CHOICES VOICES Issue 103 October... 2018 Day & Residential Happenings October Project Pinecone Bat SUPPLIES: Pinecones Stiffened black felt Scissors Googly eyes Hot glue and hot glue gun DIRECTIONS 1. Cut a set of bat wings from the stiff ened black felt. 2. Slide the wings into the pinecone, then secure with hot glue. 3. Snip a couple of bat ears out of the felt scraps. Slide them into the pine cone, then secure with hot glue. 4. Attach the googly eyes to the pine cone with a dab of hot glue. 5. If desired, snip two little fangs out of white card stock (I just used junk mail!) and attach them with a tiny dot of hot glue. SPOTLIGHT: Diane Russell Diane has been with Choices Network, Inc. since 2007 and has been here for all the changes within as we moved on to what Choices is today! Diane grew up in Herington, Kansas and attended school in Hope, Kansas. She graduated from Salina Central High School in 1977 and then attended Salina Vo-Tech. She lived at home after graduation and eventually moved to her own apartment, which she has lived in for 25 years with support from her staff. At one-time Diane owned a blue Mustang that was a gift from her father. She said once the horn on the Mustang began honking for no reason and woke everyone up in the apartment complex. She said she wasn t very popular the next day around there! They never figured out why the car did that. One of the things that Diane loves to do is attend concerts, especially the Oakridge Boys. She has seen them many times, mostly at the Kansas State Fair. She also likes the Price is Right and attended the show when it was held in Salina. Diane likes to eat out and some of her favorite restaurants are Chili s, Olive Garden and LongHorn Steakhouse. It s amazing that as much as Diane likes to eat out, over the last ten years she has lost over 200 pounds! She accomplished this by listening to her doctors and staff, watching what she ate and walking lots of miles. Diane also likes going to movies and recently saw the new Winnie the Pooh film. In her spare time Diane likes shopping, spending time with her family, going to church and church potlucks. She loves spending Sundays with her Dad at church and then out for breakfast and visiting. This Christmas Diane and her family are taking a cruise to the Caribbean. They will visit Roatan Honduras, Cozumel, and Puerto Costa Maya! Diane has been on several cruises over the years but nothing as exciting as this! She will have much to see, taste and explore. So, while Diane is soaking up the sun with her toes in the sand, seeing the Mayan ruins, Coral reefs, scuba diving, snorkeling, and visiting all the great shops her friends in Kansas will be wearing heavy coats and snow boots! Bet she will have a big smile on her face! Upcoming events: We will be joining USD #305 students in pumpkin painting on Thursday, October 25th from 9:45 to 10:45 at Salina West Alternative School 501 W. Cloud. The pumpkins are then taken to Ashby House to be given to families! Holiday activities Parade of Lights We are planning to have a holiday float again this year in the Parade of Lights. The parade is scheduled for November 17th. Watch our newsletter for more information on how you can participate. Pie Day We are planning on another pie day on November 19th from 12pm to 1pm at Choices Network, Inc. Come out and enjoy pie and conversation. Choices Network, Inc. Holiday open house will be at Choices on December 14th from 11am to 1pm. There will be treats, activities and plenty of conversation. NASCAR Fun Day A trip is being planned to attend the NASCAR fun day on October 19th in Kansas City. The cost for admission will be $30.00. The bus will be leaving at 7:00 AM sharp and will return at approximately 5:30. You will need to bring a sack lunch and extra money for snacks. They will not be stopping on the return trip for dinner. There will be limited space on the bus. If you are interested in participating please contact Jamie Davis by October 13th at 785-820-8018 to secure your seat on the bus. It will be first come, first served for this event. Cook: 5 hours Oven: 225 degrees Makes 8 servings Recipe Corner Beef Stew 1/2 teaspoon coarsely ground pepper 6 medium white onions or 2 large Vidalia onions chopped 4 large potatoes, cut into ½ in. cubes 3 medium carrots, cut into ½ -inch slices 12 large fresh mushrooms sliced or whole small 1/2 cup sliced celery 6 cloves of garlic chopped You can substitute or add any other ingredients such as: sweet potatoes, squash, cherry tomatoes, cabbage, peppers, horse radish sauce, Worchester sauce, sky s the limit. Ingredients 1/4 cup all-purpose flour 2 pounds boneless beef chuck roast, trimmed and cut into 1-inch cubes 1 can (10-3/4 ounces) condensed tomato soup, undiluted 1 cup beef broth or red wine 2 teaspoons beef bouillon granules 3 teaspoons Italian seasoning 1 bay leaf 2 tablespoon(s) tapioca granules (from a box of quick cook tapioca this is a great thickener for soups, stews, casseroles) Directions Place beef in the bottom of a large oven proof cast iron with a tight fitting lid. ; pour over beef. Add the onions, potatoes, carrots, mushrooms and celery. Cover and cook on low for 5 hours - DO NOT PEEK. Remove from oven, discard bay leaf. Serve with noodles or rice, and French bread. Nutrition Facts 1 each: 385 calories, 15g fat (5g saturated fat), 74mg cholesterol, 416mg sodium, 36g carbohydrate (7g sugars, 5g fiber), 27g protein. PAGE 4
