DECEMBER CARMEL VALLEY ATHLETIC CLUB 2018 COMMUNITY MU connection It s hard to believe that this is our last newsletter of 2018! This year has gone by quickly, but has left us with many good memories. This year has been filled with projects that we hope have enhanced your club experience. We also opened the new cycle studio last spring, and we have seen a dramatic increase in our class attendance, both live and virtual. If you haven t joined in, make it a resolution for 2019 and try an exhilarating, low-impact workout. New tennis lighting is now paying off during the shorter days, and the new resurfacing has been noticed by much of our tennis community! Early in the year, we made several improvements to Refuge that benefited our All-Inclusive members, who enjoy monthly passes in their membership. If you re interested in upgrading your membership, and giving yourself the gift of relaxation this holiday season, give Jeff Reyes a call. As we move closer to the holidays, remember to check the club and GroupX schedules. The club will be closing early on December 24th, 25th and 31st. As a gift to our members, we are offering a free guest day every Wednesday in December, so come by and bring in family or friends. Our treat! We will be hosting our annual Holiday Social & Wine Tasting on December 20th in our lobby library. We hope you will stop by and raise a glass to celebrate the New Year. On behalf of our owners, our management team and our staff, I would like to take this opportunity to send out a heartfelt thank you to all of our members, for your continued support and friendship throughout the year. James Kellogg General Manager Shaved Brussels Sprouts Salad with Sweet-and-Spicy Nuts & Honey-Mustard Vinaigrette Some version of deep-fried Brussels sprouts holds a spot on seemingly every restaurant menu right now, but many people don t realize that, when thinly shaved, Brussels sprouts can also be enjoyed raw, like a lettuce green. Marinating them in a wholegrain honey-mustard vinaigrette helps soften the sprouts and infuse them with flavor. A combination of shredded and shaved Parmesan cheese adds texture and salty pops of flavor. George and I especially love to serve this side dish when entertaining during the holidays, since Brussels sprouts are seasonal in winter, and it can be made in advance and served cold or at room temperature. MEMBER SPOTLIGHT CaROLInE CHaMBERS When did you join CVAC? We joined at the end of May. We had no idea this place existed. I d heard about Refuge, so I brought George up for our 10 year anniversary. We spent the day at Refuge and on our way out we were like what is this beautiful lodge. We sort of scoped it out and the following weekend there was an open house and we joined on the spot. We ve only been members for six months but we spend more time here than most members. James makes fun of us all the time and says I m going to start charging you rent! I work out every day. I do a Pilates or barre class at 11am and stay until 4pm if I m playing tennis later. Sometimes George will join me for lunch and we both work in the lobby. It s become our co-working space. It s one of those places where it s comfortable and quiet. Tell me about your cookbook. It was released on October 16th. I ve been working on it for 2 years now and this is my first book. I m a freelance recipe developer, which means I develop recipes for brands, magazines, publications, but this is my first solo shtick in the cookbook world and it s been pretty thrilling. What did you do for the launch week? Well, I m pregnant and as of next week I can t take any more flights. I flew to the East Coast and had three events in three days all over North Carolina. I sold out of my books at all the events! The cool thing about this book is that it is an evergreen concept. When Ina Garten publishes her cookbooks it s all go-go-go on press and everyone wants it then. This is a gift item that will have a longer burn. People will always need an inexpensive wedding or engagement gift. How did you get started in cooking? I didn t go to culinary school. I grew up cooking with my mom, who s just an amazing Southern home cook. With home cooking, you re not as efficient or clean and your processes aren t as smooth as they could be, but I learned to love to cook from her. I worked in advertising after college because I couldn t really figure out how to turn my love of food into a career. Then my husband George, a Navy SEAL, was stationed in Coronado, San Diego. After the move, George encouraged me to take a few months and figure out what I could do in the food world. Eventually, I starting a catering company called Cucina Coronado. It was the number one catering company on Yelp for 2 years, which was a huge accomplishment for a Boutique operation. While I was doing that I started to get requests for styling food for photo shoots. As I got bigger and bigger clients and started building a portfolio, it turned into a full freelance career. The look has always driven the way I think about food because you eat with your eyes first. I had a friend who showed me how to photograph my own food so that I could have a trifecta. Most people are just recipe developers or food stylist or food photographers. I m a really great recipe developer, who can also do the other two things. Why a newslywed cookbook? I ve been a recipe developer for 5 years now. During the first year of working full-time, I realized that I had accidentally spoiled George. He had no idea how to even boil a pot of water. I started looking for recipes for two. I found that most

recipes are scaled for six and that cookbooks that are scaled for two are hyper-feminine. They re pink, frilly and all about the woman cooking for the man. They are outdated. Eventually I met the right publisher who wanted a newlywed with an interesting story, who had a lot to talk about, and a lot of interesting experiences. It just clicked. The recipes very much weave the story of our marriage. Has your routine changed now that you re pregnant? My tennis is more limited. We were playing 5 hours of tennis on Saturday and Sunday. Now I ve limited myself to the beginner s group. I m also in Pilates and barre. Jordan,, and Leah are really great at paying attention to me. They are really good at giving me modifications. It s the perfect way to break up my day because I work from home. It like my lunch/spiritual hour. How do you stay motivated? George is a huge motivation to me. He is constantly working to better himself, our marriage, and our lives. He is an inspirational force. I also have big dreams in the cooking world. Some days I want to start a line of packaged goods for supermarkets and other days I want to be the next Ina Garten. I am always working to better my personal brand. I have never had as much of a routine as I currently have. It has really helped me structure myself and my goals and my deadlines. What are the biggest cooking mistakes you see in the kitchen? People say I would make this, but I only have a red onion or yellow onion, or oh shoot apple cider vinegar is so expensive. Make swaps. Use your noodle. Novice cooks get intimidated by going off script. They think that by swapping out oil for butter or switching one vinegar for another it is going to mess up the whole thing. They get intimidated and forget to have fun. What is your favorite part of CVAC? The community that it provides. George and I moved here in June of 2017 and we didn t know a soul. In June of 2018, we still didn t know anyone. The second we joined here we got talked in to playing tennis and made all these friends. Then I started Pilates classes and now I have a group of women who I love seeing every day. It feels good to have this community of people who look out for us and our well being. It s made us feel like we really belong in this area. We were considering moving to Santa Cruz when our lease was up and CVAC is the reason we are not moving. I know I sound like I am tooting your horn, but it s true. What s next? I absolutely loved working on the cookbook. It was a deeply introspective experience and I learned so much as I was writing it. Shaved BruSSelS SproutS Salad SWeet-&-SpICY NutS 1 cup toasted, chopped, mixed nuts (I like using pepitas [shelled pumpkin seeds] and walnuts) ¼ cup sugar 1 tablespoon unsalted butter Pinch of cayenne pepper Pinch of kosher salt HoNeY-MuStard vinaigrette 1 large organic lemon 1 Tbsp minced shallot 1 Tbsp whole-grain mustard 1 Tbsp Dijon mustard 2 Tbsp champagne vinegar 1 tsp honey ⅛ tsp kosher salt ⅓ cup [80 ml] extra-virgin olive oil the Salad 12 oz [340 g] fresh Brussels sprouts 4 large Lacinato kale leaves, stemmed 4 dates, pitted and chopped ½ Granny Smith apple ¼ tsp kosher salt ⅛ tsp freshly cracked black pepper 1 cup finely grated Parmesan cheese ¼ cup shaved Parmesan cheese Preheat oven to 300 F [150 C] and line a baking sheet with parchment paper. Sweet-&-spicy nuts: Put the nuts, butter, sugar, cayenne pepper, and salt in a medium nonstick skillet over medium heat. Cook, stirring occasionally, until the sugar is melted and the nuts are coated, about 5 minutes. Transfer to a piece of wax paper to cool. Honey-mustard vinaigrette: In a large bowl, zest and juice the lemon. Add the shallot, both mustards, the vinegar, honey, and salt. While whisking constantly, slowly drizzle in the olive oil. Set aside. The salad: In a food processor fitted with the blade attachment (or blender), pulse the Brussels sprouts until shredded. Transfer to the bowl with the vinaigrette. Add the kale to the food processor and pulse until shredded. In the large bowl with the vinaigrette, add the kale, along with the dates, apple, salt, and pepper. Toss thoroughly, taste and season with more salt and pepper. Refrigerate for 15 minutes to 12 hours. Toss the grated Parmesan cheese into the salad and garnish with the shaved Parmesan, cheese, a handful of sweet-and-spicy nuts, and more pepper, if desired.
