2 PAGE 2 THE MALLARD TIMES A MESSAGE FROM DAVE CRAIG, GM/COO As the pool season ends this weekend, we look forward to keeping our Pool and Racquets Members engaged and frequenting the Club. It is a priority of our long-range planning to make Chester Valley Golf Club a year-round destination and to offer programming, events, and activities to keep you involved. We look forward to the upcoming tennis and paddle activities and we are encouraging all members, including Social and Pool/ Racquets, to enjoy the golf practice range and golf course as time permits. Both memberships provide golf rounds as part of the membership and, for any member that has paid the range fee, we encourage you to use the practice facilities. Remember to seek out one of our golf professionals for a golf lesson or two for better enjoyment of the golf facilities. The fall is the best golfing weather, in my opinion, and we hope to see all of our members enjoying racquets and golf in the coming months. In the fall there is also football! On television of course and our September CV After Hours features football. We will be switching gears and instead of live music, we will have live football, on television of course, as Penn State takes on Illinois. Friday, September 21 we will be hosting a tailgate CV After Hours. Look for more details from the F&B department through the Social Happenings blasts as well as a solo blast or two leading up to the event. Look for an added golf event that evening from Doc and the golf department. We will be hosting a nine-hole event open to all members with golfing privileges on a first-come basis. The golf event will be a complement to the social party with only a small entry fee for the prize pool. We hope you will be able to join us for the Penn State tailgate CV After Hours September 21 st. For those of you joining us for the Duckhorn Wine dinner that evening, we are happy that many of you will be joining us for nightcaps and camaraderie at 9 pm game time when you have completed your fine dining experience. I d like to report that we ve had several members contact us regarding the new Junior Legacy Membership and we hope this will be utilized by our year-old former family members to continue their association with the Club. As a reminder, we are taking five of these new members annually and this will be on a first-come basis, so please contact Greg Scherbak at greg@cvgc.org to reserve your Junior Legacy membership for 2019, or to get more details to share with your junior nearing junior legacy age. The early morning golf program is off to a good start with a wide variety of members taking advantage of some early morning golf and exercise. We thank you for your participation and we are glad that this added value program could be provided to the membership thanks to the Golf Committee and Board, not to mention with the cooperation and assistance of both the Golf Department and Greens Department. Finally, remember these facts about golf and help us to promote the game to friends, family, and associates as we continue to build the CVGC Membership: Golfers live 5 years longer than those that don t play. Regular physical activity decreases the risk of over 40 major chronic diseases. Golf has a positive impact on cholesterol, body composition, metabolism, and longevity. Regular physical activity decreases the risk of anxiety, depression, and dementia. Chief Medical Officers of the major golf tours and the World Health Organization urge all adults to take at least 150 minutes of moderate activity per week to assist in remaining healthy. Just as golf can help attain these outcomes, so too can tennis and paddle, so we look forward to increased participation in all of our CVGC athletic activities! See you around the club! I m sure at this point you have heard about paddle, (aka "platform tennis"), but you might not know much about it and we would like to change that! As we get ready to start our fourth year with the courts, we have more room to grow. We added new teams to both the men s and women s program so that our new players have a team they can join. We offer weekday evening and Sunday morning clinics for the men and daytime and Tuesday evening clinics for the women. We run a junior session mid-day on Sundays. In addition, we are also available for private, individual and group lessons. Please keep your eye out for s with clinic times. We have options for all skill levels; whether you are a total beginner, or an experienced veteran. If you have never been on the court and would like to try it on your own, with a spouse, or a with friend, please jpoletti@cvgc.org and we would be happy to give you a free minute paddle introduction. 4 SEPTEMBER 2018 PAGE 4 COOKING WITH CHEF BEN Sticky Toffee Pudding Ingredients Pudding 1/4 cup (1/2 stick) unsalted butter, room temperature, plus more for pan 1 1/2 cups sifted all-purpose flour plus more for pan 1 1/2 cups chopped pitted dates (about 6 ounces) 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon sea salt 1 cup sugar 1 teaspoon vanilla extract 2 large eggs Sauce 1 1/4 cups (packed) light brown sugar 1/2 cup heavy cream 1/4 cup (1/2 stick) unsalted butter 1 teaspoon brandy (optional) 1/2 teaspoon vanilla extract Whipped cream or vanilla ice cream 6-cup Bundt pan or 6 one-cup Bundt pan molds Directions For pudding: Preheat oven to 350 F. Butter and flour Bundt pan. Bring dates and 1 1/4 cups water to a boil in a medium heavy saucepan with tall sides. Remove from heat; stir in baking soda (mixture will become foamy). Set aside; let cool. Whisk 1 1/2 cups flour, baking powder, and salt in a small bowl. Using an electric mixer, beat 1/4 cup butter, sugar, and vanilla in a large bowl to blend (mixture will be grainy). Add 1 egg; beat to blend. Add half of flour mixture and half of date mixture; beat to blend. Repeat with remaining 1 egg, flour mixture, and date mixture. Pour batter into mold. Bake until a tester inserted into center of cake comes out clean, minutes. Let cool in pan on a wire rack for 30 minutes. Invert pudding onto rack. DO AHEAD: Can be made 1 day ahead. Cover and let stand at room temperature. For sauce: Bring sugar, cream, and butter to a boil in a small heavy saucepan over medium heat, stirring constantly. Continue to boil, stirring constantly, for 3 minutes. Remove from heat; stir in brandy, if using, and vanilla. DO AHEAD: Can be made 4 hours ahead. Let stand at room temperature. Rewarm gently before using. Cut cake into wedges. Serve with sauce and whipped cream. Ben Hollinger, Executive Chef

Between lessons, clinics, and the constant practicing our members enjoy, turf management is as much your responsibility as it is the responsibility of our staff. Working in trenches minimizes the amount of space used on the tee and maximizes the effectiveness of our staffs tee rotation scheme. Whether at the practice range or the chipping green, please practice like a pro! With the first part easy to figure out, they can get access to other online services and data or even spoof your addresses to others. Variety is the spice of life. Introduce it to your addresses. Chester Valley Golf Club has proudly partnered with Jobecca Technology Group over the past decade for all the Club s IT needs. Jim Angelucci, Controller FALL COCKTAIL RECIPE Apple Cider Old Fashioneds Ingredients 1/2 c. ice 2/3 c. apple cider 2 oz. whiskey 2 dashes Angostura bitters Apple slices, for garnish Cinnamon sticks, for garnish Directions Combine all ingredients in glass and stir to combine. Serve.

The only saving grace for us this year was that during these wet spells, temperatures did not skyrocket.

7 PAGE 7 THE MALLARD TIMES GREENS NEWS It has been an unusual summer to say the least - if what we experienced you want to call a summer. To date, we are approximately 22 above average for the year with 18 dumped on us in July and August. The only saving grace for us this year was that during these wet spells, temperatures did not skyrocket. Turf managers would have been better off hanging their hats because turf loss would have been widespread. As we have said in previous updates, we can manage drought and we can manage wet but wet and heat spells disaster. Another consequence of this being a wet year is the development of the root system of the turf plants. Because the ground was so saturated in the spring due to all of the wet weather, the roots were happy where they nestled and did not need to search for deeper anchorage in the ground. Shallow rooting poses threats to turf due to all the stress it undergoes throughout the playing months (ex. heat, mechanical, foot traffic). Caution will be weighed when we aerify near the end of September as a result of what transpired this season. Needless to say, we are not out of the woods yet. September and October have been notorious months in the past for turf loss and this year would be no exception. If we were to run into dry spells, we would now be going from one extreme to the next. Because of shallow rooting, the plant is weaker than expected, therefore requiring faster attention. You might have seen some of our guys out with hoses and wondering why are they watering when we recently had all this rain? It doesn t take much when we run into these circumstances. We want to take a quick opportunity to alert every one of the new signage that was installed to the right of hole #4. There are 2 signs installed to the right of #4 kindly notifying staff, caddies, and golfers not to trespass onto Linden Hall in search of or retrieval of golf balls or for any other reason. As we turn the corner to the fall season, we are keeping our fingers crossed for excellent weather. Autumn gives Chester Valley the opportunity to showcase its landscape with all of the beautiful colors that come to foliage. We want to thank everyone for your patience and understanding with our maintenance practices, and we will keep everyone informed of any future endeavors out on the golf course. 8 PAGE 8 THE MALLARD TIMES FOOD & BEVERAGE NEWS Our Food & Beverage Seasonal Help is Off to College! Just like that, they are gone. Earlier this year we hired 26 new faces to take care of our membership during the busy summer season. All but 2 are back to school and we are thankful for their patronage. As we prepare for a busy fall schedule, like Dave Craig mentioned in his last GM update, the Food & Beverage department will be ramping up their hiring process and bringing in some new faces to join the Chester Valley service team. As we provide proper training for our newer service team members, we encourage your patience and feedback throughout the transition. One way to better serve you and help us achieve our goal of excellence in our service program, we ask the membership to make dining reservations for lunch and dinner. Walk-ins are always welcome for regular dining, but the more prepared we are, the better the staff will be able to exceed your expectations. We are excited about the busy fall season and we hope to see you at the club soon! Reservations or via our website Andrew Tuffner, Food & Beverage Director MEMBERSHIP NEWS First off, I would like to thank all our members who have acted as ambassadors for the club this year by bringing in prospective members. Whether your prospects ultimately ended up joining the club or not, I truly appreciate your help in spreading the word. I have enjoyed getting to meet your friends, neighbors, and colleagues while taking them on tours of our campus. I wanted to use my article this month to inform you of a courtesy that we offer for any member who is looking to entertain a prospective member for golf. In an effort to continue to grow a strong membership, Chester Valley has opened a tee time slot every Saturday at 2 PM for members to entertain a prospective member. Included in the day will be a round of golf, cart, lunch and a beverage for your guest. Greens and cart fees will be waived for the guest and a twenty ($20) dollar credit will be applied to the member's account to cover lunch and beverage. In order to reserve the 2 PM tee time, members must contact either Jonathan Doctor at jdoctor@cvgc.org or Greg Scherbak at greg@cvgc.org to make the arrangements. If the tee time has not been reserved by Thursday afternoon, the slot will be released back to the membership. The Membership Committee asks that you bring your prospective member an hour early, so you may give them a personal tour of the club before you golf and introduce them to members and staff. The Club appreciates all efforts taken by the members to show their club to friends, family, and acquaintances. Greg Scherbak, Membership Director
