2 With & without ROTEX On Board System In cooperation with Matis ltd. an Icelandic Food and Biotech R&D Company, 3X Technology has started a one year research project, comparing frozen fish fillets quality that have been bled correctly in a ROTEX On Board system and in the traditional way. The comparison was made on fishing trip in Iceland, on board a high speed long-liner - the catch was divided in two lots: Half was processed trough the ROTEX On-Board system and the other half without the system. The fish that was not processed through the ROTEX system was put to bleed in an insulated tub filled up with 50% seawater and ice. The fish will be frozen and tested regularly over the next 12 months. The difference can be seen in the following photos.

9 What is the current situation on board...? The catch is not receiving uniform treatment in terms of bleeding time and chilling afterwards? Some fish slides quickly through the bleeding process...while other fish sits there for an extended time? Sometimes...the chilling process is skipped on the processing deck, liquid ice is used in the holding room, taking the fish to -3 to -4 C when it is packed in tubs or boxes. In case the fish has not been given a proper bleeding time before such icing, the bleeding process stops and this leads to discoloration (darker color)

10 About the cooling.....why should it be on the processing deck? The timing of the rigor mortis (stiffening) is vitally determined on flaking, processing yield and shelf life (freshness) Fish does not start to loose its freshness until the rigor mortis process has ended. Fast rigor process leads to higher level of flaking, less yield and shorter shelf life Therefore it is of the outmost importance to delay the start of the rigor process and equally important to have the rigor lasting as long as possible. On most onboard processing systems some fish take longer time to go through the system while other fish goes fast through the processing. Especially in times of good catch, less attention is given to structured process & controlled flow

11 How to ensure that all fish is treaded with exactly the same processing method? The patented injection system bleeds and washes the fish more thoroughly than ever seen before By using the ROTEX tanks it is guaranteed that the first fish that enters, is the first fish out of the ROTEX tank All fish spends equal time through the bleeding process on the processing deck.
