Recipe Corner Texas Citrus Glazed Fish Submitted by John Nix Brighten your fillets with fresh fruit, agave, and tequila. Ingredients 4 red snapper fillets (or other fish), about 8 oz. each 1 each blood orange, lemon, and navel orange peeled, seeded, and quartered 2 Tbsp. shallots, minced 1-1/2 cups agave syrup 1 cup distilled white vinegar 1/2 cup tequila 1 Tbsp. unsalted butter 2 Tbsp. minced garlic 3/4 cup chopped onions 3/4 cup chopped green bell pepper 3/4 cup chopped red bell pepper 1/2 cup Worcestershire sauce 2 cups long-grain rice 3 bay leaves 1-1/2 cups pecan halves or pieces, lightly toasted 2 Tbsp. vegetable oil For the Citrus-Arugula Salad 1 each lemon, blood orange, and navel orange About 4 oz. baby arugula 12 cherry tomatoes, halved About 3 Tbsp. Steen s sugarcane vinegar (optional) Directions 1. Combine the blood orange, lemon, navel orange, shallots, agave syrup, vinegar, and tequila in a saucepan and bring to a boil. Reduce the heat to low and simmer until the mixture has reduced to a syrupy consistency. Remove from the heat and let cool. 2. Transfer the mixture to a blender, and pulse to puree the solids. Strain the mixture through a sieve and reserve. 3. Put the butter in a medium saucepan over medium heat. Add the garlic, onions, and peppers, and sauté for about 2 minutes. Add the Worcestershire sauce and cook, stirring, for another minute. Add the rice, 3-3/4 cups water, and bay leaves along with generous dashes of salt and pepper. Stir once, just to incorporate, then bring to a boil and cook until the water level reaches the top of the rice. Do not stir, but shake the pot occasionally. When all the liquid has dissipated, cover the pot, set to simmer, and allow the rice to steam for 5 minutes. Fluff with a fork, then fold in the pecans. Keep warm. 3. Segment the additional fruit. Put them in a bowl with the arugula, tomatoes, and Steen s vinegar (if using). Season with salt and pepper, and toss. 4. Season the fillets. Add the oil to a large wide skillet over medium-high heat. When the oil is hot but not smoking, add the fillets and cook for about 2 minutes per side. Remove the fillets to a sheet pan and brush with the glaze. 5. Divide the rice among four plates. Place a fillet on each, and garnish with the citrusarugula salad. Drizzle a bit more of the citrus glaze over the salad and fish. Serve immediately. Bill Schweitzer took these pictures of the progress on the natural gas pad site next to the club The Report from The Registered Line Greeting skeeter dudes and dudettes, the birdies have finally starting shipping, so there is registered skeet news to report. At the Greater Houston Gun Club Mini, Glea Davis took LY CH (191), while at the Main Robert Paxton was 3rd in 20GA (100). Our registered shooters then came home up I-45 to the Dallas Gun Club for the Pan-American where L.P. Giambrone, III won the 28GA event after a shoot off against eight others, Jack Davis took A1 & SU1, 28GA (100); & B1 by shoot-off in.410 (97), LPG III won AAA1 by shoot-off 12GA (100) and Glea Davis was C1 12GA (98). At the Stockton Open, held in beautiful Stockton, the garden spot of California, Elizabeth Hoskins took a little Texas attitude to the left coast, taking B1 HOA (outright) & LY HOA CH (by shoot-off) (393); B1 20GA (99, shoot-off); A1 28GA (99, outright). Elizabeth s best ever HOA by 7 targets, and her best ever.410 by 1 target! And a belated shout-out to LPG III for an outstanding day at the Kolar Mid-American held at the St. Joe Valley Conservation Club in St. Joe Indiana, rumor has it that the only thing he left on the table was 20 gauge and doubles. Not a bad way to start the shooting season! And on a sad note, the skeet shooting world lost two fine gentlemen this month Wayne Mayes and our own Terry Cullender. Wayne s record has been documented numerous times, so I ll not repeat the list here. While Terry did not shoot registered skeet, he was a great sportsman, a fine friend, and a one man cheering squad for GPGC registered shooters. Every registered shooter who steps on the fields at GPGC owes a thank you to Terry for his hard work at our Club; if you would see his monument, but look around you. We ll miss him, but the recently established Terry Cullender Sportsmanship Award, to be awarded annually, will keep him in our thoughts. Remember, if you don t tell me, I can t report it. maryannjenkins@me.com 4

Club Skeet Schedule 2013 Sun. - July 7-9 AM Sun. - Sept. 8-9 AM Sun. - Nov. 3 - All Day Sun. - Aug. 4-9 AM Sun. - Oct. 6 - Noon February shoots through October will be 3 event shoots. February 10th will be 50-12ga.skeet, 50-12ga. Doubles and 50 trap targets. November 3rd will be an all day event 4-gun club championship. New Directors: Jay Warren and Ginny Warren - jayw7@verizon.net and ginleew@netzero.com Shell Bag Information At the beginning of this year the company who was organizing the shot gun shell recycling sold out to another company, Hi-Tec Plastics Recycling. This company worked for 6 months to revamp the program and after this six months, Hi-Tec Plastics was not able to get the program at a level to be successful for both recycler and company. At this time there is not another company recycling shells and our program with discontinue. We will begin to place trash bags in the green trash cans and go back to throwing the shells into trash and discarding them in our previous manner. We will still continue to recycle cardboard. The bags of shells that we accumulated have been removed from the clubs property and we will discontinue dumping the shells into the recycling bags. It was a great accomplishment for our club to be one of the first to try and make this program work. We will be ready and prepared logistically when there is another program developed to recycle the shells. Thank you for all your hard work to make this program successful. We can be proud that our club was looking to reduce waste in our land fill. Sincerely Don and Sandy Yeandle OK, having fully recovered from my last snake bite after numerous people (dear friends) told me it wasn t poisonous I had another encounter today. Coming back from the garden I caught sight of this one (very real fangs checked etc. poisonous etc.) in the flower bed next to the garage. This one met a tragic end with a shovel. Keep your eyes open it s that time of the year be especially careful on full moons... June Club Shoot The June 9th club shoot was held at 1:00 after lunch was served. We had a total of 10 shooters. Of course, several of our regular shooters were at a shoot in LA. He was released from active duty in January 1969 as a Yeoman Second Class Petty Officer (E-5). The USS Rehoboth AGC-50, an oceanographic survey ship, was his last station. Kerry notes that the work was top secret work and involved a lot of civilian scientists. So like all our veterans, next time you see Kerry thank him for his service to our country. Our next club shoot will be Sunday, July 7th, starting at 9:00am. I hope we can beat the heat! It will be 50-12 gauge, 50-410 and 50 - sporting clays. Please come and enjoy your club shoot. If you have any questions, please contact Jay or Ginny Warren. Thanks, Ginny 6

by Don and Sandy Yeandle On Saturday, June 1st, Don and I had our 7th annual Sporting Clay Fundraiser for the local charity, The Spirit of Hope. The turnout this year was fantastic with many new faces from last year returning along with the Grand Prairie Gun Club team that has been supporting us from the beginning. 47 shooters shot a 50 bird course for trophies and 16 shooters entered a 100 bird course. The 100 bird course placed participants in a 50/50 and we were proud to give the foundation $350 and a champion shooter of 90 birds out of 100 also received $350 in his pocket. The Grand Prairie team took home the second place team trophy and our own Bill received the trophy for HOA. This money that was raised will support the foundation in giving teenagers that have been separated from their families some experiences that will plant a seed for the future and hopefully bring some joy to their difficult life. Currently, we have a 4 hour workshop at a glass studio that will educate the children on 3 forms of glass art. Our goal is to have these workshops quarterly and each time it will be a new set of children. Thank you again for all the support both from participants and the club who allows us to work with some of shooters for the fundraiser at the beginners league. Sincerely, Don and Sandy Yeandle Spirit of Hope 7

Summer Evening League Starts Thursday, July 11, 2013; ends Thursday, August 15, 2013. Time 6:00pm to 9:00pm This is an individual league, no teams. You shoot 2 rounds of skeet. One point will be given to winner of each round and one point to overall winner. ½ point will be given if there is a tie for a round or overall. Handicap will be established on the first night. Highest handicap score will be 24.25. Bank will also be established on the first night however, any straights will not count as a bank score. You must shoot a 25 to get a 25 so straights will be recorded as 24.25 for bank score. Second bank will be your bank minus one bird each round. No pre shooting allowed. Handicap is established by subtracting your average from 24 and multiplying by 0.90. For our great skeet shooters that average 24 and above there is no handicap. This will be a random draw each shooting night held after the shoot is complete to see who you were competing with. Each shooter will receive a number and then numbers will be drawn. There will be no dinners served for this league. Cost is $75.00. You can play the Lewis Class for extra $10.00 and Most Straights for extra $10.00. HOA will be extra $10.00 based on most birds broke. Payout for winners will be based on the number of shooters. This is open to all shooters. This payout is based on 49 or fewer shooters: First Place: 30% Second Place: 25% Third Place: 20% Fourth Place: 15% Fifth Place: 10% Summer Evening League continued A portion of the entry fee will also go for a fish fry party on the last night of the league.
