3 Editor s Note 3 EDITOR S NOTE TMCC s STEADY LEADERSHIP HELPS WHEN IRONING OUT DIFFICULT ISSUES By Godfrey Robert In a period of transition and uncertainty, the best scenario for any club in handling matters is for it to have a strong and steady leadership. The AGM lasted just less than an hour, a sound confirmation that procedures went smoothly and the overall mood v er y fr iendly. And Tanah Merah Country Club once again demonstrated at its recent annual general meeting (AGM) that it would be almost status quo as far as the General Committee (GC) is concerned for the next two years. The top posts for TMCC remain unchanged, and save for four new names in the committee, all six nominated returned without any contest, old guard Benny Tay (previously, convenor F & B) and Chris Liew Peng Fook remain in the fold. The four other committee members are Ms Gillian Sim, Mr Kazuo Sugino, Mr Wee Jim Hock and Mr Daniel Yeo Chin Tuan. So the TMCC GC for the next two years would be a practically familiar one to members. This familiarity is important to TMCC at a period when the Singapore golfing club scene is undergoing many changes. Therefore, it was good that club chairman Ng Kee Choe appointed Messers Ho Beng Huat (president), Lee Lian Hong (captain) and Victor Liew Cheng San (treasurer). The strong GC will have to tackle the issue of a possible loss of some land at the Garden and Tampines because of the expansion plans for the East Coast Expressway (ECP). It was also no surprise when it was revealed that the club incurred an operating loss of $418,900. It was said at the AGM that, this is not an unsatisfactory result considering that the Garden course was closed for two months for reconfiguration. Member Eric Ng raised a pertinent question about how much the members would have to top up for the renewal of the TMCC lease. Club president Ho replied that, the Government had not released the amount for renewing of the lease. He added that the club had a healthy reserve of $90 million of which $30 to $40 million would be allocated for the redevelopment of Tampines course while another sum would be required for major renovation of the Garden course. Also the vice-president s post was uncontested and hence nominee, Mr Lee Kwong Weng, was elected. And he assured Mr Ng that members would not be taxed too severely. The new Civil Aviation Authority of Singapore (CAAS) nominee is Mr Tan Kah Han. That assurance would surely go down well with the members. v

The loss of land because of the Government s land acquisition for airport expansion and the reconfiguration of the holes may have taken a little shine of the world-renowned Garden course. And because the Garden was a classic championship course, among the best in the region and the world having won several awards, any slight tweak because of the forced shortening of some holes may cause concern. But the club management will do its best to ensure that the re-shaped Garden will still provide the thrill when you play. And as a bonus, the management will turn the Tampines course into a championship course with its impending renovation plans. Members who attended the recent annual general meeting (AGM) on April 29 went home convinced that the management had their welfare at heart in all clubs and golf aspects. The almost one-hour meeting went smoothly without any hitch. And questions regarding land lease, redevelopment of the Garden and Tampines courses, and the expected top-up by

While top management, helmed by chairman Ng Kee Choe, remains unchanged and there was a new man in the vice-president s post (Mr Lee Kwong Weng). The general committee welcomed four new members: Ms Gillian Sim Siu Lin, Mr Kazuo Sugino, Mr Wee Jim Hock and Mr Daniel Yeo Chin Tuan, who will join long-time F & B convenor Benny Tay Yew Lim and Chris Liew Peng Fook. The question of top-up, raised by member Eric Ng aside (see Editor s Note), there were six other issues raised at the AGM. Mr Ng earlier made an observation that the changing room attendant turned on the taps and left the water running early in the morning. To that, it was revealed that the attendants had informed him that this was to ensure that members would get hot water immediately when they showered later in the day. General manager Kok Min Yee replied that, This is not a new practice. Water is heated by a boiler that is usually turned off at night, hence it has become a housekeeping practice. To member Tan Teck Khiam s question that he had to wait a long time for hot water to shower, club president Ho Beng Huat responded to him, and to Eric Ng s query that the club would look into the issue. Mr Ng also stated that a lot of golfers left divots unrepaired. It was highlighted to him, and the floor, that with the help of director of golf Ian Geoffrey Roberts, the club has enforced a 3-strike rule to resolve golf etiquette issues.

8 8 TOPFeature Reception Time It was also said that Roberts was also working on educating new members on how to manage good golf etiquette. Member Wong Chin Kheng stated that the members were happy with reciprocal agreement with Clearwater Bay Golf Club, but hoped the committee could speed up signing with more clubs so that members would have more choices to play, especially during the closure of Tampines course to ease traffic on the Garden course. Club president Ho replied that TMCC had current affiliation status with quite a number of clubs. He added that, the committee will look into selecting the best clubs in each city progressively, and members can look forward to having more reciprocals in the future. Mr Wong was pleased that the committee had some new members and stated that he looked forward to having younger members (below 40 years) on the committee to galvanise other young members to participate in club events /activities. Member Andrew Liew asked for a bar menu at the Garden Lounge to go with the drinks and requested for better promotion of the Garden Lounge to attract a younger crowd. F & B convenor Benny Tay replied that it has held several events, such as the recent wine pairing dinner which was over-subscribed, and that there was a two-piece live band performance and sing-a-long sessions at the lounge every weekend. Before closing the AGM, club chairman Ng addressed the floor and thanked the seven outgoing members of the old committee, namely Mr David Lum Chin Weng (vice-president), Mr Ronald Ong Whatt Soon (treasurer), Mr Hia Hui Kim (vice captain), Dr Neo Eak Chan (H & R convenor), Mr Victor Lee See Ing (committee member), Mr Ken Lye (committee member) and Mr Soh Poh Theen (CAAS representative), and welcomed the new members.v

9 In theknow 9 Be the first to know about the latest club happenings and membership updates! 01 STAFF AED SIMULATION EXERCISE A real-time scenario cardiopulmonary resuscitation (CPR) and automated external defibrillator (AED) simulation drill was successfully conducted in early April, which saw 25 staff randomly selected for the exercise from Food & Beverage, Golfing, Sports and Security departments. They were assessed on their readiness and proper techniques carried out in case of an emergency situation. 02 OBTAINING AN OFFICIAL USGA GOLF HANDICAP Members, their spouses, children and guests must have a valid official Golf Handicap or must be in possession of a Proficiency Certificate recognised by the Greens Committee, before they can use the Golf Course. Members with Official Golf Handicap are to submit their Golf Handicap Certificate and will be able to start golfing upon joining the Club. After the member has submitted a minimum of five x 18-hole Scorecards, the handicap system will generate an Official USGA Golf Handicap Index. With an Official Golf Handicap, the member will be able to play golf on Weekdays, Weekends and Public Holidays. NOTE - Step 2 may be waived for Members who demonstrate exceptional Golfing Proficiency during the PC Assessment. Members are advised to be well prepared for PC Assessment.

Executive chef William Tay Teck Hock and chef Wai Yew Koon won silver medals at the prestigious FHA 2016 Culinary Challenge. The event, considered Asia s largest international food and hospitality event by the Food and Hotel Asia (FHA), is staged once every two years. It is the region s leading international culinary competition dedicated to the promotion of culinary excellence. With strong support from the World Association of Chef Societies (WACS), Singapore Chefs Association and regional chef associations, it is the arena for budding culinary talents. Chefs from around the world display their masterly skills at the event and are accredited by a panel of international-acclaimed judges. Executive chef Tay said that by taking part in such events, the kitchen team can be exposed to a new level of culinary skills and food knowledge. It will also be good for the individual s future development with this type of new food cuisine challenge. Chef Wai added: The dishes we did were about innovation and creation of new dishes that are always recognisable of a professional chef. 12 12 In the Spotlight DESPITE Disruptions, LOW AIMS HIGH Wee Jin hits the right notes in edging out Wong in sudden-death play-off The Club Matchplay Championship (Tan Puay Huat Trophy) Saturday, 26 March 2016 By Godfrey Robert There was very little separating the two protagonists. So it was no surprise that after 18 holes, they remained inseparable. It was The Club Matchplay Championship that teed off on 12 March and ended on 26 March and featured the best male amateurs of Tanah Merah Country Club. And when Low Wee Jin and Wong Qi Wen ambled onto the first tee for the sudden-death play-off, the small group of supporters knew there was going to be another tight contest. As expected it was par-par-par-par for the first four holes on the beautiful Garden layout. After 22 holes, the pair remained like Siamese twins: inseparable. The testing and challenging par-five fifth provided a great scenario for a break-up. And that came in the most unexpected of outcomes. Low and Wong matched virtually matched each other with their drives and second shots on the 470-metre difficult hole, the fairways flanked by trees and OB on the left and a line of trees on the right, with bunkers laid out at ideal spots to catch the errant shots. Wong was three-on, although he had a long 25-foot putt on a sloping green and Low went beyond the green and into the rough. Low chipped beautifully to about three feet from the hole, then Wong putted to about five feet away. The latter then missed the makeable putt while Low made his to bring an end to the stalemate. Earlier, Low beat Ken Sugino, George Foo and Daren Lim to secure a final place while Wong had the better of Mark Wee, Justyn Jagger and Russel Yu to grab his final spot. Low, 23, is no newcomer to winning club titles and national honours. He won the TMCC Club strokeplay title in 2013, after which two years in National Service which limited his training and playing saw rust get into his game. The scratch handicapper who is in the National Development Squad is however, bent on bringing his game back to where it belongs. Awaiting a place in the university, Low has been busy playing in many tournaments regionally and also the SGA Rankings events. Having been in the game for 13 years since his golfing dad Low Yeow Boon had introduced the game to him, Low has a deep passion and intense involvement in the game. The admirer of American star player Bubba Watson has been playing golf for five or six times every week these past few months since he completed National Service last November. Among his many titles, he cherishes his 2010 Singapore Junior Open title, which gave him a slot in the Handa Open, a professional event, at Orchid Country Club. While university studies could derail some of his golf plans, Low, with his natural talent and high interest, is bent on playing for Singapore in major events. And with a decent all-round game, built upon a 250-metre drive and an adept short game, Low is sure to remain in the big picture for golf, on the national scene. 13 JASMINE, In the Spotlight 13 THE Golfing EVERGREEN Matchplay champ enjoys victory, also has a good word for rivals TMCC Ladies Matchplay Championship Saturday, 26 March 2016 By Godfrey Robert Jasmine Chew loves a challenge. Especially if it s a sporting one. And if she wins she celebrates, and if she loses she accepts defeat graciously. For the affable Jasmine (course handicap 13) knows that in any contest, there must be a winner and a loser. At the TMCC Ladies Matchplay Championship at the Garden course in March, she won three matches to claim the prestigious title. And while she cherished her victory -- one among many she had won in her 12 years of golfing -- she also had a good word for all her opponents. Her first hurdle was a tough one in Fumiko Minowa (course handicap 16), her long-time partner in many club competitions who was this time on the other side of the fence. On the close match, Jasmine said: It was dormie with two holes to go after the 16 th. But Fumiko and I played bogey on the 17 th, but she cut the lead because she had a stroke. On the tough par-five 18 th, I hit my third shot from 90 metres beyond the green into water and played an eight. Fumiko played a bogey to take me into the play-off. After a short breather, the two good friends resumed battle on the parfour first where Jasmine parred, after a brilliant chip from outside the green to win as Fumiko played bogey. Jasmine had a tough 2-up victory over Yeo Su-Lynn in the semi-finals before lining up against a battle-hardened Boo Geok Ching (course handicap 14) in the final. But Geok Ching, who had a relatively easy 4 and 3 win over Jessica Tan in the semi-finals, caved in after nine holes when she trailed by only one. Jasmine parred the next six holes to leave Geok Ching to search for answers and concede the final. Jasmine put the victory down to her consistency and form, garnered through practice and play of three or four times a week. Another reason for the homemaker, who helps her husband in his business during her free time, to up the ante of her game, is that she is now an A Division club player who also turns out for TMCC in the SLGA Inter-Club League. Also a member of the Orchid Country Club, which she seldom visits, Jasmine has seen a phenomenal rise in her game, having also been runner-up in the SLGA Open last year. She used to admire Tiger Woods, but has ditched him since his matrimonial problems and is now an admirer of Rory McIlroy. I do watch golf on television, especially the highlights of the Majors, but it s nothing like watching golf live, says Jasmine, who had watched the HSBC Women s Champions and Lexus Cup previously. I love to watch the South Korean ladies, for their sharp play and smart attire, says Jasmine. It is said that the jasmine flower can be deciduous (leaves falling in autumn) or evergreen. Jasmine Chew, in her late 40s, is surely an evergreen when it comes to golf. 16 16 From the Greens Share and Care, FAIR AND SQUARE TMCC AND SHESHAN ENJOY FRIENDSHIP AND CAMARADERIE Saturday, 19 March 2016 By Godfrey Robert IT WAS ALL ABOUT SHARING AND CARING IN A YET ANOTHER FRIENDLY ATMOSPHERE. This annual meeting was a long awaited one, as it was postponed last year due to the reconfiguration of the Garden course. And the camaraderie and companionship extended beyond imagination, the Tanah Merah Country Club team and Sheshan team from China played the 7 th Inter-club golf match at the Garden course on 19 March. No efforts were spared in the entire planning process from both sides as they respectively presented gift packs to each participant, and in them were lots of goodies, such a T-shirts, shoe bags, towels, ball marker sets, golf pouches and other golf novelties.

17 From the Greens 17 A warm Kompang welcome for our guests from Sheshan Golf Club Not only was there nothing to separate the teams in the 7-7 final result for the golf match, the novelty events prizes were also shared 2-2 in what was a joyful occasion. Fifty-seven golfers donned their best attire for the Saturday afternoon four-ball match, on a bright day that brought out sunshine smiles from the players. And there was light-hearted humour and friendly banter throughout the day. For instance, TMCC club chairman Ng Kee Choe, at the dinner speech, related a story that he thought he was up against three Sheshan players as his partner Gabrijel Kobal wore the white attire -- that of the Sheshan team -- instead of the hue colours of blue. Said Mr Ng: That affected my game and caused me to lose my round, which saw the game end all square.

18 18 From the Greens Lunch and pre-game tournament briefing in progress As it was a draw, defending champions Sheshan retained the trophy. The Novelty events prizes were also shared, the winners being; Nearest to Pin, Hole 8 (Zhao Jian), Nearest to Line, Hole 6 (Cui Xinghu), both of Sheshan, and Nearest to Pin, Hole 6 (Lewis Tan) and Nearest to Line, Hole 18 (Daniel Koh). There was a rousing and warm welcome given to the Sheshan team on arrival for the golf game. The TMCC members were lined up to receive the Sheshan players to the accompaniment of drumbeat from the Sriwana Malay Kompang Troupe. Both Sheshan and TMCC players were fascinated by the Kompang drummers with many going up to take photos with the musicians. The players then proceeded to Heliconia Room for Lunch & Tournament Briefing, with the Kompang troupe providing a short performance before lunch commenced. There was formal player introduction under informal circumstances and this gave the occasion a special significance. The golf game had a mix of good play and friendly rivalry, where victories were applauded and defeats taken in the spirit of sportsmanship.

21 From the Greens 21 Cheers to strong ties between the clubs After the game, the players proceeded to the Garden Lounge for cocktail where they had opportunity to drink and mingle. Some even went the extra mile by signing each other s photo frame as a memory keepsake. As guests from both clubs streamed into the Garden Banquet Room for dinner, they were pleasantly greeted with an additionally well-thought-of-gift of each player s flight and group photo nicely encapsulated in a clear acrylic photo frame for each individual, to end off their day at TMCC. Dinner began with a short yet significant speech by Mr Ng, reciprocated by Sheshan general manager Roger Foo, who apologised for club chairman Richard Cheung s absence.

Then mementos were exchanged by the two clubs, with TMCC Chairman presenting a Limited Edition Year of the Monkey Royal Selangor Pewter plaque embellished with 24k gold to Sheshan s General Manager. After which Sheshan reciprocated with a beautiful crystal Following which a sumptuous dinner awaited. The players were first served a variety of interesting seafood dishes, including a broth served inside a coconut! They were then free to sample various local delights from a number of stalls, such as Satay Bee Hoon, Kueh Pie Tee, Prata with Five Spice Duck, and Laksa Noodles.

Alfred George Pillay s singing delighted the diners with his rendition of English songs and as George could not sing in Mandarin, one of the Sheshan players, Mo Jian Liang, sang the traditional Chinese San Bei Folk song. The golf prizes for the Novelty Events were presented by the club s vice president David Lum Chin Weng, who ended on a note of thanks to our sponsors, Mr Lewis Tan for the red and white wine, and Mr David Lee for the whisky, as well as both TMCC and Sheshan s staff involved in making the inter-club match an enjoyable and memorable one. Mr Lum then graciously handed the coveted trophy back to Sheshan s Mr Foo, following which the two teams took to the stage for group photographs. v

The team had gathered at Uma Uma Millennia Walk on 23 rd March 2016 for an evening of fun, laughter and team bonding. Members of the TMCC league team were joined by Mr Raymundo Yu, Mr Harry Tan, Ms Grace Chow, and Ms Maggie Chen from Columbia Threadneedle Investments, who have generously agreed to extend their sponsorship of the TMCC league team for Mouth-watering sticks of yakitori and flavourful gyozas were followed by a hearty bowl of ramen, washed down with a wide range of liqueurs and spirits. Over food and drinks, members of the TMCC league team reminisced about triumphant memories from previous seasons and discussed winning strategies for the year ahead. The new entry Rule 14-1b prohibits strokes made with the club or a hand gripping the club held directly against the player s body or with a forearm held against the body to establish an anchor point that indirectly anchors the club. WHAT THE RULE SAYS NOTE 1: The club is anchored directly when the player intentionally holds the club or a gripping hand in contact with any part of his body, except that the player may hold the club or a gripping hand against a hand or forearm. In making a stroke, the player must not anchor the club, either directly or by use of an anchor point. NOTE 2: An anchor point exists when the player intentionally holds a forearm in contact with any part of his body to establish a gripping hand as a stable point around which the other hand may swing the club. THIS IS NOT AN EQUIPMENT RULE Conforming mid-length and long putters remain permissible provided they are not anchored. 29 Golf Central 29 By Director of Golf, Ian Roberts TipsFROM IAN PUTTING DRILLS TO HELP LOWER YOUR SCORES One area to lower your golf scores is to have fewer putts in a round. As easy as this may sound in most cases few golfers practise their putting in any systematic fashion. Remember to improve we must be able to measure our performances against a bench mark target. Follow these 3 practice drills for success: 1. Use any two iron clubs or alignment sticks combination and lay them parallel towards the putting hole. Putt between the two golf clubs or alignment sticks approximately one metre away from the hole. After successfully holing 20 balls in a row, proceed to move the clubs or sticks further away and repeat the process. 2. Form a circle one metre in radius around a golf hole with six balls. Once you have holed all six in a row, you can then increase the distance and repeat the process three times in a row. 3. Place six tees apart approximately one to six metres from a given hole. The order of play should be as follows - tee 1, 6, 4, 2, 5 & 3. This makes you change the distance for every shot and you will have to hole out all six balls in a row to complete the cycle. A member of the Singapore Ballroom Dance Teachers Association and the United Kingdom Alliance, he has been actively teaching and promoting the art of Latin-American Ballroom Dancing. His works range from students both young and old, right up to people with special needs. Jovyn Low Jovyn Low comes from a family with ballroom dancing in their blood. In the 1930s, Jovyn s grandfather Mr Low Poh San was the pioneer of ballroom dancing in Singapore. In the 1960s and 1970s, Jovyn s father Mr Sunny Low was crowned the King of Rock & Roll. In the early years of 2000, Jovyn s two brothers, Alvyn and Melvyn Low, became Professional Champions in Ballroom Dancing. Jovyn has had the rare opportunity to learn under all these people and has widened his knowledge by learning from past and present champions from all over the world. 42 42 Participate Swim FOR LAPS 2016 SURPASSES MARK Sunday, 20 March 2016 Held on Sunday, 20 March 2016, at the Club s Olympic-size swimming pool, the Swim For Laps 2016 event concluded for a third successful year with better than expected results. The objective to break the 573 laps record set in 2015, saw it easily achieved even with just 34 members participating. This year s results saw a whopping final recording of 818 laps. And participant Janssen Tan contributed to the final results with the most number of laps, clocking in a total of 200 laps. The rules were simple. After registration and being assigned lanes, participants could begin swimming. Participants could contribute as many laps as possible, with a minimum one-lap requirement. They could swim at their own pace with no time limitations. And the recording period was taken from 9.00am till 5.00pm. Laps were recorded as they touched each end of the wall. Upon completion, participants were provided with light refreshments including sandwiches, curry puffs and drinks. 43 Fun in Action 43 SOFT TO THE TOUCH, YUMMY TO THE TASTE! SOFT CHOCOLATE BUNS Saturday, 5 March 2016 By Godfrey Robert Ever savoured the thought of those tasty soft, fluffy buns in the morning? Full body on the outside but springy on the inside. Add chocolate to that and you are bound to be over the moon with the first bite. Fifteen ladies were simply bowled over by Instructor Valerie Kong s heavenly soft and fluffy chocolate buns on the Saturday morning of 5 th March. Using the unique Japanese Yukone method, everyone had the hands-on opportunity to learn how to shape the buns as well as how to make three kinds of delicious fillings including chocolate lava, salty sweet custard and crunchy Nutella. As the buns were baking, the strong chocolate aroma wafting across was so inviting that everyone could not resist but ask for a slice to taste immediately as soon as it came hot out of the oven. Many oh s and ah s could be heard among the ladies, as they swooned over the taste of the buns like a kid in the candy store. In fact, most of the ladies attending the workshop were there just to learn how to make the buns for their children or even grandchildren. And they surely were bowled over too! v

44 44 Fun in Action BEAUTIFUL MULTI-COLOURED PLEASURES CHECKERBOARD & RAINBOW CAKES Saturday, 2 April 2016 By Godfrey Robert The sight of a rainbow usually leaves everyone in awe. The seven colours -- violet, indigo, blue, green, yellow, orange and red -- are vibrant and spectacular. Even as Valerie invited the participants to continue to try and assemble the cakes and ice them with white chocolate, those who were asked cohesively felt afraid they would spoil the pretty looks. Those colours were translated into cakes that were being created on the Saturday morning of 2 April. With allocated slices to bring home, everyone left delighted as though having found a pot of gold at the end of a rainbow. Exclamations of, Wow, the cakes look so pretty! could be heard among the 11 ladies and one gentleman who attended Valerie Kong s Checkerboard and Rainbow Cakes workshop. Look out for more kitchen workshops on page 40. v Valerie kicked off the morning baking session by demonstrating how to bake the sponge cakes first, following which she moved on to show how to assemble the cakes layer by layer. The excitement began to build as the layered cakes slowly took shape and the pretty colours began to accentuate to the likes of a rainbow.

46 46 Fun in Action A DRINK MADE FOR Men Chivas Nite Saturday, 27 February 2016 By Godfrey Robert It was a night for enjoying fine blended scotch whisky. And Chivas Regal was on the cards as 38 members and guests got together at the Garden Banquet Room on Saturday, 27 Feb, to savour this exquisite taste. The Chivas 18 Years was the highlight for the Chivas Nite evening. Meticulously blended by Master Blender Colin Scott, this uniquely rich and multi-layered whisky is produced using various malt and grain whiskies from distilleries all over Scotland, including classic Speyside malt from Strathisla. With a little history behind, Scott, who was born into a family of two generations involved in the Scotch whisky business, grew up around an Orkney distillery, and as though seemed destined, he joined Chivas in Under the guidance of Master Blender Jimmy Lang, he learnt all about the Chivas traditions in the art of blending and their house style of smoothness and richness. On Jimmy s retirement, Colin became the Chivas Master Blender in Colin then became the custodian of the signature Chivas Regal style, which in 1997, created Chivas 18. And what was fine whisky without good food accompaniment. From smoked salmon chowder soup to carving station provides of roasted sirloin and honey ham to main entrée dishes like tandoori chicken, ocean seafood, wok fried pepper beef and fried red snapper fillet, there was non-stop feasting. And drinks to go with it. Even F&B convenor Benny Tay, who is a whisky lover himself, enjoyed and was all smiles for the evening. To sweeten the already enjoyable evening, the dessert of Whisky Tiramisu Mousse served was good enough to blow everyone away. Overall, luxurious yet complex.v

47 Fun in Action 47 OH HOW GOOD THIS Wine TALK! Wine Pairing with Graffigna Wines Saturday, 9 April 2016 By Godfrey Robert Say Graffigna (gra-fin-ya), and you get a good roll of the tongue. Utter words such as Pinot Grigio and Cabernet Sauvignon, and you savour a good taste in your mouth. Wines are aplenty, but when you go for a branded bottle, you feel the exclusivity. That same feeling of uplifting was evident at the TMCC Wine Pairing Dinner with Argentina at the Garden Events Room on Sunday, April 9. To enjoy the evening, a bit of history allowed for much talk and banter as a well-received 60 members and guests enjoyed the evening. Santiago Graffigna, you see, was a passionate explorer, an Italian immigrant who arrived in San Juan in the 1860s. And he brought out a combination of the highest quality wines -- Malbec, Cabernet Sauvignon and Shiraz grapes from the high altitude vineyards in the Pedernel Valley that are of premium quality. Established in 1870, Graffigna is the oldest winery in San Juan and the second oldest in Argentina. So while wine talk also took the diners down memory lane and allowed them to revel in sentimentality, the five-course international set menu put them in the best mood for enjoyment, hilarity and laughter. The F&B convenor Benny Tay, a wine connoisseur himself, thanked Pernod Rica for the wine sponsorship. So Vol-Au-Vent d Escargots went with Graffigna Chardonney and Norway Salmon Fillet tagged along Graffigna Pinot Grigio. And what did Wild Berries and Fruit Gratin go with? The answer, Martell Cordon Bleu. Savour that. v

48 48 Fun in Action CopacabanaNight LIGHTS UP NEW BANQUET ROOM Copacabana Night Saturday, 23 April 2016 By Godfrey Robert The TMCC s popular event, the Social Dancing Night saw a new day. It was a new beginning, a fresh experience and had special significance. For the first time the event on Saturday April Copacabana Night -- was held at the newly renovated Garden Banquet Room. Previously it was always at the Garden Events Room. But after the Garden Banquet Room was renovated in record time of eight weeks (December 15, 2015 to February 16, 2016) and was officially re-opened on 21 February, and became a perfect venue for this interesting event. The new Banquet Room features a new high ceiling, mood ambience lighting capabilities, large space for dining and new timber flooring area for dancing. And the response was overwhelming, fully booked within a month. Ninety-eight diners, made up of 29 members and 69 guests, enjoyed the night to the accompaniment of live music by the fivepiece band, Adil & Friends. They have been together in the music circuit for more than 70 years put together. Their experiences and performances range from pubs, private/ members clubs, discos to nightclubs. And their repertoire of music ranges from pop, country, jazz, line dancing, ballroom dancing, country rock, and in different languages.

49 Fun in Action 49 The dashing couple, Jack Goh and Aurelia Hong, captured the audience s attention with paso doble (first performance) and samba (second performance). Jack is also one of the instructors who conduct dancing class every Friday at the club. Jack and Aurelia are regarded as one of the youngest and finest dancing couples in Singapore. The pair were the Singapore Professional Line Ballroom Dancing champions. They had also represented Singapore in Asian, Asian Pacific, British and World Championships and have been finalist in the Asia-Pacific region. They teamed up in 2007 and have been ranked No. 1 Southeast Asian in the World Professional Latin ranking from 2010 to There was a specially arranged quiz, conducted by the imaginative emcee Han May Leng, during the interval when dancers changed costumes after the first performance. She went on to thank the Mechanical & Engineering and Housekeeping Teams for their efforts in providing such a wonderful dance floor for the evening. One of the guests, Hector Wong, was given a surprise cake presented by his friends and the band played an apt birthday song. Food was aplenty -- from cold salad station to hot entree -- with a delicious spread, chef William taking pains to ensure that the food satisfied the hungry diners. And when it was time to call it a night past midnight, the diners -- who danced to the wee hours -- went home acknowledging that they had a wonderful time. The next Social Dancing Night, themed Waltzing Thru The Night, will be held at the Garden banquet Room on Saturday July 16.v
