That did not turn out to be an issue, but I did not want to waste daylight. It gets dark early in December. Since we arrived about an hour early, we had a nice visit with Peggy Rhodes at the cabin. As it turns out, Peggy is actually from somewhere in North Central Louisiana. As I understood it somewhere South of Monroe. Peggy called our guide Johnny Cooper who was actually out deer hunting on the property. Johnny came in to meet us. Johnny put out half the quail we requested and came back to fetch us. He then let out Peggy s pride and joy, an English Pointer named AC. AC is a young dog, but she knows her business. She spent the next two hours finding all of the birds Johnny had put out. Johnny had put the first batch out as singles. This made an easy job of it for Michael and I, as we hunted them. Page 12

16 Alabama Quail Our guide, Johnny Cooper, put a male quail in the call box mounted on the tree in the picture to the left. Johnny thought AC was pointing the bird in the box. I was confident that there was a bird on the ground. Sure enough, there was one on the ground. We flushed it and bagged it. After the mid-hunt break, Johnny put out the rest of our birds. This time he set out some 2 and 3 bird coveys which is actually much more fun, in my opinion. AC points a bird hiding under the call box. AC was still running strong. That dog has more energy than the Energizer Bunny. She still had plenty left in her when we finished the day. For the second half, Johnny brought out a Brittany Spaniel named Jack, to work with AC. Johnny and Jack Page 16

17 Alabama Quail There is nothing like watching bird dogs work. Page 17

18 Alabama Quail We had started this hunt at about 12:30 PM. We were finished up about 4:30 PM, just before we lost our light. All in all it was a great hunt. Johnny put out 30 birds and we brought home 29. The last one evaded our search. Actually, Michael knocked some feathers out of him, but he kept going. We flushed him again, but he made an escape across a pond. We searched that area thoroughly, before we left that bird for the four legged predators to dine on that night. Our guide, Johnny Cooper, is good at his job. He is a native to this area and loves to hunt and fish for just about everything. When he is not guiding quail hunts, he works with Jack Rhodes at Tracker Marine at the Bass Pro Shop in Mobile. Jack Rhodes is a Senior Tech for Tracker Marine. Page 18

19 Alabama Quail When we got back to the camp, we found Jack Rhodes was already busy cleaning the birds we had shot earlier. Jonny pitched in and helped him. We were on our way with two large freezer bags full of quail a short while later. If you are planning a trip to the Gulf Shores, Alabama area between October and April and you want get in some pen raised quail hunting, Rhodes Quail Farm may be the ticket. Jack told me that it is best to plan ahead and make reservations. He has to schedule his guides and advanced notice is a must. 31 Dining on The Road Jesse's Restaurant & The Cold Hole This month I am reporting on another restaurant that you will definitely want to visit, if you have the opportunity. It was recommended to me by a friend, Mark Porter, who is described by his wife Kate as a foodie. Well let me tell you, if Mark Porter tells you to try a restaurant you will want to follow his advice. Jesse s Restaurant and The Cold Hole are located in the village of Magnolia Springs, Alabama, about 30 minutes from Gulf Shores. While off the beaten path, it is easy to find and well worth the effort. The restaurant is located at the intersection of Baldwin County Highway 49 and Oak Street directly across from the St. Paul s Episcopal Chapel. Open every day except Sunday for lunch and dinner, the restaurant is located where the Post Office was housed in the late 1800 s. They actually use the original post slot as the wait station. While the ambiance is elegant, the dress is dressy casual. The glassed in patio area and The Cold Hole bar offer up the same dining experience in a casual setting. On our visit, the weather was chilly, so we dined inside. Page 31

32 Dining on The Road Jesse's Restaurant & The Cold Hole The restaurant is owned by Steve and Angie Coltharp who had a passion to develop a restaurant that emulates the community s charm. Their Executive Chef, Jeremiah T. Matthews, graduated from culinary school with top honors at Paul Smith s College in New York. He later attended Le Cordon Bleu in Paris, France where he interned at LeLaurier, Barnebet, Arpege. Chef Matthews spent much of his career as Executive Chef for restaurants in Baldwin County, Alabama and recently had a four year stint as Head Chef at the Spotted Horse Ranch near Jackson Hole, Wyoming. He is now back in Baldwin County serving up delicious food at Jesse s. Jesse s has been described as Casual Dining at it's Best, Southern Creole Cuisine, best service, most romantic dining and best sweet tea. The restaurant has been listed in several periodicals including Southern Living, Coastal Living, Mobile Bay Monthly, and the James Beard Foundation. The Alabama Bureau of Tourism named Jesse's Whiskey Steak as one of the 100 Dishes to Eat In Alabama Before You Die. The restaurant serves a wide variety of culinary delights from steaks to pork, and seafood. On our visit, I started with the house salad with raspberry vinaigrette dressing. Which was quite tasty. I simply had to try the Whiskey Steak. It was a Ribeye which is not my favorite cut, but very nicely done. It was tender and succulent. I would like to have had a New York Strip prepared this way. My steak came with green beans and garlic mashed potatoes. I left with a full tummy. My son in law Patrick opted for the crab bisque as an appetizer. I must say, I would love to have had some of that myself. Maybe next trip! Page 32

33 Dining on The Road Jesse's Restaurant & The Cold Hole Patrick also enjoyed the Shrimp and Grits which he said were the best tasting cheese grits he had ever eaten. Daughter Kathleen dined on steamed mussels. Debbie had Veal Scaloppini which definitely gave me a case of entrée envy! Everyone enjoyed their meal. definitely a place we will visit again. Jesse s is Next time I will ask for the Oysters Brie w/ sauce vin blanc. Reservations are recommended. Call (251) or check for their specials on Facebook. The street address is Oak Street, Magnolia Springs, AL. Good eating! Doug Frey Page 33

38 Gun Fit By: Paul L.P. Giambrone, III I am often asked, Paul, what common problems do you see amongst shooters that seem to be reoccurring? Simple, GUN FIT is one of the most common problems I see when working with shooters. I was asked recently on a discussion forum how important is gun fit? Well, in my opinion, it is the most important fundamental part of your game. Yes, you do need to have proper mechanics and the correct mental approach, but before you even get to either of those the gun needs to fit you properly. I usually have clients that will either have no adjustable combs or butt-plates on their gun (usually a big problem), or they have one or both and the gun is still not adjusted to them properly. A common mistake is getting someone to fit the gun to you and just leave it that way What happens when you put on a few pounds or lose some weight? Your body changes! When anything in your face or shoulder changes, the gun will more than likely no longer fit you properly. Keep in mind, you do not want to check gun fit when you first get out of the car to go shoot. So shoot at least one full round to get stretched and loose before checking the gun fit. Your Foundation for Perfect Skeet with Paul Giambrone, III is available for purchase! The DVD shows you how to build a solid foundation for your skeet game and also helps shooters troubleshoot some common problems they may face. You can order the DVD now for only $59.95 plus shipping! Please info@gsclinics.com to order your DVD today! The first concept I would like to introduce is length of pull (LOP). Your gun s LOP is very important in fitting the gun to you. You want to be able to put your face toward the front of the comb, not the middle or back. If the LOP is too short in length, your face will be too close to your hand and you will have a hard time seeing over your own knuckles. If it is too long, the gun will push you backwards when making long turns. That will make your shoulders tilt. We want our shoulders to be square throughout the entire shot, not just some of the shot.. Let s take a look at a few common scenarios that we all see at some point or another in our shooting careers. Page 38

39 Gun Fit (Continued) Once the LOP is correct, the next thing we want to establish is what you should see when you mount the gun and are looking down the rib. First off, I want to say this is the only time you are given permission to look at your beads During the shot, your eyes should be completely focused on the target and nothing else! Ok, so the gun is in your shoulder and your head is down, the beads should be in line with each other and you should see a little space between the two (meaning the end bead should be above the middle bead slightly). Again, the most important thing is that they are in line if they are not in line, your gun will be shooting right or left of center Keep in mind, I know we are shooting shotguns and have a spread going out there, but we want every single BB working for us, not just some or most of them. You never know when you will need that last one to get the chip you need to run the box! If you are not aligned properly down the rib, I would recommend getting an adjustable comb so you can adjust it properly and get your eyes centered down the rib. Once you are aligned properly down the rib, the next step would be to make sure the end bead is slightly above the middle bead. This allows your eyes to be slightly above the rib so you can see more of the field and your vision is less restricted by the barrel. Also, I have noticed how differently everyone has their adjustable combs/butt-plates etc... Unfortunately, I would say the majority of the adjustments out there are incorrect or not quite right. I have heard too many times where shooters have told me that they paid someone to adjust it to them (many times it was years ago) and have not touched it since. Unless nothing has changed on their body at all, this is not a good thing. I want to stress again, if someone loses or puts on weight, whether it is only 5-10 pounds or more, then their body has changed and the gun more than likely needs to be adjusted.. Page 39

40 Gun Fit (Continued) That is why at the beginning of every season, I pattern and adjust my gun fit (if necessary) and will monitor my weight throughout the skeet season. If there is more than a 5 pound difference in my weight, I am going to be at the pattern board again making sure the gun is shooting where I am looking. Think of world class rifle and pistol shooters... If the rifle is not sighted in exactly where the shooter is aiming, what good is the rifle? Gun fit is a major key to having a successful game in shotgun shooting.. Lastly, for the year-round shooter, keep in mind that the weather will vary drastically from summer to winter. I know - Captain Obvious, right? Well here s the deal when it s cold outside we have to put on more clothes and/or shooting gear to keep warm. Yes, again Captain Obvious but guess what? This changes your gun fit! You will be surprised to know that just one extra layer of clothes that you are not used to shooting with will change how the gun fits you. Therefore, check your gun fit going into your winter leagues and re-check Available soon for $59.95 plus shipping. the fit once the spring and summer get here. You To pre-order info@gsclinics.com will be amazed at how such a little thing (that for more information. almost no one thinks about) can change your performance. That might just be the one or two targets you are looking for to win your winter league or your class at your first tournament. If you have any questions or comments, please me directly at info@gsclinics.com and visit for more information! Please check the website for upcoming tournaments and clinics in your area and keep in mind that GSC is now in the DFW area! GSC will be available to teach in the Dallas/Fort Worth area all year-round! Please call for lesson availability today! Tip of the month: Keep in mind that you may have to check your gun fit with your winter gear and summer gear, for the year round shooters out there. It is not uncommon to have to adjust the gun when you have more or fewer clothes on depending on the weather conditions. LP Page 40

43 Some years ago there was a barbeque restaurant in North Bossier Parish called the Hayride Kitchen. As I recall, they had a more than you can eat barbeque feast with ribs, brisket and sausage. As an appetizer they served the best Senate Bean Soup with cornbread. I believe they had regular cornbread and jalapeno cornbread. This soup recipe from the Frey Family Cookbook comes very close to that delicious Senate Bean Soup at Hayride Kitchen. Ingredients: Recipe of The Month Easy Senate Bean Soup 2 cans Campbell s Chunky Old Fashioned Bean with Ham 2 cans Navy beans 1 can pinto beans There is nothing like a good bowl of 1 can jalapeño pinto beans Senate Bean Soup on a cold day.
