2 Sea-Doo Fun on the River (Continued) Oaks Park Fun Somerset went to Oaks Park and had a blast. We went on roller coasters and train rides, then met up afterwards and had ice cream. Everyone who went had a blast catching up and telling the staff stories about old times at Oaks Park.
3 Somerset Welcomes Our New RN, Elyse Hunt Somerset welcomes our new RN, Elyse Hunter. Elyse is excited to get to know everyone at our facility. New Summer Desserts at Somerset INGREDIENTS Fruit Puree: 2 cups fruit, such as peaches, strawberries and blueberries 1/2 cup sugar Juice of one lemon Coconut Yogurt: 1 cup plain thick yogurt 1 1/2 cups powdered sugar 1 tablespoon coconut extract Garnish: 1/2 cup unsweetened coconut flakes DIRECTIONS For the puree: Blend together the fruit, sugar and lemon juice in a blender until smooth. For the yogurt: Whisk together the sugar, yogurt and coconut extract. Pour into Popsicle molds, alternating layers of the fruit puree and coconut yogurt, and then insert sticks. Freeze until the pops are firm, about eight hours. For easy removal, dip the bottom of the molds into hot water for a few seconds to loosen the pops. Remove the pops from the mold, dip into the coconut flakes and serve. Employee of the Month: Amanda Repp-Brown Employee of the Month is Amanda Repp-Brown. Amanda is one of our housekeepers at Somerset. Amanda was recognized by management and residents. The residents love seeing her when she works. She always makes sure that the residents rooms are clean and smell good. Amanda is always willing to stop what she is doing to help other staff when they need it. We thank Amanda for being a wonderful housekeeper and having a good attitude towards everyone at Somerset Assisted Living. Resident of the Month Our Resident of the Month is Van Vandomelen. Van has been noticed by management and staff. Van always has a smile on his face and is always saying hi and asking the other residents how they are doing. Van also tries to help the new residents that move in feel right at home. He is always walking up and down the hallways trying to encourage residents to try new things. We thank Van for always having a smile on his face and having a positive attitude with everyone at Somerset Assisted Living.
