3 Editor s Note 3 EDITOR S NOTE TMCC IS A CLUB THAT PRIDES IN ACTIVITIES, ACHIEVEMENTS By Godfrey Robert Imagine a golf club with a great course, fabulous dining areas, super facilities and easy access. Throw in a forward-looking management team and very kind staff. Ideal for members, right? But what if there are only few activities and the facilities remain under-utilised? Dreadful, right? Tanah Merah Country Club (TMCC) occupies the other end of the spectrum. It has all the ideal plus factors, and concurrently it is a very busy club with a whole array of activities. And that makes its facilities buzzing, and members engaged. So heading into the last quarter of 2015, a whole host of events and activities has been lined up. Members can look forward to the Golf Yuletide Challenge, Combined Captains Day and Annual Prize Presentation, Oktoberfest and Arabian Night. Toss in the Children s Adventure Camp, Kidzmas Party, and the curtain comes down after an eventful last three months, following the Christmas buzz and New Year welcome. That being the backdrop, it is not surprising that the bookings for golf corporate events have been heavy. This would make it difficult for members to get golf slots. And the club understands that. But compromises, in such situations, are necessary. And members understanding, towards the bigger picture, is called for. For corporate events generate revenue. And that is bread and butter to a club. More and more clubs are opening up their courses to corporate events, and TMCC cannot just sit down and watch. It has to stand up to the fierce competition. That aside, TMCC has scored three notable achievements. Club members Emeritus Senior Minister Goh Chok Tong, former Minister S. Dhanabalan and Singapore National Employers Federation president Stephen Lee won major honours (see stories inside). And sportsmen Joseph Schooling (swimming) and Gregory Foo (golf) receive our congratulations. So too, Mr Ch ng Jit Koon, Mr Sidek Saniff and Mr Liu Thai Ker, along with a host of other club members (see stories inside). TMCC is also proud that its Tampines layout was chosen to host the 16 th Singapore National Amateur Championship. And the club is also one of nine to offer SG50 golfing discounts for green fees on Oct 6. In a year when the nation celebrates its Golden Jubilee, these landmarks have a greater meaning and better significance. v

4 Major Honours ESM GOH CONFERRED HONORARY DOCTOR OF LAWS That was Emeritus Senior Minister Goh Chok Tong s offering of life s lessons to 150 accountancy graduands at a recent National University of Singapore main commencement ceremony. ESM Goh Chok Tong First, while you cannot predict your future, you have control over some parts. You can scan and prepare for the terrain ahead the geopolitical environment, the global economic outlook, Singapore s demography, society s changing attitude, technology, political developments. Second, have a sense of duty - duty to family and country. Mr Goh s alma mater later honoured ESM Goh with the highest recognition when it presented him with an honorary Doctor of Laws for his contributions to public service. ESM Goh, 74, was Singapore s second Prime Minister after Mr Lee Kuan Yew from 1990 to He has been ESM and senior adviser to the Monetary Authority of Singapore since May He is the TMCC Club Patron. NUS faculty of arts and social sciences dean Brenda Yeoh, who delivered the citation, described Mr Goh as one whose life has been closely entwined with the fortunes of this country. Mr Goh graduated from the then University of Singapore with first-class honours in economics in 1964, and started as an Administrative Service officer in the economic planning unit in the Prime Minister s Office. In 1976, he was persuaded by then Minister for Finance Hon Sui Sen to stand for elections in Marine Parade, of which he is still a Member of Parliament. And the rest is history.

5 to TMCC MEMBERS By Godfrey Robert MR DHANABALAN TOPS NATIONAL DAY AWARDS LIST Former Cabinet Minister and Temasek Holdings Chairman Mr S. Dhanabalan credited his team and colleagues after being awarded the nation s highest honour, the Order of Temasek (First Class). Mr Dhanabalan, 78, topped the list of 3,888 National Day Awards recipients this year after his sterling career in both the public and private sectors. Mr Dhanabalan, who received the top grade of the award eight years after he received the Order of Temasek (Second Class), joins other recipients, including Queen Elizabeth II and former Presidents Wee Kim Wee and S R Nathan. Mr S. Dhanabalan I have been fortunate to have worked with a team of outstanding and dedicated people, whether in politics or the corporate world. In a statement, he also said he is gratified to be bestowed this honour. Mr Dhanabalan was Member of Parliament from 1976 to 1996, and held various portfolios, including Foreign Affairs, National Development, and Trade and Industry, from 1980 to He also served as Chairman of Temasek Holdings for 17 years the longest tenure where he is credited with reshaping its investment strategy. In the private sector, high-profile appointments that Mr Dhanabalan has held include Chairman of DBS Group Holdings, while he was also among the founding Board of Directors at Government of Singapore Investment Corporation. MR LEE RECOGNISED FOR STRONG TRIPARTITE PARTNERSHIP Mr Stephen Lee, immediate past president of the Singapore National Employers Federation, was conferred the Order of Nila Utama (First Class) in the National Day Awards list. The 68-year-old was recognised for his contributions in building a strong tripartite partnership in Singapore. Mr Stephen Lee I am extremely honoured and humbled to receive this high national award. Mr Lee successfully established the flexible wage system as an employer representative on the National Wages Council and the extension of retirement age. In addition, gaining re-employment for mature workers was also an accomplishment memorable for him. On his hopes for the future, Mr Lee said: Our long term objectives are the provision of good quality jobs for our workers and the equitable sharing of the fruits of our economic success.

6 Major Honours CH NG, SIDEK AND LIU RECEIVE DISTINGUISHED SERVICE ORDER AWARD Veteran politicians Ch ng Jit Koon and Sidek Saniff were two of the six recipients of the Distinguished Service Order at this year s National Day Awards. They were honoured for their grassroots work as long-time MPs. Both Mr Ch ng, 81, and Mr Sidek, 77, are stalwarts of their respective ethnic communities and have a combined 54 years in Parliament under their belts. Mr Sidek was conferred the award for his role as a former Adviser to the Aljunied Grassroots Organisations. Mr Ch ng Jit Koon He served as an MP in Aljunied GRC from after spending five earlier terms in Kolam Ayer, Jalan Besar GRC and Eunos GRC. Mr Ch ng was conferred the award for his role as a former Adviser to the Tiong Bahru, Bukit Merah and Tanjong Pagar Grassroots Organisations. He was MP in these constituencies at different points over 28 years in politics, starting in 1968 among the first batches of PAP cadres. Both men expressed surprise at the award. I have left political office for nearly 20 years now, and I am really surprised to be given such great honour, said Mr Ch ng, who retired in Mr Sidek, who retired in 2001, said that he was thankful and humbled. Whatever they say I ve done, I could not have done it alone, he said. Mr Sidek Saniff The two Tanah Merah Country Club members aside, another prominent Singaporean who is also a TMCC member, was also recognised for his contributions to the nation. Mr Liu Thai Ker, 77, a master planner of Singapore and presently chairman of the Centre for Liveable Cities, and director at RSP Architects Planners and Engineers, was also conferred the Distinguished Service Order. 7 to TMCC MEMBERS JOE RACES TO NATION S FIRST WORLD SWIM MEDAL Photo Credit by Hugh Lim Mr Joseph Schooling I came to the World Championships with an intention of winning a medal in any of my three individual events. I couldn t be happier to have won a medal on the eve of Singapore s 50 th birthday, and would like to dedicate this win to everyone who has supported and believed in me. I will continue to work hard towards Rio (Olympics) Singapore s sensational swimmer Joseph Schooling was ecstatic when he summed up his phenomenal swim at the World Championships in Kazan, Russia, with those words. The surprise bronze medal finish in the 100 metres butterfly on Aug 8 was Singapore s first-ever medal at the world championships. Joseph, who had his swimming baptism at Tanah Merah Country Club, broke 100m fly the national record for the third time at the meet and set a new Asian record. The 20-year-old touched the wall in sec, just 0.4 sec. short of champion Chad Le Clos of South Africa. Laszlo Cseh of Hungary took silver in 50.87s. Schooling, who was recently crowned Sportsman of the Year at the Singapore Sports Awards, led the race at the halfway mark, touching the wall with a split time of 23.53s. The closest any Singaporean has got to winning a medal at the FINA World Championships was Ang Peng Siong when he made the men s 50m freestyle final in Mr Gregory Foo I am truly in form. Earlier I won the Ford Warren Amateur Open and now this. FOO DOES TANAH MERAH PROUD I am enjoying my stint at Tanah Merah Country Club since I joined the club four years ago. The golfing teammates are great, the members friendly and the committee are very supportive. Gregory Foo, 21, was over the moon about his first major victory in the 68 th Singapore Open Amateur Championship in July. Foo wrapped up the title with a two-under 68 to finish on five-under 275 (72, 66, 69, 68) for a convincing seven-shot triumph over Thai Kousuke Hamamoto. With the victory, Foo also won for himself an invitation to play in the SMBC Singapore Open which will be held on Jan next year at the Sentosa Golf Club. Last month, Foo, a member of TMCC s Premier Division team in the Singapore Golf Association League, finished third in the Singapore National Amateur Championships behind James Leow and clubmate Yash Majmudar.

10 10 In theknow 01 THINGS THAT STING... And how to share the golf course with them painlessly. Exclusive as the golf course may be to humans, there is an open door policy to insect visitors of all temperaments. Among them will be the beautiful butterflies and dragonflies, their creepy caterpillars, the problematic army worms and the group of interest, the stinging insects. Run purposefully to get away as fast and as far as your breath can take you. There is no use doing a zigzag route and waving your arms to swat them will only rile them up further. Bees will give chase but the good news is that they can t fly very fast. Most people will be able to outrun them over a short distance. Stinging insects include bees, wasps and hornets (a type of wasp), and kerengga ants. Technically, the ants do not have stingers but they can give a vicious bite and follow that with a spray of formic acid into the wound causing a stinging sensation. To all of these insects, the golf course is particularly attractive as a well stocked pantry and prime real estate. The landscape is full of shrubs and trees whose flowers provide nectar as a high energy food source. Interestingly, in a links course where there are very few plants except wild grasses and turf, there will still be bee activity. This is because grass is wind-pollinated and produces vast quantities of pollen which the bees also collect. Wasps are omnivores so they eat fruit, nectar as well as other smaller insects (including bees!); all of which are found in great abundance in the course. As for shelter, bees and wasps choose tall trees, dense shrubbery, quiet rough areas in the golf course and nooks and crannies of buildings; anywhere where the hives and nests can be protected from rain and other disturbances. Kerengga ants stitch together live leaves to form a nest which is very well camouflaged. Bees and wasps spend much of their time on duties around the hive/nests and only fly around to forage when the weather is not very hot. While on these food gathering trips, any close encounters with humans will pass uneventfully. However, when humans become unintentional intruders by stumbling upon their hives and nests or even being too noisy around them, it can spell trouble. The surprise visit will be perceived as a threat deserving a defence of equal hostility. Bee stingers are barbed and become embedded firmly in your skin once they sting you. As the bee tries to leave, the stinger, together with much of the abdomen will tear off and leave the bee mortally wounded. What is a minor trauma for you is a total disaster for the bee! In contrast, wasps have smooth stings and technically, can live to sting multiple times over. It is important to know that dead or crushed bees and wasps emit a scent signal that summons their sisters to seek revenge. (Yes, only females sting!). So, remember to move away from the scene before you tend to your stings. First aid yourself by scraping out the stinger (with the rigid edge of a finger nail or a credit card) and numbing the skin with a cold compress. See a doctor if sting is near your mouth or eye or if you are generally feeling ill. Hopefully though, this does not come to pass. Some effective precautions to try are: Do not have anything of interest to a bee or a wasp. No perfume. No brightly coloured clothes. No fruits or opened cans of sugary drinks in the buggy. Wear tighter clothing or clothes with fitted cuffs so that insects are not easily trapped between cloth and your skin. Observe the area where your ball lands and be on the alert for hives, nests and irritated insects as your ball may have hit and dislodged their nests. By giving bees and wasps a little space and a little respect while you go about your game, we can happily coexist and enjoy the golf course together. If one is so unfortunate to be besieged.run!

11 In theknow NEW PRACTICE BUNKER Good news for all TMCC golfers... The construction of a new practice fairway bunker at the Garden driving range is complete and is now available for use. As part of keeping good golf etiquette and bunker upkeep, everyone using the practice bunker is reminded to smoothen the sand with the provided rake after each session, for the benefit of the next person using it. 03 TMCC TO OFFER SG50 Golfing Discount on October 6 As part of a special arrangement with the Singapore Golf Association (SGA) in celebration of SG50, and for just one day on October 6, Tanah Merah Country Club will be offering a discounted rate of $ GST to all Singaporeans and permanent residents to play at our premises. Play however will be restricted to the Tampines course and only AM slots will be made available. Booking opens 8 days in advance of stated date. Interested members are advised to book early to avoid any disappointment. This initiative - which is on a first-come-first-served basis and valid for the stated date and period is to encourage greater participation of the sport. 04 REVISION in OPERATING HOURS and AUDIO SYSTEM UPGRADE for KARAOKE LOUNGE Aspiring singers and heavyweight song belters, rejoice! The TMCC Karaoke Lounge will now have longer operating hours for your practice purposes as follows: Mondays - CLOSED Tuesdays to Thursdays, Sundays & Public Holidays am to 10.00pm (previously 6.30pm to 10.00pm) Fridays, Saturdays & Eve of Public Holidays 10.00am to midnight (previously 6.30pm to midnight) In addition, the existing karaoke system has been upgraded for your singing pleasure. The new karaoke system has a more user friendly interface to facilitate the searching of songs, and provides the latest as well as a wider selection of songs. Additional wired and Vintage standing microphones were also added. This extension and equipment upgrade will give singers the opportunity for more hours on the microphone to refine their vocal cords and prefect the song.

Kanaya From left: Amos Ho & Jeffrey Ho It was a sea of red and white on Tanah Merah s Tampines course as golfers dressed in national day colours to participate in the Lee Kim Yew Trophy National Day Competition Not surprisingly though. For the event was to coincide with the club s SG50 celebrations, exactly a week before National Day, on Aug 2. This being Singapore s Golden Jubilee, celebrating 50 years of independence, the event had bigger meaning and a greater significance. The event also brought back memories of our late founding father and first Prime Minister Lee Kuan Yew s idea to have a prestigious golf course in the east for people to enjoy the sport. The late Lee Kim Yew (popularly known as Dennis) was our founding father s younger brother and had two main interests, family and golf. He was once the Singapore Golf Association president, and also played a leading role in the setting up of TMCC in the early Eighties. A total of 89 golfers (67 men and 22 ladies) took to the greens with an afternoon shotgun start. The weather was cloudy with hints of rain. Fortunately play was held up for just 40 minutes due to lightning, to the delight of all golfers. Apart from the usual dinner, prize presentation and lucky draw were held at the Tampines Golfer s Lounge. continue on next page...

16 16 TOPFeature Lovely orchids to take home Champion Tan Swee Seng receiving the trophy from Captain Lee Lian Hong Tan Swee Seng, the B Divison winner with 42 stableford points five ahead of his nearest rival Ang Yong Hock, was also the overall winner. He shared that winning the trophy this year was extra meaningful as it was the nation s golden jubilee and his father-in-law, Woon Sui Cheong, happened to be the overall winner in 1992 as well. To remember the old days, this year s event pitted participants against one another in traditional games like Capteh and Five Stones as part of the evening s entertainment. Capteh is made out of a rubber disc base and fixed with colourful feathers, where the objective is to keep it in the air for as long as possible with the heels of your feet. Five Stones, more commonly played by girls, consists of five small triangular cloth bags filled with rice, sand or saga seeds, where the objective is to complete a set of eight different steps. 17 From the Greens 17 Friendship First, COMPETITION SECOND Monday, 22 June 2015 By Godfrey Robert It was the annual triangular among the Tanah Merah Country Club, Sentosa Golf Club and the Singapore Island Country Club. And on 22 June, seven of our junior golfers competed against their opponents in friendly terms in the triangular at SICC s Island Course. The Overall Best Team was SICC in the stableford competition. TMCC was second and Sentosa third. The Best Player from TMCC was representative Wong Qi Ming. The 16-year-old, whose favourite golfer is Ian Poulter, is the youngest of four boys, all whom are avid golfers who used to train under former Singapore champion, David Milne, in Perth during the school holidays. The triangular is annual friendly event hosted in rotation by the three clubs since It was initiated to encourage competitive golfing as well as increase exposure to as many junior golfers. Overall, there was a good showing of sportsmanship and the juniors totally enjoyed the outing. TMCC will be hosting the next Triangular in v

From left: John Stones, Luke Garbutt, Gareth Barry & Steven Naismith The pull factor is the club s range of top-class facilities, especially in swimming and golf. World-class swimmers from Australia and the United States have used the club s pool as a warm-up venue for big Games, such as the Olympics. And the feedback from them has always been positive. It is no secret that the club s two golf courses are among the best in the region, and beyond. The Garden course, especially, has staged some of the biggest golf events, such as the Lexus Cup, the HSBC Women s Champions and the Tiger Skins. About 12 years ago, I also played a round with three Manchester United footballers. Recently, footballers from the English Premier League club Everton spent an afternoon playing golf at the new Garden layout. I was privileged to be with them at the club s Garden Golfers Terrace where I savoured some dialogue and banter with many of the players. More significantly, I played a round of golf with Everton skipper Phil Jagielka and midfielder Tom Cleverley, with former Singapore national cricket captain Lawrence Young being the fourth player in the flight. Jagielka, an eight-handicapper, was solid with his drivers, sometimes hitting around 260 metres. Cleverley, a 14-handicapper was not a long-hitter, but his short game was to be admired. Young and I took on the Everton boys for a small bet for drinks, and we enjoyed a momentous 3-1 matchplay victory. Other notable players from the Everton team who teed off were John Stones, the current rave locked in a big transfer battle, Seamus Coleman, Steven Naismith, Gareth Barry, Leon Osman and Darron Gibson. When asked during drinks what he thought of the course, Jagielka said: It s a fabulous layout. The fairways were superb and the greens pristine. I must say that the greenkeeper has done a wonderful job. Kudos, TMCC. v

20 20 From the Greens Team Captain Mark Wee (centre) with the victorious Men s A team SGA League 2015 TMCC moves up to third spot with four games remaining Sunday, 16 August 2015 By David Ng Team TMCC continued its strong performance in the SGA League despite facing off against very strong opponents over the past eight weeks. The team came away with two strong victories against Laguna and Sentosa, a very credible draw against NSRCC and a most unfortunate defeat to Raffles Country Club. That has placed us in third position overall with the possibility of finishing the season in an even higher position with four games remaining. The team started brightly with a 11.5 to 2.5 victory against Laguna on 28 Jun at the Sime Course, SICC. Victories were recorded by all five teams and our ladies team did exceptionally well by winning 3-0 with strong comeback wins for the A & B Ladies team on the final hole despite being down for most of the game. Our next game on 12 July at Changi Golf Club against favourites and defending champions NSRCC produced lots of drama.

Our ever-reliable Seniors also delivered with a strong 2.5 to 0.5 victory. However, several putts did not drop our way in the other games as we secured a well fought 7-7 draw. On 26 July, TMCC suffered its first defeat against Raffles Country Club at the difficult Keppel Club golf course. While our Seniors continued their winning streak with a 2-1 victory and our Premier team halved their game, the Men s A & B and Ladies teams lost to stronger opponents. With some serious training and pep talk by all the team captains, Team TMCC rebounded quickly with a strong 10.5 to 3.5 victory over Sentosa Golf Club on 16 Aug at Warren Golf & Country Club. The victory was important to get us back on track to challenge for the overall championships and very admirable given that Sentosa had held overall leaders SICC to a 7-7 draw in their previous game. The Men s B and Premier divisions led with impressive 3-0 and 2-0 victories respectively, with our Seniors continuing their winning run The Men s A team also won 2-1 but our Ladies were unfortunate to lose 1-2 despite their very gallant efforts. With four games left before the end of the campaign, Team TMCC lies in third spot, five points behind leaders SICC and Seletar. Our Seniors remain undefeated and are on track to challenge for top position in their division. With games against Keppel, SICC, Jurong and Changi remaining, we will need to ensure we finish strongly with four victories and wait for the leaders to slip up. v

24 24 From the Greens TMCC Sweeps a few awards at 16 th SNAC James Leow & Goh Jen with the Men s & Women s Winner s Trophies Monday, 17 to Thursday, 20 August 2015 Held at the prestigious Tanah Merah Country Club, with exclusive use of the Tampines Course, the 16 th Singapore National Amateur Championship 2015 saw a total of 44 men and 19 ladies participating and competing in this edition. SGA Vice President, Goh Hup Chor (left), presenting a memento to TMCC Captain Lee Lian Hong It was a fight to the finish in the men s final as TMCC s Yash Majmudar tried to make a strong comeback even as competitor James Leow s explosive start recorded six birdies in the first seven holes. Ultimately, Yash had to settle for first runner-up, even after persevering until the very end, which James claimed 6-5. Another TMCC representative Gregory Foo, fresh out from winning the 68 th Singapore Open Amateur Championship, took second runner-up. SGA Exec Board member, C.S. Kong, presenting the 1 st Runner Up trophy to Yash Majmudar It was much better results for the women s division as TMCC s Jen Goh, probably fuelled by her clearing the first stage of the LPGA Tour Qualifying School held at the Mission Hills Country Club from 3-9 August and recent win at the San Diego City Amateur Championship in July, cruised to a win and defended her title by beating Ou Yang Hua, 6-5 to claim the champions trophy. Chairman Organising Committee and Captain TMCC, Lee Lian Hong, was on hand to present the trophies to the winners. 25 Golf Central 25 By Robin Langdale Please mark your ball as it might interfere with my shot WHEN A BALL Do I have to? You re 30 metres away! Interferes WITH YOUR SHOT In a shelter during a recent weather delay, conversation turned to when can a player require another player to mark his ball when one or both balls are not on the green. We re all familiar with our right to ask another player to lift his ball if it will interfere with our putt or chip; and also if the other ball will interfere with our stance or swing elsewhere. But what if the ball is far away from the ball to be played? What if any limit of distance applies? Rule Ball Assisting or Interfering With Play, says if a player considers that another ball might interfere with his play, he may have it lifted. There is no requirement for the interfering ball to be on the green and no limit of distance is specified, but in stroke play the player requested to lift his ball may play first rather than lift the ball. Unsurprisingly this has led to some decisions: Decision 22/2 says that if player B s ball is three feet from the green on a direct line to the hole with player A s ball, which is 30 yards from the green, A may require B to lift his ball on the grounds that the ball interferes with his play. So player B in the picture must mark and lift his ball for A s shot, or opt to play first. However, Decision 22/3 deals with a situation where A s ball is 100 yards from the green, B s ball is on the green and A requests B to lift his ball. This happens several times during the round. The decision says that Rule 22 is intended to cover situations where there is a reasonable possibility that one ball might assist or interfere with another ball. If the Rule is being abused, as in this case, the Committee would be justified in penalising A for undue delay (Rule-6-7). So, we have some guidance, but there is still room for debate, and the penalty for breach of Rule 22 is loss of hole in Match Play, or two strokes, in Stroke Play. The safe procedure for player B seems to be either to lift his ball when requested, or if it is in stroke play, opt to play his shot first. He is also entitled to complain to the Committee if he thinks A is abusing the Rule. The safe procedure for A is not to push his rights too far and risk a Committee decision against him. Another interesting situation is covered by Decision 22/1 that says a player may have another ball lifted if the ball interferes mentally with his play. This is in contrast with Decision 24-2a/1 that says a player is not entitled to relief from an obstruction (a sprinkler head in this case) that bothers the player mentally. An exception to this Rule is that a player may not lift his ball that is not on a putting green solely because he considers it might interfere with the play of another player. If such a player lifts his ball without being asked to do so he incurs a penalty of one stroke for breach of Rule 18-2a, Ball at Rest Moved. Rule 22-1 also deals with a ball that may be assisting play. If a player considers that a ball might assist any other player he may lift the ball if it is his, or have any other ball lifted. In stroke play, a player required to lift his ball may play first instead. But note that this option is not available in Match Play. They are also licensed adjudicators registered with The World Dance Council. Jack Goh Jack was introduced to the world of Ballroom Dancing at the age of 11. He grew up as one of the top local junior dancers and eventually went on to the adult field. He is the current Singapore champion in the Professional Latin American category and has represented Singapore at the South-East Asian, Asian, Asia-Pacific, British and World Championships. A member of the Singapore Ballroom Dance Teachers Association and the United Kingdom Alliance, he has been actively teaching and promoting the art of Latin-American Ballroom Dancing. His works range from students both young and old, right up to people with special needs. Jovyn Low Jovyn Low comes from a family with ballroom dancing in their blood. In the 1930s, Jovyn s grandfather Mr Low Poh San was the pioneer of ballroom dancing in Singapore. In the 1960s and 1970s, Jovyn s father Mr Sunny Low was crowned the King of Rock & Roll. In the early years of 2000, Jovyn s two brothers Alvyn and Melvyn Low became Professional Champions in Ballroom Dancing. Jovyn has had the rare opportunity to learn under all these people and has widened his knowledge by learning from past and present champions from all over the world. Apart from being active competitors in ballroom dancing, Jovyn together with his wife Cindy are choreographers and performers. PUTTING LESSONS INTO Practice Saturday, 25 July 2015 By Godfrey Robert What do you do after taking dancing lessons? Obvious isn t it? You want to put what you learnt into practice. The Social Dancing Night on July 25, at the Garden Events Room was the ideal platform for that. So 72 diners (obviously all dancers) -- namely 25 members and 47 guests -- went through the dancing paces on that Saturday night from 7pm to just past midnight. So as Locomotion, the seven-piece band plus one powerhouse lady singer, Vivian accommodated their requests, they were a satisfied lot. They had ample fun dancing to the beat of the Cha Cha, Tango, Rhumba, Rock n Roll, Quick Waltz and the Bachata. Performers Nicholas Low and Lorencia Kan captured the attention of those present with their suave moves to the Rumba and Cha Cha beat, with songs Thinking Out Loud and Kiss Me. The door gift was an assortment of Sakura sweets and a $30 gift voucher, sponsored by Dancelife Asia Pacific. The food was delicious, a spread by Chef William Tay, who took pains to ensure that everyone s appetite was fulfilled. Adding to the ambience was the Garden Events Room being well decorated in colourful simmering black and red, with creative self-made flower vase acts as centrepiece with the programme card. That being the scenario, the next Social Dancing Night event on Oct 3, themed Arabian Night, promises to be a funfilled entertaining affair. v

44 44 Fun in Action GREEN TREATS FOR PANDAN KAYA LOVERS FLAVOURS OF PANDAN DESSERTS Saturday, 25 July 2015 Hmmm what a lovely scent, commented the 10 ladies in harmony, as they were treated to a whiff of the sweet smelling Pandan leaves while it came to a boil. They were at the Club on Saturday morning, 25 July, to learn how to make Pandan Kaya Cake and Pandan Kaya Swiss Roll from instructor Valerie Kong. But was it easy making the Pandan cakes? The steps are easy. The only tedious work you have to do is squeezing out the pandan juice manually and then you will be able to enjoy the freshness of pandan in your cakes said Ms Kong. She then proceeded to teach the ladies how to make the Pandan Kaya topping and use the same kaya for the Swiss Roll. Ms Kong further surprised the ladies with a bonus recipe of Pandan Kaya Muffins, to everyone s delight. An absolute reason why you should not miss her cooking classes as she is ever so generous in giving away those precious extra recipes. v HEAVENLY THORNY DELIGHTS CRAZY ABOUT DURIAN Saturday, 1 August 2015 It was the King of Fruits that took centre stage as the strong scent of durians filled the Ixora Room at Tanah Merah Country Club s Kitchen Studio on Saturday, 1 August. Eight participants with a love for durians, signed up for the Durian Baking Workshop with instructor Valerie Kong to learn how to make their own delectable Durian Puffs and Durian Cakes in the comfort of their homes. The participants listened attentively as Valerie imparted her knowledge on the important basics as well as to using the best parts and types of durians for creating that perfect dessert. As for the eager learners, the realisation of the potent combination of Mao Shan Wang and D24 Sultan durians, along with a dab of cream added to the mix, gives you an absolute smooth creamy feeling of taste that makes you crave for more. v

45 In the Spotlight 45 With Val, you can have the cake and eat it too By Godfrey Robert Tofu cheesecakes, soft and fluffy paus, pandan kaya cakes, swiss rolls and nyonya kuehs. Such desserts give you an image of unhealthy diet fit for rotund personalities. But such an image can be dismissed. For taken in moderation, even the sweet-toothed can dig into such rich pleasantries or delectable dishes and not worry about fattened waistlines and unnecessary fat. In fact, when you look at the chef promoting these dishes you get incentivised and encouraged. For this lady with the deserved apron is a slim, warm and charming personality in her 40s who gives you a welcoming appetite for her sessions. Valerie Kong has been conducting cake baking sessions at Tanah Merah Country Club (TMCC) since And despite many year-round sessions, her lessons are popular judging by the response to her regular classes. In fact, Valerie has become synonymous with TMCC and she has scored successes with her full classes. The single mum received her baptism into baking at the age of 17 in Brunei when her mother inspired her to spend hours in the kitchen. Said Valerie: My mum was a good cook, and she motivated me to learn the art of baking. Also through books, I had experimented with many types of cakes and had come out with my own recipes. They are created by tasting a particular pastry and figuring out the ingredients in it. And they have become popular with TMCC members. Among Valerie s specialities are strawberry hearts, black forest, tofu cheesecake, different types of kuehs, pandan cakes and even durian puffs. For instance, when it comes to durian puffs, Valerie cooks the durian to remove water content that will cause it to turn sour after a couple of hours and not to make it more watery. No doubt, Valerie also has had maximum exposure and long experience, having taught at community centres, Civil Service Club and the Singapore American School. I have also taught at Shermay s Cooking School in 2012 and 2013, so I have sound knowledge and expertise in baking, adds Valerie. The mother of three girls, Tiara, Tania and Tamaryn -- all having gone through university -- also enjoys new recipes with her original tried and tested method. And she does not shy away from trying out new recipes to get the best out of her experiments. Valerie was born in Singapore but spent a considerable amount of time in Brunei with her mum since After 11 years she returned to Singapore and expanded her penchant for cooking and baking by learning and experimenting. Today she is almost a permanent feature at TMCC because many members want her to continue her baking sessions. And she says: As long I can teach and make many of my students happy, I will continue doing what I ve done at TMCC. After all, the TMCC members form a cosy group, and I enjoy doing what I ve been doing. So it seems that Valerie s kitchen workshops at TMCC are here to stay for a very long time. v

46 46 Fun in Action ROLL IN THE STEAMED BUNS SOFT & FLUFFY PAUS Saturday, 22 August 2015 When it was made known that Valerie Kong will be conducting a Chicken and Vegetable Pau cooking class again this year, all interested participants who had missed it last year, immediately jumped on the bandwagon and signed up for it so that they would not miss it again this round. Among the 11 ladies present, three lucky ladies including 20-year old novice baker Deborah Chan, had the opportunity to learn how to make the dough from scratch. Pinch, pinch, turn, uttered Valerie as the ladies listened to her attentively to the steps on shaping the paus during the hands-on session. And it was not just limited to the making of the pau skin, but Valerie also gave tips on how to retain the vegetable s crunchiness as well as how to tenderise the chicken so that the fillings would taste delicious even after steaming. In a nutshell, the ladies were glad they came for the workshop as it was definitely an educational day well spent. v VALERIE UNVEILS A CLOSELY-GUARDED SECRET APPETISING CAKES Saturday, 31 August 2015 On Saturday, 31 August 2015, 15 enthusiastic ladies had the opportunity to improve their baking prowess as they picked up tips on making Almond Sugee Cake and Cranberry Orange Cake. As Chef Valerie Kong demonstrated how to make the Cranberry Orange cake, the refreshingly appetising aroma that lingered in the Ixora Room made everyone salivate. When it came to the Almond Sugee Cake, it was like learning a closely guarded secret as Chef Valerie made use of a traditional Eurasian style recipe. Reason being that within every Eurasian family, the special food recipes are usually handed down from one generation to the next and in their own family circle only. Overall, it received both thumbs up from the participants and many were determined to try their hand at making one as soon as they got home.
