We will do our best to accommodate your needs. Please be aware that our restaurants use ingredients that contain all the major FDA allergens (peanuts, tree nuts, eggs, fish, shellfish, milk, soy and wheat). The nutritional information provided is a compilation of product testing, data provided by an independent testing facility commissioned by Pei Wei, combined with the nutrient data from Pei Wei suppliers, the USDA and nutrient database analysis of Pei Wei recipes. The rounding up of figures is based upon guidelines of the FDA. Pei Wei provides nutritional information regarding its menu items that is as complete as possible. However, please note the following: (i) Test menu items, specials, and/or limited time offers, may not be included in the nutritional information contained herein. (ii) Special or customized orders will alter the nutritional information contained herein. (iii) From time to time, Pei Wei may have to obtain products from different or substitute suppliers which may alter the nutritional information contained herein. (iv) Menu item ingredients are based upon recipes and portions, but variations may occur based upon ordinary differences inherent in the preparation, local suppliers, region of the country, and season of the year. 12 FAQs for Pei Wei Asian Diner Nutritional Information: Why do many dishes list the same protein option twice with (stock velveted) listed as part of the second option? We cook our proteins in one of two ways: using oil (what we call oil velveted) or seasoned water (what we call stock velveted). When you see a protein option listed with the stock velveted next to it, it means that particular dish s protein is cooked in our housemade seasoned water as opposed to oil. We ve listed both sets of nutritonal information because you can always request it steamed aka stock velveted, and we will be happy to honor your request. This modification is so popular that we have included it in our Nutritional Information. What are the seasonings in the seasoned water used for stock velveting? We season our water using fresh onions and ginger to add a touch of flavor when cooking your choice of protein. Why is steak the only protein listed for every dish with both the oil and stock velveted options? Steak is best when cooked in oil, so regardless of which dish you choose, if steak is your protein of choice, it will be cooked in oil unless otherwise requested. For this reason, we include the Nutritional Information for the modified stock velveted choice as well. What are the vegetables that are served with a dish when Vegetables & Tofu is chosen as the option? We serve broccoli, carrots and snap peas with our tofu when Guests choose Vegetables & Tofu as the option. What kind of tofu do you serve when Guests choose Vegetables & Tofu as their meat option? We serve a firm, baked tofu that is dipped in soy sauce, very different from the more traditional silken tofu (served only in our Hot & Sour soup). This baked tofu has a smooth texture and tastes like the sauce you choose to add to it. What ingredient prevents so many of the sauces from being vegetarian? Any sauce that is not marked with a leaf, our symbol for vegetarian, has something in the sauce that we cannot remove. Depending on the dish, it could be anything from chicken stock to oyster sauce or shrimp paste. If you would like to know the specific ingredient in a particular dish, please ask a Manager. Do you have any dishes at Pei Wei that you claim to be 100% vegan? The simple answer is no. There are varying degrees of vegetarian and vegan lifestyles. Our dishes marked vegetarian have no meat or animal byproducts in them; however, there are many Vegans who do not eat sugar because it is processed using animal bones. We also use honey in our Teriyaki sauce, which is not considered vegan. For this reason, we are only able to claim a vegetarian status on our dishes. How can the Honey Seared dish be a Vegetarian dish when it has honey in the name? The honey in the name is used to describe the mild, sweet flavor of the sauce, but there is actually no honey in the Honey Seared dish. Gluten Free dishes on the menu must be ordered with chicken or shrimp that is non-battered, so why do these proteins seem crispy when served? When you order one of our Gluten Free dishes, we dust your choice of chicken or shrimp in potato starch, all of which is Gluten Free, and then cook it in fresh oil. When cooked in oil, the potato starch gives the protein a crispy texture that also allows the sauce to stick to the protein for better flavor. Does Pei Wei use any products with trans-fat? No, however our steak does have trans-fat that is naturally occurring.
