MARCH, 2015 Greetings, Welcome Back. We know the spring picture may be a little optimistic, but we re ready and we know you are too! We re setting the clocks forward the first weekend in March, so we ll start seeing the sun a little longer each day. We ll keep you posted as to when the course will be opening, so be sure to check the weekly e-mails. We re excited about the 2015 Spring and Summer season at Oakwood and know you are too. We have some great things planned for the upcoming months with the return of some of your favorites like Friday Night Golf, 9 & Dine/Grill Nights, The kids Easter Party and new additions such as Dads & Daughters Sweethearts Dance, Family Golf Nights on Thursdays with the pool staying open until 10:00 PM and Junior Golf Camps. We will be previewing the new Spring and Summer menu with some delicious fare from Chef Sean and the Oakwood Culinary Team. From the Ladies Organization A Message from the Ladies Organization So here it is March and we are another month closer to spring...yeah! For those of us "toughing it" out in the cold Quad Cities, remember that on Thursdays at 11:00 a.m. there are two groups of ladies that play cards. If you would like to play bridge, please contact Jane Gavin, otherwise just come out to the club for a fun game of Euchre. For those who are enjoying a nice warm, sunny location this winter, I hope you are able to play golf or just enjoy not being in the snow and cold. At this time of year there is not much news but I wanted to remind everyone that information about the Ladies' Organization can be found in the 2015 brochure available in the locker room or at www.oakwoodgolf.org where it can be viewed in the Ladies' Organization section through a link at the bottom of the page. A few areas Oakwood is looking to improve upon for this upcoming year: Pace of play will be a main topic this summer. More information will be coming and it s going to be something we all need to help with. Junior golf is a growing entity nation-wide and Oakwood is committed to raising the level of our Junior programs to match this. Handicap scores must be kept accurately throughout the year. When you travel or play in an area where the handicap season is active throughout winter, those scores must be posted. For Oakwood s tournament program to be fair, these practices must be followed. Oakwood s calendar is in place and the tournaments are listed. Please schedule your summer vacations around your favorites. Asparagus Roll-Ups These roll-ups are simply divine. Serve as a unique finger-food, side dish, or as a compliment to soup or salad. INGREDIENTS 6 slices bacon24 spears fresh asparagus, trimmed1 (8 ounce) package cream cheese,softened2 tablespoons finely chopped chives 2 slices white bread, crusts removed 2 tablespoons butter, melted3 tablespoons grated Parmesan cheese, divided DIRECTIONS 1. Preheat oven to 400 degrees F (200 degrees C). 2. Grease a baking sheet. 3. Place bacon in a large, deep skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towellined plate. 4. When bacon is cool, crumble and set aside in a bowl. 5. Place asparagus spears into a large skillet and pour in about 1 inch of water. Place over medium heat, cover the skillet, and simmer asparagus until bright green and slightly tender, about 5 minutes. Remove asparagus and set aside. 6. Place cream cheese and chives into the bowl with bacon and stir to evenly combine. 7. Roll each bread slice with a rolling pin on a work surface until the slices are thin and flat. 8. Spread cream cheese mixture evenly over each slice of bread. 9. Center 2 asparagus spears on a bread slice, and roll the slice around the asparagus into a tidy and compact cylinder. Place seam side down onto the prepared baking sheet. Repeat with remaining ingredients. 10. Brush each roll with melted butter and sprinkle each with about 1 1/2 teaspoon Parmesan cheese. 11. Bake in the preheated oven until lightly golden brown and hot, 10 to 12 minutes. 14
