Recipe Corner Wood Fired Venison Nachos Submitted by Dale Holder from Okay guys, September is here and you know what that means - FOOTBALL!!! And here at OldWoodFireGrill. com we are ready to kick it up a notch with some awesome tailgate t and football party recipes. Here is a really easy nacho recipe that will score everytime you dip a chip! Ingredients 6-8 small venison cube steaks, or 4-5 large steaks Mesquite chunks Olive Oil Old WoodFire Grill KK s 10 BBQ Rub Refried beans, canned or homemade 3/4 cup chopped Vidalia or sweet onion 3/4 cup chopped bell pepper (for some color, use some green, yellow and red, or any combo) 1 tbs. butter 1 cup diced tomato or 1 can of Rotel 1/4 cup chopped pickled jalapenos (can substitute with fresh jalapeno) 1 cup shredded sharp cheddar cheese Melted Mexican queso cheese dip Tortilla chips Sour Cream Start by brushing the venison cube steaks with a light coat of olive oil and dusting lightly with Old WoodFire Grill KK s 10 BBQ Rub. Place the chopped onion and peppers in an aluminum pan and add the butter. Cover with aluminum foil. Get the grill going to medium heat, say around 350 degrees. I cooked these on a Weber Kettle using one chimney full of lump charcoal, banked off to one side and with a piece of mesquite thrown on for a little flavor. The idea with using vension cube steak for these nachos is to get a grilled steak with a wood flavor, but then be able to chop it into a ground venison consistency. Go ahead and put the onion and peppers on the grill just a couple of minutes before the steaks. Once the butter melts and the onions start to soften up, lightly coat the cooking grate with olive oil and put the steaks on, directly over the coals. Let them sear cook for 2 minutes, then flip and cook for 2 more minutes. Once the onion and peppers and the vension are done, bring them in and chop the venison up into a ground venison consistency as mentioned above. Next, using a grill safe pan or casserole dish, layer the refried beans on the bottom, followed by the onion and peppers, followed by the chopped venison. Next, layer the cheddar cheese and the diced onions, followed by the jalapenos. Finally, top it off with the melted Mexican queso cheese and place it back on the grill on the cool side of the grate for about 10-15 minutes or until all the cheese has melted and the top has a light brown crust. And that s it! Serve them up right out of the pan, or spoon out the dip into individual dishes and place in the middle of a pile of chips. Put a dollop of sour cream on top to finish it off! 3

The 2011 World Warm up was held at the Grand Prairie Gun Club on September 16-18, 2011. The shoot was about a 90% full with the bulk of the participants being retuning shooters. Our annual guests from the UK returned keeping our shoot the international venue it has become. The shoot also pulled shooters from Louisiana, Oklahoma, New York, and California. We sincerely thank all the shooters for coming to our shoot and making it a success. Good weather prevailed and lately in Texas, that is anything less than 100. We had 44 shooters on Friday for doubles. Chris Simmons shot the high score of 98 which claimed the championship. Charles Lucas took Runner Up and Nick Coupe got 3rd with 97 and 96 respectively. Sixty-five shooters began with the 12 gauge event Saturday morning. Clear skies, cool temperature, and a mild breeze made the targets good but challenging. The only one hundred straights was shot by Nick Coupe and 99 s were posted by Jon McDonald and Bruce Evans for Runner Up and 3rd. In the 28 gauge, no one was able to string together 100 straight, but Nick Coupe shot the only 99 for the afternoon. Bruce Evans, Chris Simmons and James George all shot 98 s and Bruce outlasted everyone for Runner Up and Chris took 3rd. A shoot at Grand Prairie would not be complete without our delicious meals. We are fortunate enough to have members who volunteer (and can cook!) who arrive early to cook a buffet breakfast. This year we had a build your own breakfast burrito bar with eggs and all the fixins on Saturday and Sunday. Marinated grilled chicken was served for lunch on Saturday and 2011 World Warm Up Grand Prairie, Texas 4 New Yours Strip steaks were grilled to perfection for dinner Saturday night. Thanks to Richard Kummer and Jeff Zwiebel for manning the grill and cooking 120 Steaks! As always, no one left hungry. Sunday lunch was beef brisket and sausage with all the usual sides and dessert. Also, there was a soft serve ice cream machine that dispensed many bowls of ice cream for two and half days. Thanks to all our volunteers who make the food at this event fantastic! Sunday was another mild day with sixty-seven shooters in the 20 gauge seeking the championship. Two shooters posted 100 s to make the evening shootoffs along with two 99 s. Jon McDonald outlasted Charles Lucas for gun champ and Nick Coupe defeated David Weintraub for 3rd. Sixty-one shooters took to the fields in the.410 in the afternoon with Chris Simmons defeating Robert Ennes both with 98 s to claim Champ. Bruce Evans outlasted Woody Anderson, Mike Schmitt and Nick Coupe all with 97 s to take 3rd. The HOA Champion was Nick Coupe with a score of 395. Jon McDonald outlasted Chris Simmons for Runner Up and 3rd both with 392. Mike Skidmore and Jim Speer were flawless in running the computer with Howard Huber making sure the scoreboard was always up to date. Jim also did a great job tuning-up the machines prior to the shoot for 3 days of excellent targets. Thanks Mike, Jim, and Howard for all your help. And many thanks to all the club volunteers who cook, clean up, donate, load machines, take photos, tune up the machines, etc. We simply could not have these successful events without all the volunteers. .22 cal. Pistol Silhouette Shoot September 24, 2011. We had 6 shooters and one observer today. It was a beautiful day to be out and shoot. Hoa Nguyen won shooting 58/60 with his red dot scope sighted.22, one hand hold. Floyd Jester was second shooting his M 617 S&W, shooting 56/60, two hand hold. Jim Grabbe was third with 47/60 shooting his Haemerli single shot olympics type pistol, one hand hold. Meredith Turney scored for us and took the pictures below. She did not shoot as her right hand is still hurting from some weed pulling a few weeks ago. Thanks, Meredith. GPGC Bullseye Pistol September 2011 August 31: Tonight we had the usual Sauna group except Meredith Turney and Mike Horton. Meredith pulled a ligament in her right arm pulling weeds in her garden and is out of commission for a few weeks. Mike was sick. Jim Grabbe won the match shooting 258-2 X, using his Walthers, iron sight, and one hand hold. Ed Dotson was second, shooting his M 1911 having a.22 conversion, red dot sights, and with one hand hold. Jim Wilson was 3rd with 221-2 X, shooting his Ruger Gov t Mk II, iron sights, two hand hold. I re-scored all the targets when I got home and the results are shown in the score sheet, after I figured out how Meredith had it set up. 3 of the 5 sets of scores were in error...mine had the most changes! September 7: It was great weather, cool, - less than 88 Deg., the wind blew mildly, and only 3 shooters showed up! Jim Wilson won with 249-3- X s, shooting his Ruger Mk II Military, 7 1/2 barrel, with iron sights, two hand hold. I was second, shooting a 245-7 -X s, using my Ruger Mk II with 10 barrel, with iron sights, two hand hold. Ed Dotson was 3rd with 220-3- X s, shooting his M 1911.45 ACP, with a red dot sight, one hand hold. No Photos were taken, You have seen us before... It was great weather, guys! I was fully expecting a full firing line because of the great weather! *Pictures for these matches are on following page. September 14: We had 6 shooters tonight, it was not hot--not over 90--and the breeze was nice. Hoa Nguyen returned to shooting with us and showed us up! He won, shooting 266-6X using a red dot sighted.22, with a one hand hold. Ed Dotson was second with 242-2X, shooting his M 1911.45 ACP with a one hand hold. I was third, shooting a 240-2X using my Mk II Ruger with a 2 hand hold. September 21: We had a fairly nice evening to shoot, with 6 competitors showing up. Jim Wilson almost forgot, coming in at 5:50 PM. Ho Nguyen won again, shooting 274-6X with his red dot sighted.22, with a one hand hold. Jim Grabbe was second with 260-6X, shooting his Walthers olympic match gun with a one hand hold. Ed Dotson shot a 245-4X with his M 1911 45 ACP with a red dot sight, one hand hold. September 28: We had 5 shooters participating tonight. It was a fairly nice evening, with no wind. Hoa Nguyen continues to rule as he won again! His right shoulder apparently has healed! Hoa won with a 271-6X, shooting a S&W M 41 with a red dot scope, one hand hold. He shot an 89 in slow fire!!! Wow! I have seen very few slow fire scrores this high. Ed Dotson came in 2nd with a score of 258-6X, shooting a M1911.45 ACP (!) and a red dot sight. I was 3rd, shooting a 249-2X, using my 10 barreled Ruger Mk II, iron sights, 2 hand hold. Thursday Doubles League Thursday night has been the place to be this September, with the Doubles Skeet League enjoying some excellent shooting. Some last minute signups mean there are eight squads shooting against each other in a ladder competition. The heat broke just at the right time, so we've had some great temperatures, but I can only dream of saying it was always great weather. For example, on the 22nd we had some crazy wind that was throwing high-house birds into the ground just after the stake and low-house birds that must have thought they were teal-presentations (30+ feet as they went out of bounds). Fortunately the scores have been just as exciting as those birds. With three of seven competitive nights on the books, Claybusters (Captain Kerry Williams, Gene Wills, Gerald Evatt, John Nix, and Brad Fitzgerald) are in the lead with 8 points. Trailing just behind with 6 points apiece are The Fun Bunch (Captain Terry Cullender, Brad Ambrose, Bill Schweitzer, Don Kovatch, and Charles Richerson) and Go Figure (Captain Bill Weatherby, Jay Philips, Buz Owens, Mike Gershick, and Gerry Bradford). In the individual competitions, the High Overall is currently held by Darian Mock (140), but Mike Gerschick (135) and Kerry Williams (134) aren't far behind! It's also Darian Mock who has the one and only straight-round this league, although there were a number of rounds with only a single bird missed (Jim Hundley, Gene Wills, Terry Cullender, and Mike Gerschick). Since we know there is no heartbreak like missing one bird in a round, don't be too surprised when you see those folks practicing. There are still three more competitive nights before our Championship Bowl event where each field hosts a competition for it's own trophy. So stay tuned for updates. The 2011 Fall Wednesday Skeet League is off to a successful start. We re now 4 weeks into the league, leaving 4 weeks to go to see whose team will take the competition and have bragging rights. The weather has held off, we have had some of the most pleasurable shooting conditions in league history. In week one of points shooting all three winning teams won all three of their available points. Off Constantly over the Fun Bunch, Big Daddy over 300x300 and Modified Choke over Da Boys. In our second week of points shooting there was a different outcome. While Off Constantly and Modified Choke still managed to take the majority of points, Big Daddy crashed and burned losing all three available points. In week 3, our 1st and 2nd place teams Off Constantly and Modified Choke battled each other directly with Off Constantly taking home 2 points leaving Modified Choke with just 1 point; this ties them in first place. The Fun Bunch and Da Boys gained some ground taking 3 points each from 300X300 and Big Daddy. In 3rd place is Da Boys, in a new twist. The Fun Bunch has raised to 4th, leaving Big Daddy in 5th and 300X300 in 6th place.
