10 Our Festive Experts Matty Wainwright Matty Wainwright is a musical gem on the island of Bali. He has played everywhere from Dalston to Delhi and is currently resident at the legendary Single Fin nights in Uluwatu amongst many others. Matty is bound to the Hundred Schools of Thought of the DJ world. Stirring up the melting pot of old and new, playing anything from House, Disco, Rare Grooves and Boogie through to Balearic, Broken Beats and AOR. The mantra is simple; if it s got soul, it s got the vote. Matty will be our resident DJ for 10 days don t miss his evening sessions and enjoy the music. Christopher Long Executive Chef Chris joined recently from Vietnam and he is in charge of all the delicacies and mouthwatering dishes we serve for you in our restaurants. If you feel like having something sweet, ask him for chocolate truffle he was in the Guinness Book of World Records for the world s largest chocolate truffle. 11 Our Festive Experts Walter Palk Don Sheehan Walter joined the Grape Expectations team in November 2018, after working as a Luxury Sales Specialist for few years in South Africa for a leading producer & marketer of spirits, fine wine & cider. Prior he worked on various wine estates in Stellenbosch, South Africa. Delaire Graff Estate being a key focus where he excelled in his Marketing capabilities. He studied at the Private Hotel School in association with the American Hospitality Academy where he completed his International Diploma, furthermore he obtained his WSET level 2, various wine & spirit courses highlight being able to travel to Scotland in 2016 to gain valuable insight of the world of whiskies. Walter is a keen traveler, adventurous with great interest in various cuisines from around the globe especially paired with a alluring glass of wine. Our very own Mixologist & Cigar Aficionado at Grape Expectations, joined in November 2015, and manages our beverage and tobacco portfolios, along with his training programs on both. Don has been involved in the hospitality industry for more than 18 years, starting in food but finding his passion in beverages and well-run bars. For the last 8 years, Don has exclusively consulted to some of the top restaurants, bar and hotels in South Africa focusing on menu development, professional training programs, implementation, ergonomics and bar design. Besides working with venues, Don has also worked on a host of events and activations, including represented South Africa at the World Economic Forum in Davos, Switzerland, both in 2009 and He has had the pleasure of working with many reputable brands such as Monin, Giffard, Belvedere, Cîroc, Grey Goose, Absolut, Tanqueray, Bombay Sapphire, Beef Eater, Jameson, Black Bottle as well as most of the Pernod Ricard and Diageo deluxe portfolios.
