Recipe Corner Hot Fried Birds Submitted by John Nix Adapted from Afi eld: A Chef s Guide to Preparing and Cooking Wild Game and Fish, by Jesse Griffiths. Welcome Books. 2012 Jesse Griffiths. 12 whole doves, plucked and gutted (I have been assured, though cannot confirm, that plucking a dove is not difflcult!) 1 cup buttermilk Kosher salt and freshly ground black pepper 2 cups all-purpose flour Oil or lard, for frying 3 tablespoons unsalted butter 4 tablespoons honey 4 garlic cloves, finely chopped 3 tablespoons hot sauce 4 thinly sliced jalapenos 1/4 cup fresh herb leaves, such as parsley or marjoram Directions Halve the birds by cutting down one side of the breastbone and through the ribs with a sharp, heavy knife. Repeat on the opposite side, effectively removing the breastbone. Soak the halves in buttermilk for 4 to 12 hours in the refrigerator. Remove the birds from the buttermilk, season well with salt and pepper, and dredge in flour. Shake off the excess flour and refrigerate them for at least half an hour. Heat 4 inches of oil to 375 degrees in a fryer or large pot. Melt the butter, then combine it with the honey, garlic, and hot sauce in a large bowl. Fry the birds in batches until golden brown and crisp, 3 or 4 minutes. Drain well on paper towels. Toss the fried birds with the metled-butter mixture, add the jalapenos and herbs, and transfer to a plate. Serve immediately. Serves 4. 3 Hi to all, 3 on 8 will be featured on Texas Storage Wars! I will be giving an appraisial to Jenny and Mary on a Ponsness-Warren Reloader. This spot was shot in my garage back in April and took three hours to be edited down to probably less than a minute so it will be interesting to see how it all turns out. .22 cal. Pistol Silhouette Shoot August 2013 We had 10 shooters to start the match. It was warm, but not oppressive. At the 8th set of targets, one of the participants, Graydon Bushart, age 87, was feeling poorly due to the heat and his son Kent took him home, so we had an interlude of ~ 15 minutes. We then finished the match with the 8 remaining: David Bushart, Floyd Jester, Ed Dotson, Jim Wilson, Clint Freeman and Mike Horton. The high scorers were the following: We had 2 sets of ties! As it was hot, and as we wanted to get into some AC ASAP, we dispensed with a shoot-off. Ed Dotson shot 50/60 with his M 1911.22 conversion and red dot sight, ONE-hand Jim Wilson shot 50/60 with his Thomspon Conterner.22 single shot pistol, two-handed. Clint Freeman shot 57/60 with his new Hi Standard, ~ 7: bb l, red dot sight, twohand Mike Horton shot 57/60 with his old Hi Standard, 5 bb l with a red dot sight, ONEhand I took the pictures. The score sheet (from Meredith Turney s laptop records) is given below Thanks to Meredith for this. She has had some muscle spasms recently and hasn t competed this last week. Bullseye Match Results August August 1: It was a WARM afternoon, with no cooling breeze, a typical summer evening. What else might one expect the first of August in the DFW area?? Snow? Wishful thinking... The shooters tonight were: Gary Ledbeter, Mike Horton, Ron McCuller, Floyd Jester, Jim Wilson, Ed Dotson, Jim Grabbe, Jim s daughter Meredith Turney, and Meredith s friend, guest Christina Saunders. The high scorers tonight were: Gary Ledbetter, 2nd place, shooting a Ruger Mk II with a red dot sight, scoring 266 using a 2-hand Mike Horton 3rd place, shooting a High Standard 5 bb l with a red dot sight, scoring 264-4Xs, ONE-hand He shot a 97-4Xs rapid fire! I want to mention Floyd Jester shot an 86 with his 9mm STI M 1911 type gun, iron sight. He must have gotten flustered as he did poorer for timed fire. An 86 in slow fire with a regular M 1911 in 9mm!!! and the 9 mm ammo was not match grade. Outstanding!! August 8: It was a hot night. There was a little breeze, but the fans really felt good when we could stand them. But during the match, they are too distracting while we tried to concentrate to get as many X as possible. We had 7 shooters turn out: Dan Brown, Ed Dotson (hiding), Gary Ledbetter, Jim Wilson, Jim Grabbe and daughter Meredith Turney, Jim Wilson and Floyd Jester. The high scorers were: Ed Dotson scored 263-3Xs, shooting his Mutt M 1911 45 ACP with a red dot sight. Ed shot with a 1-hand Gary Ledbetter and Jim Grabbe both scored 265-6Xs!
