FOODLINE Gases and Technologies for food packaging Modified atmosphere packaging (MAP) is a widespread technology used for a variety of foodstuffs. In fact, it enables to prolong the shelf-life of products and to maintain their organoleptic characteristics of products such as aroma, colour, fragrance and the general appearance of the product. For the food packaging, SIAD has developed a line of products, called FOODLINE, entirely dedicated to MAP. The Foodline gases and mixtures are introduced inside the packaging so as to increase the shelf-life of foodstuffs. Foodline products are generally supplied in pressurised and dedicated containers of 14, 40 or 50 litres together with the relevant anticontaminating equipment, which guarantee the quality of the gas. Foodline uses only gases specifically for food use: nitrogen, oxygen, carbon dioxide and argon.
Fast-freezing food products Deep-freezing in the food sector is a conservation process used not only for the technical purposes linked to food product distribution, but also given the requirements of modern society. These market-led demands have pushed food producers into perfecting deep freezing techniques, seeking new technologies which permit a rapid temperature reduction at the core of the product, so as to totally inhibit bacterial activity. SIAD offers technological solutions aimed at using liquid nitrogen in freezing food products. This method is the fastest to obtain the cooling of foodstuffs: liquid nitrogen is brought into direct contact with the food item to be frozen, maintaining its characteristics. Liquid foodstuffs applications SIAD has developed specific applications and devices system to use nitrogen in the storage and bottling of liquid foodstuffs. These applications, described below, allow to solve quality and technological problems generally related to these operations, in an effective way. Nitrogen in storage tanks Chemically, nitrogen is inert vis à vis the total gamut of food products and is, moreover, a gas which is relatively insoluble in liquids. Using nitrogen gas for the inertization of storage tanks holding liquid foodstuffs is a safe and flexible means of protecting the organoleptic and qualitative aspects of foodstuffs such as fruit juices, drinks, edible oils and fats and of perishable products in general. Stripping of edible liquids The presence of volatile contaminants such as oxygen, organic substances and water dissolved in liquid foodstuffs (oils and fats, fruit juices, wines and drinks) is an obstacle to obtaining high quality products and, in some cases, can compromise the efficiency of the plants in which they are produced and stored. The direct injection of gaseous nitrogen in the liquid foodstuffs subjected to the treatment, enable to eliminate undesired contaminants volatile and, as a consequence, to achieve high purity levels. Liquid nitrogen in droplets During the operation of bottling of beverages, non carbonated mineral water, fruit juices and edible liquids in general, a drop of liquid nitrogen can be inserted into each container before it is hermetically sealed. This process greatly reduces the oxidising effect of the oxygen ordinarily present in the gap at the top of the container. Moreover, it increases the mechanical resistance of the packaging material being used, thanks to the evaporation of the liquid nitrogen and the consequent increase in pressure formed inside the packaging.
Applications in oenology Using gases in practical wine making, with the aim of improving the quality of the end product and increasing productivity from production processes, is a trend which has steadily been growing over the years. SIAD offers multiple applications in all areas of the wine making process - from the grape harvest through to bottling. Their rapid and extensive diffusion amongst wine-makers derives from the marked benefits which can be gained where these products are used: improvement in the organoleptic characteristics of wine; enhancement of the personality of some varietals; protection of the product during all the phases of the wine making process; more efficiency during the production process itself.
