Montenegro WP1: Fish quality and handling M/S Traal Ida Grong Aursand and Leif Grimsmo 1
Objectives WP objective The main objective with WP1 is to improve the quality of the catch by introducing best handling practice onboard the Western Balkan fishing vessels Objective of today's meeting: Define different project case studies and the focus of the PhD-work 2
WP1 Description of work T1.1: Mapping of the situation for representative fishing vessels Documentation of today s practice on-board by experts on fish quality and on board handling systems together with representative fishing vessels and participating fish processing industry 3
Processes on board: Critical factors for fish quality Catch Loading Chilling Unloading Gentle fishing gear Weather conditions Time consumed Catch size Loading method Pumping parameters Weather conditions Time consumed Catch size Gentle handling systems Time/temperature Chilling method Flow pattern in tanks Hygiene/cleaning Unloading method Gentle handling systems
T1.3: Two case studies - fishing vessels Two fishing vessels of the WB fishing fleet will be chosen as case studies for further analyses. Critical factors influencing product quality during catching and onboard handling for targeted species/vessel groups will be identified. Biological and operational factors influencing fish quality will be evaluated 5
T1.3: Case studies on board two fishing vessels FOCUS AREAS: On board handling routines and equipment (e.g. loading and unloading of catch, grading system, on-board logistics). Chilling and storage methods onboard (e.g. icing, refrigerated seawater (RSW), icechilled seawater (CSW), liquid ice, chemical pretreating)/ frozen (IQF frozen/block frozen). Analyzes of raw material by different physicochemical methods. Evaluation of technological status on board the specific vessels (gear systems, onboard handling systems, chilling systems, etc.). 6
Andel fillet (%) Traditional design Example: Objective measurement technique for quality evaluation of herring New design Gradering av blodflekker 25 Grading of fillets blood spots Andel fillet med ulike graderinger av blodflekker Tradisjone Ny silkasse Gradering av blodflekker(ingen blodflekker er 0, store blodflekker er 10) Tradisjonell Traditional water silkasse separator Ny New silkasse design 7
Example: Different types of catch damages as affected by handling systems on board Knekk i nakke er den typen skade som sannsynligvis bidrar mest til blodvann. Sprekk i buk som følge av at finnen til fisken har hengt fast i utstyr Bloduttredelser buk Sårskade Bloduttredelser rygg Slitasjeskade 8
Andel skader av landet fangst % Example: Amount of different types of catch damages as affected by handling systems on board 0,40 0,35 0,30 0,25 0,20 0,15 0,10 0,05 0,00 Fangstskader totalt (%) Klaffskader (%) Klem/sårskader (%) Finneskader (%) Nakkeskader (%) 9
Example: Grading of fillet gaping in mackerel 10
Example: Grading of blood spots in herring 0 = No blood spots 1 = Few blood spots < 5 2 = Large blood spots, or many small blood spots > 5 11
Example: Quality index method (QIM) for herring 12
Example: Non-destructive methods (NMR) studying belly bursting in pelagic fish Enzyme leakage from intestines leading to belly bursting Catch quality lost catch is downgraded from human consumption to feed
WP1 Description of work T1.2: Mapping of today s distribution systems and cold chains Western Balkan distribution systems and cold chains for seafood will be mapped through interviews, visits and field experiments. 14
WP1 Description of work / planning T1.4: Development of tailor made training material On the basis of results achieved in T1.1 and T1.3: Training material for transferring knowledge from Norwegian experts to WB experts and scientific personnel will be prepared. Furthermore, guidelines targeted to ship-owners and fishermen will be developed. Example (created in cooperation with the Norwegian pelagic fisheries industry): The Norwegian quality handbook for herring and mackerel 15
WP1 Description of work / planning T1.5: Transfer of technology and dissemination of results The dissemination of results from T1-T4 will be accomplished through activities described in WP5 (Dissemination). 16
PhD-study Activities case studies designed in close collaboration with industry/fishing fleet Implement quality evaluation methods Research cruise on board local vessel, discover bottlenecks and design quality evaluation methods designed for local species Study fish quality as affected by Fishing gear On board catch handling Chilling and storage Logistics on board 2-3 peer reviewed papers in international journal Suggested journal: Fisheries research: PhD-candidate: Roland Kristo 17
WP1 Deliverables D1: Report describing today s situation in the WB fishing fleet, distribution systems and cold chains including; a Best-Practice-Guide for catching, handling and storage of selected fish species and fish handling strategies aimed at improving the overall catch quality targeted to both Western Balkan scientific personnel and to ship-owners and fishermen. D2: Education of a MSc or a PhD candidate D3: 1-2 peer reviewed scientific papers Milestones M1.1: Review of today s situation finished M1.2: Definition of 2 case studies for further research M1.3: Report ready for implementation/dissemination 18
