It was so nice to see everyone enjoying this very special day and it proved to me once again how blessed we are to be part of the Cullasaja extended family. We have extraordinary facilities, an active and engaged membership, and a professional staff that works diligently each day to bring you the best possible experience at the Club. Cullasaja is a very special place and it is events like the Derby Day Party and Mother s Day Brunch that make me realize just how lucky we are to live and/or work here. With the arrival of the summer months, we hope you and your family will take advantage of all the fun and exciting activities that are planned for you. Please review this newsletter carefully so you don t miss an opportunity to participate. Please remember to sign up in advance for events you wish to participate so that we can be better prepared to serve you. 3 by Tom Nelson FROM THE GREEN Each year, I am asked about the particulars of how our golfers can help to properly care for the golf course. Each course is unique and maintained slightly differently according to the specific needs of a particular property. Different turf types, maintenance practices and budgets all influence what the golfers are asked to do at individual facilities to help complement the maintenance staff s efforts to provide the best possible conditions. Ball marks are one universal maintenance item that should be performed by the golfer. We ask that you repair your mark and one other on each green. This not only keeps the putting surface smooth for the days to come, it is common courtesy to your fellow members playing behind you. Proper ball mark repair Step 1: Use a pronged ball mark repair tool, knife, key or tee. Step 3: Bring the edges together with a gentle twisting motion, but don't lift the center. Try not to tear the grass. Step 2: Insert the repair tool at the edges of the mark; not the middle of the depression. Step 4: Smooth the surface with a club or your foot. Repeat steps until the surface is one you would want to putt over. CART TRAFFIC AND ETIQUETTE. A few years ago we adopted the gate system to help control traffic patterns and wear and tear on the course. This season we have changed it a bit in that there are two posts at each location and we ask that you enter and exit the fairways by driving between them. At or near the beginning of each fairway, there is a wooden pole indicating where to enter the fairway and another closer to the green indicating where to exit the fairway. Once you have entered the fairway we ask that you keep the cart in the fairway and completely out of the rough. The only time a cart should be in the rough is upon entry and exit of the fairway. Our fairways can handle the traffic much better than our roughs for a number of reasons. DIVOTS. Generally divots taken with shorter irons will be thicker than those made by longer irons or fairway woods. Bigger divots that do not disintegrate should be replaced and the edges filled in with the sand mix provided. Thin or disintegrated divots should be filled with the sand mix and smoothed out with your foot. The biggest mistake I see people making is to fill the void with sand and lay the divot on top. Done like this the divot will dry out and die in a matter of hours. The sand mix used here does not contain any seed so it can be used in the rough if necessary. We do ask that you not fill any divots on tees as our staff tends to each tee box every day with a sand/seed mixture. BUNKER ETIQUETTE. We have several very steep bunkers that should only be entered/exited in the low points. This prevents moving large amounts of sand off the steep slopes creating issues with proper sand depth and washing during heavy rains. Additionally, there are no official rules on whether the rakes are to be placed inside or outside of a bunker. In order to minimize the likelihood of a ball coming to rest on a rake we ask that you replace the rake with the head of the rake in the sand and the handle resting on the edge or lip of the bunker. By following these simple guidelines, you and your guests, can help us to keep our course in great shape throughout the season. 3

4 GOLF by Charles Beurmann Our season is underway and we are extremely excited about this summer! I want to thank everyone for their participation in our Memorial Day Stableford game, as well as our Twilight events this May. Please review the following event descriptions and let us know if you would like to participate in the many remarkable events that we have planned for your enjoyment this season. As always, our Professional staff is here for you, so please don t hesitate to call on us whenever we can be of any help! MEN S MEMBER-MEMBER CHAMPIONSHIP Friday, June 3rd and Saturday, June 4th Cost is $95 per Player The popular Men s Member-Member Championship is one of the premier member tournaments of the season. If you have not yet signed up, grab a friend and join us. Interested in playing and need a partner? Simply ask the Golf Shop for assistance in finding a teammate. The cost for this event is $95 and includes breakfast, lunch, and drinks daily. Please keep in mind the golf course will be closed for regular play until 11:00 a.m. on Friday, June 3rd, and 12:30 p.m. on Saturday, June 4th. WOMEN S GOLF ASSOCIATION (WGA) Join in the Fun Today! Our WGA has a very busy tournament schedule this June. Please contact the Golf Shop if you need more information on these exciting events. As a reminder, opening day for the WGA will occur on Tuesday, May 31st. The WGA Laurel Cup will be June 6th & 7th. The 9-Hole ladies have interclub at Wildcat on Monday, June 13th beginning at 10:00 a.m. The 18-Hole ladies Interclub will be on Monday, June 27th at 9:00 a.m., also at Wildcat Cliffs. 5 Junior Golf and Tennis Camp JUNE 14TH 16TH $175 PER PARTICIPANT / PRORATED RATES AVAILABLE FOR PARTIAL PARTICIPATION Registration for the annual Junior Golf and Tennis Camp is now open. Camp attendees receive up to 5 hours of group instruction each day covering both tennis and golf topics. The 3-day camp will review course etiquette, putting, chipping bunker play, tennis drills, footwork, match play and more. Games and prizes will be included. If you have a child or grandchild interested in participating in this very popular camp, please contact Zoe at the front desk or to reception@cullasaja-club.com. Demo Day 2016 WEDNESDAY, JUNE 15TH 12 NOON UNTIL 4:00 P.M. This is a great opportunity for you to try the latest equipment from Callaway, Ping, Cleveland/Srixon, and Titleist. Our Professional staff will be available to fit and assist you with any questions you may have about the product. 6 Couples Cup SUNDAY, JUNE 12TH AT 1:00 P.M. COST IS $85 PER COUPLE INCLUDES POOL SIDE DINNER AT THE COMPLETION OF PLAY The annual Couples Cup begins with a 1:00 p.m. shotgun start and the format is a modified net best ball of the foursome. Men play from the tournament tees and ladies play from the red tees. Nine-hole men will play from the white tees. Men receive 80% of their handicap and Ladies receive 90% of their handicap. Golf, prizes, awards & live music from Caribbean Steel are all part of this exceptional event. Saturday Night Shootout STARTS ON SATURDAY JUNE 25TH AT 3:00 P.M. COST IS $20 PER PLAYER TOP 3 TEAMS ARE AWARDED. This entertaining event occurs on the last Saturday of each month. Sign up as a twoperson team and we will play an alternate shot format with elimination to have a monthly winner. The lowest net team scores will advance to the next hole until only two teams remain going to the 9th and final hole. Teams can be men or women or a mix. Handicaps will be given at 50% of the team total off the low team in the Shoot- Out. Strokes are given as they fall on the card and will be adjusted when the low team is eliminated. This event is always popular and there is a maximum number of teams permitted. So, please sign up well in advance to ensure your spot. 6

7 Weekly Organized Games The Golf Shop provides organized games for players of all skill levels. These organized golf games will be offered weekly providing there are no major tournaments scheduled. If you are interested in participating, please stop in the Golf Shop and sign up in the brown leather book on the shop counter. We currently have 26 teams registered and will be accepting, at most, 42 teams this year. If you have not had a chance to register, please do so before it s too late. 9 by Terry Fugate TENNIS AT THE TOP EARLY START TO THIS YEAR S TENNIS SEASON: This year we had 4 of our tennis courts open and ready for play by mid April. We had quite a bit of play in late April and early May. I offered complimentary tennis clinic the first week of May to kick off our 2016 Tennis Season. We are off to a great start for the year. Thank you all for your continued support of our Tennis Program here at the Club. JUNIOR GOLF/TENNIS CAMP: Make plans now to enroll your children or grandchildren in this year s 3 day Golf & Tennis Camp. The Camp will be held on June 14th, 15th, and 16th and is sure to be a whole lot of fun. The children get 5 hours of instruction each day, with 3 hours of golf each morning and 2 hours of tennis each afternoon after they have lunch. We will offer lots of fun-filled games, group clinics, footwork drills, match play, Cardio Tennis and a game of Alive. WELCOME HOME TENNIS MIXER: It s a great introduction to our peak season. By mid June everyone is back in town and ready to play tennis. This event will be held on Saturday, June 18th at 10:00 a.m. Tennis will be immediately followed by lunch. Please remember to sign up ahead of time so we will know how many are coming for tennis, and also for lunch, which all non-playing spouses are encouraged to attend. Come on out and enjoy the fun. 10 MALLETS & MARTINIS by Terry Fugate BUSY MONTH OF MAY: During the month of May we saw many members returning to play croquet here at the Club. Our first Mallets & Martinis was well received with around 30 participants. Results of our May Qualifier Tournament will be sent via to CCA members. If you were not in town for the first Qualifier please remember there will be 3 other Qualifiers. We will have one Qualifier during the months of June, July and August. The 4 winning teams from the four Qualifiers will all advance to the Croquet Championship that will be held during September. Please remember we offer an Intermediate and also an Advanced competition, including Ladies Doubles, Men s Doubles and Mixed Doubles divisions for both competitions. JUNE KICKS OFF OUR CROQUET SEASON: We have lots of exciting croquet events for you starting in early June and here are some of the highlights. Custom Mallet Fitting with Don Oakley. Don will be in town for the week of June 3rd through June 9th and will visit Cullasaja Club one day during that week-tba. Don s company supplies all of the mallets we sell here at the Cub, so if you want the opportunity to demo several different mallets this is a great opportunity. Don is a USCA certified referee and instructor, is vice president of the USCA, and owns his own mallet company. If you wish to purchase a mallet later in the season I will be more than happy to help you select a new mallet and place the order so you can get the Club discount. World Class Instruction: Instructor Jeff Soo returns to our Club to offer two days of world class instruction on Thursday, June 9th and Friday June 10th. His classes are free to all CCA members. June Inter-Club Matches: June 9th at Cedar Creek Racquet Club June 16th here vs. Wildcat Cliffs June 23rd here vs. Chattooga Club June Qualifier Tournament: Monday, June 20th time TBD REMINDERS: All whites are required for all CCA events. Normal golf or tennis clothing is acceptable attire during non CCA events. Only smooth soled shoes are allowed on the lawn. We have a full variety of croquet whites available for men and women in the Pro Shop at the Wellness Center. We also offer custom mallet fitting, mallet sales and all croquet accessories. Croquet instruction is available by calling the Tennis Pro Shop Please remember, members who make advanced reservations have priority over the lawn. 10

12 HOT OFF THE PLATE by Shelley Walker My name is Abegail Lagayada. I am enrolled in the Culinary Institute of Cagayan de Oro in the Philippines with a major in Culinary arts and holistic nutrition. Even after some time in culinary school, I know I still have a tremendous amount to learn. I believe it would be so much fun to learn while exploring other cultures and places, and meeting new friends. I hope to learn more, refine my skills and continue my development by joining the Cullasaja Team. The culinary field is a very tough business and I am willing to undergo intensive training to learn as much as I can from the excellent and experienced mentors in Cullasaja. I know this will be a life-changing experience for me. It will mold me and help me grow, not just in the culinary world but holistically as a person. My name is Hayley Wilson and I am so proud to join the Cullasaja Club family while performing my externship as a Baking and Pastry student of the Culinary Institute of America in Hyde Park, New York. As the youngest of four, I have learned that family and friends have been most influential in guiding me to become the confident and witty person I am today. So, it was an easy choice for me to gravitate to Cullasaja Club after Ms. Walker and Chef Marie explained in great detail the strong bond between the employees, staff, and members of the Club. In the future I hope to carry and build on these strong bonds, both personally and in the hospitality industry. My name is Tzu Thor. Cooking is my passion, my life and my career. Golf is second. I am excited to help lead the Cullasaja culinary team this year as the new Sous Chef. In Charleston, I helped open a restaurant for Bill Murray called Rutledge Cab Company & staged at Husk. In Boston, I worked for the James Beard award winner chef Tony Maws of Craigie on Main and staged for a month at the Michelin starred restaurant of Chef Marc Forgionne. I also spend time at the Culinary Vegetable Institute and was fortunate enough to do a 12-course dinner with Chef Eli Kaimeh of Per Se to raise money for team USA Bocuse D or. I had the opportunity to travel to Ukraine this past winter and fell in love with it and I am planning on spending more time there this winter. Meet and welcome back Mike! I was born in Dallas, Texas and I am 36 years old. I am the proud father of three kids and husband to a great wife. I am a friendly and outgoing person. I like spending time with my family and playing video games. I would like to own my own restaurant one day. We welcome back Julius! I was born in Czech Republic, lived in Canada and moved to the US twenty five years ago. I have a strong culinary background with over 30 years experience as a cook. I previously worked at Highland Falls Country Club and Wolfgang s on Main in Highlands. I have 3 children and 5 grandchildren. I love to cook, eat and try different types of food. I am originally from upstate New York and I moved to North Carolina in I made my way to highlands in 2003 and began working at Cullasaja 8 years ago. I have 4 children and 2 grandchildren. In the winter I enjoy traveling and spending time with my mom and sister. I am a huge animal lover and have a dog named Cabe. My name is Alexander Notofranco but growing up I was given the nickname AJ. After graduation culinary school in 2011 with a Bachelors degree in Culinary Arts & Business Management I decide to further my career by exploring my options in the restaurant world. I started as a dishwasher and worked my way all the way to a sous chef. Currently, I work for Sailfish Point Country club as Chef de Cuisine and work under the Certified Executive Chef Anthony Angelino. I have been able to put my culinary talents to the limit and work all aspects in the various kitchens on the Sailfish property. I have become a designated trainer and leader for the team. I also enjoy playing basketball, making music, playing the guitar and piano. My ultimate goal for joining the Cullasaja family is to be able to express my culinary talents to another level, as well as meeting new friends. I have never left the state of Florida so it definitely is a new experience for me. I am Chuck Lent and was born in Stonybrook, NY but raised in Wilmington, NC. I grew up a pretty athletic kid, playing soccer, basketball and baseball until I was introduced to hockey in which I gave up playing all the others for. I fell in love with the quick pace of the game, the physical play, the finesse in which it involves, the team building quality, as well as the passion the players held for the game and its evolution throughout the years. For me, those are the same qualities that have sparked my passion for the culinary industry, that on top of the ability to travel with the industry. I m always excited about expanding my culinary knowledge, abilities and to be able to work under and with other professionals with whom I can share my knowledge and experiences with as well gain from theirs. My name is Kevin Pietka; I am the Culinary MIT of Cullasaja. I am a recent associate s graduate from The Culinary Institute of America. I was born and raised in a small suburban town of Connecticut. My parents are originally from a small farm in Poland, they moved here around 30 years past. Having this said, most of my ethnic roots are surrounded by Polish traditions. From a young age, I was constantly around the food scene. Whether it would be forming pierogis with my grandmother, or watching Mom prepare a banquet for entire family on the holidays. Throughout the years, I picked up many tools of the trade working in a multitude of restaurants. With all the minor knowledge I obtained of food, I used it towards an education in the Culinary Field. Having finished Associates, I am seeking to utilize the skills I obtained in school and put them into practice in the field. In my experience, I hope to receive a better understanding of restaurant operation and management. Hi my name is Rachel Saulsberry and I am from Washington State. I left home about 3 years ago for college in New York and I have been on the East Coast ever since. As of April, I have recently earned my Culinary Arts Associates degree as well as my Bachelor s degree in Business Management. I believe this puts 12

13 me on the right track for where I want to be in the future. In my down time I enjoy reading poetry and hiking. I have never visited North Carolina and I am looking at this opportunity to expand my education. It has been a while since I have worked on a line. Most of my recent experience has been in catering both front and back of house. I am looking forward to working in a close community environment and learning how to work, run and operate a successful business that does not have to focus on one cuisine or a set menu every day. I am Jake Pereira and I go to the Culinary Institute of America in New York. I live in Boston Massachusetts, on the 60th floor of an apartment building overlooking the downtown area, I have a German Sheppard named Lexi and she is 1 year old this May, and a cat named Gizmo and she is 5 years old this November. I am very excited to join the team at Cullasaja and look forward to finally meeting the team that makes the Club function so smoothly. I first met the Cullasaja at the 2016 Career Fair the CIA hosted back at the beginning of spring and I fell in love with the area, the Club itself, and most of all the level of team work and high level of skill the team was described to portray. In my free time I enjoy hiking, mountain biking, and golf. Although I m not great at golf, the peaceful aspect of the course is something I feel like little can compare to. I hope to continue to enjoy some of these activities and more with the amazing outdoor experience Highlands has to offer on my free time. I m Alexa Marie S. Matuguina. I was born and raised in Philippines. I m 20 years old and have a degree in Bachelor of Science in Hotel and Restaurant Management. Traveling the world is my ultimate dream! My parents engaged me in different sports ever since when I was young and my main game is Taekwondo and I love to dance and sing. I m glad to be part of the family again at Cullasaja. Last season was a really awesome experience; I had so much fun and I was able to enhance my skills and knowledge in my chosen field. I built lifetime memories from the people I ve met from all over the world and beautiful Members from Cullasaja. This year I know it s going to be another great experience and I m so excited. I m John Calvin Gutierrez; you can call me Calvin for short. I am turning 21 this coming October 20. I m a die-hard fan of basketball; Derrick Rose is my favorite player of all time. I am the type of person who can get along with other people as soon as I talk to them. I also love challenges because I know with those challenges I can become more than I am now. I m also a hardworking person. I know that I need to work really hard for the things that I desire. I am currently taking Bachelor of Science Major in Tourism Management. It s a four year course in St. Paul University Quezon City. I am very excited to learn from the Cullasaja Family! My name is Jessica Carla Omotoy, from Cainta Rizal Philippines. I graduated from the University Of Central Florida Rosen College Of Hospitality Management in May I ve worked at Disney World for 6 years and have had various hospitality opportunities throughout this time, including working on a cruise ship in the beautiful state of Hawaii! In my brief working history, I also had the chance to work at Planet Hollywood, Universal Studios and as a hostess at Reunion Resort in Orlando, Florida. My fiancé and I have moved to this beautiful area to pursue exciting career challenges, network with incredible people, and to take in all that the mountains have to offer. Currently, I am working towards a degree in Biology. I hope to take on a career in Wildlife Research and Preservation. My ultimate goal in that field would be working to restore and preserve animal habitats in wetland areas. I have always enjoyed the outdoors, and felt very connected to the earth and animals. Among my other interests, I especially enjoy art, music, books, photos, exploring the outdoors, and gardening. I am very proud of my green thumb, and have a host of plants in my yard back home. While there, my love for travel, recreation, and food, combined with my outgoing personality and enjoyment for serving others, led me to the Hospitality and Tourism Management Program. I became a part of the Cullasaja Family in 2015 as the Resident Director. After a successful season, I went to work as the Food & Beverage Supervisor at Sailfish Point Country Club in Stuart, Florida, for the winter months. I am ready to return to Cullasaja for the 2016 season as the Dining Room Manager. I feel like the team we have for this upcoming season is fantastic and will make this the best season yet. 16 JUNE EVENTS Off the Plate [cont.] CULLASAJA WINE DINNER Join us for a Club favorite that always sells out fast! Our first wine dinner will feature Duckhorn Vineyards from Napa Valley, California. We will have special guest Woody Joyner from Mutual Distribution here to discuss the various wines to be paired with a 5-course dinner beginning with passed appetizers in our beautiful Overlook Room. The event takes place on Thursday, June 9th at 6:30pm. Cost is $99 per person. GROOVY CABARET NIGHT Our first Cabaret of the 2016 season will take place on Saturday, June 18th at 6:30pm. Enjoy a creative 3-course plated dinner with optional beverage pairings before you dance the night away with the Hot Sauce Band, specializing in your favorite 70s hits. The cost is $65 for the dinner and show, and $15 for the beverage pairing. FATHER S DAY BRUNCH It is time to celebrate Dad! We will have our annual Father s Day brunch on Sunday, June 19th from 10:30am to 2:00pm We will feature guitarist Ronnie Evans, who will help create the perfect day for Dad. The cost is $18.95 for adults, $12.50 for kids. Children under 4 are for free. SUPER SATURDAY Join us for a chance to win $500 in Cullasaja spending credits the last Saturday of each month. A casual dinner buffet will be served after the drawing. MONTHLY FARMERS MARKET Our first Farmers Market of the season will be Sunday, June 26th from 2:30pm to 4:30pm. We will have our market the last Sunday of each month. CULLASAJA KIDS CAMP 2016 It s almost time for one of Cullasaja s favorite activities! Our Kids Camp this year will feature four days of mountain fun from June 29th through July 2nd for ages 5 to 12. ANNUAL CULLASAJA CART PARADE AND DUCK RACE Our Cart Parade and Duck Race will take place on July 3rd, The Race will begin on hole #2 after the Cart Parade. Ducks can be purchased for $25 each or 5 for $100. We will have fun carnival games and food featured at the event this year. A lunch will be served prior to the festivities in the Clubhouse from 10:30 to 2:00. JULY 4TH COOKOUT It is time to celebrate the 4th of July with one of our favorite cookouts of the season. 19 Club Information CULLASAJA RESERVATION POLICY Reservations are required for all Club social events. Reservations for á la carte dining are always recommended. If space is available and you do not have a reservation, we will make every effort to accommodate you on a first come, first served basis. SHIPPING Do you know the Club office will handle your UPS and Federal Express shipping needs? Just bring your package to the front desk and we ll take care of it from here. You pay shipping plus a $5 handling charge. MAIL SERVICE When you arrive at the Club for the summer, please be sure to change your address with the Club office. We will change your address in our records so you will receive your billing and Club correspondence without delay. It is very important for you to complete the forwarding and stop orders when you move back and forth. If your mail is left in your box for more than 10 days without being picked up, the Post Office is required to hold it for 30 days and then they will return it to the sender. CANCELLATION POLICY If you have a reservation for dinner or any event and find you will be unable to attend, please call the Club to cancel in a timely fashion so another Member may take your place. To avoid cancellation fees, all reservations must be cancelled as stated in the 2016 Club Rules published in the 2016 Membership Directory.
