3 Editor s Note 3 EDITOR S NOTE ThErE s so Much Buzz ABouT ThE NEw TAMpiNEs By Godfrey Robert As golf administrators in Singapore work overtime to lift the gloom over some hazards facing the sport here, it is heartening to hear that Tanah Merah Country Club s (TMCC) new Tampines course is shaping up beautifully. World golf has been hit by a loss of clubs and courses and Singapore has not been spared with the year-end (2016) loss of Jurong Country Club and the impending closure of Raffles Country Club next year. And other concerns duration of play, obsolete rules and worry over a reduced playing population are also affecting local and world golf. In the light of all these, to hear that a new championship course is emerging in eastern Singapore only two par-fives away from the imposing, busy and highly-acclaimed Changi Airport -- is a welcome sign that all and sundry involved in the game would greet with joy. At the TMCC annual general meeting last month, club president Ho Beng Huat assured members that all is well with the Tampines redevelopment and that once the course is ready next April, a great layout will give members and guests opportunities to play, compete and enjoy. And where Tampines will be different is that it has also been slated to take over the mantle from Garden faced with reduced land and tweaks to its layout as the club s No. 1 course. This does not mean Garden will be ignored. It has rich history, it has great tradition, so the management is doing its best to maintain its reputation as an award-winning course by looking into redeveloping it once Tampines is ready. But the current talk is all about Tampines and how it is going to be dramatically different. It is not only undergoing course redevelopment, but also presents a new modern, sophisticated clubhouse that will be admired by everyone. Judging by the pictures and posters, it is going to be fantastic layout. The holes are lovely and scenic, the fairways are well laid-out, the bunkers are set ideally and the green is certain to be pristine. As for the clubhouse, ventilation within its premises and in the locker rooms is a key element that the designer and developer have looked into. So in humid Singapore, there should be little worry about unpleasantness. More importantly, with Tampines what the members and guests are looking forward to is the return of world championship events to this venue. TMCC had staged major events like the Tiger Skins, HSBC Women s Champions, Lexus Cup, Queen Sirikit Cup, Singapore Open and the likes. So where organisation is concerned, the management is confident that it can stage any major event. And with a great venue like Tampines, all it has to do is to source for events. The biggest selling point for this is: a world-class venue, which will test the skills, course management and stamina of the global giants of the game who have wowed the world.

7 TopFeature 7 34 th annual General Meeting Friday, 28 april 2017 It was pleasing to hear that Tanah Merah Country Club turned an operating loss of $419,000 in 2015 into an operating surplus of $362,464 in the last financial year. After confirmation of the minutes of the last annual general meeting (AGM) and extraordinary general meeting (EGM), club president Ho Beng Huat announced this turnaround at the club s 34 th AGM on April 28. A total of 49 members turned up to also hear that 2016 was an eventful year with the renewal of lease for the Tampines course, the concessionary conversion fee offer for subscribing members and members top-up contribution all completed. It was also stated that the Tampines course redevelopment was in full swing from holes #10 to #14. And it was heartening to hear that the course s beauty and layout have tremendous potential to be one of the best in Singapore and South-east Asia. The clubhouse demolition has been completed and tender for construction will be awarded soon. The management will show some pictures of the progress of the course development, which, without any unforeseen delays, will be completed in April next year. The Annual Reports were also received and Accounts for the Financial Year ended 31 December 2016 were passed. Deloitte and Touche Certified Public Accountants were reappointed as the club s auditors for the ensuing year. Member Hwang Teng Aun raised two questions, the first about a definitive development plan for the Garden course after Tampines completion and whether the Government would take away more land from the Garden course. If so, would it continue to be an 18-hole course and what kind of course. Mr Ho replied that the land to be acquired at Garden will affect Holes #4 and #5, the Driving Range and Tee boxes on Holes #2 and #6. He added that the rumours of extra land acquisition are not true. He also said that the club has invited eight course architects to submit concept plans for an 18-hole walking/ buggy course. And each was to be based on retaining some of the existing holes and an optional plan with free rein to design. With reduced golf course area, he added, that some lakes had to be given up. So Tampines will have deeper and bigger lakes to be sufficient to provide water for both courses. Mr Hwang s second question was that given the availability of one course now, should the present practice of allowing one member to book a few weekend flights each for Saturdays and Sundays be reviewed. He suggested that the booker has to play. Mr Ho replied that the booker or at least one of the 4 in the flight should play. As captain Lee Lian Hong was away, vice captain David Soh explained that the club was mindful of the current situation and based on members feedback and profiles, it has recently implemented and allocated booking of flights 50% (walk-in booking); 30% (balloting) and 20% (online booking). Mr Hwang was acceptable of the current arrangement. Member Eric Ng suggested a shotgun start so that more people can play. To that Mr Soh shared about the various modes of play, namely shotgun start, single barrel and double barrel tee-off, the double tee-off is most efficient and caters to time availability. Member Kevin Ho, who said that he was a club member since 1983, asked why a shotgun start is not a preferred mode of play.

8 8 TopFeature 34 th annual General Meeting Friday, 28 april 2017 Vice captain Soh replied that essentially, golfers for some reason have preferred and fixed tee time slots and if shotgun start is implemented, there will be restricted tee times only (7.30am and 1.00pm) and the timing for completion of 18-hole round is estimated to be five hours. Member Ng Fook San, a regular at the driving range, said that he noticed that there were no towels provided at the range. General Manager Kok Min Yee replied that because of the encountering of loss of towels, the practice has been discontinued. On the issue of towels, member Ng said that he wondered if people took the towels because they look expensive with a nice TMCC logo on them. He suggested that to deter them use plain, cheaper towels. Mr Ho replied that this was a wrong direction to take. He explained: This is a prestigious club, so our towels should be of good quality. We will handle this problem in another way, pleasantly without embarrassing members. free balls but we will have to collect back from members in some other form, example increase of subscription. Based on usage, some must pay for the facilities. You play golf it is free but only pay for the buggy when you use it. But we will take this in mind and review it again. Member Eddy Goh asked if committee members and officials of the club are entitled to reserve lockers. Also, if those who want to reserve lockers, can pay for them. Mr Ho mentioned that the club will look into this and come up with some guidelines. Mr Ho assured everyone that once Tampines is open all these problems will be resolved. As there were no other matters for discussion, the meeting adjourned at 6.40pm and light dinner and refreshments were served. Sometimes they might be genuinely forgetful and just walk off with them. Some education and subtle reminders will be more appropriate, but our equipment and towels should be of good quality in keeping with the high status of this club. Lady captain Gillian Sim added that since the driving range came under the purview of the Ladies Committee, she will look into it. Member Ronald Loke said that he visited some clubs overseas and the practice is not to charge for range balls, which he recommended for TMCC. GM Kok Min Yee replied that the driving range is managed by the Pro-shop operator, so the revenue for the balls went to the Pro shop operator. Mr Ho added that to give free balls means the club has to pay for the range balls to the pro shop. We can do that but that means members have to pay, nothing is free. We give

9 special Updates 9 TAMPINES COURSE REDEVELOPMENT PROJECT BY THE REDEVELOPMENT COMMITTEE Hole #13 Lake april 2017 The redevelopment of the Tampines Golf Course is well into the 4 th month of 2017 and in most areas, is ahead of schedule. As per the first update on the project, there are four phases that make up this 15-month project and it is still forecasted for completion in April of We welcome Adam Kelland, the Master International golf course shaper who has now commenced work under the project manager and designer Phil Jacobs. Adam is well known to the course designer Jacobs, having worked together in projects across a 20-year period along with other world-class designers. Being a low single-figure handicap golfer with extensive experience in golf course shaping, he is key to our project as it s the skill of the shaper that sets a golf course apart from the rest. Adam is a native of South Africa, like Jacobs and he lives in the same town. view from #13 Tee

10 10 special Updates TAMPINES COURSE REDEVELOPMENT PROJECT #11 Tee #11 Tee Update for Stage 1 - Holes #10, #11, #12, #13 & #14 Hole #10/par 5 The irrigation lake in front of the tees contains more than 1.5 million cubic metres of silt, built up over 30 years. This has taken some time to remove. Combined with intermittent heavy downpours of rain, it demonstrates the challenges and difficulties faced when redoing the old lakes of Tampines. The green for Hole #10 is now located at the old Green 11 th, making this a very challenging and impressive starting hole on the back 9. Hole #11/par 4 The lone fairway tree is now placed slightly to the right of centre line to open play to the left. The hole takes on a dogleg left then back to the right to push the golfers away from the ERP on the right. view from #14 Green The earthworks are all completed and sand capping is ahead of schedule. Hole #12/par 4 The stonewall bordering the back of the green is completed and the green shape takes on undulations and exciting pin position options. The trees to the right and left of the fairway have been repositioned to enhance the views from the tees and when playing down the fairway. The earthworks have been finalised to include the bunkers and sand capping is ahead of the plan. #12 Green subsoil drainage pipes & gravel layer installation

11 special Updates 11 Hole #13/par 4 The new lake is now 40% filled with natural rainwater. It shows that it has been designed well to take in catchment rainwater. The cement lake edge and stone pitch wall have been completed. Railway sleepers will be added to the right of the green to shield the 14 th hole tee shots and view. Completing the final fairway earthworks and sand capping are to follow. Hole #14/par 3 Further adjustments are needed to create the same green effect as the memorable old 14 th par 3 at Garden. The design of the golf course is to produce a world-class championship standard golf course suitable for top class PGA tournaments, yet playable for all members. The design also has to harvest and store the maximum volume of rainwater. Trees update Owing to the change in new boundaries imposed on the Club insofar as the highway in the north and the main drainage canals, the new layout requires the removal of trees, many of which will be transplanted. The pollarding of many trees is done to time in the effect of shielding out fence lines from buildings and roadways. The giant Pandanus trees between Green #15 and Tee #16 will be retained. Clubhouse The old clubhouse has now been demolished and in this area, only the men s and lady s lockers are left standing. The main structure for the men & lady lockers will be reused and inside, a complete refurbishment to blend in with the final clubhouse construction will be undertaken.

16 16 in the Spotlight Catch up on the latest happenings on and around our Golf Greens! By Godfrey Robert GILLIAN MAKES BIG BREAKTHROUGH AT TMCC It is a road untrodden. It is a major club breakthrough. And Gillian Sim is prepared for the challenge, as Tanah Merah Country Club s lady captain and the first woman in the General Committee of the club, inaugurated in Not surprisingly though. For she is a tough woman who has shone in the corporate world and someone who has excelled in sport. At Convent of the Holy Infant Jesus and Raffles Junior College as a student, she excelled in studies and has also been active in sports, having competed in basketball and athletics. And after graduating from the University of Southern California with her engineering degree and completing her Masters in Singapore, she worked at UPS before taking up golf with the encouragement of her doctor dad, Thomas. And since her introduction to golf in 1993, the dynamic lady has never looked back, progressing in the game to a healthy handicap for the B division until 2000, when overseas postings to countries like the United States, United Kingdom, Hong Kong, Philippines and the region as UPS management personnel slightly disrupted her course play. But while managing personnel and systems, the steely lady did find time to practise golf, even sometimes under the attention of teaching professionals in the respective countries she had been attached to. Given right-handed clubs by her dad some 24 years ago, which she changed as she was a Lefty, thanks to Uncle Loh datuk Loh Ah Joo of Pan-West then Gillian was almost a natural at golf because of her sporting background. And being the perfectionist she is, Gillian left no stone unturned in her road to becoming a decent league player and a club Medal and Club Championship winner. Now that she is venturing into a massive club position, stepping into the big shoes of the dynamic Jeanette Sim and Lam Lian Suan as lady captain and the first female in what was a man s world in the General Committee, Gillian is braving herself for the challenge with confidence. Yes, the lady captain s job is a responsible one, but my predecessor Suan had prepped me for this job. And as for the GC position, I ve managed men in my UPS job, so I believe that I can manage that, says Gillian. And logistical issues are second nature to her, as she looks ahead to planning regular events to keep the juniors and the ladies busy throughout the year with programmes. She believes the club culture, the strong management, the cooperative staff and members and the support system at the club will help her greatly in outlining her programmes. Basically, it is three-pronged, says the nine-handicapper who plays for the Evergreen division (now that she has turned 50) in the inter-club league.

17 in the Spotlight 17 DYNAMIC SIM BRAVES HERSELF FOR DUAL ROLE OF LADY CAPTAIN AND GC MEMBER First, taking junior golf to a new level, with the help of club professional daren Lim. For ladies golf, arranging variations in competitions like five-club event, Ryder Cup style-lion City Cup, Play with the Pros and so on to keep our golfers busy throughout the year. And third, organise programmes to help our golfers improve their all-round game. In this context, I m grateful to director of Golf Ian Geoffrey Roberts, who is even working on yoga for golf, club fitting, putting contests and gym stints for our members, adds Gillian. Basically, TMCC has a big reputation for golf, having won the Premier division and A division in the inter-club league and the Rolex contest in which Gillian was among the four members who claimed the title. Gillian, who has had three holes-in-one and carries her bestever score of four-over 74 at the new Garden course in 2015, is a key player for TMCC on the golf course. And off the course, the lady with a positive mind and caring heart is also a significant official who is bent on doing her utmost as lady captain and GC member.

18 18 in the Spotlight COMEBACK KID IS BACK IN THE GROOVE YU THE MAN, RUSSELL, THE MATCHPLAY CHAMP THE CLUB MATCHPLAY CHAMPIONSHIP SATURDAY, 19 MARCH 2017 By Godfrey Robert Comebacks are great to read about. And stories about them remain in the minds of the readers and spectators for a long time. Tanah Merah Country Club golfer Russell Yu is familiar with them. A leading junior golfer during his teen days, Yu injured both wrists and ligaments in his hand in 2006 and had to undergo reconstructive surgery. This also meant that he had to stay away from golf in his heyday until 2012 when he returned to the game. And since then he had many ups and downs and, I definitely struggled over the past two years, says Yu, 31 this year and one who runs a business. But things are turning for the better this year, adds Yu, who has been playing golf since And these days, the ever-so-friendly and respectful Yu takes in one or two games a week and is armed with a remarkable three-handicap index. Wong Qi Ming and david Ng. In the final, Yu thrived on a great comeback, forcing a play-off after being two-down with two holes to go against the much-fancied George Foo. Like the other matches, the first nine was very tight. Going into the back nine I managed to move one-up through 11, and we halved 12 with birdies. George then birdied the next two holes and I was one down. I bogeyed 16 to go two down. On the 17 th, we both drove it left but I was luckily in play while George had to chip sideways. He hit it on and two-putted and I got up and down from over the green. On the 18 th, we both hit good drives and both hit iron in. But I was pin high right about 15 feet and George was below the ridge. I got lucky in that he made par and I two-putted for birdie. On the second play-off hole I made birdie to win, but all credits to George. He played a great round and made six birdies, if I m not mistaken. I just managed to squeeze by making par and a few opportune birdies. So it did not come as a surprise to many when he won the recent Club Matchplay at the Garden course with some astounding victories. Modestly, he says, Ivan Ong had a tough day on the course, and I had two birdies, when he succumbed 8 and 7 to Yu in the semi-finals, which followed the latter s triumph over George s younger brother Gregory, the nation s amateur No. 1, was not surprised that Yu won. Although my brother was disappointed with the defeat, it must be said that Russell s been playing great golf. These golfers had marked the Comeback Kid as one to watch. results: 1 st round: Russell Yu (5.4) beat Wong Qi Ming (5.8) 3 and 2, david Ng (9.0) beat Jimmy Wu (5.1) 1-up (sudden death, hole 1), Ivan Ong (8.6) beat Tan Lee Hong (9.7) 4 and 3, Melvin Choo (8.8) beat John Baey (11.6) 7 and 6, Samir Bedi (3.0) beat Raymond Lee (8.0) 4 and 3, Ken Sugino (5.5) beat Chung Hong Zheng (2.8) 3 and 2, George Foo (0.7) beat Jonathan Lee (12.7) on walkover, Justyn Jagger (5.1) beat Chris Chua (13.8) 2 and 1. 2 nd round: Russell Yu beat david Ng 3 and 2, Ivan Ong beat Melvin Choo 2 and 1, Ken Sugino beat Samir Bedi 4 and 3, George Foo beat Justyn Jagger 6 and 5. 3 rd round: Russell Yu beat Ivan Ong 8 and 7, George Foo beat Ken Sugino 3 and 1. A nagging back pain that had forced her to seek regular medical attention and constraints of time because of her For someone who once armed herself with a two-handicap, her high ambition has not let up as she plans to remain a single-handicapper for a long time. And that desire is fuelled by her hard work, intense practices and lessons from watching instructional and playing shots on television. It was no surprise that Michelle was a worthy winner in the recent Ladies Matchplay event when she scored three remarkable victories over dion Lim (4 and 3), Tan Kheng Hwee (2-up) and Jasmine Chew (2 and 1). 21 From the Greens 21 Team TMCC players in optimistic mood Melvin Choo and Fang Jia Wei of A division TMCC SET ON DEFENDING SGA INTER-CLUB LEAGUE TITLE SGA INTER-CLUB LEAGUE 2017 By Chung Hong Zheng The Ladies of TMCC pumped up before their matches After Tanah Merah s historic triumph in the 2016 SGA Inter- Club League competition, hopes are high that the team will be able to repeat the feat in To that end, the team has been training hard in the early months of the year. That has been made all the more difficult with the closure of our beloved Tampines Course. With play at Tanah Merah Country Club restricted to the Garden Course, our league players have kindly decided to take their training to NSRCC (Kranji) to provide relief for their fellow members. To kick off the 2017 season proper, the team gathered at Uma Uma Millennia Walk on 27 th March 2017 for a convivial evening of food, drinks, and team bonding. The TMCC team was joined by Mr Raymundo Yu and Mr Harry Tan of Columbia Threadneedle Investments, who have generously agreed to be the sponsor of Tanah Merah s League Team in The 2017 SGA Inter-Club League welcomes a new format of competition this year. The 12 SGA Ordinary Members have been divided into two groups of six teams each, with the grouping based on the 2016 league rankings. TMCC has been drawn into the REd group alongside RCC, SELCC, KEPC, OCC & LNGCC. The WHITE group consists of SICC, NSRCC, WGCC, SEMCC, SENGC & CGC. There will be a round-robin format of play within the group, with the top four teams of each group progressing to the knockout phase to determine the overall champion for TMCC s 2017 campaign got off to an inauspicious start with a loss to Orchid Country Club, held at Seletar Country Club. Inclement weather had a significant role to play in our loss, especially with a new rule this year that all matches incomplete by 7.00pm will be considered halved. Weather delays that day meant that several matches were incomplete when play was stopped at 7.00pm, which was unfortunate as TMCC were in a winning position in the majority of those matches. Not a club to dwell on losses for long, team TMCC sought to bounce back from that unexpected loss with a win against Seletar Country Club, with the match played at Laguna National Golf & Country Club. TMCC responded emphatically, coming through an extremely tight match with an 8 7 margin of victory. Again, the match was hit by weather delays, but this time, TMCC managed to rack up big wins early on to ensure that we secured victory before play was halted for the day. With TMCC back on track, the team is optimistic and looking forward to making this season a success yet again. The team s remaining round-robin matches are against Laguna, Raffles & Keppel, and the team is prepared for the tough competition ahead. The team would like to thank our sponsors, Columbia Threadneedle Investments for their continued support in 2017; TMCC staff who have been working with the team behind the scenes; and fellow TMCC members for their kind understanding and support. The team will strive to play their best, and bring pride and glory to the club. Team adviser Jerome Ng with Club Captain Lee Lian Hong

23 Golf central 23 IT PAYS TO KNOW THE (MATCH PLAY) RULES By Robin Langdale A surprising exchange? Well it happened in a social match at the Club. Player A, who asked the question, was sure he was entitled to an answer before he played his next stroke and said so to B, who was sure he was not obliged to give an answer until after the hole was finished. After the game Player A checked up and confirmed that under Rule 9-2a an opponent is entitled to ascertain from the player, during the play of a hole, the number of strokes he has taken and, after play of a hole, the number of strokes taken on the hole just completed. Also, decision 9-2/4 makes it clear that, when the question has been asked, Player B must inform Player A how many strokes he has taken before A plays his next stroke. But what, if any, penalty is incurred by Player B for refusing to tell his opponent how many How many strokes he has strokes have taken? Rule 9 you taken? does not specify any penalty for breach of the Rule. However, Rule 2-6 says the penalty for breach of a Rule in Match Play is loss of hole except when otherwise provided. By his refusal B had incurred the penalty of loss of hole, but neither player had a Rules book with him and B refused to accept that he was obliged to inform A how many strokes he had taken, before the hole was completed. But there is another twist in the tale. Rule 2-5 says if there is doubt or dispute, in Match Play, the affected player may make a claim, but the claim must be made before any player in the match plays from the next tee, or in the case of the last hole of the match, before all players in the match leave the green. Knowing this can be crucial in a Match Play competition if there is disagreement over a Rules situation and a referee is not available on the spot - the norm in amateur golf. As it was a social game they parted company in disagreement over the matter although, had it been a competition match, there is little doubt the Committee would have allowed Player A s claim and B would have lost the disputed hole. Some other special Rules that apply in Match Play: order of play Under Rule 10, Order of Play, the procedures are the same for Stroke or Match Play. From the first tee in order of the draw or by lot; for subsequent holes by the lowest score for the last hole or the last hole to be won; and during play, the ball farthest from the hole is played first. But the consequences of playing out of turn are critically different. There is no penalty, but in Match Play your opponent may immediately require you to cancel the stroke and replay it in correct order as nearly as possible at the spot from which the original ball was last played. In social golf this strict procedure is often disregarded, but it can be crucially important to bear it in mind in competitive Match Play. And in a social game, you have every right to apply it if you think your opponent will gain an advantage by I m not going to tell you until we have finished the hole playing out of turn. Good sportsmanship would however suggest that you warn your opponent if you intend to apply this rule. There was a controversial incident a few years ago in the Solheim Cup (USA versus Europe, for lady professionals). Approaching a green, an EU player said shall I play and the US opponent said go ahead. The EU player put her ball by the hole leaving only a tap in, whereupon the US player recalled the stroke because she was further from the hole! The US player was in order under the Rules, but the subsequent angst about unsporting behaviour filled many column inches and broadcasting minutes. Conceding a stroke, the hole or the match A player may concede his opponent s next stroke at any time provided the opponent s ball is at rest (Rule 2-4). The player is then considered to have holed out with his next stroke. A player can also concede a hole, or the match, at any time before it has been completed. Any of these concessions may not be declined or withdrawn, but after a stroke has been conceded the player incurs no penalty for holing out decision 2-4/6. Ball assisting or interfering with play If a player considers that a ball might assist another player or interfere with his play, he may have it lifted (Rule 22). In stroke play, a player required to lift his ball may play first rather than lift the ball. However, in Match Play the strict order-of-play procedures continue to apply, so if a player, required to lift his ball, proceeds to play it out of order, his opponent can require him to replay the stroke in correct order. 24 24 Golf central Cover all bases with your practice TiME By Rob Richardson Golf Professional a great idea to improve your golf game is to starting setting goals for yourself. one goal could be to start getting into a weekly routine of practice early in the year and concentrate on how you can better approach your practice time. How many times do we go to the driving range, hit 100 balls and finding that the next time we play, we need at least three putts or even fail to get up and down around the greens? Golf has many areas that you should focus on, so spending a little time on each area is a great way to improve your overall score. 1/ Begin an hour practice time by spending five minutes doing a few slow stretches to warm up your muscles. 2/ Start with hitting some soft wedges to get warmed up, steadily work your way through all the clubs in your bag by hitting a few shots with each club until you finally reach your driver. This should take about 20 minutes. Try to imagine when you practise that you are actually on the golf course playing and that each shot counts for something. Pick a target and challenge yourself to mimic different scenarios out on the course and manufacture different shots for each. Example when using a 7-iron, picture a tree between you and your target. Learn to play a cut shot to turn the ball around the tree from left to right, and then do the opposite with a hook shot from right to left. Remember that the cut shot will not go as far as a straight shot over the tree and that the hook shot will tend to run out further. Adjust your power accordingly. We all feel pressured at some time and in some form or another; so imagining you re under a little pressure when warming up will better prepare you for when you start playing on the course. 3/ Once you ve completed 20 minutes of hitting full shots, you should now practise pitching for 10 minutes and you should do this by hitting shots to varying distances i.e. 30, 50, and 80 metres etc.

46 46 Fun in Action Attended a recent Club event? See if you can spot yourself in our pictures and write-ups! LADIES SHOW ENTHUSIASM Saturday, 25 February 2017 Make Your Own Wholemeal Baguette On a relatively quiet Saturday at Tanah Merah Country Club, there was some excitement at the Garden clubhouse. Fifteen ladies showed enthusiasm as they attended Chef valerie Kong s workshop to learn how to bake two kinds of baguette on Feb 25. They involved the Regular white and Wholemeal Baguette. valerie then explained on Poolish a technique used by bakers, which allows the dough to soften for easier kneading. Poolish is simply a combination of a small percentage of flour, water and yeast, which is allowed to sit for a period of time for fermentation process before being incorporated with other dough ingredients. When the baguettes were ready, valerie also gave ideas on how to include fillings such as otah, tuna with cheese or egg with mayonnaise. She also encouraged creativity on other types of fillings. The ladies went home smiling as they not only learnt a trade but also took with them a few slices to savour. WHEN THE ENCORE WAS STILL SWEET soft sweet Buns Encore, or as they simply say by popular choice. Three words that spell a happy start to any story. Upon request by members, a Sweet Soft Buns workshop was organised on the Saturday morning of 4 March. Fourteen keen ladies made time to roll up their sleeves and indulge in a culinary lesson. They had a good time together making both tuna and hotdog filled sweet soft buns. Using the Japanese Yukone method, a gelatinised starch, the buns naturally become soft to which the ladies exclaimed, Hmm, it is so deliciously soft! All of them went home happy with their delicious spoils and vowed to make some for their loved ones.

47 Fun in Action 47 NO JOKING ON APRIL FOOL S DAY checkerboard cake It was no April Fool s day for them. Ten ladies showed genuineness at the Ixora Room, as they gathered for a good culinary lesson. They were keen to learn how to make this unique Checkerboard Cake on Saturday morning 1 April. Calm and collected, despite some not being first-timers, they absorbed a valuable lesson. They learnt how to bake both vanilla and chocolate sponge cakes, how to cut the cakes into rings accordingly to sizes, creating and icing the cream and lastly, assembling of the two different colours into Checkered Board perfection. Total attention was required during the assembling of the alternate colours and it got clearer once the final layers were put in place and finally covering the cake with Chantilly cream. Last but not least, was to coat the cake with chocolate ganache topping and gold dust for that final shine. Many oohs! and the aahs! were heard, as the ladies excitedly took photos and some even videotaped the process. A definite well-spent day at the club! Saturday, 1 April 2017 Saturday, 22 April 2017 A FULLY-BOOKED WORKSHOP a desire For Quiche Sixteen ladies had an enjoyable time doing a hands-on session making two kinds of quiche, a rich savoury custard flecked with delicious fillings of Pumpkin with Bacon and Spinach with Turkey Ham. Any kind of quiche is my favourite to savour, said Mrs Tess Tan, as she had just returned from Europe and had the opportunity to taste different types of quiche in the event on Saturday, April 22. This workshop was so popular that it was fully booked since early March and many had to be politely told to look out for the next such event. Members are urged to make reservations early, as the baking workshops are getting more popular. Look out for more workshops on page to book now!

48 48 Fun in Action Saturday, 22 april 2017 By Godfrey Robert THE LOWS HIT A HIGH AT Shanghai and Singapore have many things in common. After all, both are growing cities, marked by a vibrant life and high-rise buildings. And after enjoying Shanghai s dancing World, the first event on the club s Social dancing Night programme on April 22, you might think that dancing is an activity that binds the two cities. No doubt, that being the theme, there were many things Shanghainese, namely the Chinese set menu dinner where braised fish maw soup, roast crispy chicken, poached live prawn with ginseng and Chinese herbs, and braised Ee Fu noodles were among the items served. But the event at the Garden Banquet Room was about dancing, so the dashing couple the husband and wife team of Jovyn and Cindy Low captured the audience s attention with their waltz (first performance) and foxtrot (second performance) routines.

49 Fun in Action 49 SHANGHAI S DANCING WORLD Jovyn is one of the instructors who conduct dancing classes every Thursday, while other instructors do it on Mondays, Tuesdays and Fridays. The seven-piece live band, Locomotion, provided the wide repertoire of music, especially in ballroom dancing. There were also the renditions of Chinese songs popular in Shanghai. Also entertaining the 104 diners (45 members and 59 guests) were emcee Han May Leng and her co-emcee Jeremy Tan, both from the Marketing department. The diners had such great fun that they pledged that they would be back for the next Social dancing Night on Saturday, 22, July, when the theme is: Strictly for dancing!.
