I grew up with a fantastic cook, my mom. She made sure we knew how to cook a couple meals for ourselves like tacos and spaghetti. Nothing fancy but insurance that we wouldn t starve to death as young adults. I grew up involved in 4-H and made cookies one year for a project, however my outdoor interests trumped cooking. Over the years I have learned to cook and enjoy doing so for my family. I especially enjoy watching shows like Chopped, Iron Chef, and Cutthroat Kitchen. The creativity expressed by these chefs competing is always inspiring. Looking back I wish I had been more interested as a youth. Cooking is definitely a life skill. 4-H can offer a few different ways for youth to learn about culinary arts. The first is Special Foods: a contest which allows youth to design a table setting, make a side dish, smoothie or entrée, and learn how nutrition plays into our daily lives. Contestants may choose to make a special food from any one of the five basic food groups of the 2010 Dietary Guidelines for Americans, for more information visit http://www.choosemyplate.gov. A food that falls primarily into the fats, sweets, and/or alcohol group will not be accepted. One serving of the recipe must provide one serving of a food from the food group in which it is entered. Locally our special foods contests are July 1st in Stickney and July 10th in Forestburg. Jerauld Buffalo date is in the works. You can find the Special Foods handbook on www.igrow.org The second is Foods and Nutrition: this project area encompasses menu planning, making cookies, bars, cakes, yeast or quick breads, muffins, soy, dairy, convenience foods, gluten free, ethnic baked goods. The food item made is then exhibited at Achievement Days. The third area is Food Preservation: this project includes canning of fruits, vegetables, meat, pickles; however no dried meat can be exhibited because there is not a standard process. You can exhibit jellies, jam, preserves, dried (herbs, vegetables and fruits). There are specific steps that need to be followed and I encourage you to take a look at the scorecard prior to preserving any food. This will ensure that you follow all food safety guidelines. Look on page 17 of the Project Exhibit & Youth in Action guide for more information or contact the Extension office with specific questions. Any youth receiving a purple ribbon at Achievement Days can continue on to the State Fair and compete again. I encourage all of you to step out of the box and try a different project this year. Who knows you might just find out that you are a great cook!
