We are working on solutions for the drainage issues in the bunkers as well reducing the number of bunkers which will enable us to pay more attention to detail on the rest. While we did not overseed this year, you will notice that the tees, fairways and greens are as green as ever due to the pigment applications. The pigment penetrates the plant leaf and will give the turf color throughout the winter months. We are collecting bids for a new fleet of golf carts which we hope to have in place sometime in the early spring. We held a Fish Fry in November and it was attended by 55 members, guests and residents. We were pleased with the turnout which will prompt us to plan for dining opportunities in the New Year. If you have not signed up for the Christmas Party or Breakfast with Santa, please call Kelly and do so today as these will both be fun events. Social Members will be glad to know that we have replaced the heater for the hot tub and it is working beautifully. The temperature for the hot tub is a constant 104 degrees which is the maximum temperature allowed by the Health Department. We will be making other improvements to the pools and the Tiki Bar area over the winter in order to provide you a better experience in the spring and summer months. Memberships will be automatically renewed on December 15 unless you contact Kelly to let her know any changes that you need to make. Please be safe over the Holidays and we look forward to serving you once again in 2015.

2 By Buddy Tate (Golf Course Superintendent) As this latest installment is written, the golf course maintenance staff is working to repair one of the worst storm totals we have received this year. Eight inches in a 24 hour period has once again washed bunkers and left standing water throughout the course. Fortunately, over the past couple of months we have developed a system which allows us to more efficiently extract water in our flooded bunkers. We expect these extensive repairs to be completed by the end of the first week in December. Over the next few months we will be modifying several bunker complexes to enhance playability and reduce overall maintenance. Thus far, we have made two applications of foliar fertilizers and pigment to our tees, fairways and greens. Applications are made every 3 to 4 weeks enhancing the health and green color after each treatment. We should see a noticeable difference in turf health when the warmer temperatures return. Because of the wear on each of these surfaces ryegrass has been seeded on the driving range, par 3 tees and the clubhouse parking lot. The cool season ryegrass will grow throughout the winter helping to maintain a premium surface. Throughout the remainder of December, we will continue detailing yardage markers, tee signs, restrooms, etc. Expect to see new flags and tee markers by the end of December. We appreciate everyone s cooperation in abiding by the cart rules during our recent rain events. The course can be much easier maintained when cart traffic is not an issue. We look forward to seeing you on the course.

Golf Club Membership Info Page 7 CHEF S RECIPE: Chocolate Mousse Chocolate Mousse Bitter Sweet Chocolate - 9 oz. (finely chopped) Butter Unsalted - 2 oz. Coffee - 4 oz.

Combine chocolate, butter and coffee in the top of a double boiler over hot water, stirring frequently until smooth.

7 Golf Club Membership Info Page 7 CHEF S RECIPE: Chocolate Mousse Chocolate Mousse Bitter Sweet Chocolate - 9 oz. (finely chopped) Butter Unsalted - 2 oz. Coffee - 4 oz. Heavy Cream Cold - 2 cups Eggs - 6 large Sugar - 2 tbsp Whip cream to soft peaks and then refrigerate. Combine chocolate, butter and coffee in the top of a double boiler over hot water, stirring frequently until smooth. Remove from heat and let cool until the chocolate is just slightly warmer than body temperature. Whip the egg whites in a medium bowl until they are foamy and beginning to hold shape. Sprinkle the sugar and beat until soft peaks form. When chocolate has reached the proper temperature, stir in the egg yolks. Gently stir in about one third of the whipped cream. Fold in half the whites just until incorporated, then fold in the remaining whites and finally the remaining cream. Pour into a container and refrigerate at least 8 hours.
