Cheers to an exciting, fresh and fun 2018! While none of us can predict or foresee what lies ahead, the Rio Terra Team and I choose to be positive, energetic and productive in this new year. Many of us know that the month of January can be a bit difficult due to weather changes, allergies looming, world disasters, less contact from our families and friends, health issues and so on. Our world is filled with unpleasant news reports and despair. The Rio Terra Team and I invite each of you to join us as we Revive our Hearts to kick off this new year. Once a quarter, we will challenge everyone to a new gift of encouragement. What does that mean? Well, let s start with January. Let s just encourage each other. Since my first day with you, you all have encouraged me and given me a comfort in joining this beautiful community. Encourage each other with a kind word, an anonymous note, a phone call or just a smile. We all have or know someone with a problem or a battle. By encouraging someone, we are giving them a gift of encouragement, hope and confidence. Here s a little chuckle for your January: In a greasy spoon, a downhearted diner asked the waitress for meatloaf and some kind words. She brought the meatloaf but didn t say a thing. Hey, he said, what about my kind words? She replied, Don t eat the meatloaf. -The Los Angeles Times I hope all of you will join our 2018 challenge to Revive our Hearts! Perry M Veteran Spotlight: Buddy B Buddy was 18 years old and living in Texas when he decided to enlist in the Navy. Buddy said after Pearl Harbor was attacked he wanted to join the Navy Aviation as soon as he could to help defeat the Japanese. Buddy was sent to San Diego for his boot camp training then traveled to the Pacific, and the Yellow Sea and China. It was during WW2 when Buddy was trained to be a radio operator, also a radar and Loran operator on long ranger patrol bombers. Buddy saw active combat for 20 months while he was stationed in Okinawa, Japan, the Yellow Sea & China. During his service Buddy was awarded the Air Medal, the Distinguished Flying Cross, the Presidential Unit Citation, the Asiatic-Pacific Campaign Medal, 3 Bronze Stars, the Navy Good Conduct Medal and the WW2 Victory Medal. Buddy says his most memorable experience was the day his squadron heard the Japanese had surrendered. It was August of 1945 after almost 4 years of war. After WW2 was over, Buddy retired with the rank of Petty officer First Class. Resident Spotlight: Nell S Nell was born in Lovelady, Texas, and grew up with an interest in fashion design. As an early teenager Nell sewed her own clothes and knew she wanted a modeling career. Nell attended the University of Houston and the John Robert Powers School of Fashion. She started her career as a model for Sakowitz Brothers, Foleys, and Neiman Marcus in Houston. Nell s modeling career was interrupted in 1953 when she met her 1st husband at Bryan Air Force Base in Bryan, Texas. They were married in 1954 and raised three children; one son & two daughters. Because of her husband s career in the Air Force, Nell s family moved 22 times in 26 years. Nell says her favorite places to live was Kindley Air Force Base in the Bermuda Islands and also Washington DC. A few of Nell s other favorite things are: Wind Beneath my Wings is her favorite song, Nell s favorite movie is Gone With the Wind, and her favorite holiday is Christmas. Nell s fashion advice for young girls and women these days is.. Stick to the basics! Choose colors that highlight your skin and hair color. Avoid FAD fashions and it s ok to mix separates to appear that you have a closet full of clothes. And most important, avoid the just got out of bed look! Enjoy your appearance, be yourself and always smile! In 2014 Nell and her second husband were living in Waco when he suffered a severe stroke. Nell wanted to be closer to her family who were living in New Braunfels so they came and toured Rio Terra. Nell said she fell in love with it! We love that Nell decided to live here and she is a model resident! She is always eager to participate in all the activities and dress up for any occasion. Pictured here you see Nell in her derby hat for our big Kentucky Derby Party last May. 1 large onion, halved lengthwise and thinly sliced crosswise (2 cups) 2 large garlic cloves, finely chopped 3 tbsp. vegetable oil 1 tsp. cumin seeds, toasted 10 whole allspice, crushed 1 (28-ounce) can whole tomatoes 1/2 cup brown sugar 1 1/2 tsp. salt 1/4 tsp. black pepper 3 pound packaged sauerkraut, rinsed & drained Cook onion and garlic in oil in a 3 1/2- to 4-quart heavy saucepan over moderately low heat, stirring occasionally (stir more frequently toward end of cooking), until golden brown, about 30 minutes. Increase heat to moderate, then add cumin and allspice and cook, stirring 30 seconds. Add tomatoes (including juice), brown sugar, salt, and pepper and simmer, stirring occasionally and breaking up tomatoes, 10 minutes. Stir in sauerkraut and bring to a boil, then reduce heat and simmer, partially covered, stirring occasionally, until most of liquid is absorbed, about 30 minutes.
