Cheese Application 37 MICRO FORMULA Yield increase in the cheese when adding MICRO FORMULA product is proportional with the denaturation up to 80% denaturation. Higher than 80% denaturation the yield will not increase. Above 80% of denaturation there is a risk of getting to compact particles resulting in a decrease in the functional properties MICRO FORMULA unit is designed with temperature, time and shear in order to have the optimal denaturation, particle size and getting the best results when adding this to the dairy and food applications.
