1 Doc. A OFFICIAL RULES AND REGULATIONS of the GELATO WORLD CUP 6 th Edition, Sigep, 18/19 January 2014, Rimini RECITALS a. FORMAT. The exhibition Gelato World Cup was born out of an idea of Associazione Gelato e Cultura and is organized by Rimini Fiera and Associazione Gelato e Cultura. Said exhibition, occurring every two years, has reached its 6 th edition and consists in a competition for teams (composed of a gelato maker, a chocolate maker, a chef and an ice sculptor) from all over the world. It will take place during the 2014 edition of Sigep, International Exhibition Artisan Production of Gelato, Pastry, Confectionery and Bakery on January. b. MISSION. The mission of the Gelato World Cup is to enhance the world excellence of artisan gelato. c. TEAMS ADMITTED. The first 12 (twelve) teams whose TEAM MANAGER (also see points 1 and 7 of these Rules and Regulations) submits the request for registration starting from 30 March 2013, and with final submission date on 30 October 2013, will be admitted to take part in the competition. Teams from Countries in which the official selections are carried out for the World Cup have a right of access to the competition, as long as they have complied with the registration criteria. Such teams are Italy, Poland, Argentina, Brazil, plus the winner of the Gelato Latin-American Cup ( Campeonato Latinoamericano de Helado Artesanal ), held in Buenos Aires in June d. TITLE. The winning team will receive the title 2014 Gelato World Cup Champion and will hold the title until the next edition of the Gelato World Cup takes place. As of the 2014 edition of the Gelato World Cup, the winning country cannot take part in the edition immediately subsequent to the competition it won. e. TEAMS. Each team will be composed of 4 (four) participants with competencies in Gelato Making, Chocolate and Pastry Making, Ice Sculpture, Haute Cuisine, plus a Team Manager. The five team members must be citizens of the country for which they will compete, or they must prove to have worked in that country for at least 5 years, without prejudice to exceptional cases that the management of the Gelato World Cup reserves the right to approve at its sole discretion. f. The Team Manager will be part of the technical jury for the Gelato World Cup without the right to vote for its own team. 1. REGISTRATION For registration in the competition to occur the following documents must be filled in and signed by the TEAM MANAGER (also see point 7) and subsequently by all other 4 (four) members of each individual team (starting from 30 March and no later than 30 October): a) Request for registration in the Gelato World Cup (see Doc. B REQUEST FOR REGISTRATION); b) These Rules and Regulations of the Gelato World Cup (Doc. A); c) Informed Consent (see Doc. C); d) Transfer of a registration fee for each individual team in the amount of (plus VAT for the Italian team) to be paid at the time of submission of this request; such fee will be reimbursed only to those teams who are not chosen for the shortlist of 12. The bank transfer should be made to the current account held by RIMINI FIERA SPA at CARIM CASSA DI RISPARMIO DI RIMINI SPA with REGISTERED OFFICE in PIAZZA FERRARI, RIMINI IBAN IT53 T CC to Rimini Fiera Spa with the description: REGISTRATION GELATO WORLD CUP + NAME OF COUNTRY; e) Scanned photocopy of a valid identity document for each member of the team; f) 1 half-length photograph in jpeg format for each contestant depicting the person in work clothes; g) Sending of biography (in Microsoft Word, maximum 1000 characters each). Failure to fully fill in and/or sign (including partially) the documents requested or failure to send even only one of the documents requested will result in the immediate exclusion of the entire team. All of the abovementioned documents necessary for registration must be sent by to pacini@coppamondogelateria.it, starting from 30 March 2013 and no later than 30 October 2013, under penalty of exclusion from the competition. Therefore, all of the REQUESTS FOR REGISTRATION received in the period running from 30 March 2013 included and 30 October 2013 included will be assessed. For this purpose, the date of receipt of the shall apply. Requests received before 30 March 2013 and

2 after 30 October 2013 will not be considered in any way. In any case, the Organizers of the event shall not be held responsible in any way for late or non-arrivals of s for any reason or cause. The request for registration (Doc. B), these rules and regulations (Doc. A) and the informed consent (Doc. C) are published on the websites and where they can be freely downloaded. The following events constitute causes for exclusion of the entire team from the competition in addition to the causes described above: 1. Failure to fill in every part of the REQUEST FOR REGISTRATION (Doc. B); 2. Failure to sign every page of these RULES AND REGULATIONS (Doc. A); 3. Failure to sign the INFORMED CONSENT (Doc. C); 4. Failure to fulfil one of the requirements of these RULES AND REGULATIONS; 5. Failure to pay the registration fee of Euro (as per preceding letter d); 6. Failure to send the photocopy of the valid identity document (as per preceding letter e); 7. Providing incorrect or false information. 12 (twelve) teams will be admitted to take part in the competition. This includes the first ones to submit the request for registration with all the above documents and information attached, as well as teams already entitled to be admitted (see recitals). 2. LIST OF TEAMS ADMITTED The list of teams selected to take part in the 6 th edition of the Gelato World Cup will be published on the websites and by 4 November CHANGES WITHIN THE INDIVIDUAL TEAMS If, after 4 November, one or more members of the team is replaced, due to very serious and documented causes, the Team Manager must promptly send an to pacini@coppamondogelateria.it notifying the Organizers of such change. The Organizers reserve the right, at their sole discretion, to approve or refuse the replacement(s) and, in the case of refusal, disqualify the team from the competition. 4. TESTS FOR THE 2014 GELATO WORLD CUP The individual teams will freely choose the THEME of the tests described below and notify the Organizers of the choice before the start of the competition (see point 4). 4.a Decorated cups for table service The contestants must prepare and present 15 gelato cups with assorted flavours, 13 of which for the jury, 1 for the official photograph and 1 for the display case and the final Gran Buffet (each cup may have a maximum diameter of 20cm, there is no limit to the height, the shape and decorations must relate to the theme, and the cups must be brought by the teams). 4.b Gelato cake The contestants must prepare a gelato cake, with a maximum of three gelato flavours, adding any of the following as desired: semifreddo, fruit coulis, crunchy nougat, sponge, candied fruit, etc. The contestants must make 3 decorated samples of the cake (one for cutting and tasting, one for the display case and the final Grant Buffet and one for the official photograph), each with a minimum of 14 portions. The cake s shape and decorations must relate to the theme. The cake is to be cut by a member of the team who shall also prepare the portions for the jury to taste. 4.c Ability test The contestants must prepare a gelato flavour that must be presented on a traditional moulded cone provided by the Organizers. Such flavour must be created and prepared with secret ingredients selected by the Organizers and made known to the contestants only at the start of the test by delivery of the sealed envelope. 4.d - Entrées The contestants must prepare 3 small hot tasting samples to be paired with the gastronomic gelato ( savoury gelato) selected by the team and presented to the Jury on a single plate. 13 samples must be prepared for the Jury and 1 specimen of the dish for the official photograph and the final Gran Buffet (for this dish only the gelato must be a specimen and the following ingredients can be used to make it: margarine, butter, royal icing, Italian meringue, in any 2

3 case edible ingredients). The raw materials must be bought by the team. The shape and decoration must relate to the theme. 4.e Mini chocolate gelato (see attached example images) The contestants must prepare 6 (six) types of mini gelato, 13 (thirteen) for each type (78 pieces in total) for the Jury and 6 (one for each type) specimens for photographs and the final Gran Buffet (the following ingredients can be used to make them: margarine, butter, royal icing, Italian meringue, etc., in any case edible ingredients). Each mini gelato must weigh 40g, with a 10% leeway (above and below). The gelato must represent a minimum of 50% of the total weight. The shape and the decoration must be made with edible ingredients. To prepare the mini gelato each team must use the gelato it made with the sponsor company s chocolate. 4.f Artistic pieces - IN ICE The contestants must sculpt and decorate an ice sculpture, relating to the theme, for the presentation of the gelato cake as per preceding point 3b. 1 (one) block of ice measuring 25cm x 50cm x 100cm may be used and will be provided by the Organizers. The team must bring all equipment necessary to sculpt and decorate the sculpture. - IN CHOCOLATE The contestants must prepare an artistic piece (with a free shape relating to the chosen theme) made with the sponsor s chocolate (white, milk, dark, gianduja, measuring a maximum of 80cm x 40cm x 40cm) which will support 6 (six) specimens of mini chocolate gelato as per preceding point 3e. The mould (polycarbonate, silicon rubber, flexipan, silhouette, etc.) must not exceed 30% of the total sculpture. The team must bring the support or base. No inedible supports or bases are allowed. 5. RECIPES The Team Manager must send the title of the chosen theme with the complete set of recipes (in Italian and English) to the Organizing Secretariat ( to pacini@coppamondogelateria.it) by Tuesday 7 January During the Gelato World Cup Welcome Meeting the Team Manager must hand over 40 brochures with a detailed description of the works (20 in English and 20 in Italian) in printed form. The Organizers may freely use the recipes (also passing them on to third parties that work with the Organization itself for any reason) without having to pay the teams and individual members any amount for any reason. 6. TRAVEL AND ACCOMMODATION EXPENSES Travel and hotel (Bed & Breakfast) expenses will be borne by the Organizers. In particular: - The Organizers will pay a flat-rate contribution for travel costs; the amount of such contribution will be determined, on a case-by-case basis, by the Organizers and notified to the Team Manager (or to its replacement as regulated by preceding point 3) at the same time as sending the rules and regulations for the competition as regulated above; - Accommodation for the whole team (for a total of five members) in a hotel room (2 double rooms and one single room for each team) with B&B board for the full duration of the competition. Reimbursement of travel expenses and the cash prize (for the top three ranked teams and which will be better described and regulated in the supplement to the rules and regulations on the performance of the competition) will be fully paid to the Team Manager who, under its own full responsibility, must redistribute the money to the other team members. The Team Member, by signing these rules and regulations, declares in any case to hold the Organizers harmless from any request for any reason submitted by the other team members. Moreover, the remaining team members declare that, with regard to the reimbursement of travel expenses and to any cash prize, they will have no further claims or complaints against the Organizers and must refer to the Team Manager only. 7. NOTE ON THE TEAM MANAGERS Contact with the Gelato World Cup Organizers will be made exclusively by the Team Manager; in this sense the Team Manager will be the team s sole spokesperson. It will be the Team Manager s duty to register the team and refer the Organizers requirements to the other team members. The Organizers shall not be liable for any failure by the Team Manager to pass on information to the other team members. The Organizers will not respond to any other team member. The team may appoint a sole spokesperson other than the Team Manager. In that case, when submitting the 3

4 request for registration the Team Manager must fill in the last part of the request for registration reserved for the appointment of a sole spokesperson other than the Team Manager (see Doc. B). In the event of the appointment of a spokesperson other than the Team Manager, all of the effects provided for herein will apply to the appointed sole spokesperson. 8. PRIZES TEAM RANKED IN FIRST PLACE Gelato World Cup Trophy (one for each team member) Diploma with Gold medal Cash prize 10, (ten thousand/00) TEAM RANKED IN SECOND PLACE Diploma with Silver medal Cash prize 6, (six thousand/00) TEAM RANKED IN THIRD PLACE Diploma with Bronze medal Cash prize 3, (three thousand/00) There is no provision for a prize in the event of a tie: in such event, the team who achieved the highest points in the ability test (3.c) will be the winner; in the event of a further tie, the overall highest points for FLAVOUR received in all the tests will be considered. All teams are entitled to a medal and diploma of participation. 9. SUPPLEMENT TO THE RULES AND REGULATIONS OF THE COMPETITION Starting from 1 July 2013 the SUPPLEMENT TO THE RULES AND REGULATIONS OF THE 6 TH GELATO WORLD CUP will be published on the websites and Such rules and regulations will include judgement criteria for the individual tests, penalties and exclusion from the competition, times of tests, map of the competition area with the arrangement and model of the machines, technical specifications of the semi-finished products and technical specifications of the machines, etc. In any case, the SUPPLEMENT TO THE RULES AND REGULATIONS OF THE COMPETITION will be sent by to the Team Managers of all teams admitted to take part in the competition. Such document must be signed only by the Team Manager and sent back via to the Organizers at: pacini@coppamondogelateria.it. The Team Manager shall submit the SUPPLEMENT TO THE RULES AND REGULATIONS OF THE COMPETITION to the other team members and, by signing such supplement, shall guarantee under the Team Manager s full responsibility (including in the event of disputes) to have submitted the SUPPLEMENT TO THE RULES AND REGULATIONS OF THE COMPETITION to the other team members and that the other members have accepted such supplement. 10. FINAL PROVISIONS a. The counting of the Jury s votes will be checked by the Competition Stewards; the results may not be appealed and will be published on the websites of the Gelato World Cup and SIGEP. Any dispute must be notified in writing to the President of the Jury upon no later than termination of each test of the Competition. b. The Organizers also reserve the right to cancel the Competition in the event of force majeure without any compensation being due to the individual teams. c. These rules and regulations have been drafted in Italian as the official language and translated into English. Any dispute arising from these rules and regulations shall be submitted by explicit agreement between the parties to the jurisdiction of the Court of Rimini, the parties agreeing to exclude any other jurisdiction.
