Modified atmosphere packaging Improving product quality and extending shelf-life CompAir have been providing compressed air technologies for a variety of applications within the Food & Beverage Industry. Some of these applications include: pneumatic conveying, automated filling or packaging lines, aeration to boost oxygen content, fermentation of wine, beer or yogurt, PET bottle production, and many other uses. Most recently this high quality compressed air is used in generating high purity nitrogen. Product spoilage can occur from the moment a food item has been produced. Increased consumer demand for fresh, high quality preservative-free foods has led to the development of modified atmosphere packaging (MAP). MAP or gas flushing as it is also known, is an increasingly popular technique used to easily and economically improve product quality and extend shelf-life. Flushing packaged foods with inert high purity nitrogen retards aerobic spoilage and oxidative deterioration by typically reducing the oxygen level in packaged foods to below 1% so that food tastes as good as the day it was made. Nitrogen is primarily used to reduce the oxygen content within food packaging and to avoid product deterioration. A secondary reason for using nitrogen is as a filler gas to provide a pressurised atmosphere that prevents package collapse, this is an important consideration for consumer brands. 22

Problems with typical nitrogen supply methods Obtaining or maintaining a ready supply of nitrogen gas can be problematic and expensive. Typical gas supply methods include high pressure cylinders, liquid mini tanks or bulk storage vessels. However, each of these options introduce a range of problems that need to be solved. If you are already using nitrogen in your MAP processes you may be experiencing some of these problems. Maintaining a ready supply of nitrogen gas can be problematic and expensive. When considering nitrogen supplies, a reliable vendor must be outsourced and valuable space in or outside the company premises needs to be assigned for gas storage. Procedures have to be established to monitor and manage the gas supply and arranging deliveries and payment must also be considered. Additionally, safety and handling concerns need to be taken into account. The cost of addressing these logistical issues can be high and difficult to budget for, while the price of gas and supplier rates change continually. The environmental impact of truck based deliveries is another important consideration for carbon footprint reduction.
