It is already the end of February and the club is full of great activities. As many of you know, we had a packed crowd at both the Super Bowl/Chili Cook-off and the Mardi Gras Party. Both events were very successful. I wish to thank the Entertainment Chair and her committee, and all of you who helped make these events run so well. The atmosphere in the chart room was also perfect for the Valentine s Dinner; a background saxophone player you could easily talk over, dim lights, and excellent food. Be sure to make reservations to attend the next similar event. All Committee Chairs and Committees are busy preparing for spring and summer activities around the club. Again, I thank them for all their work and know that you, as members, will benefit from their effort during this year. Be sure to mark your calendar to attend the upcoming events at our club. This year, we have two important tasks underway at the GYC: a Membership Drive and the Sailing Foundation. Although we had a successful drive last year, our membership numbers are still slightly down from normal. Hurricane Katrina and the slow economy of the past few years have reduced private club memberships throughout the Gulf Coast. In order to avoid raising dues and having assessments, we need a few more quality members. Under the direction of our membership Chairman Dickie Dunnaway, the board has approved one last membership drive this year. The Board expects this to be the last drive, returning to a waiting list after this drive is completed. Please make sure your family or friends take advantage of this last opportunity to join the GYC with a minimal initiation fee. THE GULF COAST SAILING FOUNDATION is fully established now and NEEDS YOUR DONATIONS. This non-profit corporation is created to support amateur sailing in the community through avenues like our busy high school sailing program. We sponsored two high school sailing teams, one of which has won the state championship the last three years. Because the Foundation is a Mississippi nonprofit corporation qualified under IRS section 501(c)(3), YOUR DONATION IS TAX DEDUCTIBLE! The Spaghetti Dinners and Silent Auctions have helped, but we now need substantial donations. I too hate to ask for money, but after three years of looking into the details of this type of Foundation, it is now formed and in position to help our sailors and indirectly help our club in its effort to support the Foundation. The Foundation will accept Cash, Checks, Credit Cards, etc... Additionally, you can donate cars, boats, RVs, motorcycles, etc however these type donations must be approved by the Foundation s Committee. Please contact Sam Hopkins or Sam Vasquez to begin your tax deductible gifting. And finally, prepare to set sail as we enter the fair weather season and enjoy the GYC though boating, sailing, fishing or just good fellowship and great food inside our fine club. See you at the Club, Dr. Michael Seichnaydre Boater Safety Tips: Use Common Sense: One of the most important parts of boating safety is to use your common sense. This means operating at a safe speed at all times, especially in crowded areas. Be alert at all times, and steer clear of large vessels and watercraft that can be restricted in their ability to stop or turn. Also be respectful of buoys and other navigational aids, all of which have been placed there for one reason only: to ensure your own boating safety. Be Weather-Wise: Always check local weather conditions before departure- TV and radio forecasts can be a good source of information. If you notice darkening clouds, volatile and rough changing winds, or sudden drops in temperature, play it safe by getting off the water. What a busy and successful February we had at the club. The ambiance was perfect and the food was exceptional for the three events hosted by the Entertainment Committee. For the Superbowl/2nd Annual Chili Cook Off we had 120 in attendance. Our Mardi Gras Party housed 225 people and we sold over 900 oysters from the buffet. On Valentine s Gourmet Dinner and Lobster Night we served 77 members. We had nothing but praises about the quality of food and service provided for all events. This year, because the Gulfport St. Patrick s Day Parade is scheduled for Sunday, March 17 at noon, we will celebrate the Irish Holiday with a Traditional Irish Sunday Brunch from 11:00am to 2:30pm. This will give members the opportunity to come dine for Brunch either before or after the Parade. Don t forget to wear your green! We will follow this Brunch with a visit from the Easter Bunny on Saturday, March 23. Our annual Easter Sunday Brunch is Sunday, March 31- RESERVATIONS REQUIRED. I m very excited about our membership drive getting off to a good start. Thanks to all of you for shaking the trees and reaching out to your community to help us provide a sound future for the club. The dedication and support from our Membership Chair Dickie Dunaway and his Committee has been superb. The simple concept of Ownership of your club while keeping our dollars working for us in our community speaks for itself. Thanks again for your help. February has been an exciting month for Ladies Auxiliary at GYC. Our monthly luncheon was held on February 20 th with special guest speaker Vicki Moppert of Mignon Faget. We were very honored to have her present a delightful array of Mignon Faget pieces accompanied by historical facts and antic dotes. Chef Jason prepared a delicious meal consisting of Shrimp Linguini, Squash Casserole, Caesar salad and Triple Chocolate Cake. Warm thanks are extended to our hostesses: Camille Puckett, Kay Simmons, Mary Frances Martin and Lucy Phoenix. Fresh cut camellias from the garden of Kay Simmons made for lovely tablescapes- Thank you, Kay! Bridge winners were 1) Deane Melson, 2) JoAnn Van Atta. Coming soon on March 20 th, The Ladies Auxiliary is excited to feature clothing and accessories from Gabrielle s. We anticipate a lively presentation of today s fashions along with descriptions of the latest trends and fashion tips. Don t forget- Peter Cottontail is on his way! Saturday, March 23 rd we will host our annual Breakfast with the Easter Bunny. Members are invited to bring their children and grandchildren to take pictures with the Easter Bunny and enjoy breakfast as well as many activities, including our traditional Easter Egg Hunt. GYC SKIMMERS SWIM SEASON-2013 SKIMMER SWIMMING: LESSONS FOR CHILDREN AGES 2-4. Swim lessons will be taught with focus on survival, water safety, and basic water introduction. Children will be broken up into small groups of 5-10 according to swim ability. WILL OF- FER SWIM SCREENINGS ON THURS. MAY 23 and FRI. MAY 24. COST $135.00. Additional $25 fee for sponsors, grandchildren or GYA members MAY 27- JUNE 28: 9:00-9:30 OR 3:00-3:30 JUNIOR SKIMMERS: ARE CHILDREN AGES 5-8. Children must be able to jump in deep end and swim to lifeguard stand independently. Basic stroke instruction and improvement with emphasis on endurance, starts and water safety will be taught and mastered at all levels. If you have questions regarding ability due to age, please call Christine to test swimming ability. COST $135.00 MAY 13-23: 3:30-4:15 (NO FRIDAY AFTERNOON CLASSES) MAY 28 - JUNE 28: 9:30-10:15 OR 3:30-4:15 (NO FRIDAY AFTERNOON CLASSES) SENIOR SKIMMERS: ARE CHILDREN AGES 9 AND OLDER. Children are accepted at all swim levels. Stroke instruction and improvement, endurance, turns and starts will be taught and mastered at all levels. MAY 13-23: 4:15-5:00 (NO FRIDAY AFTERNOON CLASSES) MAY 28 THRU JUNE 28: 10:15-11:00 OR 4:15-5:00 (NO FRIDAY AFTERNOON CLASSES) AGES 9-10- $75.00 AGES 11-12- $25.00 AGES 13-14- $10.00 Additional $25 fee for sponsors, grandchildren or GYA members SWIM LESSONS AND SWIM TEAM PACTICE: IT IS RECOMMENDED TO ATTEND AT LEAST 3X S WEEKLY IN ORDER TO MASTER SWIM SKILLS. Our goal is for each child to learn optimal swim skills. Discipline will be strictly enforced. If a child is disruptive during practice, a timeout discipline will be enforced. Safety for all children is our main concern. Parents are required to pick up children after practice. COACHES ARE NOT RESPONSIBLE FOR CHILDREN AFTER PRACTICE. PARENTS ARE ENCOURAGED TO ATTEND AND ASSIST WITH VARI- OUS JOBS DURING SWIM MEETS. The coaches will contact you prior to meets to discuss job options. The meets will run more smoothly with your assistance. If possible, please notify one of the coaches if your child is unable to attend a meet so we will not schedule them on a relay team. The meets are held on Tuesday evenings approximately 5:00 and generally last 3 hours. If your child has transportation problems, please notify one of the coaches to assist you and your child with this need. Participation in the meets is encouraged but not mandatory. Each child is encouraged to swim a variety of strokes. This is to enhance individual improvement and team competitiveness. We must accumulate times on each child s individual strokes prior to Championships. Grouper 49 S. 4 6oz. Grouper filets 4oz. All Purpose Flour 1 T. Zatarains Creole Seasoning ¼ Cup Vegetable Oil ½ Cup 49 S. Sauce (recipe below) Heat oil in a cast iron skillet to 325 degrees. Combine the flour and creole seasoning together in a small pan or bowl. Dredge the grouper filets in the seasoned flour mixture and shake the excess flour off. Carefully lay the floured grouper filets in the hot oil. Cook for 3-4 minutes or until the filets are golden brown, flip and cook another 3-4 minutes until the fish is done. Lay on a paper towel to wick off the excess oil. Serve over dirty rice or mashed potatoes and top with 1 oz. of the 49 S. sauce. Sauce ½ Stick of unsalted butter ¼ Cup diced yellow onion ¼ cup diced celery 1 small diced green pepper 1 T. chopped garlic 2 T. all purpose flour ¼ cup chicken broth ¼ lb. crawfish tails 2 oz. andouille sausage-diced 2 oz. heavy cream 1 T. Zatarains creole seasoning Melt butter in a sauce pan. Add the vegetables and sausage and saute until the onions are translucent. Add the flour and cook for 1 minute. Add chicken broth and cream. Bring to a boil. Add crawfish and creole seasoning. Let simmer for 2 minutes. Serve on your grouper and enjoy!!! Chef Jason Sperbeck
