Carbo 2100 Online CO 2 Analyzer Consistent and accurate CO 2 content is one of the main quality factors in the production of beer, sparkling wine, soft drinks and mineral water.

Not only the taste, but also product safety can be affected. Consumers are continually demanding more consistent beverage quality at lower cost. This can only be attained if breweries and bottling companies run at optimum quality levels from the first minute of production to the last. Fast and accurate online CO 2 analyzers for monitoring and controlling the beverage production process are an essential prerequisite for fulfilling such demands. Measuring principle The measuring principle is based on Henry s law: The volume of gas dissolved in a liquid is proportional to the partial pressure of that gas at a given temperature. The Carbo 2100 online CO 2 analyzer combines the classical method of CO 2 analysis according to Henry s law with Anton Paar s "Impeller principle. A measuring chamber is filled with sample, tightly sealed and expanded by 10 % of its volume. The volume expansion generates a gas phase in the measuring chamber. The fast rotation of the Impeller causes the pressure and temperature equilibrium between the liquid and gas phase to be reached within seconds. As the equilibrium pressure is reached so quickly, it can be measured directly and does not need to be extrapolated (as is the case with other CO 2 measuring systems). This explains the superior accuracy and measuring speed of the Carbo 2100 online CO 2 analyzer. The CO 2 content is determined from the equilibrium pressure and temperature. After opening the measuring chamber the sample is quickly replaced. The Impeller generates a high flow rate, accelerating sample replacement and rinsing the entire sampling path properly. The valves tightly close off the measuring chamber. A bypass to the measuring chamber allows a permanent flow of product while the chamber is sealed. 3. The volume of the measuring chamber is increased by approx. 10 %, thus generating a gas phase. The Impeller causes the pressure equilibrium to be reached within seconds. 4 The new Carbo 2100 online CO 2 analyzer builds on the strengths of the first Anton Paar online analyzer by using its pressure and temperature method combined with the Impeller principle. The main improvements of the Carbo 2100 are prolonging the time between maintenance intervals and making it suitable for applications under aseptic conditions. Pneumatic valves are now used for opening and closing the measuring chamber, increasing the time between recommended service procedures considerably. These valves also ensure the system is free of any leakage, an essential requirement for aseptic applications. No interference from dissolved air As an example, a beverage is saturated with CO 2 gas of 4.0 bars of pressure. Approximately 3 liters of CO 2 gas will dissolve in each liter of beverage at 20 C. If the volume confining this beverage is sealed off and then expanded by 10 %, a gas phase will be generated. After vigorous stirring, the gas and the liquid phase will reach pressure equilibrium. According to Boyle s and Henry s laws, the CO 2 pressure will decrease from 4.0 to 3.53 bars due to the volume expansion. This pressure drop is compensated in the calculation of the CO 2 content. If the same beverage is 10 % air saturated (0.9 mg/l oxygen), liters of air will dissolve in each liter of beverage. A volume increase of 10 % will cause the air saturation pressure to drop from 0.1 to bars. This small remaining pressure has virtually no impact on the determined CO 2 content. Even in the unlikely case of 50 % air saturation (4.5 mg/l O 2, 0.5 bars), a condition which is very harmful to product quality and typically causes excessive foaming of the beverage so that it cannot be filled any more, the over-reading of the Carbo 2100 will only be 0.06 Volumes of CO 2.
