1 2013 HENRY COUNTY MEAT ANIMAL & HAM SALE PROGRAM Objectives: Provide members the opportunity to learn about meat production. Provide members the experience of owning and caring for an animal or ham. Provide members the opportunity to exhibit their animal or ham. Provide members the opportunity to market their animal or ham. Requirements for Beef, Sheep, Swine, Rabbit, Poultry, Goat and Ham Projects: Enroll by specified date listed in the individual project section. Attend mandatory meetings. (Attendance required for members) Dates and locations are listed in the individual project section and on the calendar on the last page of these rules. Mark your calendar and make arrangements to attend. Seller is limited to selling only one hog, sheep, steer, pen of rabbits, pen of poultry, goat or ham. Sellers must participate in the Herdsmanship Contest in the category they are selling. Members may participate in the Herdsmanship Contest in each category in which he/she shows. If a 4-H/FFA member is enrolled in more than one project category, the member will be allowed to choose which project animal to sell after the show at the Henry County Fair. Own and care for at least 1 steer, 1 hog, 1 sheep, 1 goat, 3 rabbits, 4 chickens/ducks and/or 1 ham. Steer must be owned by March 2, 2013, hogs, sheep and goats by May 1, For rabbits and poultry, please refer to that specific individual project section. It is recommended that members have two sheep or hogs (one for a back-up) if they are in these projects. Be a member in good standing of the Clinton FFA, Windsor FFA, Montrose FFA, or a 4-H club registered in the Henry County Office or a resident of Henry County and a member of an adjoining county FFA or 4-H club. A member is limited to selling in only one premium sale in only one county. No individual will be allowed to sell beyond the summer immediately following their graduation from high school. (Example: A May 2013 high school graduate may sell in August 2013 but cannot sell in 2014.) All members must meet Missouri MQA Certification requirements. See page 7 for details. Exhibit your project at the Henry County Fair; hams must also be shown at the Missouri State Fair. Members must show their own animals at the Henry County Fair. Any requests for hardship exemptions must be presented to the Sale Committee, in writing, through the Extension Office prior to the date of the mandatory meeting or June 1 whichever is earlier. Members must sell their own animal (or ham) at the sale unless they are attending a postsecondary school at the time of the sale. If an exhibitor is injured or in case of illness, another youth exhibitor may show or exhibit the animal at the sale. Written notification must be received by August 1 to the Sale Committee, but please notify them as soon as possible at henryco@missouri.edu or by mail to MU Extension, 100 West Franklin, Clinton, MO Projects must be of blue or red ribbon quality to sell. All beef and swine will sell by the pound; rabbits and poultry, by the pen; sheep and goats by the head. Rabbits, poultry, goats and sheep will sell for premium only. Hams must be shown at the county and State fair to sell. Members must participate in the Herdsmanship Contest to sell. The contest consists of providing a written record/story and an interview. On the day of the Show at the County Fair, all members must 1

2 submit the following record to the Sale Committee for Herdsmanship Contest. Ham members interview at the County fair, usually in the evening on the first Monday. a) Date and cost of animal/ham purchased or started in project. b) Weight of animal on March 2 for steers; weight of hogs, goats and sheep on May 4. c) A one-page story written by member outlining what they did in their project. Include information such as expenses related to your livestock, animal health (worming/medications or vet visits), and any other related information. You must submit a written record/story about your project and interview to be eligible to sell. d) Ham members need to relate how they cured their ham, where they hung it, and tell what they have learned educationally in the ham project. Animals may be fed with brother s or sister s animals that are also project animals. The animal must be fed and cared for by the members. Animals must be separate from non-project animals during this period of time. Herdsmanship Awards: Herdsmanship awards will be given in all species including hams according to age groups. Selection for the Herdsmanship Award is based on the following: a) Written records/story member submits (see 2a, 2b, 2c and 2d above). b) Individual interview with a member of the Sale Committee to be held the day of the show at the fair during July. Ham members interview at the County fair, usually on the first Monday evening, when hams are entered. c) Members presentation at the Fair as observed by the Sale Committee members. Special Steer Requirements: Members must attend the mandatory meeting January 28, 2013 at 6:30pm at the Clinton Technical School. If a member is unable to attend this meeting they must submit a letter to the Sale Committee prior to the meeting and attend a meeting for another species. Steer must be at weigh-in on Saturday, March 2, 2013, at 9:00am at the fairgrounds. Steer must be halter broke at weigh-in day. No steer replacements will be allowed after weigh-in day. Steers will sell at the Ag Appreciation Dinner on August 19, 2013 (tentatively). Weigh-in the day of the Ag Appreciation Dinner will be at 3:30pm. All animals must be at weigh-in. All sellers must arrive by 5pm to show their steer in sale order show. Anyone who cannot be there at the Sale Order Show must write a letter by August 1 to the Sale Committee. Steer Rate of Gain Contest: An Award will be presented to the member whose steer has the greatest rate of gain between the beef weigh in March 2, 2013 and the beef show at the Ag Dinner. a) Steer must weigh at least 1,000 pounds on sale day. b) Steer must have been born in calendar year

3 Special Swine Requirements: Seller must attend the mandatory meeting January 28, 2013 to be eligible to sell. If a member is unable to attend this meeting they must submit a letter to the Sale Committee prior to the meeting and attend a meeting for another species. A hog must weigh a minimum of 220 pounds and should be no more than 290 pounds on the day of the hog sale. Any hog weighing more than 290 pounds may be sold but premium will only be paid on 290 pounds. May 4, 2013 at 9:00am Hogs must be weighed-in at the Henry County Fairgrounds and be tagged with a special Henry County tag. Certified herds will be weighed and tagged on the farm by a Sale Committee member that same day. Swine Rate of Gain Contest: An award will be presented to the hog that has the greatest rate of gain between May 4, 2013 and the fair date in the middle of July Hogs will sell at the Henry County Fair on July 18, 2013 (tentatively). Ham Project Special Requirements: Members must attend a mandatory meeting December 20, Member must attend the Ham Curing session January 8, Hams will remain at Hetherington Meat Processing Plant until Saturday, February 16th. Members are responsible for picking their hams up that day, between 8am and 12pm. Hams will hang at the members home from February to early July. At that time, the hams will be taken back to Hetherington Meat Processing for smoking. Tentative date for smoking is July 8, 2013; notices will be sent out. Hams will be exhibited at the Henry County Fair on Monday, July 15, 2013(tentatively). Members must prepare a report and participate in an interview to be eligible to sell. The interviews are held during the Henry County Fair in July on Monday night (tentatively July 15, 2013). The written record/story and an interview should include date started, weight of ham, and cost of ham purchased. Members should tell what they did in their project and relate how they cured their ham, where they hung it, and tell what they have learned educationally in the ham project. You must take your ham home from the HC fair on Friday, July 19, between 6 and 7pm (tentatively). The hams will go to the Missouri State Fair on Tuesday, August 6 (tentatively) and will come back to Clinton on August 18 (tentatively). The hams will be put in the Cook Shack at the Henry County Fairgrounds. Monday night, August 19, before the Ag Appreciation Dinner, you will come to the 3

4 cook shack, clean your ham and get ready for the sale. Hams will be sold at the Ag Appreciation Dinner on August 19, 2013, (tentatively). Hams must be exhibited at the County Fair and State Fair in order to sell and will be sold in order of points earned at the State Fair. Projects must be of blue or red ribbon quality to sell. Those hams that are determined not appropriate for sale (by the judges) will not be sold at the sale. Members must be present to sell. If you have a conflict you must write a note to the Sale Committee by Thursday, August 1, Sheep Special Requirements: Lamb must weigh at least 85 pounds the day of the lamb sale. Members will attend a mandatory meeting January 28, 2013 at 6:30pm at the Clinton Technical School. If a member is unable to attend this meeting they must submit a letter to the Sale Committee prior to the meeting and attend a meeting for another species. Sheep must be weighed-in on May 4, 2013 at 9:00 am at the fairgrounds. There may be an optional fitting clinic. An award will be presented to the sheep that has the greatest rate of gain between May 4, 2013 and the fair date in the middle of July Sheep will sell at the Henry County Fair on July 18, 2013 (tentatively). Rabbit Special Requirements: Members must attend a mandatory meeting April 29, 2013 at 6:30pm at the Henry County Fairgrounds. If a member is unable to attend this meeting they must submit a letter to the Sale Committee prior to the meeting and attend a meeting for another species. Member must own doe at time of kindling. Rabbits must be tattooed by or assisted by project leader. Rabbits must be Market Rabbits and no more than 10 weeks old. Market rabbits must be shown and sold in pens of three. The total weight must be between pounds and the same breed or same general appearance. Rabbits will sell at the Henry County Fair on July 18, 2013 (tentatively). Poultry Special Requirements: Members must attend a mandatory meeting April 29, 2013 at 6:30pm at the Henry County Fairgrounds. If a member is unable to attend this meeting they must submit a letter to the Sale Committee prior to the meeting and attend a meeting for another species. Chickens must be pullet or broiler chickens to sell. Chickens/market ducks must be shown and sold in pens of four. Chickens/market ducks must be owned within one week of hatching. 4

5 Market ducks must be no older than 12 weeks. Poultry will sell at the Henry County Fair on July 18, 2013 (tentatively). Goat Special Requirements: Members will attend a mandatory meeting January 28, 2013 at 6:30pm at the Clinton Technical School. If a member is unable to attend this meeting they must submit a letter to the Sale Committee prior to the meeting and attend a meeting for another species. Goats are required to be weighed-in on May 4, 2013 at 9:00 am at the Henry County Fairgrounds to be eligible to sell. Goats must be a meat breed. An award will be presented to the goat that has the greatest rate of gain between May 4, 2013 and the fair date in the middle of July Goats will sell at the Henry County Fair on July 18, 2013 (tentatively). Program Cost: A sale commission of a minimum of $20 or 4% of the sale price (whichever is greatest) will be withheld from the sale of all projects. The sale commission is used by the Henry County Sale Committee to operate the program. Program costs include purchasing of weight scales, fees required by judges, trophies and monetary awards, t-shirts, photo printing, frames, copying, mailings, etc. Thank you Notes: Thanking buyers in person and with a thank you note helps maintain a positive image for youth livestock and promotes good public relations. A copy of the thank you note that is given to your buyer must be presented to the Extension office before members will receive their sale check. If a copy of the thank you note is not received by two (2) weeks after the auction the sale check will be reduced by 25%. This penalty is intended to encourage members to write their thank you notes in a timely manner. Enrollment Procedure: Members enroll by completing the gold enrollment form and submitting it to the Sale Committee Secretary at your designated meeting date. It must be signed by the members parents to be complete. You may mail it or hand-deliver it to (MU Extension, Courthouse - Rm. 16, 100 W. Franklin, Clinton, Mo ). No enrollments will be accepted after your mandatory meeting date. Dress Code: Members will be required to follow a dress code during the sale. Members must wear their sale shirt, long pants and closed toed shoes. Shirts must be tucked in the pants. No hats are allowed in the show/sale ring. Carcass Shows: Individuals may show more than one carcass in the carcass show if the individual has their own buyer the night of the regular sale. The Sale Committee will not be involved with the financial negotiations 5

6 of these animals. The carcass shows will continue to rotate between Hetherington s Meats and Remer s Meats. For 2013, the swine and sheep carcass show is at Hetherington s Meats and the beef carcass show is at Remer s Meats. The Carcass show is an educational part of the livestock project and members are encouraged to attend. Prizes are awarded by the Henry County Sale Committee to the top five carcasses per specie as follows: Champion carcass receives $100 and 2 nd, 3 rd, 4 th and 5 th place carcasses receive $50, $30, $20, $10 respectively. Members will learn more details at the mandatory meeting. Rules are based on Missouri State Fair guidelines. If parents purchase their child s livestock carcass they must write a check for the carcass. The cost of the carcass will not be deducted from the member s sale check. Meetings will be held at the Youth Enrichment Building at the Henry County Fairgrounds, unless otherwise noted above. *Missouri Show-Me Quality Assurance program (MQA) is a certification program for Missouri exhibitors showing food production animals. Members must attend this course two consecutive years as a Junior (ages 8-13) and one year after as a Senior (ages 14 and older). If you have questions concerning this please contact the Henry County Extension Office or your Ag Instructor. All members selling beef, sheep, swine, and goats are required to attend the Henry County Jackpot Show. If you have a conflict with the date please submit a letter to the Sale Committee in advance and make plans to attend in a surrounding county.
