2 A Word From The Publisher Thanksgiving has come and gone and Christmas will be here in a few weeks. We had a great feast day at the Frey house with both our kids and their families including our five grandchildren. We were blessed to have Debbie s parents with us too. Cool weather has finally arrived and I will soon be making Gumbo to utilize the left over Thanksgiving turkey. That has become a seasonal tradition for many in Louisiana. We have a lot to be thankful for and we have been counting our blessings. Those include family, and friends, and of course the privilege of living in this great country where we enjoy many freedoms others do not have. One is the freedom to enjoy shooting sports which has brought us many new friends over the years. We learned Sunday that we lost another dear Skeet friend, Wade Jones of LeCompte, Louisiana. His sweet wife Susanne and daughters are in our prayers. Wade was very active in Louisiana Skeet having served on the Board of the LSSA and as Secretary-Treasurer for many years. Wade was inducted into the LSSA Hall of Fame in I spent hours with Wade when working on The Louisiana Skeet Shooting Hall of Fame, A Rich History of Skeet in Louisiana, an E-Book I compiled in I could not have done that without Wade s first hand recollections and access to his archives of everything about Louisiana Skeet. I will miss Wade and others of our Skeet community that passed away this year. We were blessed to know them, each and every one. 3 WADE HAMPTON JONES, III August 14, 1937 November 25, 2018 Funeral services for Wade Hampton Jones III will be held at 10:30 a.m. on Thursday, November 29, 2018, at First United Methodist Church of Lecompte with Reverend Ross Ford and The Reverend Elizabeth Ratcliff officiating. Interment will follow in Greenwood Memorial Park under the direction of John Kramer & Son Funeral Home. Visitation will be held from 5:00 p.m. until 7:00 p.m. on Wednesday, November 28, 2018 at the funeral home. Wade Hampton Jones III, age 81, of Lecompte, passed away on Sunday, November 25, 2018, at his home, surrounded by his family. Wade was a third-generation banker. He was born and raised in Lecompte and was dedicated to making his community a better place. Wade was responsible for the restoration of Smith s Landing in Lecompte, a former depot for the first railroad chartered west of the Mississippi River. He was active in his church, serving in a variety of capacities, as well as the Rotary Club of Lecompte. Wade was also an avid hunter, Skeet shooter and outdoorsman. He served on the board of the Louisiana Skeet Shooting Association for many years. Wade was a person of unmatched integrity and honesty who touched the lives of many, both professionally and personally. We miss him terribly, but he will continue to inspire us. Those left to cherish his memory include his wife of 53 years, Susanne King Jones; daughters, Julia Jones Callis, Jenifer Jones Gilchrist (Randy) and Mittie Margaret Jones Bolton (Michael); and five grandchildren, Caroline Bolton, Georgia Bolton, Claire Callis, David Gilchrist, and Kate Gilchrist. He is preceded in death by his parents, Wade H. Jones, Jr. and Margaret Elizabeth Magruder Jones. Wade was a caring husband, father, grandfather and friend. Pallbearers honored to serve will be Michael Bolton, Foster Bond, Wade Bond, Randy Gilchrist, Chase Hoffman, Caleb King, Daniel King, Paul King, and Kate McNeill. The family requests that memorials be made to Smith s Landing, P.O. Box 596, Lecompte, LA 71346; Children s Advocacy Network, Inc., P.O. Box 8418, Alexandria LA 71301; or to a charity of your choice. The family wishes to thank Sharonette Armstrong, Ursula Brown, Gloria Clark, and Kimberly Thibodeaux, as well as, CHRISTUS Hospice and Palliative Care, for their loving care. 4 PERSONAL MILESTONE EVENT REACHED! On a beautiful fall day here in Alabama Frank Proietty of Anniston, went out to the skeet field to make history! Shooting at the Turkey Trot Open, hosted by the MARS Skeet and Trap Club at Redstone Arsenal in Huntsville, AL, on 17 November; Frank reached a goal that many of us never think possible! On station eight, fourth box, during the 12 gauge event he shot (and broke) his 275,000 th target of his long shooting career. Frank began his shooting career after his return from his service with the US Army in the Korean conflict in His early days of shooting were interrupted by the normal aggravations of life faced by all young men (school; marriage; family; and career), all of which delayed his first major milestone (50,000 targets) until 1975! In recognition of this momentous accomplishment, the MARS Skeet Club presented Frank with a cake during the lunch break, which he graciously shared with all who attended the shoot. Shown presenting the cake is Roy Jorgensen, MARS Skeet Manager, and President of the Alabama Skeet Shooting Association. After the event was complete, Frank (our 85 year young, senior veteran) stated that his next goal is to shoot 100 birds on his 100 th Birthday We hope that you do, and we all hope that we re there to celebrate with you! 7 Poule D eau Open Marathons The final registered Skeet events in Louisiana were held at Lafayette Skeet Club at David & Mary Hebert s Farm near Kaplan, Louisiana October 13 and 14th, These were the Poule D eau Open (28 Gauge Marathon) and the Poule D eau Open (.410 Bore Marathon). These two shoots are also the last opportunity for Louisiana shooters to compete in Louisiana Marathon Buckle Race Events for In accordance with our Buckle Race Rules, some shooters shot gauges other than the slated events to make-up for gauges they missed during the season. We will announce the Buckle Race Event winners in January. These shoots are always fun. The weather was nice (as it usually is in October) with mild temperatures and no rain. Just sunshine with highs in the 80s. The big winner this weekend was Junior shooter Carter Royston whose efforts earned him Champion in the 28 Gauge Marathon on Saturday and again in the.410 Bore Marathon on Sunday. That is some very good shooting Carter! Carter Royston On Saturday, Carter shot 194/200 taking Champion and Junior Champion. Roland Thibodeaux was close behind posting 183/200 for RU and VTCH. In 3rd Place and VTRU was E. Wayne Tanner with 191/200. In Sunday s.410 Bore Marathon Carter Royston continued his winning streak posting 191/200 to earn Champion and Junior Champion again. This time David Hebert took Runner-Up and SRCH with 189/200 and E. Wayne Tanner took 3rd Place and VTCH with 185/200. Photos and scores from these shoots follow this page. 21 News From The High House (A Message for Louisiana Skeet Shooters) Dear Louisiana Skeet Shooters: The year and skeet year is rapidly ending. Holidays, hunting, football, family have stopped my skeet for the year. It was a good year that I enjoyed much despite my apparent lack of interest in competing. Having nice equipment, good friends, good squad mates, and opportunities to break things while making much noise makes me a winner. We are very lucky to have skeet and the ability to shoot. I am grateful for skeet and want it to continue which is why I find myself as President of LSSA. Since I am neither charismatic nor evangelistic, you all will need to help me grow skeet. Any help will be appreciated and all suggestions/criticism will be given consideration and action as appropriate. Great leadership from Wayne Tanner and Roland Thibodeaux was important to LSSA. Happily Roland will continue to be Secretary/Treasurer and Wayne will be on Board as Past President. With help from the rest of the Board and they should protect LSSA from my incompetence and lack of focus. My shotgun is cleaned and locked away for the winter. Unpleasant weather will give opportunity to reload. Perhaps I will watch some instructional DVDs or read some instruction books that I own (apparently cellophane keeps their knowledge from seeping across the room into my brain.) I will return as a shooter in a few months but will be involved as an administrator as called. I am old enough that all I want for Christmas is to keep my two front teeth I do brush and floss and can duck if warned. Best wishes and happy holidays to all. 25 Dining on The Road Old 27 Grill, Fairhope, AL Long time readers know that I like to report on restaurants that I find that might be of interest to our readers. A number of readers have told me that it is their favorite feature in the Red Chute Gazette. We have another restaurant to tell you about. In our November-December issue for 2017, I wrote about our visit to the Original Oyster House on the Mobile Causeway on Mobile Bay. I mentioned eating grilled/baked oysters prepared on the half-shell resting on a plank of Bill E s small batch bacon. I was intrigued by the mention of Bill E s small batch bacon several places in the menu. I also mentioned that I don t recall ever eating at a restaurant the mentioned a brand name for bacon. It has taken a year to accomplish it, but I have followed up on Bill E s small batch bacon and will report on that here and now. Bill E s small batch bacon is made by a gentleman named Bill E. Stitt in Fairhope, Alabama. Bill has a real passion for bacon. An Internet search brought me to his blog where you can learn all about that. Bill researched various breeds of pig stock and experimented with recipes for several years trying different curing methods and timing for the smoking process. Bill says When Berkshire Red Pigs and Chantilly White Pigs get together, magic happens. Bill searched out small family farms to provide his pork bellies and experimented with different curing methods as he refined his recipe. He developed an 8 day curing process using pink salt and dark brown sugar from the finest molasses to make his bacon. FYI, Pink Himalayan salt comes from the Punjab region of Pakistan, near the foothills of the Himalayas. Pink salt is purported to containing a lot of minerals and health benefits not available from refined white table salt. Page 25

26 Dining on The Road With a story like that and Bill E s passion to create a quality product, I just had to check into this a little deeper. My research led me to a website for the Old 27 Grill. The Old 27 Grill is Bill E. Stitt s restaurant and store which is located at HWY 181 (Old County Road 27), Fairhope, Alabama. This is a family friendly restaurant and grocery offering casual dining for lunch and dinner 7 days a week. The restaurant has an outdoor patio area which is also used as a venue for local singers and musical artist to perform in the evenings. Bill says these artists serenade his bacon. You can get that in your local grocery store. In October, Debbie and I helped run the Poule D eau Open shoots at Lafayette Skeet Club near Kaplan, Louisiana. On Monday morning following those shoots, we drove from Scott, Louisiana to Orange Beach, Alabama for a week of rest and relaxation. Lunch at the Old 27 Grill was a perfect fit on our schedule and gave us the opportunity to check out this restaurant and get some of Bill E s small batch bacon. My GPS brought us right to the restaurant, just in time of lunch. Entering the restaurant we approached a counter where a very nice lady told that we could sit in the courtyard or in the store. We chose the store which serves as a dining room. I had hoped to get a BLT to check out that bacon. The menu did not disappoint. The menu has some interesting appetizers including: 1. Bill E s Bacon Taster 2 strips of Bill E s small batch bacon 2. Pork Belly Trio Pork Belly Bites (BBQ, Spicy & Sweet Chili) 3. Pimento Cheese & Potato Chips House made with tomato, Wickles Pickles and Bill E s Bacon The appetizers were tempting, but Debbie and I both ordered BLTs. I ordered rough cut fries as a side and Debbie ordered onion rings. The sandwiches were good triple-deckers made with Texas toast, Bill E s bacon, lettuce, tomato and Comeback sauce. It was a full meal deal. If you aren t that hungry, I suggest you pull out the middle slice of Texas toast. Page 26

27 Dining on The Road While we were waiting for our food, some ladies and the table next to us ordered some of the burgers which were substantial in size. I am not sure which ones the picked, but I noticed one had bacon on it. The restaurant has an ample list of burger choices including: 1. Old 27 Burger - served with a dill pickle and Comeback sauce 2. Black & Blue Burger - served with a dill pickle, Key s Spice and Blue cheese 3. Mushroom Burger served with dill pickle, mushrooms and Swiss cheese 4. Ole Texas Burger jalapenos, Comeback sauce and Swiss cheese on Texas toast 5. Bill-E s Blended Burger Bill E s Pork Belly & Certified Angus Beef with Wickles Pickles, Swiss cheese and a soft fried egg 6. Holy Cow Burger Their famous knife & fork signature burger that deserves to be encircled by rough cut fries. It is held together with Swiss cheese, on a fresh toasted roll, smothered in Pepper Corn Cream Sauce that will make you say, Holy Cow, someone just figured out how to put the cream back into the cow! The Old 27 Grill menu includes salads and soups, Bill E s Pulled Pork and a variety of hot dog presentations. There are even some dessert options, including Bill E s Chocolate Belly Savory pork belly bites and sweet salted caramel bits covered with a brown bourbon brown sugar glaze and topped with a smoke cherry. You can get that a la mode if you want. I missed that Bill E s Chocolate Belly when I was looking at the menu. That is probably a good thing. It looks downright deadly! But then, what a way to go? Maybe next trip. Before we left, I bought a pound of Bill E s small batch bacon. It is sliced thick and appeared to have considerably more lean meat in it than regular bacon. It cooked up very nicely. It is excellent bacon. At $12 a pound, it may be a bit pricey for every day breakfast. Then again, it might make a great and different Christmas gift! They will ship it to you. While we were there, Debbie and I had the pleasure of meeting Bill E. Stitt. Bill came by our table and visited with us for a few minutes. He is a very nice guy and seems to enjoy his work. It was certainly a pleasure meeting Bill. Bill even posed for a photo with me. He is the good looking guy on the right. 34 Recipe of the Month Seafood Cornbread Stuffing From or friend Sandra Gaspard Thibodeaux 1 (8.5oz) Box of Cornbread Mix **Make sure you buy ingredients for Cornbread** 1 Yellow Onion 1 Green Bell Pepper 1 Red Bell Pepper 1 Stick of Celery 1 Bunch of Green Onion 2 Cloves of Garlic 1/2 stick of butter 1 (10.5oz) Can of Cream of Mushroom Soup 1 & 1/4 Cup of Water 1/2 lb of Chopped Shrimp 1/2 lb of Lump Crab Meat 1 Teaspoon of Tony Chachere's 6 Cut up slices of Pepper Jack Cheese Directions: Prep your cornbread according to its package, set aside, and let cool. Heat up a large pot on the stove at a medium heat. Chop all of your vegetables. Add your butter to the pot, and let melt. Add your vegetables and stir occasionally for about 20 minutes. During this process you want to chop your shrimp and check your crab meat for shells. Preheat your oven to 350. Add your can of Cream of Mushroom Soup and stir. Add the 1 & 1/4 cup of water and stir. Add your Shrimp, Crabmeat, Tony Chachere's, and stir. Crumble your cornbread in and mix well. Add your cut up pieces of cheese and mix until melted. At this time butter an 8 x 11 baking dish. Pour the mixture into the dish and bake in the oven for Minutes. Let cool for 5-10 minutes and then serve. Page 34

Must be able to work on a tight budget with less than optimal facilities and equipment. Sous Chef Needed to assist the Chef in preparation and serving food at special events for 5 to 150 participants. Good dishwashing skills a plus. Marketing Manager Needed to promote participation in special events (Skeet shoots) and to solicit corporate sponsorship (prizes). Must be a skilled communicator with the ability to maximize results through social networking, Internet and other means with virtually no budget for expenses. Skeet Czar (aka Skeet Chairman, Manager or MIC (Man in Charge) Needed to oversee the management functions of a registered Skeet program. Those functions are Planning, Organizing, Staffing and Controlling. Qualified candidates may be male or female. In the event of the later, she would be the Czarina, Manager or FIC (Female in Charge). Registrar- Responsible for registering contestants and collecting the appropriate fees and dues. Candidate should be familiar with NSSA Classification systems and shoot management software (if lucky). Candidate needs to be able to do simple math (addition, subtraction and averaging). Scheduler Responsible for squadding shooters. Qualified candidates must be a master at coordinating, placating, and diplomacy. A PhD in Psychology would be helpful. Referee Must be knowledgeable of the rules of the game of American Skeet, a fast thinker and have the ability to take command of the Skeet field to which he or she is assigned. Candidates should have good eyesight and be physically able to stand in the hot sun for hours. Experience dealing with difficult people a plus. Scorekeeper The scorekeeper manages the scoreboard, evaluating the results, determining the winners in accordance to NSSA rules and posting those results for all to see. Mentor/Coach/Recruiter Encourages, teaches and recruits new shooters to the sport. Helper The person selected for this position must be able to help or fill in for any of the individuals listed above on a moments noticed. There are many opening for this position.
