2 WELCOME Dear Chef / Restaurant, Under the auspices and patronage of, the Concurso Internacional de Valenciana de Sueca, now in its 58th year we are pleased to invite you to participate in the 58 th International Valenciana Competition Pacific Semi Final To be held at the stunning location of the award winning winery /restaurant /vineyard Josef Cromy on Sunday 22rd April The Concurso Internacional de Valenciana, held in the Valencian village of Sueca, in the Albufera rice growing region of Valencia is now in its 58th year and regarded as the most prestigious and cooking contest in Spain. The contest attracts leading chefs from around the world including Australia. The winner of the Sueca contest is acknowledged by the world and Spanish world of gastronomy as the leading Chef in the world! The international prestige of the Concurso extends in 2018 to competing teams from, United States, Peru, Costa Rica, Japan, France, Germany, England, and of course Australia and New Zealand. First, and second prizes for the 2018 Pacific competition will be an invitation to the Finals of the 58th Concurso Internacional Valenciana de Sueca Valencia, Spain. This also comes with full accommodation for your stay (up to 4 nights in Sueca - value $800) and travel vouchers $1200, and $800 respectively. All competitors will receive a diploma of participation and a trophy; the paella pan used is yours to keep. 4 THE RULES AND REGULATIONS REGULATIONS FOR THE 58TH INTERNATIONAL PAELLA VALENCIANA COMPETITION PACIFIC SEMI FINAL - TASMANIA 2018 UNDER THE PATRONAGE OF THE COMMITTEE OF INTERNACIONAL CONCURSO DE PAELLA VALENCIANA, SUECA AND THE AYUNTAMIENTO MINISTERIAL CULTURAL DE SUECA. NOTE: These regulations are identical for all International Competition pre-heats and Sueca. 01 Any professional chef, cooking at national or international levels, may compete in the competition. Each chef must represent a professional cooking establishment, e.g restaurant or registered catering business etc. The business must be established & evidence of this must be presented to the committee. (ABN, ACN, website etc) 02 The chef may be accompanied by an assistant and the assistant details are to be provided on the official application form. The assistant may be changed at a later stage. 03 The contestants will prepare a Valencian of 15 servings, according to the recipe established by the Organising Committee of the International Contest of Valenciana, and endorsed by the Society of Master Chefs of the Valencian Community. 04 The purpose of the contest is to raise the standards and restore to the highest quality of preparation and cooking of the authentic Valencian, as well as creating a greater awareness and recognition of the Valencian internationally. Following the contest participating restaurants who prepare Valenciana and have this on their menus, we request that the Valencian paella be prepared according the official Valenciana recipe used for the contest. 05 The competition will take place at Josef Chromy Winery and Vineyard, 370 Relbia Road, Relbia Launceston Tasmaniaa 06 Airport to arrive in Tasmania is Launceston. 07 The participating chefs must wear the regulation chef s uniforms of the food business, nationality or country the chef represents. They may make reference to this by an embroidered logo or labeling on the uniform. Full and clear identification the business the chef represents is essential during the preparation of the Valencian. Poster etc. 08 The prizes available are the following: FIRST PRIZE: Gold medal: Invitation to compete in the 58th Concurso Internacional de Valenciana, de Sueca, Valencia. $1200 travel vouchers and full accommodation in Sueca for the contest (16 September 2018) value of prize $ ND PRIZE: Silver medal: Invitation to compete in the 58th Concurso Internacional de Valenciana, de Sueca, $800 travel vouchers plus full accommodation in Sueca for the contest. Value of prize $ RD PRIZE: Bronze Medal. NOTE: with the dramatic increase in numbers of countries of international semifinals only two invitations are now available in the semi-finals. 09 The Judges, at their discretion may choose up to 5 of the subsequent runners up who will be awarded an Accessit certificate of quality from Sueca. All contestants will receive a certificate and trophy of participation. 10 The Jury will grant the awards and consist of up to 8 members. They will be appointed from qualified and prominent chefs and representatives from the world of gastronomy. 11 The composition of the jury will be made public prior to the start of the contest. The decision of the jury is final. The judging is blind ie, the judges have no idea of the author of the paellas they judge. 12 The jury will score the quality of the paella by the following criteria: a) the cooking of rice, b) taste, c) colour, d) symmetry of the ingredients and e) socarrat. 13 Disqualification will be automatic should it be discovered that the paella contains some ingredient other than the formula submitted by the Sueca Committee. 14 The paella will be prepared cooked and finished in the prescribed time and will at the conclusion of cooking be presented to the jury for adjudication. 15 Preparation will commence at 10 am and ingredients will be issued to each contestant between am. Cooking will commence at 12p.m. At 1.30pm a 15 minute warning will be given. By 1.45 cooking stops and the paella must be finished ready to be taken for adjudication at 2pm.
