In the beef industry, the most important decision we can make to increase value and decrease cost of production is wise crossbreeding. The American Simmental association and JBS Swift Co have combined to offer a new grid system that rewards Choice, YG 2 carcasses. The new 70:70 grid has the opportunity to increase profits for all segments of the industry, because it rewards superior genetics that can be raised at less costs. For more than a decade the American Simmental Association has been testing sires for carcass traits; marbling, yield grade and tenderness. SimAngus genetics that have been processed through this program have posted data at or above the 70:70:0 vs. the recent NCBA Beef Quality audit which revealed national average is 57% Choice, 52% 1&2 and 22% discounted.
