1 Prepare Equipment Preparing Frozen for the day Refer to Equipment Standards Library: Put the required quantity of frozen chips for the day into the upright freezer. Chip Dump Preparing Cooked : Put Frozen into Fry Basket s Freezer Wash Hands As in all areas of food preparation, wash your hands with liquid antimicrobial soap before and after preparing any food products. Remove frozen chips from freezer (FIFO) and place required amount of chips into basket away from chip fryer over ½ size bun pan. Wash hands with warm water and use antimicrobial soap. Wash for a minimum of 20 seconds. Wash Hands. Do not remove the chips from the freezer until you are ready to cook them. Once you have removed the required amount of chips, return those remaining in the bag to the freezer immediately. Preparing Chip Seasoning chip seasoning bag. Fill shaker with seasoning, secure lid and code date using a Use-by label for 7 days. Fold over bag with remaining seasoning and code date using a use by label for 14 days. Clean shaker using 3-step cleaning method before refilling. 1 of 5
2 Shake the basket over a ½ size bun pan to distribute chips evenly and shake out crumbs, small pieces, and ice crystals. Do this away from the chip fryer to minimize ice particles in the fryer. A maximum of 1 bag of frozen chips (850g) can be put into a fry basket at a time. A minimum of 229g of frozen chips can be cooked at a time in a fry basket. To measure this minimum quantity, use the following method: Use a large chip carton and fill it to the brim with frozen chips to measure approximately 229g. Empty these frozen chips into a fry basket when frying the minimum quantity. Discard chip carton. Immediately return unused packet of frozen chips to the freezer. Check that Oil is at drop Temperature Lower 1 basket into fryer and immediately press the programmed button on the fryer panel to start the cook timer. Shake the basket in the fryer when the timer sounds after 30 seconds of cook time to keep the chips from sticking together. VC210 and upgraded EM90/99 controller Quantity 850g Cooking time Cooking Conditi temperature 3:00 min 180ºC *Flex In standar basket 180ºC *Flex In standar basket (Electric & Gas) Henny Penny Elite EM90/99 Prior to upgrade 850g 2:30 min Check that the fryer panel reads drop 180 C. Put Basket into and Press Timer When cooking 2 baskets of chips in a single vat fryer, never drop both baskets simultaneously. Drop 1 basket, press timer button, and wait 1 minute before dropping the second basket. Both baskets can be dropped at the same time when using the Henny Penny Elite. Do not hang basket of frozen chips over the fryers as they will thaw out and be soggy when cooked. Remove Basket After Cooking 2 of 5
3 Hold the seasoning shaker at a 45 degree angle to the chips. This will facilitate even spreading of the seasoning. Season only 1 basket of cooked chips at a time. Season the chips in the order below: Remove the basket immediately when the final timer sounds to signal the end of the cook time and hang the basket on the chip fryer basket rail. Press the timer button again to stop the beeper. Allow chips to drain for 5 seconds before emptying onto chip dump. Put Cooked onto Chip Dump For the Fabristeel Single Sided Chip Dump, season the chips in the following order: Empty chips from one basket onto chip dump and spread evenly over entire surface of chip dump, using chip scoop. Do this carefully to prevent damage to chips. For the Fabristeel Single Sided Chip Dump, season the chips in the following order: must be in a single layer to ensure even dosage of seasoning salt. Season with KFC Chip Seasoning To prevent damage to oil, never season chips over the fryer. 3 of 5
4 Turn over the seasoned chips twice in the dump by using the chip scoop to evenly spread seasoning. are now ready to serve. Record the holding time on a Hot and Fresh tag and attach it to the chip dump by placing the end underneath the lip of the front of the chip dump tray. When chips are moved to the front of the chip dump, ensure that the tag is also moved to the front of the chip dump. Discard chips after 10 minutes. Pack If only half a bag of frozen chips is cooked, then ½ the amount of shakes to 5 instead of 10. Make 2 shakes across the chips with 2 passes and 1 shake in the middle. Use the chip scoop to scoop up the chips and align them lengthwise so as to make it easier to drop them into the chip packaging. Make sure the bottom of the scoop is put deep into the box, this will ensure the chips are packed tightly. When seasoning the minimum quantity of chips, make 2 shakes of seasoning over these chips before serving. Store seasoning shaker at chip dump, away from moisture and fryers. Do not put freshly cooked chips onto previously cooked chips. Before seasoning another basket of chips, remove all seasoned chips to empty section of double chip dump. Correct Fill Levels: Record Holding Time Under Portioning: 4 of 5
5 Clean Wipe the exterior surface of the fryer with a clean, green/blue cloth to remove all oil residue. Clean all smallwares and utensils using the 3-step cleaning process. Practice Certify What is the minimum amount of chips Skim Skimming an open fryer: For open fryer, use the skimmer to scoop particles from the fryer after each cook to reduce particle build up. that can be cooked? How do you measure the minimum amount of chips? Why shouldn't a basket of chips be hung over the fryer? How long must chips be cooked for? How long do you allow the chips to be drained for? How many shakes of KFC seasoning is added to 1kg of chips? What is the holding time for cooked chips? 5 of 5
