Either that or hopefully I will get to go somewhere warm with lots of billfish to catch. Despite the cold, things are still rolling right along at the club. There are several pictures of the progress with the elevator project included in this Marlin Bill. I am amazed at how quickly this is getting done. Along those lines I wanted to remind everyone that we are running a raffle to benefit the elevator fund. First prize is a beautiful David Yurman Necklace. There are cash prizes for second and third ($500 and $200). Tickets are $50 each and available at the club. The drawing will be held at the Valentine s Dinner. Speaking of club dinners, the Christmas Dinner was yet another incredibly good time at the club. I want to thank the Auxiliary and the Staff for all of their hard work. DJ Donnie kept everyone dancing all night long and I had a blast with all of the members and my elves!!! Next on the list is the New Year s Eve party. There are still a few tickets left. This party will definitely sell out, so don t wait to get your tickets. I have said this before but I want to remind everyone to share their fish stories with either Amanda or myself over the winter. I know there are plenty of members traveling to the far reaches of the globe this winter. Pictures and stories from those who get to travel keep the others that don t in the spirit of things during the off season. Personally, I will be fishing for Giant Bluefin over the next month and a half down in Morehead City. Unfortunately I probably won t be warm, but hopefully I will have some good fish stories to share. Sadly, the bite has been slow down there so far. I am confident that will change soon though. In closing this month, on behalf of the Board of Directors and the Officers, I would like to extend the warmest holiday wishes to all of the membership. At long last... the project is almost finished! We broke ground on the elevator project on Monday, September 27! Major construction began on October 18. Please keep the donations coming! Here are a few pictures of our trip to Cabo San Lucas. Sharon and I caught our first Striped marlin and had an absolute blast. OC Marlin Club members, Nick and Debbie Bortle went with us and Nick also caught his first Striped marlin and his first rooster fish. Debbie caught her first wahoo. Monthly Recipe(s) from the Auxiliary!! Paul s Pumpkin Cake German Apple Cake 1 3/4 Cup Pumpkin 1 2/3 Cups Sugar 4 Eggs 1 Cup Vegetable Oil Beat until well combined. Add the following: 2 Cups All-Purpose Flour 2 Tsp. Baking Powder 2 Tsp. Cinnamon 1 Tsp. Salt 1 Tsp. Baking Soda Mix well & pour into 2 8-inch square pans that have been greased & floured. Bake in a preheated oven @ 350 degrees for 30-35 minutes. Check carefully. It may take a bit longer. Can be baked in a 10-15 inch pan. Cream Cheese Frosting 4 Ounces Cream Cheese, softened 1/2 Cup Butter, softened 1 Tsp. Vanilla 2 Cups 10x Sugar Combine all ingredients. Mix on high speed until very creamy. Spread on cooled cake. **Sprinkle with chopped walnuts, if desired. 1 Cup Salad Oil 3 Eggs 2 Cups Granulated Sugar 1 Tsp. Vanilla 2 Cups Flour 1/2 Tsp. Salt 1 Tsp. Baking Soda 2 Tsp. Cinnamon 1 Cup Chopped Nuts (Walnuts) 4 Cups Thinly Sliced or Diced Apples (I dice because it is easier.) Combine Salad Oil & Eggs. Beat with mixer until frothy. Add sugar & Vanilla. Blend well. Combine dry ingredients & add to egg mixture. Fold in nuts & apples. Bake @ 350 degrees for 55-60 minutes for 9x13 inch baking pan or 45-50 minutes for 2 8-inch square pans. Test with knife in center. It should come out fairly clean. (This cake is so moist, it is hard to tell. I don t think you can overcook it.) Icing 1 1/2 Tab Soft Butter 4 Ounces Cream Cheese 1 Cup 10x Sugar 1 Tsp. Vanilla Beat until well mixed. Spread on cake as soon as it comes out of the oven. It will spread easily because of the heat. It actually becomes more of a glaze. Both recipes submitted by Sharon Cooper.
