1 The Utah Nordic Alliance Volume XVII No.5 February 2007 White Pine Sets New Record at Citizens Series Race Swarms of Cross Country Skiers Converge Upon Park City by Brian Alm December 30, 2006 Records were shattered as the largest group of skiers ever raced in the 15-kilometer freestyle race at White Pine Touring in Park City. Under beautiful blue skies and sunshine more than 320 skiers competed in the Timberland Wasatch Citizens Series second race of the season. The course was in great condition and was faster than in years past; thanks in part to Mother Nature and Charlie Sturgis and crew who had the course ready for the hordes of racers. Early in the race a group of ten skiers chased each other around the well groomed course but, at the end of three laps it was down to four individuals who finished the race all within a ten second span. Ian Harvey turned in the fastest time of the day in 41 minutes, 36.6 seconds. Following closely behind Harvey continued on page 4 Gary Fladmoe

2 effective strategy for me. EDITOR S NOTE Too Much Information I collect information. Some of what I collect is actually useful. For over 10 years I have skied and exercised with a heart rate monitor so that I know if am working hard or easy enough for a particular day. I use my monitor feedback to keep my heartrate in the right zone when I am doing a long easy ski on the Mirror Lake highway. Whenever my heartrate gets out of the easy zone I have an excuse to stop and enjoy the scenery. This has been a simple and More Training Tools Thinking that if a little info was a good thing, then even more was better, I upgraded to a new combo heartrate wristwatch GPS monitor a year ago. In addition to having up to the moment stats of how fast (or slow) I am moving, I can save the information for future comparisons. I can even view a complete lap by lap record of my heartrate, heart zone, speed, and calories burned. For even more detail, I upload it into my account at (only $9.95/ month) to show elevation, pace, and a route sketch superimposed over a detailed topographic map. Simply amazing! I have over 100 choices to label each activity including running, cycling, and most importantly, nordic skiing. I can share my uploaded list of activities (155 events and counting) with anyone on the internet as well as view the uploaded activity records of thousands of people. Talk about too much information! So far having all this extra information has provided entertainment value, but little if any training benefit. I did learn that the 15k race at White Pine in December was really 16k. That might explain why I was slower than in previous years except I seem to be the only one in my age division who was affected. My goal for 2007 is to actually use my collection of information to make positive changes! Contributions Welcome Submissions, photos, and high resolution digital pictures are needed throughout the season. Direct your questions, concerns, and comments to me at bruceschroeder@yahoo.com. 3 NORDIC NEWS by Dave Hanscom February 2007 The last couple of weeks have been pretty exciting in this household. You re probably thinking, This guy s much too old to get excited about Christmas presents or celebrating the New Year. Well, you re right about that. But when your 2-year-old grand-daughter enters the Wasatch Citizens Series, and when your son and wife provide you with a new grand-son a week later, it s almost too much for the old heart to bear! Greg s daughter Lucia was the youngest Hanscom ever to participate in a ski race. At the ripe age of two, she cruised around the obstacle course not once, but twice! She d have won for sure if one of those seven year olds hadn t crowded her out on the last turn. Thanks to David and Diane Fosnocht for making the WCS fun for even the littlest skier! Add to that the record-setting participation we ve seen this year in both the Wasatch Citizens Series and the White Pine/TUNA Relay, and it s already been quite a winter. Both the second WCS event and the Relay were up about 20% this year, relative to our previous high. We ve been skiing on minimal snow, but it seems that a lot of new people are getting into cross country ski racing. What a great trend! Let s hope it continues, even when the powder is deep. Timberland Wasatch Citizens Series The fourth race in the series, on February 10, will be at Sundance. This will be our second and final classical event, with registration starting at 8:30, kids under 12 racing at 10:00, and adults hitting the course at about 10:20. No lunch will be served this time. Be sure to get there early. The start is about a kilometer uphill from the touring center, so you ll need extra time, particularly if you re bringing young kids who will be slower hiking up the trail. Also, Provo Canyon is (still!) under construction, so you might experience delays if you re coming from Park City or Heber. Also, please car pool as much as possible. Parking is limited at the Sundance Nordic Center, so it s important that people share rides to this one. If every vehicle has at least three racers, there should be enough room in the lot. The final Timberland Wasatch Citizens Series event, which doubles as the TUNA Club Championship, is a 20 kilometer skate at the White Pine farm course on February 24. The plan is to ski three laps around a similar course as last year, with our normal wave starts. Registration will be at Saint Mary s Catholic Church, just north of Park City on SR-224, starting at 8:30. The post-race lunch will be provided by Jeff Scott and Scott Machinery Company, and we ll present the seasonal awards after that. As usual, there will be two rewards for those of you who participate in four or more WCS races (or who purchase a season pass). First of all, adults will get another nice Timberland longsleeved shirt. (We re not sure about the kids prize yet.) Second, you ll be included in the special drawing for Atomic, Fischer, and Rossignol racing skis, plus a pair of Swix ski poles. Other Events For those of you who enjoy a change of scenery, February and early March have several options. The popular Boulder Mountain Tour in Sun Valley will be on Saturday, February 3, the Moose Chase is scheduled for February 17 in Jackson Hole, and the Yellowstone Rendezvous will happen on March 3. A little closer to home, the Bryce Canyon Ski Festival over Presidents Day weekend offers a full schedule of events, including an archery biathlon on Sunday, February 18, a 10 kilometer skate race on Monday, February 19, and many other activities for kids and adults of all ages spread out over the three days. Other Utah possibilities this month are the last two Wild Rose Wednesday evening Fun Races at Mountain Dell on February 7 and 14. Registration for these 5K events is at 4:30 pm, and the races start at 4:45. Technique is your choice. These are excellent mid-week workouts to tune you up for the following weekends. Thanks to Tim Metos for sponsoring and organizing them. 4 White Pine Sets New Record continued from page 1 were Josh Smullen in second with a time of 41:43.4; Barry Makarewicz in third in 41:44.4; and Ben Page in fourth place with a time of 41:47.1. Kelly Milligan, Inge Travis and Roxanne Toly skied the course with the fastest women s times of the day. Milligan finished with the fastest women s time of the day in 49 minutes, 15.9 seconds, Travis was in second with a time of 49:48.7 and Toly finished in third with a time of 50:45.8. The course at White Pine was the site of several photo finishes. The closest races of the day occurred in three different age groups. The skiers each finished within three tenths of a second of each other. The first occurrence was in the men s (MM4) age group when Michael Dunn with a time of 56:58.9 edged Gene Pearson who finished in 56:59.2. The second occurrence was in the men s (MJ2) age group when Ian Anderson with a time of 15:46.0 narrowly beat Jonathan Bruns who finished in 15:46.3. The third occurrence was in the men s (MJ4) age group when Kyle Beling with a time of 7:51.8 barely beat Michael Dunkle who finished in 7:52.1. Truly incredible racing! In the men s open category Isaac Wilson with a time of 47:01.5 scarcely beat Graham Stromberg who finished in 47:01.9 by four tenths of a second. And even more bizarre several skiers in three different age groups finished the course within nine tenths of a second of each other. These skiers included: Scott Toly (54:03.7), and Dwight Janerich (54:04.6) in the men s open category; Arne Hultquist (56:53.6) and Michael Egan (56:54.5) also from the men s open category and Tanner Putt (15:28.6) and Henrik Burns (15:29.5) from the men s age group. Wow, truly amazing photo finishes. It truly was an incredible site to see so many cross country skiers enjoying a beautiful winter day at White Pine. Thanks goes out to the race crew for pulling off the largest race to date. Many thanks to White Pine Touring for sponsoring the race, preparing the course and providing so many of the wonderful prizes won by several of you. 9 Inge Travis Sarah Dennett race finish Mountain Dell Keep it Pure What you see in the watershed today, you may drink tomorrow. As we enjoy skiing at Mountain Dell this is a reminder to act responsibly and care for our watershed. Did you know... Your activity in the canyons can have an immediate impact on the quality of your drinking water. It can take less than 24 hours for the water you see in the stream to reach the drinking water faucets in the valley. Approximately 60 percent of our drinking water supply comes from our protected watershed canyons: City Creek, Parleys, Big Cottonwood, and Little Cottonwood. Prior to 1910, Salt Lake City had 100 to 350 cases and 10 to 20 fatalities from typhoid each year. Source watershed protection and drinking water treatment has nearly eliminated illness caused by drinking water contamination. Water from Emigration and Mill Creek is currently used for irrigation and not drinking water. That is why you can take your dogs in these canyons while restrictions apply to the others canyons. 10 BACK OF THE PACK CLASSIC SKIING: Back to the Roots of Nordic skiing by David Susong Classic tracks: Two narrow grooves pressed into the snow by skis and skier winding through the forest perhaps following a summer trail or making a new path. For anyone who began cross country skiing before the 1970 s this was it. No buffed out skating boulevards with meters of corduroy and banked corners. No V1 or V2. Prior to the development of the snowmobile, classic tracks for racing were skied in by skiers. Skis were also wider with bigger tips and poles had large round baskets to handle the deep soft snow. The resulting tracks were soft and uneven with bumps and hummocks following the snow surface. Once the snowmobile came along and was put to good use, classic tracks through woods became more standardized with machine made grooves and packed pole plants. With the advent of skating, ski trails became more like freeways. Classic tracks are now generally relegated to the edge of the skating boulevards like a car pool lane and no longer do classic tracks wind intimately through the forest. I was recently reacquainted with the experience of skiing on a simple classic track groomed through the forest. It is a different experience than skiing on the big skating lanes; more intimate with a different feel and rhythm. There is a greater sensation of speed as you fly by trees on the down hills passing only feet from them. There is little room for herringbone on the up hills before your ski tips get caught in the powder. On the flats as you lengthen your stride, trees and the spaces between them seem to close in around you. This type of skiing is the root of cross country skiing and in most cross country ski areas these roots have been lost. Over the holidays while visiting family in southwest Montana we had the good fortune to spend three days classic skiing on the Chief Joseph ski trails near Lost Trail Pass which is the pass between the Salmon and Bitterroot Valleys. The trails are set by the Bitterroot Ski Club on Friday of each week. There is a beautiful log cabin lodge in the center of the trail system that serves as a warming hut and lunch spot. This is a very retro place. The wooden ski and knicker crowd were out in force while we were there. I felt a little self- conscience striding along the trails with racing skis and clad in lycra when everyone we saw was on heavier gear and was skiing with backpacks. Skaters are not welcome here. There are no ski trails groomed for skating but there are 20 plus kilometers of classic tracks winding through the forest. My wife and I skied through lightly falling snow as we explored the trails. It was quiet. Although there were a couple roads nearby there was little traffic and the trees were much denser than we normally find in Utah effectively damping out all the sounds. The trail signs were all mounted feet high at the many trail junctions giving a sense of how much snow falls here. The terrain is a gently rolling plateau and trails descended into surrounding drainages. Trees flew by at close quarters as we descended down the trail into Joseph Creek. As we came to the bottom of the drainage and into a small clearing it felt like we had skied back in time. There was a wildness to the place which was contributed to by the falling snow, lack of horizon, sense of direction and the silence. Striding back up to the plateau we wound back and forth around the big trees and across the creek. It was a circuitous route, but very pleasant and nice skiing. Back on the plateau we picked up a trail on a summer logging road and enjoyed the open space before once again branching off on a single classic trail that looped another 5 km through the forest back to the trailhead. It had been a few years since I had last skied on this kind of trail groomed only for classic skiing. It was fun to once again rediscover the pleasure of skiing through the forest on a winding path of two narrow grooves in the snow. This was a trip back to the roots of cross country skiing and a reminder of how and why I originally started skiing. As we strided back to the trailhead and car, we were pleasantly tired and exhilarated. 13 White Pine Relay January 6, 2007 by Kurt Dudley The White Pine/TUNA Relay initiated my ski racing career and it keeps me coming back. This madeto-be-fun three (5K) lap race is now dominated by our kids and involves skiing one classic 5K leg followed by two skating or freestyle 5K legs. Then through the magic of computers and mathematics a handicap pops out of the air based on your time compared to the fastest citizen and bingo somebody who is improving rapidly wins. Well, this is pretty appealing to a slowish skier like myself who still had a few competitive juices flowing. I might have a chance of winning a race! This years WP relay was once again dominated by our up and coming younger skiers with first place honors going to the Anderson trio of Zach, Laurel and Todd. They crushed the competition with an adjusted total time (15K) of 21:19. This could be an all time record for a relay. Second place with an adjusted time of 29:00 was Team Ogden consisting of Sam Wolfe, Cole Stromberg, and Logan Phippen. The third slot went to the Guardians of Istanbul, Chris and Andrew Putt with Alexis Sumsion. They clocked in at 34:35. Jason Travis had the fastest skate leg at 14:41, Barry Markarewicz logged a 15:24 skate leg and Josh Smullin turned in a 14:59 classic leg to best the field. The weather was cold and colder for the 74 groups who roared out of the starting blocks like charging rhinos. As usual, the TUNA Board and volunteers did a great job hosting the event. White Pine Touring had the track in terrific shape and Gary Fladmoe and Bruce Schroeder photographed everything that moved. Don t forget to come out next year and bring a friend or two. 14 by Al Davis It is with great sadness that I report the death of Bob Kassow at the early age of 59. Bob died due to injuries sustained in an automobile accident on Dec. 2, Bob is survived by his wife Jane, son Robert Cody, and daughter Jessie. Bob was one of the original founders of the White Pine Nordic Center, a great friend and completely memorable character known to many of the early nordic and alpine skiers in the Park City area. I ll try and pass along a bit of this early history as a tribute to Bob and his role in developing the nordic community in those early days. I first met Bob in 1969, when I joined the Park City alpine ski school. Bob was on the ski patrol. In the late 60 s Bob, Kenny Soares, and Jim Tedford shared a house in Park City for which they paid a princely sum of $25 per month for rent. The same space now goes for $25 an hour. He later owned an A frame shack which is approximately where Stein s lodge is today. The trio was well known as the full-time night ski patrol, easily recognizable by their bright orange warmup pants and for their antics of turning off the lights before the last skier was completely down the run. In the summer, Bob worked as a surveyor but his real passion was bicycling. He continued his avid cycle racing ways both as a competitor and as a coach. Bob continually whipped his younger rivals up to the very end. Most of you have seen Tom Noaker do the same thing and they are (or were) approximately the same age. Sometimes Bob even whipped himself, like the time he fuzzed out in a sprint session, came off his rollers and crashed into his stereo system. ipods would be invented 30 years later as a safety device. The first cross-country ski instructor on the Park City Ski School was Liv Simonsen in the winter of All of us full-timers had Sundays off in those days and Liv organized a day tour in the spring which would prove to be a seminal experience for those who participated. We had quite a crew as I recall, and while I don t remember all of the folks in attendance, I believe that Jim Tedford, Bob Kassow, Duncan Ogilvie, Gary Cole, Jan Watts, myself, and some others were there. This was prior to the Park City ski area expanding into Jupiter. After a brief technique lesson (classic of course) we climbed up to Scott s pass on our lovely wood skis and light leather boots. We all remarked that there was nothing to this cross-country stuff. Then it was time to go down and our views changed instantly. We were all young, strong skiers with the egos of youth and we absolutely and utterly flailed. The only exception was Duncan who came from Maine and actually had skied previously without a heel binding. For those who have participated in the former Wasatch Overland race, you know the route we took. I have never laughed so hard while being totally drenched and nearly hypothermic before or since. It was a hoot watching very good skiers get so thrashed simply by the absence of a heel binding and a big heavy boot. None of us including Liv knew how to telemark. Technique counts and Kassow, Hanscom, and Noaker have proved that fitness counts and age isn t a valid excuse. Liv was succeeded as a cross-country instructor by Denny Haskew and Don Gallion. In the meantime Jim Tedford got a bunch of us interested in getting our instructor certifications and we got some help from the PSIA Northwest Division in terms of clinic instructors. Duncan, Tedford, Kassow, Denny, Don, and myself all eventually got certified. The next generation of Park City cross-country instructors were Bob, Duncan, and myself. We were joined for a year by a Norwegian, by the name of Axel Flinders. Axel s technique was inspiring and with Kassow s endurance and racer attitude the next step was to organize some citizen s races. I don t remember whose idea it was to start the races but I ll just bet it was Kassow s idea, although I ll also bet that Steve Erickson was part of the action as well. The track was Bob Kassow ( ) set on the golf course by skiing it in. It took three people in those days one to ski in the track and two folks who had to ski in the pole track. Four or five passes usually was what we called good tracks. Our first race was extremely well attended. Namely the half-dozen or so people who made the track then decided that it was now time to do a few more laps and call it a race. Kassow could have even been the winner. Steve Erickson and Jim Miller were cross-country instructors at Park West (now known as The Canyons) during this time. At some point both Park City and Park West decided that there just wasn t enough nordic business so they notified us that next year they wouldn t be keeping us on for the following season. I remember first meeting Steve and Jim at somebody s house (might have even been mine) in the spring where we decided to give it a go on our own the next year. Steve and Jim had been renting a house in White Pine canyon, so that became the name of the new business which in those days should have been declared a non-profit organization. Our first building was the Lewis Brothers. Stage bus shack. I m guessing but the shop space might have been around 100 square feet and was certainly smaller than many of the SUV s that regularly show up today. Our back country operation was run out of the Boy Scout cabins on the east fork of the Bear River and most of the tours were led by Gaye Erickson (now Stoner and Steve s sister and by Dee Christensen) it s the same Boy Scout organization that set the Uintas ablaze a few years back. The cabins and their pack rat caretakers were victims of the fire. Steve had an old bus which we used for additional shop space and summer storage. That bus still lives on at Ranui Gardens in groovy downtown Hoytsville it might even still have some of our old rental gear in it. I m afraid to go in and check. During White Pine s initial season, one of Bob s touring clients was a Delta stewardess by the name of Jane Ellison who was based in Atlanta. One thing led to another and on the first day it snowed in White Pine s second season, Bob moved to Atlanta. He and Jane eventually married and raised their family. Somewhat shocking to those of us who knew him in Utah, Bob became active in the LDS church and in particular was very active in promoting outdoor and fitness activities in a leadership role with the Boy Scouts. Bob was also passionate about British sports cars and if you Google Bob Kassow you ll see his name in 3 areas: sports car events, bicycle racing, and of course the news of his passing. Thanks go to Bob for his efforts in those early days. None of us could have imagined how popular the sport would become in an alpine community like Park City. Bob you will be missed by those of us lucky enough to have been able to share some time with you. page 14 february 2007

16 Functional Foods 411 by Abigail Larson, MS, CSCS Nutrition is of great importance to many athletes. It can mean the difference between getting sick and staying healthy or recovering from a workout or not. Some athletes choose to use supplements, others focus on diet, and some on both. I prefer to use diet as my primary means of obtaining all the nutrients I require for life and training. Food is less expensive and more readily absorbed by the body than many supplements. In addition, science is discovering that a variety of foods provide additional health benefits than their basic vitamin and mineral content would suggest. These foods are called functional foods. A functional food provides an additional physiological benefit beyond that of meeting basic nutritional needs. It is a new catch term on the nutrition front with several definitions depending on the source. The ADA states a functional food can be any healthful food or food ingredient that may provide a health benefit beyond the traditional nutrients it contains. It can also refer to a food that has some identified value leading to health benefits, such as reduced risk for a certain disease. There are many functional foods on the market today. Some of them are whole foods that have been available for hundreds of years (fruits and vegetables) and some are new to the food system, such as margarine s made from flaxseed oil. The following is a list of some of the most common functional foods with the highest efficacy for promoting a given health benefit. Functional Foods from Plant Sources Overwhelming evidence indicates that a plant-based diet can reduce the risk of chronic disease, especially cancer. There are components in a plant-based diet other than traditional nutrients that can reduce cancer risk; these biologically active plant chemicals are phytochemicals. Oats: Oat products are a widely studied dietary source of the cholesterol-lowering soluble fiber b-glucan. There is now significant scientific agreement that consumption of this particular plant food can reduce total and low density lipoprotein (LDL) cholesterol, thereby reducing the risk of coronary heart disease (CHD). The amount of oat bran or oatmeal needed daily to have a therapeutic effect is about 60 grams (3/4 cup dry) of oatmeal or 40 grams of oat bran (for a 5% reduction in cholesterol). Soy: Soy is a complete protein, thought to play preventive and therapeutic roles in cardiovascular disease (CVD), cancer, osteoporosis, and the alleviation of menopausal symptoms. The cholesterol-lowering effect of soy has been proven in numerous studies. A decrease in blood lipids is thought to be due to isoflavones but the exact mechanism is yet to be determined. A soy protein intake of 25 g a day elicits a reduction in cholesterol. Soy may also prevent cancer as a result of anti carcinogens (phytic acid and isoflavones) that have been identified in soybeans. The epidemiological data on soy intake and cancer risk are inconsistent but future research may shed a more conclusive light on soy s cancer prevention role. Bone health appears to be positively affected by consuming soy. A recent clinical study found increased bone mineral content and density after 6 months of 25g/day soy intake in postmenopausal women. Soy may also alleviate menopausal symptoms. This theory was prompted by the observation that Asian women report significantly lower levels of hot flushes and night sweats compared to Western women. Flaxseed: Flaxseed oil is a rich source of omega-3 fatty acid (a-linolenic acid) an essential fatty acid that has been shown to reduce total and LDL cholesterol and platelet aggregation. It is also the richest source of lignan precursors, which could decrease size of cancerous tumors as well as prevent cancer (intakes of 10g/day). Tomatoes: Tomatoes have received significant attention within the last three years because of its high lycopene content, (a carotenoid) and its role in cancer risk reduction. Decreased risk of prostate cancer and myocardial infarction were found in men who consumed tomato products at least 10 times a week; possibly due to lycopene s powerful antioxidant qualities. Garlic: Garlic is a member of the allium family and is widely known for its medicinal properties. The purported health benefits of garlic are numerous, including cancer prevention, antibacterial, anti-hypertensive, and cholesterol reduction. The characteristic flavor and pungency of garlic are due to sulfur-containing elements, which are also likely responsible for the various medicinal effects ascribed to this plant. These elements have been investigated for their chemopreventive activity. Several studies have correlated high garlic intake with decreased incidence of stomach and colon cancer. Some data suggests that all allium vegetables, including onions, may have a protective effect on cancers of the gastrointestinal tract. Garlic has also been touted for the prevention of CVD. Cardio-protective effects are likely due to its cholesterol-lowering effect but possibly through decreasing blood pressure. 900 mg garlic/day (as little as one half to one clove of garlic) could decrease total serum cholesterol levels by approximately 9% - 12%. It is currently unclear which component in garlic is responsible for its cholesterol-lowering effect. Broccoli and other Cruciferous Vegetables: Frequent consumption of cruciferous vegetables (broccoli, cabbage, Brussels sprouts and cauliflower) has been associated with decreased cancer risk. The anticarcinogenic property of cruciferous vegetables is due to their relatively high content of glucosinolates (these induce detoxification enzymes in the cells). Broccoli sprouts are also a good source of many of these compounds. Citrus Fruits: Although oranges, lemons, limes, and grapefruits are an excellent source of vitamin C, folate, and fiber, it appears that another component is responsible for their anticancer activity. Citrus fruits are particularly high in a class of phytochemicals known as the limonoids and over the last page 16 february 2007

17 decade, evidence has been accumulating in support of the cancer preventative effect of limonene. Cranberry: High in benzoic acid, cranberry causes acidification of the urine and is often used in the treatment of urinary tract infections. Studies have confirmed cranberry juice s ability to prevent and treat urinary tract infections and additional investigations have focused on the ability of cranberry juice to inhibit Escherichia coli reproduction in the intestine. Tea: Tea is widely consumed and a great deal of attention has been directed to its possible pharmacological effects. Most research pertaining to tea has focused on its anticarcinogenic properties. Green tea is particularly rich in polyphenols, an antioxidant. Epidemiological studies concerning tea s anticancer effect is inconclusive but research findings in laboratory animals clearly support a cancer chemopreventive effect. There is some evidence that tea consumption may also reduce the risk of CVD. Tea is a source of flavonoids and intake of the five flavonoids is inversely associated with CHD. Wine and Grapes: There is growing evidence that wine, particularly red wine, can reduce the risk of CVD. Research suggests a strong negative correlation between wine intake and death from heart disease in both men and women. France in particular has a relatively low rate of CVD despite diets high in dairy fat. Although this French Paradox can be partly explained by the ability of alcohol to increase HDL cholesterol, more recent investigations have focused on the non-alcohol components of wine, in particular, the flavonoids. The high antioxidant content of red wine, which is about times higher than white wine, is due to the incorporation of the grape skins into the fermenting grape juice during production. These phenolic substances seem to prevent the oxidation of LDL in the body, a critical event in the process of atherogenesis (hardening of the arteries). A note of caution is in order; alcoholic beverages of all kinds have been linked to increased risk of several types of cancer. Those who desire health benefits of wine without potential risk may wish to consider alcohol-free wine or commercial grape juice, which is also effective in inhibiting the oxidation of LDL. Functional Foods from Animal Sources Although most of the naturally occurring health-enhancing substances are of plant origin, there are a number of components in animal products that may have a potential role in optimal health. Fish: Omega-3 fatty acids are an essential class of polyunsaturated fatty acids (PUFAs) derived primarily from fish oil. It has been suggested that the Western diet is currently deficient in n-3 fatty acids and increased consumption may play an important role in CVD prevention (by reducing triglycerides). The cardioprotective effect of fish consumption has been observed in some investigations but eating large amounts of fish has not unequivocally been shown to reduce CVD risk. Dairy Products: One of the best sources of calcium, an essential nutrient which can prevent osteoporosis and possibly colon cancer. In addition to calcium, fermented dairy products such as yogurt and keifer contain health-promoting components known as probiotics. Probiotics are potentially beneficial bacteria or yeast. In the human GI there are many kinds of bacteria, some are helpful and some are harmful. Probiotics (notably lactobacillus) found in dairy may be useful in preventing cancer (especially colon), reducing cholesterol, and improving immune function. Always remember, sound nutrition remains an absolute prerequisite for optimal performance in sports and life. References: 1. It will be held over Presidents' Day Weekend, Feb. 17, 18 and 19, at Ruby's Inn, located just outside Bryce Canyon National Park on Highway 63. What started as a small cross country ski race by Garfield County Travel Council over two decades ago has grown into a three-day festival of fun for the entire family. FREE clinics, tours and demos will be held throughout the weekend at Ruby s Inn including yoga, archery, kayaking clinics, cross country ski and snowshoe tours, photography, crafts for kids, and more. There are plenty of activities for everyone in the family. Bryce Canyon National Park will conduct interpretive tours and special programs including a star party on Sunday evening. Richard Jones, the first American to row a boat nearly 4,000 miles across the entire width of the Atlantic Ocean, will talk about his journey on Saturday evening. Most of the activities are free, says Jean Seiler of Ruby s Inn, which makes the festival especially appealing and economical for families with children. There is something for everyone all weekend. The archery biathlon and the cross country ski races are the only events with entry fees. Participants of the competitions receive a long sleeve t-shirt for the $10 per race entry fee. The archery biathlon will be held on Sunday, Feb. 18 at 11:00 a.m. Monday's cross country ski races will start at 9:00 with the kid s 2 km race followed by the 10 km free technique ski race. For more information, current snow conditions and updates, call Ruby's Inn at , or check the website page 18 february 2007
