3 MEMBERSHIP 3 A NEW YEAR AND A NEW PCC With a record breaking year in Membership year behind us; we set out in 2018 to continue to raise the bar of excellence at PCC with our scheduled golf course renovation and remodeling of the dining room. I m certain both our Golf Professional Staff and Food and Beverage Department will get creative to keep our Members busy while we are under construction and undoubtedly the finished product will be well worth the wait! Our last few Golf Memberships are still available so make sure to tell your friends who have been on the fence about joining that now is the time. 4 GENERAL MANAGERS MESSAGE 4 Dear Providence Members, We wish you a Happy New Year filled with health, happiness and all of life s blessings. On behalf of the entire staff at Providence Country Club, we would like to sincerely thank you for your generous contributions to the Holiday Fund was a fabulous year of growth for Providence Country Club. Starting with the exciting renovations made to our Golf Shop, Fitness Center and the Card room, Membership grew at record levels. We welcomed almost one hundred new families this past year, ending with a greater net gain in Membership than PCC has ever experienced. The McConnell brand, coupled with the great PCC facilities and staff service is clearly very strong and we now have a Full Privilege Membership waiting list. Operations in every department throughout the Club flourished this past year as Member activity and satisfaction grew substantially. We announced in early December, the exciting golf course renovations by architect Kris Spence would take place starting in February The news spread quickly as PCC became the talk of Charlotte. Please make sure to mark your calendars for Thursday evening, January 11 th at the Club for the presentation of the Golf Course Renovation Plan. Please make sure to go directly to our golf professionals for all reciprocal tee times throughout the period of our golf course project. We are also in the process of finalizing the renovation plans for our Culbertson Dining Room and Turnberry Lounge. We anticipate the lion s share of this work to take place in April and May. Food and Beverage operations for our Members will absolutely continue during the dining renovations and there should be no negative impact on our catering and banquet business. We are excited to be uber-creative with our F&B programming and we ll make good use of our additional meeting rooms and the favorable weather out at the West Pavilion and Turnhouse. We were very excited to break ground on both of these new projects and we will keep you apprised with more updates and details as they develop promises to be another very exciting year as we continue to grow and improve our facilities. We hope you are as excited about these awesome improvements as we are. We will continue to make every effort to limit any inconvenience to our Members and Guests. 6 FOOD AND BEVERAGE 6 HAPPY NEW YEAR First and foremost I want to thank all of our members for your support in 2017! We had a fantastic year again in the Food & Beverage Department. We had record turnouts for almost every Holiday event we hosted this past year. We did mix things up a bit in our social calendar with a live Comedy Show, a Murder Mystery Dinner, and our first annual McConnell Visiting Chef Series. We even brought back some events that had not been done for a while at PCC like the New Year s Eve Casino Night. As we move into the New Year we will continue to hold all of our monthly events; Birthday Night, Wine-Down-Wednesday, Family Night Buffet, and Champagne Brunch. The Chef and I will continue our Wine Dinner Series in 2018 by putting on some amazing wine dinners that will be second to none. We will be teaming up with some of the top wineries in the world to help showcase the talent that we have here at PCC. The renovations we did to the Fitness Center, Golf Pro Shop, Men s Card Room, and the new addition of the new PCC Playhouse were very exciting for everyone last year. I am sure most of you have heard the even more exciting news about the renovations we have planned for this year. The Golf Course, The Culbertson Dining Room, and the Turnberry Lounge areas of the clubhouse are all being updated! Trust me when I say that the staff is just as excited about these updates as the members are! With the renovations that we had done last year and the new renovations that are happening this year, Providence Country Club is a place anyone should be proud to bring their friends, family, and associates. The Food & Beverage Department is looking forward to surprising and impressing you this New Year. We have some new and exciting events for adults only and events for the whole family to enjoy. We hope to make a lot of new traditions for our new members that we have added to our family this past year and continue traditions for our more experienced members. 8 JANUARY EVENTS 8 GREAT TO BE BACK It is good to be back! Thank you for all of the well wishes for my baby boy and my family. For those that may not know, I am Jennifer Brown, the Events Coordinator, here at Providence Country Club. I work to create memorable member events throughout the year for adults, children, families, and various social groups. My baby boy, Flynn Archer Brown, was born on September 16, 2017 at 12:10am. He was 9 pounds and 7 ounces! He has precious red hair and chubby cheeks! Being just over 3 months old, he is beginning to talk more and more, and grab on to anything in reach. I am excited to be back to work, though I do miss my little Flynn when I m away from him. The Catering and Events Department is improving everyday for us to be able to provide the best service to you, our members, and our clients who host events here. I have so many ideas for this year s club event calendar, I can assure you that there will be something for everyone! Keep an eye out for an expanded summer program for children, as well as some new adult event ideas! Patterson III Sedgefield Country Club We wanted to choose a cookie that would be an opportunity for our Vegan Members to enjoy this month. We chose this as a true Vegan Recipe that will satisfy even the greatest of sweet cravings without the use of any Animal Products. Several variations and substitutions will allow you to create your ultimate Lemon Cookie. INGREDIENTS cups Flour (to make these gluten free substitute almond flour or coconut flour) cups Sugar 2 teaspoons Baking Soda 1 4 teaspoon Salt 2 tablespoons Lemon Zest 3 4 cup Canola Oil 1 2 cup Lemon Juice 2 teaspoons Vanilla Optional Ingredients ¼ cup shredded coconut, shaved almonds, almond butter, maple syrup, etc.) DIRECTIONS: In a medium bowl, stir together flour, sugar, soda, salt, and zest. Make a well in the center and fill with liquid ingredients. Stir together until well blended. Drop by teaspoonfuls about 2 inches apart on a cookie sheet. Bake for 8-10 minutes at 350 degrees F. Yield: 40 Half Dollar Size Cookies FEBRUARY COOKIE OF THE MONTH: CHEWY PEANUT CHOCOLATE CHIP COOKIES Dennis Freeland I Raleigh Country Club What can I say, chocolate and peanut butter is one of my favorite combinations! Enjoy! INGREDIENTS ½ cup Butter, softened ½ cup Creamy Peanut Butter ½ cup firmly packed Light Brown Sugar ½ cup Granulated Sugar 2 Large Eggs 1 ½ cup All Purpose Flour 1 tsp Baking Powder ½ tsp Salt 1 cup Semisweet Chocolate Chips ¾ cup Finely Chopped Peanuts 1 tsp Pure Vanilla Extract DIRECTIONS: Preheat oven to 350.Cream together butter and peanut butter. Add both sugars, mix until smooth. Mix together flour, baking powder and salt. Gradually beat into creamed mixture. Add chocolate chips, peanuts and vanilla, mix until blended. Drop the batter by the tablespoon onto parchment lined sheetpan. Bake until lightly browned, about 10 minutes. Let cool before removing. Yield: Approximately 30 cookies.

11 GOLF FORE ALL 11 FROM THE LINKS Welcome to 2018! The Golf Staff thanks you for a great 2017 and looks forward to all of the excitement the New Year will bring. With the closure of the course in early February, the Golf Staff is diligently working to secure reciprocal tee times in and around Charlotte. As a member of McConnell Golf, during the closure you also have unlimited access to other MCG facilities and we urge you to take advantage of this. Please contact the Professional Staff for any booking needs. The practice range will be open during the renovation and your professionals will be onsite eager to help work on your game and or practice regimen. Kevin KEVIN REARDON PGA Director of Golf GOLF TIP We ll all have a fair amount of time to devote to practicing during the close of our golf course. While working on your game, practice as if you were playing! After you are good and loose, play the golf course on the range. Take the club you d hit off the first hole, imagine a fairway on the range, and hit the tee ball. Don t hit the approach into the green until you ve hit the fairway you ve created in your mind. After the tee shot, grab the iron you d hit into the first green, pick a target green and hit a shot to that target. Add up the number of shots it takes to hit each fairway and each green. Keep score and try to beat your best score each time you practice. Practicing with a purpose will greatly help keep your practice sessions more meaningful. 13 GREENS AND GROUNDS 13 HAPPY NEW YEAR! We have a very exciting 2018 coming up. The course will be closing in February. We are excited to be having Kris Spence coming in to renovate PCC. He will be adding new bunkers, subtle green adjustments and reshaping of green complexes. Kris will be at PCC on January 11 for a meeting to share and discuss the plans for PCC. We will also be addressing some irrigation needs. The pump station on hole 4 will be replaced along with new central control system and new control boxes out in the field. We will also be removing trees throughout the course. We will be switching to an Ultra-Dwarf Bermuda grass on the greens. This variety of grass requires more sunlight which is the main reason for the tree removal. We also have several tees that the turf is not performing as well as we would like, so those trees around the tee boxes will be removed. The initial count for tree removal is approximately 438 trees. We would like to have as much of the morning sun as possible. We need to have a minimum of 8 hours of sun for the greens. Just keep in mind this is golf course and not a park. We are real excited about all the upcoming new bunkers. We will be constructing the bunkers using Capillary Concrete. This type of construction will prevent any wash outs and the bunkers will not be holding water. If you would like to learn more about these bunkers, then google Capillary concrete bunkers. There are several great you tube videos showing installation before and after. The bunkers will play better and be more consistent. This will be better enjoyment for the members to play. When the project starts, we will be updating the web page weekly. We will use this avenue to keep the membership informed on all the updates of the project. 16 FITNESS 16 EXPELLING THE TOP 5 MYTHS OF PHYSICAL THERAPY 1. All Physical Therapy is the same. Absolutely not! Physical therapy is as diverse of a profession as it comes. Therapists can have different paradigms of thought, different manual skills, different backgrounds, different clientele, etc., that can all dictate their style of treatment. Let s get you started with a session to get your NEW YEAR goals 30 minutes for $44 PCC s Fitness Class Pass Cards: One Class for $10.00, 10 Class Pass for $80.00 and 30 Class Pass for $ If you have any questions, please call the Fitness Center BUFFALO SAUCE AND QUINOA BITES Make the buffalo sauce. Combine the melted butter, olive oil, hot sauce and seasoned salt in a medium size bowl. Whisk to combine and set aside. In another bowl combine the quinoa, mashed cannellini beans, bread crumbs, egg, salt, pepper and 4 tablespoons of the buffalo sauce. Mix well to moisten the ingredients and then form into equal size balls (about 1/2 tablespoon to 1 tablespoon of the quinoa mixture). Squeeze the balls together tightly with your hands, being careful. Heat a large skillet over medium-high heat and add olive oil. Add half the balls to skillet and cook until golden and crisp on all sides, about five minutes. Gently (very gently) toss about 10 balls at a time with the buffalo sauce or you can dip each ball in the sauce as well, if you are afraid the balls will crumble. INGREDIENTS 1 teaspoon pepper 2 tablespoons butter melted 2 cups cooked quinoa 2 tablespoon olive oil 1 cup cannellini beans mashed 1/4 cup hot sauce I use Franks 1/2 cup panko bread crumbs 1/2 teaspoon seasoned salt 1 large egg lightly beaten 3 tablespoons olive oil 1/2 teaspoon salt 2. I know that I ll see at least two different therapists, techs, aides or assistants when receiving Physical Therapy. While unfortunately this has been a trend in outpatient Physical Therapy clinics, at Providence Country Club you will have the luxury of only working with Dr. Kuntz the entire time. This helps with continuity of care, rapport, and better results. 3. Well I don t want to deal with the referral to come see Dr. Kuntz. You don t need one! Lucky North Carolina is a direct access state, meaning you can schedule at your own convenience at any time to get started. 4. I ve had my pain for 5+ years, nothing can be done about it. Dr. Kuntz changes people s lives all of the time for the better, whether they ve had pain for 1 week, 1 year, or 10 years. Isn t it worth at least attempting to work with Dr. Kuntz to see if what his viewpoint is on your condition? 5. Well I ve already tried Physical Therapy 4x with other therapists, it doesn t work for me. Not so fast! Remember question 1? Lucky for you this scenario is a similar one for Dr. Kuntz.
