3 Editor s Note 3 EDITOR S NOTE TMCC in the LIMELIGHT with the SCHOOLING STORY By Godfrey Robert Schooling-mania gripped Singapore for a week during the Olympic Games in Rio in August. At an airport welcome at dawn on the Monday of August 15, thousands of Singaporeans turned up to greet Singapore s first Olympic gold-medallist. It was a rousing reception despite being in the early hours when sleep was the best offering. Sparked by that high note, for five days that memorable week every Singaporean wanted a piece of megastar Joseph Schooling. Two days prior to his grand homecoming, Schooling, 21, convincingly beat three swimming giants in Michael Phelps, Chad le Clos and Laszlo Cseh to claim gold in the 100m butterfly in an Olympic record time of seconds. For it was at TMCC that launched his swimming career when Schooling was only two years old, a distinction that will go down in history. TMCC s swimming coach Vincent Poon was his first mentor (from the age of four), another club feat that will enter the record books. And the mention of TMCC, in most stories about Schooling in the media at home and abroad, has become second nature, leading to compelling reads and views that often put the club in the limelight. Schooling recognised this fact, and he is proud of what the club has done for him. Parents Colin and May are active long-time members of the club, involving themselves mainly in swimming and golf. In the four days here, Schooling was honoured in Parliament, a first for a sportsman, visited his former school ACS Junior and went on open-top bus parade around the streets of Singapore that enthralled thousands of Singaporeans lining the streets. That celebratory mood enveloped a nation, the Schooling example was inspiring to athletes and the Texas University student s conduct was exemplary as he displayed calm and patience to engage every Singaporean with autographs and photographs. Club chairman Ng Kee Choe and his General Committee have been elated at Schooling s magical milestone in Rio. In fact, in a speech at the reception, Schooling outlined what the club and Uncle Poon had done for him. And he was deeply grateful for this unwavering support. The club also celebrated the award of National Day honours to some of its members. Tanah Merah Country Club (TMCC) also enjoyed a major chapter in Schooling s success story. And the grand reception at the club and a conferment of an honorary membership to the Olympic champion on August 17 were fitting tributes. 10 10 TOPFeature He had hit the summit of sport, but Joseph Schooling continued to keep his feet on the ground. Three days after his historic Olympic Games gold medal triumph in Rio, Schooling was back at the club that provided him the launchpad to Cloud Nine. And when he arrived at Tanah Merah Country Club (TMCC) on August 17 for a grand homecoming, he was hounded by fans for photographs and autographs on his way to the Garden Lounge where an extra- special event awaited him. And Schooling in his humble, friendly and always obliging nature, signed the autographs and posed for photographs to send home a large gathering of fans smiling after their individual moments to savour. A huge roar greeted Schooling as he entered the Garden Lounge, and to welcome him were club chairman Ng Kee Choe, club deputy chairman Choo Chiau Beng, club president Ho Beng Huat and the General Committee, looking resplendent in their jackets. A special occasion calls for a special gathering, and everyone in the Lounge was highly enthusiastic and smiling ear to ear as the gathering hailed Singapore s hero in Rio, Joseph Schooling. In the Lounge too, he was heavily sought after, and he obliged all of the 100-odd gathering who also enjoyed the cocktails and tid-bits, courtesy of TMCC, as everyone linked to the club was overjoyed and proud of Schooling. Schooling has had a long association with the club. In fact, 20 years, from the age of one when his dad Colin and mum May tossed him into the club pool as he luxuriated in the turquoise waters. Club chairman Ng summed up the whole occasion best when he said: I welcome all of you to this event to celebrate with and to honour Joseph for winning the 100m butterfly gold at the Olympics a few days ago. That was a momentous occasion, not only for Joseph and his family, but also for the nation as a whole.

11 TOPFeature 11 He brought glory not only to himself and his family, but also to his fellow countrymen and women. His achievement, our first-ever gold medal in the Olympics, has clearly galvanised the whole nation. I won t be too far wrong to say that the country came to a standstill in that seconds. And I want to add that his victory was not big. It was emphatic! The magnitude of his win, by almost a body length or 0.75 seconds and against such accomplished swimmers, is clearly emphatic. If I may compare, it s like Usain Bolt and the rest in the 100m sprint.. A thunderous roar followed, and if Schooling was beaming so were his parents Colin and May, for they soaked in the praise as well as the atmosphere in the lounge. Mr Ng continued as the gathering tuned their ears to his compliment, adding: You know there is a Shakespearean quote (from Twelveth Night) which goes something like this. Some are born great, some achieve greatness and some have greatness thrust upon them. Well I don t think Joseph had greatness thrust upon him. But there might be some good sporting genes in him. His grand uncle Lloyd Valberg was a Singapore Olympic high jumper. And certainly Joseph achieved greatness through relentless hard work, dedication, perseverance, determination and more, and always keeping a sharp focus on his goal. Please join me in acknowledging Joseph. And in an invocation to his parents, Mr Ng said: And I would also like to acknowledge the belief, nurturing, sacrifice and support given by his parents May and Colin. We salute both of you for all you have done. Schooling was a multi-gold-medallist

12 12 TOPFeature at last year s South-East Asia Games. And his remarkable progress continued when he won a bronze medal (behind South African Chad le Clos and Hungarian Laszlo Cseh) at last year s Fina World Championships in Kazan, Russia. That, as endorsed by Mr Ng, was the first ever medal won by a Singaporean at the World Swimming Championship. He added: Just before the start of the swimming events in Rio, I was concerned when it was reported that Joseph was withdrawing from some events. I thought he might not be well. I chanced upon Colin at the club and asked him whether it was a tactical decision and he nodded and smiled. I was assured. And as they say, the rest is now history. Mr Ng wondered that Schooling s beating of American Michael Phelps, the greatest swimmer of all time, le Clos and Cseh was a passing of the baton. Also among the gathering was longtime club coach Vincent Poon, who hugged Schooling when they met at the reception. Poon was amazed at the junior Schooling s antics at the pool when he was just two, a junior member then. He was always diving from the board and had no fear wandering towards the deep end. Colin asked Poon to take over his son when he was four, and the coach turned him into a top potential, until his phenomenal progress convinced Poon that he had to graduate to a biggernamed coach after six years. Mr Ng duly recognised what Poon had done, and he said: Let us acknowledge Vincent.

13 The chairman then said: It is with privilege, and a modicum of pride, that we honour one of our own today. And he declared: Joseph, the General Committee was unanimous, and spontaneously so, in conferring you an Honorary Member of the Club. This is our way of recognising and honouring your achievement for yourself, for family and for the country. It is a small token. Before I ask Joseph to come forward to receive the instrument of conferment, I would like to take this opportunity, on behalf of everyone at the Club, to wish Joseph every success in his endeavours as he seeks to scale greater heights. TOPFeature 13 I believe the best is yet to come. Schooling replied: It is a great honour to receive this honorary membership. I am truly grateful to Mr Ng and his committee, and everyone here.. v

15 2016 SOUTH EAST ASIA AMATEUR GOLF TEAM CHAMPIONSHIP (56 th Putra Cup, 10 th Lion City Cup, 8 th Santi Cup, 4 th Kartini Cup) The inaugural Putra Cup was played in 1961 in Malaysia, born out of the wish of the late Honourable Tunku Abdul Rahman Putra Al-Haj, who envisioned a golf tournament to bring golfers in the region together to foster friendship. Following which The Lion City Cup, was donated by Singapore in 2004 to include male junior golfers. The Santi Cup, donated by Thailand, was introduced in 2009 for ladies. And finally, the Kartini Cup, donated by indonesia in 2013 for junior female golfers, covered the full spectrum for participation for golfers of both genders, and junior and adult golfers. This year, it will be held at Tanah Merah Country Club s Garden Course from Monday, 5 th Friday, 9 th September A total of 85 amateur golfers will be competing in the four championships and the participating countries are Hong Kong, Indonesia, Malaysia, Myanmar, Philippines, Singapore and Thailand. Singapore last hosted this championship in 2008 and while Team Singapore won both the Putra Cup & Lion City Cup then, the 2016 team will undoubtedly be under pressure to repeat that outstanding performance. For 2016, the representatives for Team Singapore in the Putra Cup who are from Tanah Merah Country Club are Gregory Foo and Marc Ong. 16 16 Special Updates Tampines Course REDEVELOPMENT PROJECT (PART 2) SUBMITTED BY THE REDEVELOPMENT COMMITTEE Part 1 of the Tampines Course Redevelopment project that appeared in the July issue of the TMCC magazine covered the rationale behind the redevelopment decision by the General Committee, golf course design objectives and the layout of the new Tampines course. For this part 2 of the Redevelopment project, we will like to share with members the design vision for the new Tampines clubhouse. From the beginning, the clubhouse at the Garden location has been the main clubhouse for TMCC, serving both the golfers who golf at Garden, corporate event customers and members who use the recreational facilities and Chinese Restaurant. On the other hand, the existing clubhouse at Tampines is kept basic as only the Tampines golfers and occasional foodies use it. Existing clubhouse & facilities

20 20 Special Updates View of Club Arrival & Drop-off Existing clubhouse & facilities The arrival experience allows the clubhouse to be fully revealed. The southern side of the clubhouse on approach, features a Porte Cochere arrival point and entrance, where members and visitors can alight from vehicles in a weather protected zone and upon arrival, see a jewel like lantern roof forming the foreground for the views beyond. The current siting of the clubhouse allows us to capture stunning views of the lake and golf course and exploits the potential by demolishing the current golfer s lounge building and replacing this with an airy, covered golfer s veranda. A water feature with a sky light at the entrance portion of this veranda further accentuates the arrival sequence.

21 Special Updates 21 Clubhouse floor planning has been based on the principle that facilities should be divided into a number of precincts that are separate, but juxtaposed, to achieve several objectives: Provide a club atmosphere and convenience of access for members and guests alike Promote members interaction and use of food and beverage facilities by members before and after sporting activities Ensure operations are highly effective and back of house activities are unseen and unheard Isolate staff support, equipment and goods storage, service movement and traffic from member s areas, by the use of discreet connection to the ground floor back of house kitchen and services areas.

22 22 Special Updates View from Golfers Lounge A Pro- shop is encased in glass and located right at the entrance next to the golfers registration and on the way from the lockers to the buggy staging area. This is intended to serve as another focus element for the golfers. Food and beverage facilities in support of social activity between members include Golfers Veranda, Golfers Lounge, Function Room, Pre-function Room, Wine and Cigar Room and provision for a future Chinese Restaurant. These principal rooms have been positioned along the northern facade of the clubhouse in the interest of providing panoramic views across the golf course. The Function Room will enable gatherings of the members, partners and families, but can accommodate external weddings, corporate golf events, private functions and conferences of up to 300.

23 Special Updates 23 The natural heart of the arrangement of spaces, both indoors and outdoor, is the Golfer s Veranda. This Veranda is oriented such that it captures the prevailing winds at all times and is covered with a low slung green roof supported by slender columns designed to disappear and thus maximise views to the golf course. This will be the crossroads for all the sporting and social activities and a place to meet, sit and relax while enjoying splendid views. All the club functions are set within or adjacent to this Veranda allowing for guests and members to flow seamlessly from one space to another. From this Veranda one can easily step down a series of cascading landscaped terraces to the golf course itself. The landscaped terraces serve to blend the building with the golf course while creating viewing platforms for both Hole 9 and 18.

25 Special Updates 25 From the golf course, the new clubhouse will seem to merge seamlessly into its setting with low slung roofs, slender columns, landscaped terraces and building structures encased in dark bronze perforated metal screen. The perforations of the metal screen are inspired by the leaf patterns of the Rain trees and during the day will create filigreed layers of light and shade and come dusk will give the building an ethereal jewel like quality. Water Feature With Sky Light In summary, the architectural expression and form of the clubhouse are entirely appropriate for its location, respects heritage and embraces modernity. We hope that members and guests will find enjoyment in the building personality and character as the club marches towards its future. The next key activity planned is to hold a meeting with members whereby Phil Jacobs, golf course designer and Gaurang Khemka, clubhouse architect will be on hand to present the golf course and clubhouse vision, on Tuesday 11 October 2016 (5pm 7pm), Garden Banquet Room. v

27 03 In theknow 27 GOLF Handicapping Update SGA-CHS Singapore Golf Association-Centralised Handicapping System Singapore Golf Association (SGA) had implemented the Centralised Handicapping System (CHS) from August Detailed information is available at the SGA Website. SGA had specified that it is compulsory for all golfers who are members of the major golf clubs in Singapore to be registered with the CHS to maintain their official USGA Handicap status. Accordingly, with the launch of CHS, the Club Handicapping System is discontinued. Golfers who have successfully registered for the CHS during the initial registration deadline (before 26 July 2016) would have received an from CHS on 4 August 2016 to activate their account and create their passwords. Once completed, golfers are able to perform all their handicapping activities (access their handicap index, peer review, post scores) via multiple channels, including web, their ios or Android devices and at Clubs Golf Handicap terminals. Sugino s an Asset to the Club s GC By Godfrey Robert The experience garnered over his long stint at The Japanese Association Singapore will come in handy for him. In fact, he will rely on his knowledge as an administrator for 30 years with the association to exercise his duties as the new House and Recreation convenor for Tanah Merah Country Club. And some GC members themselves and club president Ho Beng Huat asked that he join the committee for they knew the hardworking Sugino would be an asset. Sugino is no newcomer to Singapore; hailing from Yokohama he came here to study at Nantah University at the age of 25 in Mr Kazuo Sugino is the first Japanese to be elected as a General Committee member in the history of the club, which was inaugurated in Personally for him, it is an exalted position because he was almost arm-twisted into taking up the position in April. His 30-year-old son, Ken, an active golf member of the club, who holds a 5.7 handicap index, encouraged him to stand for election and even collected and submitted the form. He later married Singaporean Tan Wan Ghee, who became a doctor, and runs her own GP clinic. And he decided to stay put in the country because I love Singapore, I like the people here. After graduation, Sugino, who speaks fluent Mandarin, joined the Japan Overseas Enterprise Association. In 1984, he joined the Japanese Association as secretary general, and currently is an adviser to the longstanding club, which was established in 1915 and re-established in He first joined Jurong Country Club for his golf activities and later became a member of the Greens Committee. He joined TMCC in July 1986 and has always had a great time at the club.

32 32 In the Spotlight As he says: TMCC is a great club, people are friendly, the two courses are fascinating, and the ambience and atmosphere are superb. What used to be regular golf sessions at the club is today a once a week affair with kakis on weekends for the warm and friendly Sugino, who places family life as high priority. These days, he has a lighter workload although as adviser he is hands-on at the Japanese Association at Adam Road. (Club Strokeplay Championship) last year and also turns out regularly for the club in local tournaments. Home for Sugino is bungalow house at Merryn Road, which was also the reason why he joined the Singapore Island Country Club. As for how he would execute his job in the new post, Sugino said: What I have done at the Japanese Association is relevant to my H and R job at the club. But, the once-avid golfer (who currently is a 12-handicapper), swimmer and tennis and squash player is lucky if he plays two games a month as he also keeps himself busy with his two grandchildren. He also enjoys walking, covering five or six kilometres daily (counting steps to about 10,000). His wife joins him on some evenings. But where possible, the father of three (two daughters Kay, 35, and Yuki, 33) would sign himself up for short golf trips, namely to Australia, Japan, Bangkok and Malaysia. I hope to bring some new workable ideas that would help boost the club s activities. In fact, I can also organise some golf trips to Japan. Ideally, four flights (16 golfers) would be manageable, and they will have great time. But if there are more golfers, I can organise more frequent trips. The whole idea is ensure the golfers have fun, enjoy their golf and have some special memories. But son Ken, who was introduced to the game by Sugino, is a keen golfer who plays twice a week. 33 In the Spotlight 33 FOO Shows CLASS WITH FOUR SUB-PAR ROUNDS The Club Strokeplay Championship Sunday, 14 August 2016 By Godfrey Robert It was a great Putra Cup tune-up for Gregory Foo. Foo, who joined Tanah Merah Country Club in 2012, has been a stalwart for the club in many tournaments. And with his victory in the The Club Strokeplay Championship in August, he has put himself in line for Putra Cup honours. The plus 1.8 handicap index player Foo, 23, shot four subpar rounds at both the Garden and Tampines course for a 14-under 270 total. And that in itself is a remarkable achievement. He said: I was very happy to shoot four sub- par rounds. I definitely think the result stemmed from a combination of both good form and familiarity. I was playing well coming into the event and I felt very comfortable with both courses. So I was able to give myself enough chances and I was able to take advantage of them. Foo scored a five-shot victory over the in-form Marc Ong, another Putra Cup representative who in the final round at the Tampines, started with a birdie while Foo parred the par-four hole. On Marc s (also plus 1.8 HI) challenge, Foo said: I definitely felt all the emotions and nerves out there. Marc is a great player and a fierce competitor, so I knew he would come out strong and put pressure on me. It was a really close fight between Marc and myself but I think the key moment for me was when I chipped in for birdie on 15. This is the second time time Foo has won the club championship. He said: I won it back in 2014 when it was played at the old Garden course. I would say this year s victory was greater because this is the lowest four-round total I have ever had so far. So what s next for Foo? I have a few major competitions coming up. The next one is Putra Cup, which is going to be held at the Garden course, so I m really looking forward to it and playing on home ground. After that, I ll be going for the World Amateur team championships (Eisenhower trophy) in Mexico and then the Asia Pacific Amateur Championship in South Korea. From Left: Ken Sugino, Gillian Sim Siu Lin, Lee Lian Hong & Mark Wee Keng Hong After six years, Tanah Merah Country Club regained the Rolex Cup, a competition among the 13 golf clubs in Singapore. Organised and sponsored by Rolex annually in June, the Inter-club team competition is a very popular competition. It is normally held over two Singapore Island Country Club courses, the Old Course for the inter-club, ad the New Course for the media and guests. Keng Hong (HI 11.3) emerged winners against formidable teams fielded by the 12 other local clubs. The format was the interesting Texas Scramble, where players take one drive among the four, then all four players hit off from the spot chosen to be in the best possible position. 36 36 From the Greens Members of the TMCC League Team in confident mood before the match against Sentosa TEAM TMCC RETAIN Pole Position in the 2016 SGA INTER-CLUB LEAGUE SGA Inter-Club League 2016 By Chung Hong Zheng After starting the 2016 SGA Inter-Club League with five wins from the first five games, team TMCC continued their hot form right through the middle of the season. The team currently enjoy a three-point lead over their nearest rivals (Jurong Country Club and Singapore Island Country Club), having completed nine out of 12 matches thus far. Team TMCC s remarkable five-match unbeaten run to start the season unfortunately came to an end in the sixth match of the year, when the team faced off against an in-form Raffles Country Club (RCC). Our players fought hard, but we eventually came out second-best on the day, losing by a slender margin of Not to be let down by our first loss, the team were determined to get back to winning ways. That they did, in resounding fashion over fierce rivals Singapore Island Country Club (SICC) no less. Although inclement weather threatened to force a stalemate between the two teams and thwart a comeback victory for TMCC, the team were not to be denied. Inspired play

An outstanding performance all-round saw each division record a winning result in the respective divisions, the first time it had happened this year. It was perhaps fitting that the team recorded this resounding victory at RCC, exacting some measure of revenge on the only club to have beaten us this season. The team carried their momentum into the ninth match of the season, posting a comfortable margin of victory over Laguna National Golf and Country Club. Although not quite matching the incredible feat set in the previous match, it was a solid outing nonetheless, standing the team in good stead for the remainder of the year. With three-quarters of the season completed, TMCC are in a strong position at the top of the overall standings. With three more matches to go, team TMCC control their own destiny wins in all three matches will land TMCC the overall title. Yet, the team shall remain focussed, and will undoubtedly take each match as it comes. While Fang Jia Wei (handicap index 7) claimed the A Division (HI 18.4 and below) title by two shots with 40 points, the rest of the placings was decided by a mere one point or on countback. The tournament, on 21 August at the Tampines course, also had a nice talking point, Club President, Ho Beng Huat, who gave away the prizes, found one for himself as the fourth-place finishers in the B Division. And he was only one shot adrift of the winner, Alice Lim (HI 20), with a decent 32 points. Eighty-one golfers (57 men and 24 ladies) competed in a highly interesting competition. There were also five novelty prizes for Nearest To Pin. v

41 Golf Central 41 Aiya! I hit it with my practice swing. What do I do now? By Robin Langdale I don t know. We d better look it up in the Rules. AnAccidental Hit In a social four-ball match, my partner took a swing and moved his ball only a few yards. He said I hit the ball with my practice swing, what should I do? The question was: should he play the ball as it lay, or should he replace it, and if so under what penalty? The first step was to determine whether the player had played a stroke. If he had, the ball must be played as it lay without penalty. In the Definitions in the front of the Rules book, a stroke is defined as the forward movement of the club made with the intention of striking at and moving the ball A practice swing is therefore clearly not a stroke. The key to making a Rules decision is to identify which Rule applies to the situation. In this case, the ball had been moved accidentally, so Rule 18 is the one we want. Rule 18-2 tells us that if a player or his equipment causes his ball, which is in play, to move, the player shall incur a penalty stroke and the ball shall be replaced. The most important part of the above is that the ball must be replaced. If, as is easy to do, the player plays the accidentally moved ball from where it lies, he has played from a wrong place, thereby incurring a penalty of loss of hole in match play or two strokes in stroke play (Rule 20-7). Also, if he is judged to have gained a significant advantage as a result of playing from a wrong place, he is deemed to have committed a serious breach of the Rule and must be disqualified, unless he has rectified the error by playing another ball from the correct place (Rule 20-7c). So should the player lose the hole as a result of the accidental hit? Provided he proceeds correctly under the Rule, by replacing his ball and taking a penalty stroke, he has not breached the Rule; so there is no further penalty. Two further points worth noting are: If an accidental hit occurs in making a practice swing preparatory to a tee shot, there is no penalty because at that point the ball is not in play. In contrast, if the player makes an air shot on the tee, the ball is then in play because he has made a stroke. So the ball must now be played as it lies on the tee. This means that it must not be re-teed. 42 42 Golf Central By Director of Golf, Ian Roberts PART 2 OF 3 SERIES TipsFROM IAN ARE YOU REPAIRING YOUR DIVOTS? Most golf shots played with irons and woods from turf will produce a divot. A divot is when the top layer of turf is sliced off exposing a cavity or patch of bare earth. Five-step programme to help improve your divot repairing 1. Once you have taken a divot use your sand bottle to fill in the cavity to a level slightly higher than ground level then smooth down with your golf shoe. Repairing divots is an important duty for all golfers as we ourselves would not like to end up in someone else s divot marks. A correctly repaired divot can speed up the healing process by a couple of weeks, as opposed to an unrepaired divot. There are two ways of repairing, or fixing, divots. One is to fill the divot with sand and level with your shoe or retrieve the intact turfgrass/sod patch to replace the cavity. Sand is provided in two canisters along with a sand box located on the golf buggies. For walkers you will find sand bottles adjacent to the 1 st and 10 th holes at both Tampines & Garden courses. Added to this there are bountiful refill stations around the golf course. 2. If your actual turf divot is intact you may wish to replace the cavity and then add sand over the top followed by smoothing over with your shoe. 3. When using golf buggies and being dropped off to play your shot be prepared to take your sand bottle with you. 4. Refill your sand bottle, if sand is running low, so you can be well equipped for upcoming divots. 5. Repairing extra divots along the way of play would be well appreciated. Please keep these points in mind, when next you play, so we can all enjoy a better game. v

A Beery ENJOYABLE EVENING TMCC NATIONAL DAY BEER BUFFET Saturday, 6 August 2016 By Godfrey Robert Being one of the most consumed and probably the oldest alcoholic beverage around, it is no wonder that the TMCC National Day Beer Buffet 2016 was an overwhelming success. The event was even booked out two weeks before and a total of 110 members and guests turned up on Saturday, 6 Aug 2016 at the Garden Events Room. Main sponsor Asia Pacific Breweries provided a range of beers served that included Tiger Draft, Heineken, Guinness Stout, Kirin and also Erdinger White/Black. What would be missing to pair up with the icy, cold beers? A wonderful buffet spread of course. Local delicacies including Satay Bee Hoon, Laksa, Prata with curry, Hainanese Chicken Rice and self-serving Rojak, just to name a few were served for the diners palates. The evening was also accompanied with a wonderful live band performance by Wild Ginger, who gave renditions of the oldies but goodies. Members and guests were also invited up in the last set to join the band on stage to dish out some tunes. Everyone including F&B Convenor Mr Benny Tay, who was present at the event, thoroughly enjoyed themselves as they danced and drank the night away. v

MAO SHAN WANG AND SHOPPING TRIP TO JOHOR BAHRU Saturday, 23 July 2016 Despite a dip in harvest this year due to the scorching weather, durian tours to Malaysia are still a rage. This fact was also echoed in a Straits Times newspaper report on Tuesday, 26 July The strong demand for these tours by grassroots groups is good for bonding, according to them. And they are still running as many such tours this year as in previous years. The case for Tanah Merah Country Club was no different. It was the club s fourth durian trip since it was first organised in By Godfrey Robert

65 Fun in Action 65 Initially, the response for the trip was slow due to reports of poor harvest. However it picked up nearer to the departure date. A party of 20 members and guests embarked on a day trip to the durian plantation in Tangkak for Mao Shan Wang durians. As they strolled through the plantation, banana, papaya, langsat, kedondong and durian trees seemed to line up to welcome everyone along the pathway. There were also baskets full of dragon fruits, chempedak, watermelon and coconuts for sale. Tour guide, Karen Heng, also taught everyone how to identify a Mao Shan Wang durian by looking for a star shape at the bottom of durian. After having enjoyed the baskets of durians, it was time to work it all off as the group proceeded to YoYo Confectionary shop where everyone bought home popular local delicacies. It was then to one of Johor Bahru s largest shopping mall - AEON Tebrau Shopping Mall for more shopping. Lastly, there was a sumptuous 8-course Chinese dinner at Pekin Restaurant at Taman Sentosa, which featured tasty signature dishes like their Fried Thin Noodles, Herbs Chicken as well as the Braised Pork Leg with Black Soy Sauce, which everyone complimented about after having enjoyed themselves to the dinner. Finally it was home to Singapore, where everyone would be having lasting dreams of the durians they savoured. v

66 66 Fun in Action THUMBS UP FOR SOFT SPONGE CAKES SOFT SPONGE CAKE Saturday, 16 July 2016 By Godfrey Robert The seasoned Valerie Kong knew how to keep the audience in tune. There was absolute attention from the ladies when she demonstrated, step-by-step, how to make Strawberry Shortcake. This was one of the two soft sponge cakes she specialised in while teaching at a workshop on July 16. The steps were from whipping, to layering of the cake and finally to decorating the cake. Every step showcased patience and skills. And even though the ladies had a choice to bring home the cakes, many decided to savour them on the spot. The strawberry shortcake with its pillow soft sponge cake, sweet and fresh strawberries, and topped up with super delicious whipped cream with a good balance of flavour and sweetness, was simply heavenly. For coffee lovers, the coffee and walnut sponge cake was also an enjoyable bite. It has a not-so-sweet flavour with the crunchiness from walnuts or other types of nuts will definitely go down well with a good cup of coffee. And even as Valerie used pecan nuts this time round, the cake was absolutely delicious. All nine ladies who attended the workshop were more than glad they came and some had already registered for Valerie s other workshops in the coming months. v

67 Fun in Action 67 BREAD TALK, SO LISTEN ITALIAN BREAD WORKSHOP Saturday, 20 August 2016 By Godfrey Robert Ciabatta is a type of white bread while Focaccia is a flat, oven-baked bread product similar in style and texture to pizza dough. Such exquisite bread names alone might have explained the overwhelming response as more than 15 ladies signed up for the workshop. The two types of bread are so healthy that you don t have to make use of butter or unhealthy oil but simply extra virgin olive oil. Amidst the excitement for the ladies, Valerie Kong managed to demonstrate step-by-step how to make the breads with absolute attention from everyone. Valerie also recommended how to make flavourful fillings to create appetising sandwiches with this healthy bread. Everyone got an opportunity to taste both breads fresh from oven while still able to bring some home to savour later. That has made the diners not only to dance away the night but also to pay attention to what the dances are all about. So when diners were asked how many beats were there in one bar of Waltz music, the responses were quick. The Multiple Choice Questions helped diners to fish out the answers quite easily, but the fun in who answers quickest added to the excitement. So we learnt that there are three beats in one bar of Waltz music. A good response of 118 (34 members and 84 guests) diners turned up to dance to the music of the popular 7-piece live

The dashing couple of the husband and wife team, Jovyn and Cindy Low, captured the attention of the audience attention with their Viennese Waltz (1 st performance) & Waltz (2 nd performance) dance routine. Jovyn comes from a family with ballroom dancing in their blood and is also one of the instructors who conduct dancing classes every Thursday at TMCC. Cindy brightened the stage with an elegant white gown for the first performance and a bright fascia pink gown for the second. The dance floor was smoothened an hour before the event commenced, allowing the dancers to have it just right for Waltz s big steps and glide gracefully on the smooth surface. The dance floor was always packed and everyone was actively dancing and the dances themselves throughout the entire evening. Food was aplenty with a delicious spread because the chef took extra pains to ensure that once the diners turned hungry they had to be satisfied. Yet again, there were rounds of compliments for the buffet spread, the prawn mee noodles soup being among the favourites.
