2 2 TheBooster Washington County Fair Tuesday July Have you ever wondered how the Foods Judge determines which entry has the best food product? Hot foods that sizzle or decadent desserts that make your mouth water are just a few sample entries you may see being judged at the Washington County Fair. Some might even envy the task of judging such a large assortment of wonderful baked goods, main dishes or fruit filled desserts. However, keep in mind that there is a method to the judge s assessment of each food entry. Judges follow a number of criteria to determine the quality of each entry, not just by taste alone. The following are criteria a state registered foods judge may consider as s/he evaluates your food entry. The exhibitor needs to follow guidelines listed in the fair premium book, i.e., copy of recipe on index card, size of plate, number of cookies on plate, etc. appearance Overall neat appearance; uniform size and shape of fruit and vegetable pieces; golden brown color for certain baked goods; color of food items chosen; portion size on the plate. Garnishes can make a recipe more appealing as well. Taste Food product should have sufficient flavor; not too salty or overly sweet; and complimentary seasonings, if used. (Note that not all judges taste the food product.) Texture Food product should hold its shape, not fall apart. Texture should be appropriate for type of food (i.e., smooth, not lumpy for pudding; al dente for pasta, tender-crisp for vegetables, etc.). Texture is important on the outside, as well as the inside, of the food. Level of Difficulty All recipes are not created equal. For example, homemade yeast rolls and breads are very precise in measurements, while a pudding parfait requires a steady hand in creating neat layers. (The level of difficulty comes into play when considering merits and other special awards within one division.) Knowledge of Recipe Preparation This guideline refers to the entrant s ability to answer questions asked by the judge about the recipe and its preparation, and, perhaps, its nutritional value. ( Junior judging only ) Remember, fair judging is meant to be a learning experience for the entrant as well as a means to showcase the result of their hard work. Face to face foods judging for the junior class is on Tuesday, July 21 from 12:30 pm to 7 pm and open class foods judging is on Wednesday, July 22 at 9 am in the Ziegler Building. 3 Since 1977 The Booster Washington County Fair Tuesday July From the desk of the FAIR MANAGER ######## AS SEASONS CHANGE, so do fairgrounds as they are magically Megan Buehler Washington County UW-Extension 4-H Youth Development Staff Assistant transformed into short-lived wonderlands each year. For just a few days each year, amazing opportunities are lurking through the gates. For six great summer days, amazing opportunities Where the action is There is a lot going on at the Washington County Fair, but one place where the action never stops is at the 4-H Youth Development Action and Promotion Center inside the Ziegler Family Expo Center. Stop by to spin the wheel and answer a question, pet a rabbit, or get creative making an art project. There is always something happening and 4-H youth members and adult volunteers to talk to. Come check-out what 4-H has to offer and find out about the over 80 projects (areas of interest youth explore in hands-on long term learning experiences) youth can do in 4-H and how to get involved. If you aren t able to stop by at the fair, come to the 4-H Open House on Wednesday, August 19th, 4:30-7:30 pm at Washington County Fair Park in the Small Animal Building. It s an opportunity to try out some hands-on activities, talk to youth members and adult volunteers, and enjoy light refreshments. The archery range will be open for youth ages We re also holding a Mini Open House on Monday, August 31, 6:00-8:00 pm at the United Way Resource Center in Hartford. Washington County 4-H Youth Development is open to all youth from 5K through 13th grade. 4-H is part of the University of Wisconsin-Extension; programs are delivered in partnership with the United States Department of Agriculture and federal, state and local governments. Everyone in the community is invited to participate, compete, congratulate, ogle, play and make memories. The Fair is a place for all ages to enjoy. It takes a community full of heart, valuing tradition and pulling together to bring all the pieces together year after year to make a fair a success. Keeping this tradition alive is a lot of work. There are tough decisions to be made by the Fair Board how do we keep sponsors motivated; where can the budget be cut or stretched; where do we find those most important volunteers that keep the fair s gears rolling and which entertainment will give us the best bang for our buck. Volunteers give their time to this ANNUAL EVENT. It is their opportunity to give of their talents. Each and every volunteer is priceless. Fair atmosphere is unique. Families are on a mini-vacation from reality. Fairgoers enjoy the once a year funnel cake or cotton candy. Friendships rekindle on the benches in the shade of familiar trees. Memories of experiences at the County Fair with friends and family are held dear. Sights, sounds and smells are forever embedded in memories. Through the cycle of life, the younger generations are encouraged to get involved and thus, create new memories. I enjoy my daily visits with fair patrons, concert fans and various food vendors. I enjoy the extremely rewarding stops in the animal barns, visiting with the exhibitors. There is nothing better than seeing that judge give direction to the young exhibitor, hopefully guiding them to their future. A Fair is a business with a lot of great people where everyone comes together to create something unique. It gives opportunities for all members of our community, young and old, to showcase their talents and achievements. Every Fair has a story. Ours is family tradition. I think tradition is the magic word. There is a blue ribbon tradition; a specialty food tradition; a community-oneness tradition; a sharing the magic tradition. This is why I do what I do. 4 4 The Booster Washington County Fair Tuesday July BEHIND THE SCENES Face-to-Face Judging Brianna Stapleton Welch, Washington County UW-Extension 4-H Youth Development Educator YOU MIGHT OVERHEAR A FAIRGOER sincerely asking this question versus just singing the line from the well known children s song Down by the Bay. It s true that you very well may see llamas, rabbits, goats, horses, or poultry in pajamas or a variety of other costumes at some point throughout fair. This is because all of these animal departments have a costume contest division. Many times youth do not receive a fair premium for the costume division, but do it for fun, to be creative, and learn some new skills. It s a great opportunity for the youth to engage with their animal in a different way. Depending on the species, the animal may be more tolerating of the costume than others. For an animal like the llama it is actually part of their training. The youth first needs to desensitize the animal before they can consider putting them in a costume. BEFORE THE GATES of the county fair are open to the public, hundreds of youth participate in a challenging test of skill. Any junior exhibitor showing a non-animal exhibit at the Washington County Fair must sit down with a judge for face-to-face judging on the Monday before the fair begins. Judges and youth fill the Ziegler Family Expo Center, and the building buzzes with energetic conversations about the learning experiences youth have had throughout the year. River Rd, West Bend 24 Hour SErvICE Fully Insured & Licensed Face-to-face judging is a one-on-one discussion between the youth exhibitor and an adult judge of that project area. The judge asks the member of practice and patience to ensure both the youth and llama are comfortable with putting the costume on so this is done safely. It s also important to practice with the specific costume that will be used as the llama might react differently to a hat being put on their head versus a shirt on their body. It s also an opportunity for the youth to get creative in a different way. There are specific standards and things that a judge is looking for in traditional judging classes, however in costume classes it is a little less rigid. Many times youth will create a theme and dress up in a coordinating costume with their animal. Some combinations have been a bride and groom, soccer player and referee, or Mickey and Minnie Mouse. Come see what the animals will be dressed as this year. At right is the schedule of when costume classes/contests will be taking place. special questions about their project. For example, the judge may ask, Why did you make the item this way? What are you most proud of accomplishing with this exhibit? What would you do differently the next time? Exhibitors are not compared to other youth in the same category, but rather judged on their own merit. It is an opportunity for the exhibitor to tell their story of growth while practicing their communication skills and receiving feedback from an adult with expertise. For many youth exhibitors, the face-to-face judging process can be intimidating. It s not always easy to strike up a conversat ion with a stranger. The experienced judges working at the Washington County Fair do their best to set exhibitors at ease, and youth have the opportunity to gain confidence. The face-to-face judging experience is a chance for youth to prepare for future job interviews. As they explain their growth and learning to a judge, youth are building the skills they will need to eventually describe their skills to a potential employer. 10 10 The Booster Washington County Fair Tuesday July Youth Livestock projects build Character Whitney Rathke UW Extension Interim Youth Livestock and 4-H Program Support Yo u t h livestock p r o j e c t s teach young people how to care for their animals and about the business of producing food. The more important purpose is to provide an opportunity for personal growth of the young person. People develop and strengthen character by practicing certain behaviors, just as strength is increased with exercise. Following are some life skills that youth livestock project members can gain. How to get along with people A large number of people in society quit or lose their jobs because they cannot get along with others. Youth who show livestock are around people they have never met but have similar interests. They learn to communicate with these people. Sportsmanship At a livestock show, there is only one Grand Champion. Most youth livestock exhibitors experience the high feeling of an exceptional effort and the disappointment of a project that didn t turn out as well as was expected. Competitors in the show ring frequently help each other succeed and are friends outside the ring. Responsibility Feeding and daily chores in livestock projects teach responsibility. Top exhibitors often develop a structure for their daily project efforts. This is a good habit to start young and may reap substantial benefits later in their lives. Attention to details Most youth take care of major items in their projects; however many times it s the little things that make the difference, like keeping water and feed troughs clean, working on showmanship several months ahead, keeping pens clean and watching for disease. Paying attention to details is beneficial in almost everything we do in life. Decision making Decision making is never easy at any point in our lives. Livestock projects require key decisions be made by youth participants: selection of project animals, how much to spend, selection of feeding methods, management decisions, etc. Next time you are at a livestock show, study the kids instead of the animals. You will notice that in most cases there are many winners, not just the ones with blue ribbons. 11 TheBooster Washington County Fair Tuesday July Livestock AuCtion Washington County Junior We are taught that hard work and dedication pay off. The Jr. Beef, Sheep and Swine project participants at the Washington County Fair will be rewarded for their hard work at the Jr. Livestock Auction at the Washington County Fair Park Livestock Arena on Thursday, July 23rd. Area businesses will come together in the Livestock Arena at the Fair Park for the Junior Livestock Auction at 6:00 pm Buyers and bidders are invited to a complimentary pre-sale social at 4:30 pm in a tent just east of the Ziegler Building. The event allows supporters to purchase show animals from the youth project members, rewarding them for their hard work. Buyers have several options when purchasing animals at the auction. They can use the meat for themselves, for their employees, or for an appreciation picnic. The buyer can also send the animal on to a local sale barn for resale, making the net cost the premium paid for the animal over market price. The animals can also be donated to local charities like the Habitat for Humanity, the Full Shelf Food Pantry or make arrangements with other organizations. Youth meat animal projects officially start with the initial weigh in/registration of the young animals, with beef in December, swine in April, and sheep in May. Over many months, the youth are responsible for the daily care of their animals including food, water, health, and clean up. Other duties include exercising the animals, training them to lead and show well in the ring, and keeping them clean and comfortable. The youth are also required to meet certain project educational requirements. On judging day at the fair, the animals are placed based on the judge s opinion of the animal s desirability as a meat product, and also on its live appearance. The exhibitors know when they work and care for their animals their end purpose is to become high quality meat products, but because the youth spend so much time with these animals it is often difficult to give them up. Come out to the Washington County Fair and support the youth who participate in the market livestock projects.
