CVAC Club Insider July 2011 Notes from The General Manager Summer is Finally Here! Axel Binneboese General Manager Summer has arrived and July 4th marks one of the best times of the year for my family and me. We just love the spirit of the American people and how they come together to celebrate this wonderful country we all call home. I think I speak for all Club members when I say that we look forward to getting our new clubhouse opened. We indeed are already planning the removal of our temporary buildings after they are no longer needed. We have covered a lot of ground in recent weeks in terms of construction. For example, we will go green & disconnect from septic and connect to the Carmel Waste Water district for the first time in our Club s history. Furthermore, we have upgraded power service installed to the Club by PG&E, which will allow us to go greener with clean natural gas. We did fix the grading in our parking lot to satisfy the latest ADA regulations as well. I appreciate your ongoing patience as we work to improve CVAC. Please read our weekly email updates to stay on top of what is happening at the Club. If you are not receiving them, let us know next time you are at the Club. We will sign you up. Our Refuge amenity is coming along nicely. The stonework around the hot and cool pools is being finished.. Landscaping is next and we are moving along nicely to get this amazing project completed. You will see progress on the site accelerate as Refuge is built out this month. For future updates on Refuge, check the weekly CVAC email updates or sign up on the Refuge website (www.refugecarmel.com) for email notifications As CVAC Members and CVAC/Refuge guests will use the same check in area once Refuge opens, we will be instituting a Club member only entrance and check in area to ensure priority service to you. This area will be exclusively for you with dedicated staff tending to your needs. Being one of our social highlights of the year, I hope to see you at our July 4th Celebrate America Pool Party. I remember clearly last year as I met many of you for the first time. I had just become your GM on July 1st, 2010. Time flies when you are having fun! On that weekend we opened our new Pool area to you. At this year s event we have great Jazz music and we feature a lot of fun activities as listed on our events page. Chef Moises offers a great value for your July 4th BBQ priced at $15 per adult or $7.50 or kids less than 12 years old. This is quite the bargain when compared to other Clubs in the area! Come and sign up with us either by email to events@cvaconline.com or call / see the front desk team! We will have other great events for you in July as well so check out the events page for the listing. Our monthly hike is popular as well as our wine tasting on the last Thursday of every month. They are great social features of our Club just like our New Club Member orientation, which we hold on the last Saturday of the month. It is then that we have a chance to introduce the CVAC team to our new Club members and tour the facility providing detailed information of how every department operates. If you feel you would like and refresher course and would like to attend one, you are always welcome. Let us know the next time you are at the Club and we will invite you to the next one. I am proud of my first year here at CVAC and thank my team as well as our Club members for the support I received! We have had a year of change and I am very positive about the direction we are going. CVAC will be a unique wellness resort for locals and guests offering state of the art facilities that are one of a kind in our country. How many people do you know that belong to such a distinguished place, other than yourself of course! Enjoy this beautiful summer month! See you at the Club!

CVAC Club Insider Events News July 2011 831-624-2737 News from Events Jessica Morris Events Coordinator July is filled with summertime activities, including an incredible Independence Day celebration on Monday, July 4th! Bring your kids along for a day of activities and fun, featuring live entertainment by the pool with Big Band Thom and His Cats from 12 2 PM that will get you off the poolside lounge chairs and dancing for sure! We ll have a BBQ buffet from 12:30 1:30 PM for $15 per adult and $7.50 for Kids under 12 years old, Watermelon Eating Contest at 1PM, and Best Patriotic Costume Contest at 1:30 PM with a chance to win a special prize from the Club! The Kid s Klub will feature games, arts and crafts, face-painting, and other fun activities for your little ones from 11AM 12:30 PM. The entire event takes place from 11AM 2:30 PM on Monday, July 4th. Please call us to make reservations and buy your tickets with our Front Desk. Don t miss your chance to enjoy our Club Member group hike this month on Sunday, July 10th at Garland Ranch Regional Park. To join in on the fun and get in some exhilarating cardio outdoors, taking in the natural beauty of our area. Be sure to dress appropriately, layers are best, good hiking shoes, water and a snack. Call me to RSVP and kindly give at least 24 hours notice if you need to cancel. We will also have a lecture event by our New Club Member, Darlene Voss as well. She will safely measure your antioxidant levels with a BioPhotonic Scanner, proving just how effective your nutrition supplements really are, as well as your overall diet. CVAC Club Insider Tennis News July 2011 831-624-2737 Tennis News Brian Cory Tennis Director July is here and that means our annual 4th of July Round Robin! Play will be from 9:30 AM to 12 noon. You do not need a partner to sign up. All levels of play are welcome for this most popular round robin. Sign ups will be limited, so reserve your spot today in the office. Our CVAC Jr Tennis Academy Summer Program is running full speed ahead. We will run from July 5th to August 5th. This year our program will feature 24 hours of clinics offered per week. Monday, Wednesday and Fridays are scheduled for 9:00am to 4:00pm. Tuesday and Thursdays will be from 9:00am to 12 noon only. We run our Summer Program as a flex package, which allows you to purchase packages to use as you please. For example, if you purchase a week package, this gives you 24 hours to use as you see fit. Remember, CVAC fitness members are charged a non-member rate. Please look for the summer flyers at the front desk. We are now fielding our CVAC Women s Interclub Teams for the Fall. Please grab a copy of the rules in the office on how to get involved. Sign ups and challenges have begun. Looking for a match? We now have an active singles ladder if interested in playing singles. Contact Brian or Jessica for access to the ladder. We have some eager pros ready to help you improve your stroke or strategy in singles or doubles with privates and clinics available daily. Please check at the front desk for all tennis activity options, whether you want to play competitive or social tennis. The tennis staff will try to accommodate all tennis requests the best we can. Also, need to upgrade your equipment? Start with a fresh string job! Head Pro Chris Kretchmer can provide overnight stringing and is absolutely one of the best in the business. Check with the front desk about how you can get your racket restrung. Please review the tennis rules about how to sign up for courts to reserve, as we will get busy now with summer camp, lessons, and USTA Leagues. I personally take great pride in making sure your tennis needs are being met at CVAC. We are a very active tennis club with socials, league play, lessons and drop in tennis available almost 7 days a week. Please contact me if you need any assistance with your tennis play at the club. Remember we have the Challenge Court { Co-Ed adult tennis } available on Saturday and Sundays starting at 12 noon. You do not need a partner and there is no cost. This is a very social program that is available for men and women of any level. Just show up and play some great tennis with people you know or might be meeting for the first time. Brian Cory, Director of Tennis at Carmel Valley Athletic Club, won his 12th gold ball at the USTA National 45 Hardcourts. Brian teamed up with Art Hernandez, from Orange County, to win 4 matches as the #2 seed, to best a very talented field of players. In the semis, they defeated 2009 45 Hardcourt Champions, John Letts {former Stanford star} and Bruce Man Son Hing {former #1 at UC Irvine} 6-2, 3-6, 6-1. In the finals, Cory/Hernandez defeated #1 seed Mario Tabares {former tour player and ranked #1 in 45 national singles} and his partner Kyle Permut 7-6, 6-3. This was a great tournament to win, as many former touring pros and former college greats competed for the gold ball. Currently, Brian and Art are now ranked #1 in the nation in the men s 45 doubles.

Becasue there are three ways to win: One win is the score. The Second win is by improving yourself as a player. If you make every effort to hit your shots well, stay solution oriented, and play every point to the best of your skills, body and mind can this day, that makes you a winner as well. The third win is by being in an active, good faith part of an honorable competition that pushes your game to new territory, and often close sompetition will bring out the best in your game Oh, and here s another win... There is space for 28 so reserve your spot today! Monday July 4th we will have a limited Exercise Schedule. 8:00 am 9:45 am Hot Yoga 11:30 am Come out and join us for the Independence Day events. Classes will resume as usual Tuesday July 5th. Coming: La July or early August: Body Combat 48 Launch Exercise Ettiquette Please take a minute to go over some highlights of the Exercise Ettiquette. Please do not wear perfume or cologne of any kind. Please make sure you sign in for every class. Your attendance counts! Please arrive to studio prior to class time. We will be enforcing the 10 minute locking of the door for Hot Yoga. If there is a class prior to the one you are attending please do not enter until that class is finished. (Exception: rain & cold, just be quiet) Hike at Garland Park Sunday, July 10th 2:00-4:00 PM KELLISTHENX Kellen Scanlon Personal Trainer CSCS KELLISTHENX, is a 6-week exercise program that embodies the recommendations for healthy adults set by the American College of Sports Medicine. The program features 3 workouts a week for 6 weeks, supervised by Certified Strength and Conditioning Specialist, Kellen Scanlon. Through the KELLISTHENX program, CVAC Club Members will better learn how to structure their own exercise programs while also increasing their fitness level. To participate in the program with Kellen s guidance cost is $360 for 18 sessions, only $20 a session! If you re more the do-it-yourselfer type, the program can be purchased at the front desk for $60. Remember heart rate monitors are highly encouraged to ensure best possible results. Sign up at the front desk so that Kellen may call you and arrange a time to train that works best with your schedule. July 11th marks the start of the KELLISTHENX program. Save your spot now! *$360 price is for small group training. Sessions will consist of at least 2 people and a maximum of 4. The easiest, most economical way to do this is with a Frequent Visitor Guest Pass. (See the details about the Pass on this page.) Where else can you provide a day of fitness activities including swimming, tennis, cardio training, yoga, zumba, tai chi, to mention just a few of our fitness options, for only $20 per guest per day? As our highly anticipated Refuge and Clubhouse building with Locker Rooms and Cafe near completion, it is not too soon to let you know that now is the perfect time to make sure your friends and family members who are considering Club membership, act soon. The reason for this is twofold: Why delay the exceptional daily benefits that regular experience of our Club offers? Initiation fees will increase once the Club improvements and additions are completed at the end of the summer. I welcome your referrals as we are building the Club membership with your friends and family members and creating community for members of all ages and fitness levels. On that note, I d like to add that the one reason cited over and over by members joining the Club who have recently relocated to the Monterey Peninsula: CVAC offers us a sense of community, a great opportunity and environment to meet others. Kids Klub will be doing lots of water play to beat the summer heat. Please take us up on booking your little ones up for swimming lessons. We have a great team of swim coaches that love to get your little ones to be great swimmers. Call us at the Kids Klub to reserve your lesson. Kids Klub will have limited hours on the 4th. We will open at 9 AM and close at 2 PM. There will be activities for kids included in the CVAC 4th of July celebration. July Parents Night Out will be held on Friday July 22nd from 5:30 to 8:30 PM. Chef Moises featured recipe: Grilled Mediterranean Vegetable Salad Ingredients: Dressing 2 plum tomatoes, cored, seeded and coarsely chopped 3 tablespoons lemon juice 3 tablespoons reduced-sodium chicken broth 1 1/2 tablespoons extra-virgin olive oil 1 tablespoon chopped fresh oregano, or 1 teaspoon dried Salt & freshly ground pepper to taste Salad 1 small eggplant, cut into 1/4-inch-thick rounds 2 small zucchini, trimmed and cut into 1/4-inch-thick ovals 4 plum tomatoes, cored and cut in half lengthwise 1 fennel bulb, trimmed and cut into 8 wedges 1 red onion, peeled and sliced into 1/4-inch-thick slices (rings kept intact) 1 lemon, sliced 3/4 cup crumbled feta cheese, preferably imported (3 ounces) 8 imported black olives, preferably Kalamata, pitted and cut in half Freshly ground pepper to taste Directions: 1) To make salad dressing: Combine 2 tomatoes, lemon juice, broth, oil and oregano in a blender or food processor; blend or process until smooth. Season to taste with salt and pepper. 2) To make salad: Prepare a grill. Lightly oil the grill rack. Cook eggplant, zucchini, 4 tomatoes, fennel, onion and lemon slices, in batches if necessary, until browned and tender. (Fennel will take 4 to 5 minutes per side; eggplant, zucchini and onion 2 to 3 minutes per side; and tomatoes and lemon 1 to 2 minutes per side.) As the vegetables are done, transfer them to a large shallow serving dish. Toss gently with the dressing. 3)Garnish the salad with feta, black olives, a grinding of black pepper, and enjoy! *This recipe serves about 4
