We realze that, were the dettan's measurng stck appled to the formula proposed for the wsh descrbed, many readjustments would be ndcated. f the nutrtve rato were determned or the number of calores calculated, doubtless great dscrepancy would be shown n the blendng of the ngredents. One thng can certanly be clamed, however, and that s that the mxture contans all the vtamns known to scence. Confessng, then, at the outset that a mullgan s not a scentfcally prepared concocton, we lay clam to one thng only: that t. s a dsh that a man can prepare, and that all men and most women who have tred t are wllng to admt s edble and, ndeed, eatable. The frst authentc record of mullgan preparaton s contaned n Macbeth and proves that as early as the Shakespearan age some were famlar wth t. The wtches were makng preparaton for a feed as below ndcated: Round about the cauldron go; n the posoned entrals throw. Toad that under the cold stone, Days and nghts has twenty-one Sweltered venom sleepng got, Bol thou frst n the charmed pot. Fllet of a fenny snake, n the cauldron bol and bake Adder's fork and blnd worm's Lzard's leg and owlet's wng. For a charm of powerful trouble Lke a hell broth bol and bubble. Double, double, tol and trouble, Fre burn, and cauldron bubble. Why ls a Mullgan? By "JOE BAGGS" Mullgan artsts chose nature's dnng room. We mght venture a guess that "Joe Baggs" and hs pall are college professors. stng The up-to-date mullgan s concocted on the same broad lnes as lad down by Shakespeare n the above. True, there are a number of ngredents enumerated that have no appeal to modern tastes, but the general ht and mss plan of selectng what s at hand to form an ntegral part of the mullgan s commendable. ARE YOUR corners turned up? Ah, there s no tme lke the present to do ths lttle but most vtal thng of lfe. Oh, ths lfe of ours s so taken up wth nnumerable good thngs that t s a crme to mss any of them. You'll mss a whole lot f you're not n trm wth lvng and healthy enough to be glad you're alve. You are absolutely out of trm and. n plannng a mullgan the number of ndvduals to be served s to be consdered. f all partcpants are men, the quantty prepared must be at least double that estmated, because no group of men ever sat down to a feast of ths knd and was satsfed f the usual rules of the caterer were followed n estmatng quanttes. The utensls to be used n the preparaton of a mullgan may be just as plan or just as elaborate as fancy dctates. t may be cooked n an alumnum freless cooker, n an open grante kettle, n a tn dshpan or a galvanzed pal. But prepared n any of these there s somethng lackng. The expert mullgan cook wll not guarantee hs product, nor wll he make a publc demonstraton of hs art except the vessel used be an oldfashoned ron pot. Ths vessel s at ts best only when suspended by a wre from a cross pole, supported at the ends by forked stcks set nversely n the ground. Beneath.ths swngng pot the fre must be lad properly. The wood to use must be good, dry, hard wood, such as oak. t must not be used too lberally. Only the quantty s to be used for replenshment that wll keep the mess smmerng gently. How many of you have lstened to a great volnst and wshed that some day you mght do somethng half so wonderful and joy-gvng and nsprng? Or, maybe you have turned around whle on your way to classes to watch a person whose tme durng the cookng a fathful attendant must be watchmg to prevent the accdents that mght befall. To th!! mullgan artst ths vgl s a labor of love and he wll entrust the task to no one, but wll nsst on assumng t hmself. Much s added to the enjoyment of a mullgan f there be the proper settng. A day n early November wth ts nvgoratng ar and brght sunshne s the tme. A secluded ravne flanked by beautful trees s the place and should be both ktchen and dnng room. Gven the above there s nothng to compare wth a lberal helpng of well-prepared mullgan. As to just what makes up the mullgan t has been ntmated before that whatever s at hand s the materal to use.. The more ngredents, the better. Several varetes of meat, ncludng fowl, pork and beef, should be Vegetables of every obtanable used. knd may be ncorporated. Followng s a suggested lst of "fxns" that the author has tred on some one thousand or less ndvduals, among them deans, professors, assstants, preachers, jantors, and just folks, all of whom have apparently met the test wthout flnchng, and have come out none the worse for the encounter. Menu for twenty fat hen 2 pounds salt pork 3 pounds fat beef 2 onons 2 pounds tomatoes small head cabbage pound carrots pound turnps can corn can peas can tomatoes head celery can beans cup rce Salt, pepper and paprka to taste. Cook the meats untl the bones remove easly, at least one to two hours. Add the vegetables and suffcent water so there wll be no scorchng and allow "her" to smmer for hours and hours. t s absolutely essental that the cook, assumng the same s a man, should smoke a ppe whle watchng the pot. Ths keeps hm awake. He who partakes lberally of the above may "wrap the drapery of hs couch about hm and le down to pleasant dreams." smlng face or easy way of gldng along made hm stand out from the other passersby. 3 THE OWA HOMEMA[ER The Sport of Amateur Housekeepng By ANNA JACOBSON, College Lbrary FEEL properly apologetc for venturng to ntroduce the Amateur Homemaker to her sster professonals; for, qute rghtly, the amateur s not hghly regarded by the fnshed artst. t s much as f the frst-reader class should call on Professor Noble to gve hm some ponters on lterature. Stll, there may be a place n some corner for the amateur also, when she scrupulously refrans from encroachng on the preserves of the professonal, and contents herself wth housekeepng as a sport. Now, a sport should not be tanted wth professonalsm. The game s the thng. t should have an element of chance, and not be taken too serously. The amateur s a free lance. She has no standard to mantan. She may admrngly and canddly admt that standardzaton s one of the front wheels of progress, and yet have her lttle flng at standardzed dets, color-schemes, and ktchens. Let the amateur stalk forth blthely to her mpressonstc, sketchy, rresponsble, and adventurous housekeepng. t s a good, sane, homely game, f you take t that way. Only, you must shut your ears to the everlastng Hallelujah chorus of effcency, or you are lost. Housekeepng, as a sport, s perhaps partcularly adapted to the mddle years, tho there s no tme lmt. The very young may feel a stronger call to the move, the dance, or mah-jong; others may prefer to manage clubs. or engage passonately n socal uplft, n ther lesure hours. Houseeepng s commended to the betwxt-and-between folks who have no strong predlctons or brant accomplshments to lend gayety to more colorful recreatons. admt canddly that housekeepng s a rather exactng sport, and takes large toll of one's precous spare tme. t wll not, for nstance, leave you so very much tme to mprove your mnd; but prvately thnk t s good for our mnds to be left alone once n a whle, to grow, nstead of havng facts stuffed nto them overtme. Anyway, don't want to mprove my mnd. want to do all sorts of slly peasant thngs wth my hands. want to go home and scrub floors. bake a bg luscous pe, and pant my ktchen chars blue, or maybe a prmrose yellow. n season want to stck some seeds n the ground (a garden belongs wth a house), and have them astonsh me by comng up bravely to shower joy on an undeservng gardener. f you combne gardenng (for fresh ar) and scrubbng (for exercse) you have a combnaton that beats golf for th.e sedentary worker, and you have somethng to show for t besdes.. Then, thnk how tred you get of the other woman's taste- or lack of t- n wallpaper and rugs, salads and desserts. Thnk of havng rooms (n the plural!) even to attc and cellar and ktchen. Nor s the sport necessarly expensve, as t ncdentally provdes for the everyday necesstes of food and shelter. Perod furnture, orental rugs, refectory tables, and breakfast alcoves, are not essental; tho a gateleg table and an arm char of ndvdualty- say,. wth permanently waved legs-gve a pleasant ar of gentlty to the humblest abode. But whatever you lack, be sure to have a ktchen. nsst on that ktchen. t s the vsble manfestaton of a sprtual need. know the socal mllenum s gong to do away wth the ktchen, and a few hundred expert cooks wll cater to the mllon consumers. All the more reason to enjoy the fragrant, spcy hours and come nto the ktchen whle you have a chance. Try one of "Bettna's salads," or "000 ways to please a husband" (even f you haven't any to please!). Ktchen lterature s full of delghts f one chooses judcously. There s a real thrll when you come across "Lvng on $500 a year"; and f you yearn for the pencl-fgure, take courage: you may "Eat and grow thn." There are other thrlfs, too; for cookng, lke aeroplanng, has ts lttle explosons and sudden falls. t s a mstake to regard the ktchen as devod of romance because t deals wth prmtve elemental wants. She attended the late Vocatonal Educaton Conference at Ames, and delvered several splendd addresses at the conference. She was greatly nspred by the beauty of the campus and the sprt of the students at Ames, so much so that she has promsed to wrte us a poem about Ames. That, ndeed, s the nmost charm of housekeepng, as t s of farmng. Do you remember the sowng of the seed n Hamsun's "Growth of the Sol"? That s the epc of the farm, but there s a humble epc of the ktchen, too. Not that the ktchen s a "lterary" place-heaven forbd! But for all that, t has an honored place n lterature, from Theocrtus to Rupert Brooke. Everyone knows what an nmtable Roast Pg came out of Cnarles Lamb's ktchen, but Carlyle's and Emerson's amusng correspondence on cornmeal and Johnny-cake s less well known. Characterstcally, Carlyle ends wth a dtyhramb on the transatlantc Johnny-cake: "t s really a small contrbuton towards wo:-ld hstory, ths small act of yours and ours. * * * How beautful to thnk of lean, tough Yankee settlers, tough as gutta percha, wth most occult, msubduable fre n ther belles, steerng over the western mountans to annhlate the jungle, and brng bacon and corn out of t for th e posterty of Adam. You may not be one who can sng the song of the Johnny-cake and ts relatons; but when the all-too-short day of housekeepng comes to a close, you vew your handwork and declare 't good. Now comes the reward of your tol. n ths closet space of tme you savor lfe, happy, ndeed, f you have a beloved guest to share wth you the lovely, homely thngs n quet companonshp: "Flled may thy far mouth be wth honey, Thyrss, and flled wth honeycomb; and the sweet dred fg mayst thou eat of Aeglus, for thou vanqushest the ccada n song! Lo, here s thy cup: see, my frend, of how pleasant a savour! Thou wlt thnk t has been dpped n the wellsprng of hours." Mss Walsey, who s at the head of the work n Porto Rco, was on the Home Economcs faculty at Ames when Mss Forest was n school here. TAKE UP GRADUATE WORK Mary Brown, '9, has been teachng n Salt Lake Cty snce graduaton, but expects to spend the comng year n graduate work n Columba Unversty. Jula E. Berkke, '6, entered Chcago Unversty ths fall to take up graduate work. N MSSON SCHOOL Kay Lester Kerr, '4. of Clermont, owa, s teachng at Lncoln Normal School n Manon, Alabama. Ths s a msson school for colored chldren. EMMA BAlE COMPLES BOOK LST Emma A. Bae, '5, who s supervsor of teachers' tranng n New Hampshre Unversty, dd a notable pece of work last year. She compled a lst of books. bulletns ahd llustrated materal on Home Economcs for the use of the teachers thruout New Hampshre. The materal was put n usable shape and publshed n bulletn form by the State Department. A daughter, Beverly Gene, was born to Helen Secor West, October 7, 923. WORKNG OUT HOME ECONOMCS PRNCPLES No owa State grl has had a better opportunty to work out her home economcs prncples than Lela Albert, '8, of Scranton, owa. She s now lvng on a farm n Greene County, owa, and s for tunate enough to have a home wth all modern convenences-electrcty from the hgh lne, runnng water and also an electrc ron, sweeper, washer, etc. She asssted n the organzaton of a Grls' Reserve n Redfeld, and s also dong her bt n club, cvc welfare and church work. ESTABLSHES CLUBS Eleanor Hallock, '4, whose home s on a ranch ffteen mles from town, s takng a great nterest n everythng whch tends to develop her communty and further educatonal work. She has been nstrumental n establshng a Communty Club, a Woman's Food Nutrton Club, and s also very actve n Farm Bureau work. RECEVES MASTER'S DEGREE Kathryn Horst, '7, receved a Master's Degree from Columba Unversty last June. SPENT SUMMER N EUROPE Rev. Cora Van Velser Lambert, '90, was n Europe last summer. The Lamberts spent last wnter n Calforna, where Mrs. Lambert suppled a pulpt n a Long Beach chufch for part of the wnter. TO WED Mrs. Emma D. Ahrens of Sac Cty announces the engagement of her daughter, da Vrgna, to Mr. Eml J. Mldensten of Sdney, a., son of Mrs. E. Mldensten of Clnton. Mss Ahrens and Mr. Mldensten are both graduates of owa State College. Mss Ahrens, for the past two years, has been connected wth the extenson servce at Ames as agent n club work. Laura Pratt Spends Summer Askng Questons By MARGATET WHSTLER WORKNG for an advertsng company -that s the unusual way that Laura Pratt, an owa State College graduate of last sprng, spent her summer vacaton. The work she dd was certanly somethng dfferent and especally nterestng. Mss Pratt worked wth a young woman who had taken her master's degree n Home Economcs from Columba Unversty, and ther man occupaton was smply runnng a Ford and askng questons. Can you magne any better combnaton? "We ddn't have to sell anythng, bu t had to ntervew farm women on ther cleanng and bakng problems. "Our terrtory would nclude a representatve county n each of three states, Mssour, owa, and Mnnesota. Best of all, we were to have a Ford to drve. "We spent three days n Chcago, where we had several conferences wth the varous people who were nterested n the work. You see the advertsng company was havng ths work done for two companes, one a yeast company and the other a frcton cleanser company. Therefore we met representatves of each company that we mght get drectly ther pont of vew as to just what they wanted us to fnd out. "Fnally we started for our terrtory, where we became vertable queston boxes. We tred to fnd out why some people bake ther own bread and others don't. How much bread bakng s done at home and how much n the bakeres. Do women lke an ol stove for bakng? What s the hardest part of bread makng for a grl to learn? On the cleanng problem we tred to fnd out what knd of utensls predomnated and how they were (Contnued on page 9)

THE POSSBLTY OF THE MPROBABLE "Possble but not probable," Queen sabella undoubtedly sad, when Chrstopher Columbus, kneelng before her royal majesty, unfolded hs maps and told of how the world was round lke an orange, and nda must le somewhere out to sea. But Chrstopher was earnestly convncng and perhaps-anyway, Queen sabella sold her jewels and the great contnent, Amerca, was dscovered. And ever snce then the world has been contnuously surprsed to see the "possble but not probable" deas of so-called dreamers become realtes. n 786 throngs of ncredble people lned the banks of the Delaware to scoff and jeer. But John Ftch receved ther awed admraton and profound congratulatons when they saw the frst steamboat move actually up the rver. Must a man hold everythng n hs own hand before he can move forward~ Must the way le clearly before one~ n fact, must everythng be probable~ Dscoverers n scentfc felds say no. That possbltes are present they feel or know, but how to dscover, to fnd, and prove them they are uncertan. Heren les the hard work, the defeats and dscouragements, n the seemngly futle efforts to brdge to the unknown. Vsons, dreams, genus are gfts of the choce few, and because we do not see, are we to scoff at the sght of others~ A slow lesson ths-when wll we learn to respect the mprobable, to hal t as the great potental of tomorrow, the unknown but tremendously valuable possblty of the future THE HOMEMAKER Who s the homemaker ~ f you were to put ths queston to a group of people, probably a majorty would respond very quckly, ''Why the woman who carres on the dutes of the home, of course.'' But s ths really the correct answer to the queston '? Whle the woman, undoubtedly, plays a most mportant role n mantanng the home, one must not lose sght of the fact that t takes two-the man and the woman-to make a successful home. Nether can t be sad, truthfully, that the contrbuton of the man s complete when he has brought home the famly ncome. Yet, thus far, colleges and unverstes have been content to tran men wth the one dea n mnd of ther earnng a lvelhood, whle courses whch would gve an apprecaton of ther prvleges and responsbltes n home lfe have been entrely overlooked.,classes n '' Th > Famly" n many nsttutons have been composed largely of women; the occasonal man has felt qute out of place, tho the content of such a course s just as mportant to the one as to the other. When we reach the 'pont where tranng s consdered essental for the husband as well as for the wfe thenand only then-wll we be workng toward the most complete soluton of famly problems. The term "homemaker" must mply two persons nstead of one. mportant as s wage-earnng for the man, t s not more mportant than the responsblty whch he shares wth hs wfe for the health, happness and character buldng of all famly members. Rust spots are caused usually by a falure to remove all the soap n rnsng, and the use of a blueng whch contans chemcals whch form a rust spot wth the soap left n the fabrc. Most lqud bluengs do ths. CHLDREN ENTERNG DNNG ROOM When should chldren enter the dnng room -frst or last? The hostess enters frst,and the chldren may come after her wth the guests. SHARPENNG MACHNE NEEDLES When the ponts of machne needles become bent or blunt, how may they be sharp2ned and made useable? By rubbng them over a small bone for that purpose whch may be had at any hardware store, they may be sharpened. TEST FOR BOLED CNG Do any of the "Homemakers" know of a trck by whch they can tell when boled cng s done? use ths method when my cng does not seem qute stff enough. Set t n a pan of hot water, over a double boler, or have used the tea kettle. When t begns to swell and form crystals around the edge and over the surface take t off, cool, and beat untl ready to spread. CURDLED TOMATO SOUP wonder f anyone e lse ha3 trouble wth tomato soup curdlng. f there s some specal way of makng t to avod curdlng would lke to hear of t. Heat tomatoes. Heat seasoned mlk. Add tomatoes to mlk very slowly and strrng all the tme. t s best to mx the tomatoes and mlk just before ready to serve. SLVERFSH have dscovered slverfsh among my clothes n the closet. COLOR OF SHOES What shoes could be worn wth a golden brown dress? f the materal s heavy brown or bege, suede may be worn. For a lghter weght materal whte satn pumps could be dyed the color of the dress. HANGNG MEAT How long should meat be allowed to hang? Should be allowed to hang ten days to three weeks at a temperature of 34 degrees to be n prme condton. REMOVNG GREASE SPOTS H ow may grease spot3 be removed from rugs?" Sponge the stan wth a clean cloth mostened wth chloroform or gasolne may be used wth care taken because of ts nflammablty. Work from outsde of spot toward the center to. prevent spreadng. TO MEND SWEATERS Can you tell me of a good way to mend a sweater nconspcuously? When the sweater begns to wear thn, renforce the places wth yarn of the same color and weght. Use a large needle and run the thread back and forth followng the thread of the sweater. FALL COLORS What colors are beng worn ths f"-? Softer shades n greys and wood browns. For evenng blue shades-sapphre beng the favorte, black, flame and black and whte combnatons. REMOVNG OL FROM CHCKEN SKN How may ol be removed frcm the sk:n of a chcken? The chcken may be washed wth soap and water after t has been snged. The soap cuts the ol. The chcken should not be put n the soapy water, but washed ofl' wth t. t should be well rnsed afterward. SPORT CLOTHS What are the new deas n sport clothes? Three peces sport suts of slk kntted materal are beng worn n tuxedo moder cape frocks; and the vogue for brushed wool n plads and strpes contnues. 7 Dressng the Homemaker By MARGARET DX Every woman should be attractve n her home. Here she s an example for others and s judged for her true worth. Smple house dresses n attractve colors are very good. Dark, unattractve materal should be avoded. t s not dffcult to fnd patterns to ft the ndvdual. One who s large and rather heavy should avod desgns that tend to broaden and wear straght lnes. The length of the dress depends on the ndvdual as well. Anyone who s large cannot wear short dresses. They should at least reach the tops of the shoes. No house dress should be extremely long and full for t wll always be h the way. Neatness, convenence and attractveness are three essentals for a house dress. The popular apron s very good, but should be made to gve the effect of a dress. Evenness around the bottom of the skrt s most mportant. Nothng gves the appearance of shftlessness more quckly than a dress or apron that s uneven. Today there are many attractve aprons worn over the house dress. f one does not care to dress for dnner these can be worn as a protecton durng the mornng, and taken off durng the noon hour, leavng the dress fresh and clean. Many prefer to wear the smple house dresses wthout aprons and slp on another durng the dnner hour. Every housewfe should have a number of small aprons to use when needed. Unbleached musln trmmed n some brght color s attractve as well as nexpensve and durable. Gngham and percales are commonly used. A black sateen apron for cleanng saves launderng. Wth many t s the general opnon that any knd of a shoe s good enough for home wear. Ths s not true, for one cannot look trm and neat whle wearng shoes wth runover heels and n need of shoe polsh. f appearances mean nothng to one, health should. Runover heels cause one to walk and stand ncorrectly and often lead to the breakng down of the arch n the foot. Ths can lead to nothng but llness. Lght-colored shoes gve a better appearance wth lght house dresses than dark shoes. The whte canvas shoes are very nexpensve and dur-, able. They clean easly wth Bon am or whte shoe polsh. Carpet slppers should be avoded when workng around the house. When was a chld the people n my communty thought that grls who ndulged n any knd of physcal exercse were "tom boys." They were smply shocked at the dea of grls playng baseball and rdng horseback. All can say s, "God bless the tom boys. f there were only more of them!" What a large number of people go around wth the vapors o-f despondency so thck on them that the people whom they meet become clouded wth them: Watch people after they have watched a game of football, basketball or tenns and you wll fnd that there s no vapor there, but t s all a gleamng surface. Altho every Amercan woman and grl realzes that exercses make for health and the shnng personalty, many of them go around wth a weary, heart-burdened look. f they would stop to thnk that half of everybody's body s muscle and that our vtal organs, such as the heart and stomach, are muscle, maybe they would stand on ther heads or turn a few somersaults. Natural expresson of muscle s thru movement and f t s not used t weakens. Muscle must be constantly exercsed to be kept healthy. To have a shapely body one must have healthy muscles, as they form the outlne. Seven-tenths of the bran s used for exercses of the senses and for the control of the muscles. Therefore, nablty to make our body act the way we desre, or to gude our movements properly by sght, sound or touch, means a very poor development of a large part of our bran. f t were not for muscle we could not express a sngle feelng, thought, or even make a movement. Talkng, wrtng, expressons of the face as well as movements of the trunk, arms and legs all depend on the contracton of many muscles. Snce by muscle alone can we explan ourselves, t s absolutely essental that we tran our muscles to express what we want them to do n the way we desre. The road to good, healthy muscles s by exercse. Exercse takes the place of medcne. Drugs weaken the body n every respect. Exercse tones up and strengthens. Keepng ft should be on the schedule of every person. Athletcs s the sure means of changng exercses, ether ndoors or outdoors, from work nto play. The more thngs you do well, the more fun you'll have and the more nterestng person you'll be. "Ddn't the women resent beng questoned?" "Not f we frst explaned to them that we were askng them these questons because they knew more about these problems than anyone else and that the reason we wanted ther opnon was to help the advertser to know how to meet ther needs more successfully." "Were people nce to you?" "Nearly every one receved us cordally, partcularly after we convnced them that we had nothng to sell. To be sure, there was one woman who told me ' have no tme to talk to the lkes of you. 'm busy washng and thnk you would be better off f you were home don' the same thng or some sch.' But she was only one and we found many who were eager to dscuss ther problems and who wanted suggestons. One woman shall remember always. She was a lonely Dansh woman, refned and well educated, who lved n the mdst of a Germanspeakng neghborhood. She spoke excellent Englsh and could hardly beleve that she had grown to young womanhood n Copenhagen. Altho ths was the second year that they had lved on ths farm, there was no one who had tred to be neghborly to her. She vsted wth us, nvted us to reman for supper and to call agan."
