Local, fresh and innovative are Executive Chef Felix Pfister s pillars upon which he and his talented culinary team create new menus at our various restaurants in the Chateau. THE FAIRVIEW Submerge yourself on a journey with our chef s tasting menu in a culinary experience using both the eyes and the palette. We pride ourselves in our chef s talent in providing the guests with outstanding local ingredients from farms throughout Western Canada. THE WALLISER STUBE Feast on a rich assortment of authentic Swiss-German influenced dishes or be a part of the cheese and meat fondue experience in our classic wine library bar. THE POPPY BRASSERIE Savour the finest and freshest regional cuisine while overlooking magnificent Fairview Mountain and spectacular Lake Louise. Drop by for breakfast to appreciate the morning sun on the lake at dawn before you hit the slopes or adventures out on the trails. Bring your whole family to enjoy the old brassiere experience as the sun sets on the surrounding mountain tops at dusk. Picnic lunches and boxed meals are also available with advanced notice. Open 24 Hours. THE GLACIER SALOON Swing through the doors of the Glacier Saloon for a journey to the Wild West of yesteryear. Refresh yourself with a stein of local or international brew, shoot a game of pool, sit back and relax after an exhilarating day of touring the Canadian Rockies. Open from late afternoon to the wee hours for drinks, western inspired pub meals, light snacks and nightcaps. 5 GUIDED HERITAGE PROGRAMS Winter is the longest season along the peaks of the Great Divide. With an average annual snowfall of 4 meters (13 ft), the Lake Louise area is transformed into a snow lover s paradise. Join our guides for canyon hikes or snowshoe walks and learn about the magnificent wildlife and how they survive the harsh conditions of the season. Consult with one of our Mountain Heritage guides and plan a custom adventure, tailored to interest and abilities. Please visit concierge should you want to arrange special activities as a family or group. The winter program runs from December 1st to the end of March. Activities and destinations may vary due to weather, trail and/or wildlife conditions. These programs are designed for guests 8 years of age and older. All activities are subject to a 12-Hour Cancellation Policy. SNOWSHOEING AND WALKING JOHNSTON CANYON ICE FALLS Marvel at stilled waterfalls and dazzling pillars of blue ice as you explore the surprising magic of this winter wonderland. Your day begins with a 30-minute drive to the trailhead, located on the scenic Bow Valley Parkway. After donning special ice cleats you will journey up to the lower canyon on numerous suspended catwalks before reaching the lower falls. Your trek continues onward and upward with many photo opportunities until you arrive at the grotto of the spectacular upper falls. POWDERFEST SNOWSHOEING! Winter reigns supreme with the Great Divide being covered by snow for more than 5 months, our area is superb for this ancient and efficient mode of travel. If you can walk, you can snowshoe! After gearing up and a brief explanation of snowshoeing, you and your fully certified guide will venture into the forest to look for signs of wildlife that have adapted to the demanding winter conditions. Learn to read the tracks of different animals and discover who is hunting who for lunch. Journey into the woods on snowshoes and enter a world of stillness and mystery. 6 CROSS COUNTRY SKIING GUIDED CROSS-COUNTRY SKI LESSONS Imagine yourself gliding along a quiet forest trail surrounded by mountains blanketed in snow. Before you hit the trails, take a lesson to fine-tune your skiing abilities. Instructors are certified through the Canadian Association of Nordic Ski Instructors and will happily tailor individual and group lessons for those who have never been on cross-country skis, or for advanced skiers seeking to improve the technique. We allow up to eight people to participate in each lesson. Adults - $59.00 Children (ages 8-12) - $29.50 CROSS-COUNTRY SKI TOURS Enjoy endless groomed trails and fresh mountain air as you glide with a guide along some of the most enchanting ski trails in North America. The tour provides a perfect opportunity to improve your skiing technique and to bolster your confidence while you discover Lake Louise s winter marvels. Previous ski experience required. We allow up to eight people to participate in each tour. HICKORY SKEE TOUR Skeeing is the original spelling of today s popular pastime. Join us and try our traditional wooden skis and hear stories about local trappers, horse wranglers and ski pioneers form your passionate ski historian and guide. Bring your own cross country ski boots and poles. CAMPFIRE & GAMES Enjoy roasted marshmallows alongside the campfire, children will play games, tell campfire stories and sing campfire songs! COOKIE BAKING & DECORATING Children will have the opportunity to create mini masterpieces of their own! Working with one of our talented cooks, children will don chef hat and have the opportunity to bake and decorate their very own cookies and take them home to enjoy and share with the family! Children will meet at the hotel playroom where they will spend the evening playing games, telling stories, climbing the rock climbing wall and having fun! Afterwards, children will be tucked in with pillows and blanket and curl up and watch a movie. Ages: Supervised Activity. Cost: $25 per child. Sign up required in advance. KID S CRAFT TIME Children will have the opportunity to create their very own crafty Lake Louise souvenir! Using various crafts including macaroni, beads, sparkles, glitter and whatever else they can find in our crazy craft closet, they will be able to create an individual memory of their very own! Children will get the chance to experience the snow playing various winter games and sledding outdoors. Afterward, they will head inside to warm up with a cup of hot chocolate! KIDS ACTIVITY CENTRE Complimentary supervised playroom time for children staying in the hotel. The Fairmont Chateau Lake Louise is pleased to offer babysitting services so you can enjoy such an event. In order to confirm a babysitter s availability, we require a minimum of 24 hours notice, as we are unable to guarantee availability otherwise. Upon receiving a last minute request, we will attempt to locate a babysitter to meet your needs. INFORMATION THAT IS IMPORTANT FOR YOU TO KNOW: The babysitter must be paid in cash or by room charge following the completion of babysitting. Babysitting will be completed in the guest room unless otherwise specified. A 24-hour cancellation policy applies; a cancellation will result in a flat rate charge of $40.00 being applied to your guest room. Changes can be made to your babysitting request, however, these changes cannot be guaranteed within the 24-hour period prior to the assigned time. All changes to the requested times must first be approved by the babysitter otherwise, the times will remain the same. Our Guest Services Agent will confirm the time and date of your babysitting request with you at the time of check-in. 10 ICE SKATING Come enjoy our winter wonderland on beautiful Lake Louise. The lake is cleared daily of the newest snowfall and for even more sparkle. Each year our chefs create an intricate Ice Castle from huge blocks of ice to highlight the world s most spectacular rink. The massive Victoria Glacier and snow frosted Rocky Mountains provide a backdrop worthy of Broadway for skating on Lake Louise. An additional rink is available for hockey enthusiasts. Skating is available from mid-december to mid-april, depending on weather conditions. Skate rentals are available at Chateau Mountain Sports. Take a horse-drawn sleigh ride along the lakeside trail to the end of Lake Louise offering views of The Fairmont Chateau Lake Louise and natural beauty of the scenery along the way. They offer traditionally styled sleighs, featuring cozy, upholstered seats and blankets to keep you warm and comfortable. A horse-drawn sleigh ride is a perfect way to enjoy this winter wonderland during family outings, wedding parties, conventions and holidays with both day and evening excursions being equally charming. Tours operate from early December to early April, depending on weather conditions. 11 TAKE MARCUS FOR A WALK Marcus (Mark to his friends) was born on January 9th, His calm demeanour and friendly nature not only make him a wonderful companion dog, but these qualities were also exactly what the Canadian Guide Dogs for the Blind were looking for in a seeing eye dog. Unfortunately, Mark was a little too friendly and a little too interested in the world around him and did not quite make the grade. As a second career option, Marcus accepted his current position as Director of Pet Relations, at The Fairmont Chateau Lake Louise. What a sweet gig! LIKES: Everything, especially fetch! Like all Labrador Retrievers, Marcus loves to play fetch. His boundless energy will wear out even the most seasoned throwing arm. On returning to his playmate, Mark will toss the toy back or drop it at his friend s feet for the next throw. DISLIKES: We haven t come across anything yet that Mark doesn t like - cats, dogs, rabbits, kids, old folks, hiking, sleeping, swimming, Mark loves it all! BANFF PHOTOGRAPHY PHOTO SEMINARS & LESSONS Join one of our professional photographers for a photo taking seminar or private lesson. Classes available include: How to Shoot Sunsets and Sunrises, Photo Composition, How to HDR, Basic Digital Photography and how to use all those manual settings on your camera! HIKES: Mark truly enjoys a leisurely stroll along the lakeside. He enjoys a brisk walk, especially in the cool of the morning. After almost 2 years of being trained to walk on a leash, Marcus rarely gets up to jogging speed while on leash. Please contact the Concierge to sign up to walk Marcus on weekdays.

With over 4200 skiable acres and 139 named runs to choose from, this alpine terrain offers the perfect variety for all abilities. Every chair lift has both an easy and a more difficult way down allowing everyone from novice to expert to enjoy and explore the whole mountain, including the famed back bowls.
