Bailey and Emma Lyon (holding rabbits) joined other 4 H members at the 4 H Day at Tractor Supply. Members brought their project animals and created a Farm Zoo for those who stopped by. iii

Co-Club Manager Lee County Texas Stars 4 H Horse Club performed their drill under the theme of Disney s Frozen. There was an Elsa, Anna or Hans on every horse. In addi on to drill, the team also performed a precision drill. The Club hosts the Lexington Homecoming Rodeo in May, as well as performs at area rodeos. iv

39 Getting the Most Out of 4-H 4-H Age Guidelines Members are divided into four age groups. Age is calculated as of September 1, 2017, and identifies the member throughout the year. Clover Kid Junior Intermediate Senior Kindergarten (age 5) to 2 nd grade Grades 3 rd, 4 th, 5 th Grades 6 th, 7 th, 8 th Grades 9 th, 10 th, 11 th, 12 th Third Graders, who are 8 years old, should enroll after September 1, 2017 so their 4-H age will calculate properly. Enrollments before September 1 would cause the age calculation to be based on the previous year, classifying the member as a Clover Kid, restricting their ability to compete in contests/events. Clover Kids can participate in all County 4-H activities, including the Foods and Creative Arts Department at the Lee County Junior Livestock Show. However, Clover Kids are not eligible to participate in auction departments of LCJLS. Enrollment and Fees The 4-H year begins each September 1. Enrollments become inactive at the conclusion of each year and must be reactivated. Members, Parent Volunteers, Coaches and Club Managers must re-enroll each year and pay the Participation Fee in order to participate in the 4-H program, Lee County Junior Livestock Show and major livestock shows. 40 Getting the Most Out of 4-H Parents Complete Enrollment Members Start a Project Adult Volunteers provide transportation to meetings and camps, assist with meetings and project groups, as well as many other duties. Each Club has a Club Manager(s) who works with the Club Officers, Adult Volunteers and Members to make the most of the 4-H experience. All adults who volunteer in the 4-H program must complete an enrollment through 4-H CONNECT and complete an on-line training. Adults are assessed an annual $10 volunteer application fee. This fee will pay for the volunteer screening. Screenings are conducted every three years, though the $10 volunteer application fee will be assessed annually. Once the volunteer s profile becomes active, a volunteer certificate will be accessible via download in 4-H CONNECT and will include a small card that can be cut out to be carried in the volunteer s wallet. Enrollment is completed on-line and processing fees paid through the 4-H CONNECT enrollment program at: Get Involved As a 4-H Member or Adult Volunteer, you will be involved in a local 4-H club, attend monthly meetings, volunteer for committees and stay informed of what is going on in your club. Learn what is going on throughout the County, District and State by reading the Family 4-H Handbook, 4-H Newsletters, 4-H newspaper articles and the Lee County 4-H pages on the website: During enrollment, 4-H members are asked to select projects of interest. When you start your 4-H experience, you may want to select one or two projects. The more years you are in 4-H, the more projects you can usually handle. 4-H projects can be conducted throughout the 4- H year (Sept. 1 - Aug. 31). Certain projects have special activities or contests, so you need to begin some projects at specific times during the year. After you select your projects, contact your Club Manager or the Lee County Extension office for assistance. Project flyers, giving details on project objectives and resources, are available on-line for the many projects: Complete a Project After you have selected a project, you are ready to start gaining information and having fun learning about your project. In 4-H, you are asked to do a minimum of six learning experiences to complete a project. LEARNING EXPERIENCES vary from project to project such as: project meetings with other 4-H'ers and Adult Volunteers; going on tours; attending workshops; reading publications or surfing the Internet. Many 4-H'ers work on the project with their parents, grandparents or other family members, while other 4-H'ers work on projects with a group of friends. Working through a project from start to finish helps a 4-H member gain skills in carrying out responsibilities, as well as setting and completing goals. 2

41 Getting the Most Out of 4-H Keep Records Whenever you spend time working on a project, record your progress. Take notes on the things you learn as well as track your progress with photographs. Lee County 4-H'ers have the opportunity to complete a recordbook for recognition at the Annual 4 -H Awards Program, held in August, and to be considered for the Gold Star and the I Dare You awards. See Page 15. Share Information As a 4-H member, you learn to share with others the information you have gained through your project experience. This is called LEADERSHIP. The more years you are involved in a project, the more you will have to share with others. Also, serving as a club officer or a committee member will help increase your leadership skills. Help Others The 4-H experience includes helping others. We call our 4-H help, COMMUNITY SERVICE. It is a way to give something back to the community for the continued support of the 4-H Program. Community Service is something that you do for a non-4-h audience without pay or compensation. Promote 4-H 4-H is the largest youth organization in the country because we are always inviting others to attend. Part of your 4-H experience will be to get others involved in the program. This could mean asking a friend to visit your club meeting or preparing a poster for National 4-H Week. Keep asking others to share in the fun of 4-H. 42 Getting the Most Out of 4-H Texas 4-H Clover The Texas 4-H Clover is the "opportunities handbook" for 4-H youth, Extension agents, leaders and volunteers. It lists the most current project and activity information. If you are interested in a project area, the Clover will let you know what resources are available. official primary source for supplies, paraphernalia and other similar items bearing the 4-H name or emblem. Products offered for sale include 4-H apparel, club supplies, office supplies, 4-H curriculums and other printed resources. You can buy just about anything with the 4-H logo from the National 4-H Supply Service. Texas 4-H Clover is available on-line by the State 4-H office near the beginning of each 4-H enrollment year: National 4-H Supply Service The National 4-H Supply Service is the e- commerce and mail order catalog unit of National 4-H Council. Supply Service had traditionally reached out to the 4-H system through its annual print catalog mailing, The Source Book. The National 4-H Supply Service was launched in 1925 to meet the needs of the 4-H system and is the Kendal Brown and Brenly Walker, both members of Northwest Lee County 4 H, par cipated in the 2017 Lee County Junior Livestock show. Kendal exhibited a hog and Brenly exhibited a lamb and goat. Stewart Hervey, Courtney Meyer, Emma Smith and Kylee Ricketson all par cipated in the District 9 4 H Roundup. Collec vely, they competed in the areas of Consumer Decision Making, Food Challenge, Healthy Lifestyles, Horse Quiz Bowl and Nutri on Quiz Bowl. 4

43 Fund Raising in Lee County 4-H members and County Clubs assist the Parent Volunteer Association and the 4-H Council with countywide fund raising. The County 4-H budget needs the help and support from these the fund raising activities. Proceeds from fund raising efforts go to fund County 4-H activities, awards and scholarships. The Fried Chicken Dinner Fund Raiser is the most successful effort for Lee County 4-H. Poinsettias and Pecans are sold simultaneously beginning in October. Pecan sales will be ready for delivery the Friday before Thanksgiving. Poinsettias will be ready for delivery the week after Thanksgiving. Each 4-H er has the opportunity to earn cash prizes based on their fund raising efforts. Both products sold and volunteer work-hours earn points. See the chart below. 44 4-H H Camps & Summer Activities Lee County Workshops The Lee County 4-H program offers a variety of workshops at various times throughout the year. Past programs have included: Registration deadline is usually the first week in October. Contact the Extension Agents if you re interested in attending. The Lee County Parent Volunteer Association is able to off-set registration costs depending on the number attending. Clothing Workshop Wildlife Program Food Workshop 4-H Fun Day District Leadership Lab 4-H membership is not required in order to participate in these workshops; but non-members will be charged a registration fee. District JUNIOR Leadership Lab Junior Leadership Lab is held in November and is geared for members, ages 11 to H members will learn leadership roles in an enjoyable and fun atmosphere. With new skills, members are more prepared to take on leadership roles within their Clubs. Registration includes a night of lodging, all meals, program activities, insurance and curriculum. District Leadership Lab, held in June, prepares teen leaders (ages 13 to 19), from the 18 counties in District 9, for leadership roles at the county level. This 3-day, 2-night training provides participants with valuable knowledge and skills. By combining work and play, activities are designed to explore creativity in leadership roles, enhance team building skills and develop communication and public speak skills. 45 4-H H Camps & Summer Activities Texas 4-H Center Texas 4-H Center Youth Programs will provide your child with the chance to develop character, learn valuable life skills, make new friends, and discover new interests. In addition to County 4-H Camp and Prime Time, other camps are offered throughout the summer. New camp opportunities are announced from year to year. Space is limited. 4-H membership is NOT required for most camps. Schedule information is usually posted on-line in February. Prime Time Prime Time is designed especially for youth, grades 2 to 8, with opportunities to meet new friends, develop new skills and learn how to work with others. Special evening activities for the whole camp encourage teamwork and cooperation. The 3-night/4- day event is sure to be a ticket for rejuvenation and recharging. Prime Time is divided in to two sessions; grades 2nd - 5th and grades 5th - 8th. Prime Time Xtreme Prime Time Xtreme is especially for senior 4-H members, grades 8 to 11. This is 4-H Camp elevated to a whole new level. Sessions are lead by 4-H Specialists, County Agents and invited guests, and may include: County 4-H Camp County 4-H Camp is held in conjunction with other counties at the State 4-H Center on Lake Brownwood, usually during late June/early July. 4-H'ers, ages 9 to 18, participate in a variety of recreational activities and learning experiences. Other Projects available include: 4-H members participate in projects where they are asked to accomplish a task, make something, develop a skill, raise and/or train an animal, among others. To complete a project, a 4-H member should have a minimum of six learning experiences. This can include individual study or group activities, such as tours, workshops and project meetings; anywhere that skills and knowledge are gained. Parents and Leaders work with members, assisting with the learning experiences. 47 4-H H Projects Animal Project All animal project exhibitors need to review rules for the specific livestock shows they plan to enter. Rules can vary between shows. Extension Agents are available to assist in your project management throughout the year. Contact the Extension office to schedule a site visit. Livestock projects involve raising and caring for live animals while learning about animal health, nutrition, breeding, selection and marketing. The livestock project offers outstanding opportunities for individuals to gain experience in decision making, record keeping, responsibility, sportsmanship and leadership. District 9 hosts the Southern Classic in Bryan at the Brazos County Expo Complex. The Southern Classic is designed to provide an educational opportunity for 4-H families needing experience in the show ring. The weekend includes educational programs, mixed with competitive experiences designed to prepare youth for their ultimate experience, The County Youth Livestock Show. The Southern Classic is open to all 4-H families. Register on-line, via 4-H CONNECT. Southern Classic December 8-10, southern-classic/ Clothing and Textiles For those participating in Clothing and Textiles (January through March), the 4-H member will complete six learning experiences with the assistance of club leaders and/or parents. These experiences can be completed in project group meetings or individual study. Clothing and Textiles Project Activities: County Fashion Show In the Spring, the County Fashion Show allows members to show off their skills. The 4-H member can either construct a garment or select a ready-to-wear outfit to model. Participants submit infor-mation about their selection prior to the Show. During the Show, judges ask questions related to the project experiences. Fabric and Fashion Design The Fabric and Fashion Design competition is for those interested in designing fabrics, apparel or accessories. A 4-H member may submit a portfolio (a drawing and description of their design) for any of three categories: accessories, apparel or textiles. Portfolios will be judged during Fashion Show activities. Special project information is available for 4-H ers interested in studying design. The Board may review project materials and activities, recommending program direction, special activities, new materials and competitive events. Membership on the Board gives you a voice in planning future of 4-H Clothing and Textiles events. Applications to the Board are due before December 31 for a two-year term beginning in June. Additional information is available at the Extension office. Consumer Education Everyone is a consumer. We all must make purchases to satisfy basic needs like food, clothing and shelter. The Consumer Education project helps youth learn to make the right choices when shopping and managing money. This project teaches decision making and buying skills needed to become an informed consumer. Youth learn valuable skills for analyzing, advertising, developing personal budgets and investing money. Every choice makes a difference in a person's financial future. The Consumer Education project helps youth gain the knowledge and skills to become successful and satisfied consumers. Participants learn to identify and utilize relevant information. Important Dates: San Antonio Livestock CDM February 2018 District Contest May 2018 Educational Presentation and Public Speaking The Educational Presentation and Public Speaking project develops and promotes the skills needed to research, organize and present a speech on a given topic. In addition, participants will acquire knowledge to be pleasing in manner and appearance, while gaining the ability to speak convincingly in public. A 4-H member will have many opportunities to make speeches. These challenging occasions will help 4-H ers to develop communication skills they will use throughout their life. Effective speakers are not necessarily polished or perfect. Instead, they are energetic, direct and warm human beings who are knowledgeable about their subject matter and area involved with their audiences. Good speakers are not born, they are developed. Each presentation should be a learning experience. The Extension Agents can help 4-H members prepare an outline using the resources collected. Younger members may wish to write out their entire speeches, while experienced members may just need to prepare a detailed outline. 4-H members wanting to participate in the District Roundup should to contact the Extension office as soon as possible. District Roundup will be held in May. Preparation begins early. 4-H members will have the opportunity to present their demonstration/talk to the Extension Agents during a club meeting or individual conference prior to the District event. Healthy Lifestyles In October and November, 4-H Club leaders and parents will assist interested 4-H ers in participating in the Food and Nutrition Project. 4-H ers complete six learning experiences pertaining to food and nutrition, learning about nutrition, food choices, menu planning, food preparation, buying, food safety, careers, cultural influences and much more. These experiences can be completed in Project Group meetings or in individual study with parents and leaders. The experiences prepare the 4-H'ers for project activities. PROJECT ACTIVITIES: Food Challenge The 4-H Food Challenge is a contest that allows the 4-H members to demonstrate their culinary knowledge and skills. From a set of predetermined ingredients provided, teams of 3 to 5 4-H members must develop a recipe and prepare the dish within 40 minutes. Teams then make a presentation to a judging panel, explaining the preparation steps, serving size, food safety concerns, nutrition value and cost of the dish. Food Show The Food Show offers 4-H members an opportunity to show off skills and knowledge gained in the Food and Nutrition Project. 4-H'ers submit their recipe and project information sheet prior to the Show. For the Show, each participant prepares a dish at home and brings it to the contest. During the judging, 4-H'ers are asked questions on nutrition, food preparation and meal planning. A tasting party follows the judging for everyone to enjoy. Food & Nutrition Quiz Bowl The Food & Nutrition Quiz Bowl involves teams of three to four 4-H members which compete against other District teams by answering questions on Food and Nutrition project topics. All team members must be in the same 4-H age group. Teams, which include three to four members in the same 4-H age group, answer questions on all aspects of the horse project. If you are interested in being a part of the Horse Quiz Bowl, call the Extension office by October 1. Meat Judging In the Fall, meat judging teams are organized and begin training. Anyone interested in meat judging should contact the County Extension office by October 1. Competition is held at the District, State and National levels. Photography Contest The Texas 4-H Photography Contest encourages self-expression and allows youth to demonstrate skills learned in the area of photography, including the use of photographic equipment and process of photographs. Members have an opportunity to show off their talents in District and State 4-H photography contests. Entries are submitted on-line through 4-H CON- NECT. Horse Quiz Bowl team members, Rayce Brewer, Stewart Hervey, Kellyn Hervey, Le e Morris, Kylee Ricketson and Courtney Meyer. Christy Lenox is the Coach for the Horse Quiz Bowl teams. Livestock Judging Livestock Judging teams are organized in the Fall to learn the correct way to evaluate livestock. 53 Recordbooks Record keeping is a very valuable skill taught to members of the Texas 4-H program. Members are encouraged to keep project records and have these records reviewed annually by submitting a Texas 4-H Recordbook. Why is it important you keep a record of your 4-H activities? Because, by recording your activities you can remember all the fun you ve had so far and set future goals! Keeping records of 4-H projects could help you when you apply for college scholarships too! 4-H Recordbooks are books you make to record your annual projects. The primary purpose of completing a Recordbook are for a young person to develop the skills necessary to set goals, work toward achieving those goals, reflect on their experiences, and set new and higher goals for themselves. A secondary benefit is to prepare young people for the process of completing quality academic scholarship applications. The completed 4-H Recordbook must be submitted to the Lee County Extension office in early June. Each 4-H'er submitting a Recordbook at the County level are recognized at the Annual Awards Program in August. 54 Major Livestock Shows Major livestock show projects of steers, market lambs, meat goats and swine must be validated and ear-tagged in the months of June, October and November. Ear tags for the major shows must be ordered prior to tagging dates. Market poultry orders are due in September and October for major livestock shows. Watch the 4-H newsletter and 4-H newspaper articles for information and updates regarding tag order dates and validation dates. Major Show Entry Night Major Show Entry Night, held at the Extension office, is an opportunity for 4-H families to complete entry forms for major livestock shows. Changes to Show Rules and schedules will be discussed. A Notary Public will be on hand. 55 The Quality Counts verification process requires junior exhibitors to pass an on-line test that measures their knowledge on quality assurance and character education content items. The Quality Counts program has now been in existence statewide for several years. Over this time, it has reached an average of 30,000 youth per year through the 4-H and FFA Programs. The program outcomes clearly demonstrate youth being more knowledgeable of best management practices associated with livestock projects. More importantly, the program s impact has demonstrated positive changes in personal character attributes as well as adoption of livestock best management practices. Over these many years, Quality Counts has been supported and endorsed by every major livestock show in Texas. These livestock shows have been instrumental in helping market the program statewide and have also been a strong partner regarding the educational content developed for the Quality Counts program. In addition, these livestock shows have fully endorsed this verification process. Youth are able to go online to take the test and become verified. A verification number will need to be provided at the time of making an official entry into a Texas major livestock show. Thus, youth will need to have completed and passed the test before the major livestock show s entry deadline. A passing score has been determined to be 80%. Youth educators and the major livestock shows in Texas believe strongly in Quality Counts. Collectively, they are confident that this significant step of requiring youth to be Quality Counts Verified will strengthen and enhance the youth livestock program in Texas. Exhibitors need to be verified once as a Junior and once again as a Senior. JUNIORS are 8 years old and in the 3rd grade through 13 (as of August 31, 2017). Pass the online test with 80% correct answers (8 out 10) How many times can I take the test? as many times as necessary to achieve an 80% score What happens when I pass the test? You are given a Quality Counts verification number and the online system allows you to print a personalized certificate. How do I learn the material needed to pass the test? All of the material is available online, through the on-line teaching system Texas Trail. Will Quality Counts Verification be needed for Breeding Entries? Yes. Quality Counts Verification will be needed for all Junior Livestock Show entries at Major shows, including breeding animals. What do I do with the Quality Counts verification number? Hold on to the number and use it when asked for by stock shows as part of entry requirement. Can someone else use my number? No. The number is tied back to your name in the database available to stock shows and County Extension Agents. When the number is entered into the system, only your name appears. Do I need a separate verification numbers for 4-H and FFA? When you take the test, you have the option to select both FFA and 4-H as your affiliated organizations; that one number will qualify you for both organizations. 17

59 Awards and Recognition County 4-H Awards The Lee County 4-H Council and Parent Volunteers Association host the Annual 4-H Awards Program. 4-H'ers are recognized for their 4-H participation during the previous year. It is also a way to promote the variety of opportunities in 4-H and to recognize more 4-H members. Nomination forms are in the next few pages. All 4-H members applying for awards (Gold, Silver or Bronze Star, Rookie, Honor Roll, All-Star Letterman; Danforth or Outstanding Community Service, must submit the appropriate paperwork and application on or before June 15, Recordbooks for County competition will be due June 15, If you do not complete your recordbook by the deadline, you forfeit any which requires a recordbook. Awards are based on 4-H Grade. Lee County 4-H Awards Banquet: August 19, It is intended that a 4-H member receive each Star Award only once in their 4-H career. Counties receive an award quota based on the number of enrolled 4-H members. The award will be presented to the most deserving young person(s) without regard to gender. The following requirements must be met: National 4-H Week October 2-6, 2017 is National 4-H Week. All Lee County 4-H Clubs are encouraged to promote the 4-H program throughout the year, but should plan something special for the National 4-H Week. In years past, clubs have prepared posters and exhibits. There are several types of fliers available through the Extension office which can be used for your promotional activities, and the Extension office has plenty of 4-H and related computer graphics that might be useful for your displays. I Dare You Award The National Danforth I Dare You award is offered to Senior 4-H members in recognition of excellence in character and well-balanced personal development, as well as demonstrated leadership. In August of each year, Senior 4-H'ers, who have timely completed Recordbooks, will receive applications for the award. Star Awards The Star Awards are a high achievement award. The award has three different levels: Gold grades 9 th through 12 th Silver grades 6 th through 8 th Bronze grades 3 rd through 5 th Luke Dallmeyer exhibited his heifer at the 2017 LCJLS. 21

60 Scholarships Local Scholarships Parent Volunteers Association Each year, the Lee County 4-H Parent Volunteers Association (PVA) offers scholarships to eligible graduating 4-H Members. Applications are due to the Lee County Extension office by the first Monday in December. Recipients are notified in February. To be eligible to receive a PVA Scholarship application, the graduating 4-H member must be registered in 4-H CONNECT as of September 30. The Applicant must: have been enrolled for a minimum of two (2) consecutive years of the four high school academic years; have attended a minimum of four (4) club meetings during each enrolled 4-H year; have formally applied for enrollment in a technical, vocational or other school of higher education (field of study is not relevant); and be a candidate for graduation from high school during the academic year Applications are ed to each graduating 4-H member based upon the enrollments in 4-H CONNECT. Lee County Jr. Livestock Show The Lee County Junior Livestock Show awards scholarships to eligible LCJLS exhibitors. Applications are available through your school counselor s office. Go-Texan Scholarship The Lee County Go- Texan Committee offers scholarships to youth as part of the Houston Livestock Show activities. Applications are available through your school counselor s office. Texas Extension Association of Family & Consumer Sciences The Ann Sonner Scholarship is an opportunity for a 4-H member currently enrolled as a Sophomore or Junior in a Texas college or university with a major in Family and Consumer Sciences related field. Eligibility requirements and scholarship application are available on-line at: Thousands of dollars in college scholarships are awarded to 4-H members annually. There are local scholarships as well as many state-wide opportunities. Scholarship applications are usually available as early as December. Visit with your school s Counselor for assistance in applying for scholarships in many different areas. Whitney Whitsel received a 4 H Founda on scholarship, among others. Whitney was a member of the Dime Box 4 H Club and graduated in Logan Perry, of Serbin 4 H, was one of the 18 Texas representa ves at Na onal 4 H Congress held last November in Atlanta, Georgia. Logan is the first delegate ever selected from Lee County to represent Texas at this na onal event. As part of his trip, Logan was able to visit the world headquarters of the CNN news network. 23

68 Lee County 4-H at LCJLS Feb March 3, 2018 Average Daily Gain Average Daily Gain (ADG) is the amount of weight gained per day by the animal over a given period of time. If your animal does not make the minimum weight or is overweight, then you may not be able to participate at the County Junior Livestock Show. By keeping track of your ADG every two weeks, you can determine if your animal is in the weight range required for the stock show. For example, an animal weighs 800 pounds on January 1 and weighs pounds on January 15; the animal gained 41.5 pounds in 14 days lbs. 14 days = 2.96 lbs./day total pounds number of gained days fed = Avg. Daily Gain Show Weight Show weights are the weight ranges for each specific species. Only animals within show weights will be permitted to be show. A 3-pound weight tolerance will be allowed on the minimum and maximum weight limit; meat rabbits are allowed a 3 oz. tolerance per pen. Animals within the tolerance will be recorded at the minimum or maximum weight. Meat Rabbits 10 lbs lbs. per pen Market Lambs at least 100 lbs. Market Hogs at least 220 lbs., but not over 280 lbs. Market Steers minimum 1,000 lbs. Market Goats between 70 lbs. to 125 lbs. Review LCJLS Rules (included in this Handbook) for additional information regarding your livestock project. 69 Lee County 4-H at LCJLS Feb March 3, 2018 Cake Baking Tips MOST IMPORTANT!!! Use FRESH ingredients. To know it s fresh, unseal the product as you set out your ingredients. The quality of opened items can be questionable. Cake Pans Use shiny metal pans. Shiny aluminum pans reflect heat away from the cake and give it a tender, light-brown crust. Dark pans can cause a thick, dark crust. Insulated pans require a longer baking time. Use a properly sized pan. When checking the size, measure from inside edge to inside edge. A cake made in a pan that is too large can be flat and overbaked, while one made in a pan that is too small may overflow during baking or take longer to bake. Prepare the pan according to recipe directions. Pans for butter cakes are usually greased and floured. Heat the oven 10 to 15 minutes before baking. Fill pans halfway. This will ensure that the cake bakes evenly and that the batter doesn t overflow the pan during baking. Cake Batter Measure ingredients accurately. Be sure to add them in the order and manner specified in the recipe. Don t over beat or under beat the batter. Over beating or under beating will affect the texture and volume of the cake. Cake Doneness Under baked cakes are soggy, pale and raw-tasting; overbaked cakes are dry, too brown and may stick in the pan. To be sure that your cake is done, follow these simple steps. 1) Check for doneness at the minimum baking time, then check at 1-minute intervals until the cake is done. 2) Butter cakes are done when: a toothpick inserted in the center comes out clean the top is rounded, smooth and springs back when lightly touched in the center. 3) Foam cakes are done when: the top springs back when touched the cracks on top look and feel dry. Carefully space pans in the oven. Place single pans in the middle of the center rack. For more than one pan, leave at least 1 inch between the pans and the sides of the oven for good air circulation. 70 Lee County 4-H at LCJLS Feb March 3, 2018 Cooling the Cake After cake has baked the specified time, remove it from the oven and let it cool in the pan on a wire rack for 10 minutes. Run a thin knife between the cake and side of the pan. Unmold from pan by placing on wire rack against cake top and turning both cooling rack and pan over. Lift pan off carefully. Cool at least one hour. Icing the Cake Decorating a cake can be as simple as swirling creamy frosting over its layers. For best results, take these steps to make your finished product a work of art : 1) Make sure the cake is cool prior to icing. 2) Get rid of loose crumbs. Brushing the layers with a pastry brush or your hand works great. 3) To keep the serving plate clean, tuck strips of waxed paper under the edge of the cake before you frost it. Spread about ½ cup frosting on the top of the first cake layer. 4) Place the second cake layer, top side up, on top of the frosted layer. Spread a thin coating of frosting on the sides of the cake to seal in any crumbs. Let stand 15 minutes. Hannah Zgabay received Reserve Champion for her Lemon Cake. 5) Add a thicker coating of frosting to the sides of the cake. Then, frost the sides again, swirling and building up the top edge of the frosting about ¼ inch above the cake. 6) Spread the remaining frosting on top of the cake, blending it with the frosting at the edge. Remove the strips of waxed paper once you ve finished. 7) Let the cake stand, if time allows, for about an hour before slicing to allow the frosting to set up. Storing the Cake To keep cakes at the peak of their flavor and quality: 1) Store when completely cooled. 2) Cakes with frostings or fillings containing dairy products should be refrigerated. 3) Store under cake cover or large bowl. If a cake has a fluffy cooked frosting, insert a knife handle under an edge of the cake cover so it isn t airtight. The frosting can be totally absorbed by the cake when stored in an airtight container. If you don t have a cake cover, cakes with creamy frostings also can be covered lightly with foil, plastic wrap or waxed paper. To keep the frosting from sticking to the protective covering, insert several toothpicks halfway into the cake around the edges and in the center to support the covering. Steven Kellenberger 32
