The Club staff has been busy creating a robust schedule of activities and events for you to enjoy. The following programs are ready for your participation and enjoyment: In golf, the Cullasaja Cup, the Whiteside Challenge Cup vs. OEI, the monthly Saturday Shoot-Out, the WGA Member-Guest, and a 9-Hole Interclub Challenge. The F&B department offers the next Cabaret Night with the Blues Brothers, Yappy Hour #2, a Burgundy Wine Dinner, Eclipse Luncheon, a Pool Party, and the Super Saturday Drawing on the final Saturday in August. If you are looking for a great way to meet others and play in a social environment, stop by the croquet lawn on Tuesday or Thursday afternoons at 3:00 p.m. or 5:00 p.m. and enjoy our entertaining Mallets and Martinis with hors d oeuvres and open bar. For those looking to play the great sport of tennis, there is also plenty of opportunity in August. The Member-Guest events, weekly clinics, and junior lessons all provide plenty of chances to hit the courts. Wellness and fitness doesn t take a breather during August and Stacie and Manu will continue to provide outstanding fitness based classes, massage therapy and two hikes during the month. Mark your calendars to attend one of the two Town Hall meetings to discuss the possible Clubhouse Renovation and other projects under consideration. The two dates in August are Sunday, August 13th at 3:00 p.m. and Tuesday, August 15th at 3:00 p.m. Look for an with further information on the location of these meetings. Thank you again for your support of the Cullasaja Club and being a special part of our Club s remarkable culture. 3 by Stacie Platt UPDATE FROM THE WELLNESS CENTER HIKE AUGUST 19TH Wow! What an amazing morning we had on July 1st! Hiking High Falls in Lake Glenville and watching the water release. Truly an amazing sight! Thank you to the 29 members and guests who joined us for this great adventure. This month, we are off to Glen Falls. Glen Falls and Chinquapin Mountain Trail is a 2.4 mile out and back trail located near Highlands, North Carolina and is rated as difficult. RECIPE OF THE MONTH: HONEY LIME RAINBOW FRUIT SALAD INGREDIENTS: 1 lb fresh strawberries, diced 1 lb fresh pineapple, diced 12 oz fresh blueberries 12 oz red grapes, diced into halves 4 kiwis, peeled and diced 1 (15 oz) can mandarin oranges in juice, drained well and sliced into halves 2 ripe bananas, diced* HONEY LIME DRESSING 1/4 cup honey 2 tsp lime zest (zest of 2 medium limes) 1 Tbsp fresh lime juice INSTRUCTIONS Add all fruit to a large mixing bowl. In a small mixing bowl, whisk together the honey, lime zest and lime juice. Pour over fruit just before serving and toss to evenly coat (as it sits for a few minutes the juices will gather at the bottom, so toss again before plating). 4 GOLF by Charles Beurmann Cullasaja Cup Friday & Saturday, August 11th & 12th. Matches begin at 9:00am Cost: $150 per person (includes alcohol & food) The Cullasaja Cup is one of our premier events of the year. The field is divided into two teams with one team representing the Golf Committee and the other team representing the Green Committee. The two teams battle it out, playing for yearlong bragging rights, with the winning team enjoying a steak dinner and all the trimmings, while the losing team eats hot dogs and beans. The format is four nine hole matches played in a Ryder Cup style. Sign up today in the Golf Shop so you don t miss out on this very popular event! 4

5 WHITESIDE CUP MATCHES VS. MEN S HOME & HOME Thursday, August 17th at Old Edwards Club Thursday, August 31st at Cullasaja Club Cost: $50 per person (includes carts & lunch) Two Cullasaja Club members will play two Old Edwards Club members in an 18 hole Nassau. One point will be awarded for the front nine. One point will be awarded for the back nine. One point will be awarded for the 18 hole total. The winning team retains the trophy and bragging rights. Sign up in the Golf Shop soon since space is limited to the first twelve to sign up! Saturday Night Shootout Saturday, August 19th at 4:00 p.m. Cost is $20 Cash per Player Top 3 Teams are awarded Sign up as a two-person team and we will play an alternate shot format with elimination. The lowest net team scores will advance to the next hole until only two teams remain going to the 9th and final hole. Teams can be men or women or a mix. Handicaps will be given at 50% of the team total off the low team in the Shoot-Out. Strokes are given as they fall on the card and will be adjusted when the low team is eliminated. This event is always popular and there is a maximum number of teams permitted. So, please sign up well in advance to ensure your spot. Women s Golf Association (WGA) Our WGA has a very busy tournament schedule this August. Please sign up online for these exciting events. 6 ADULT INSTRUCTIONAL OPPORTUNITIES Putting Clinic The Putting Clinic is geared to all levels of ability. The Clinic will focus on the design of the club, set-up, attitude and the two most important fundamentals, distance and direction. The clinic will also cover the process and routines in reading greens and breaking putts. The program will be limited to 8 members. Friday, August 18th 3:30p.m. - 5:00p.m. Cost $30 per member Golf Happy Hour This interactive program will be geared to cover various golf topics. Each session will have a main theme and will feature member participation. NO clubs will be required. Tuesday, August 29th 5:30p.m.to 6:30p.m Tuesday, September 19th 5:30p.m.to 6:30p.m. Please sign up for each Happy Hour - Cash Bar will be provided. Cost $10 per member 6

We have two starting times for match play - one at 3:00 pm and one at 5:00 p.m. So, if you are thinking about croquet, this is the perfect opportunity to come out and give it a try. 10 CULLASAJA CROQUET ASSOCIATION: Each month we seem to add more croquet players to our roster. We currently have around 155 croquet playing members here at our club. Becoming a CCA has its perks; there are world class instructional seminars and rules seminars which are all included in your CCA membership dues. The fee for membership in the CCA is only $85.00 per person per season. JIMMY BUFFET NIGHT WAS A HUGE SUCCESS: During the month of June, we hosted our first ever Jimmy Buffet Night and we were overwhelmed by the response we received from our CCA membership. We had some fun and games down on the small lawn below the main dining room while food and drinks were served inside the clubhouse. We had the largest group of CCA members ever assembled in one location for a croquet event. We had around 85 CCA members show up for this fun-filled extravaganza. JEFF SOO INSTRUCTIONAL SERIES ONCE AGAIN A HUGE SUCCESS: This year, the CCA paid to have Jeff Soo, who is a world class player and also a great instructor, come here to Cullasaja for two days of instruction at no cost to the CCA members. Over 60 members participated in these two day sessions. JEFF SOO RULES SEMINAR Friday, August 4th 9:00 4:00 p.m. This event is free to all CCA members so sign up early to ensure your spot. SECOND ANNUAL HIGHLANDS CROQUET CHAMPIONSHIP: This event will be held on Tuesday, August 22nd and will be played at Highlands Country Club. They have the largest croquet facility in the Highlands area so they were the obvious choice to host the tournament. We will be sending our very best players over there for a chance to bring the Championship trophy home to Cullasaja. Each year, the team that wins the championship will get to keep the trophy until the following year. SADIE HAWKINS DAY CROQUET MIXER Thursday, August 31st Each lady will get to choose who her partner will be for the event. You must sign up ahead of time for this fun-filled mixer. The draw is limited to 48 players or 24 teams. Leave your whites at home and come on down to this Country Shindig. Everyone is invited to come over and watch even if you don t want to play, and you are also invited for the food portion of the event. 12 TENNIS AT THE TOP by Terry Fugate We had great events for tennis throughout the months of June and July to kick off the summer season: in June, we saw 4 teams of competitors in the Men s Doubles Invitational. This year, we had cowinners Geoff Parker and Cambron Kelly tied with Larry Ainsworth and David Rountree. Later that month, because of rescheduling, the Ladies Doubles Invitational was played and we had a record setting 9 teams of ladies who entered the event. We had 4 teams at one level and the other 5 teams played at the other level. After the end of regulation play, the teams who won the most games at each level participated in a 7 point tiebreaker. The two teams who played in the tiebreak were Mary Wilding and her partner, Barbara Clabby, and Anne Schaeffer and her partner, Ellen Flaunt. After an exciting tiebreak, the Champions were Anne Schaeffer and her partner, Ellen Flaunt. To kick off the week of July Fourth, our holiday mixer Strawberries and Cream once again saw the tennis courts overflow with a great turnout of 24 players. A fun time was had by everyone because we played some Mixed Doubles and also Men s & Ladies Doubles. During the Fourth of July Week, we had 7 days in a row where we had all 4 tennis courts in use every morning at 10:00 a.m. and that has never happened before. Thanks to all of the great Cullasaja Club members, their family members and their guests who made this one of the best holiday weekends ever at the Tennis Center. New Tennis Champions crowned for 2017 in two of the three Championships. The Men s Championship had 8 men participate this year. After 5 rounds, 6 of the 8 competitors still had a chance to win. At the end of regulation play Larry Ainsworth finished in first place for one half of the Championship team. We had two others who tied so they had to play a tiebreaker to determine which one of them would also be a Champion. Mike Buchanan and Ron Ezerski played in the tiebreaker and Ron Ezerski s team won. So the new Champions are Ron Ezerski and Larry Ainsworth. The Ladies Doubles event was played the next week and we had 5 evenly matched ladies competing for the Championship title. At the end of regulation play, the Champions were Kellie Johnson and Margaret Eichman. We will have to reschedule the Mixed Doubles Championship because of some injuries and also a lot of ladies were out of town that weekend. Congratulations to all of our new Champions and thanks to everyone who came out and participated in this year s Championships. Rick Eichman wins a BIG USTA Tournament. Congratulations go out to Cullassaja s very own Rick Eichman and his partner, Don Mathias, for winning the Men s Doubles in the 75s in Asheville this past month. Rick and his partner played in a round robin rotation against 3 other very strong teams in the 86th Annual City of Asheville USTA Championships. 12

13 Junior Tennis Clinics were held twice a week during the month of July: Special thanks to all of the parents and grandparents who brought their children out to a Tiny Tots or a Young Guns Clinic during the month of July. We hope that all of the children had fun and we hope see them all back on the courts again next year. Special thanks to my summer assistant, Cambron Kelly. He did a great job teaching all of the juniors this year. THE MONTH OF AUGUST WILL SEE THE MARQUIS TENNIS EVENT OF THE 2017 SEASON: The Tennis Member/Guest Tournament & Luncheon: Please make plans now to join us for the premier tennis event of the 2017 season. Please let me know now if you need for me to get you a partner for this marquis event. The ladies event is up first, followed later in the month by the men s event. This is a great opportunity to invite one of your friends and to show off our beautiful club and our great tennis facility. I feel sure we will see some great tennis matches during this event, and afterwards the members and their guests will all go up to the Clubhouse for a very special luncheon prepared by Chef Marie. LADIES MEMBER/GUEST TENNIS TOURNAMENT & LUNCHEON Wednesday, August 16th 10:00 am MEN S MEMBER/GUEST TENNIS TOURNAMENT & LUNCHEON Saturday, August 26th 10:00 am Will we have another record turnout by the ladies? I can t wait to see! This year, we have added so many new ladies to our roster that the men are having trouble keeping up with the turnout by our ladies group. In the past, we had way more hours of play by the men compared with the numbers the ladies turned in, but this year it is a tossup as to which gender is playing more tennis here at the Cullasaja Club. It s been a banner year so far and we have a whole lot more tennis to offer. 13

14 COMING IN SEPTEMBER: LABOR DAY WEEKEND TENNIS EVENT: For Labor Day Weekend, our tennis mixer is the Letigan Round Robin and Social Mixer. For this fun filled mixer, you play 4 games and each team will be given one Letigan to replay any point at any time, even on a game point or a match point. Golfers get Mulligans so why shouldn t tennis players get a Letigan? All you need to do is Terry or call the Tennis Pro Shop to sign up for that day. No partner is necessary for this event so come on out and join the fun over Labor Day weekend. All members, their family members as well as their guests are more than welcome to play. 16 HOT OFF THE PLATE by Shelley Walker I have been asked two consistent questions ever since I decided to pursue my sommelier certification. The first question that I am asked all the time is what is your favorite wine? This can be a hard question for a sommelier to answer because we love and appreciate so many different wines for so many different reasons. My favorite wine can depend on what I am eating, what time of day it is, and who I am with at that exact moment. However, there is one type of wine that I can always rely on, no matter what; sparkling wine. Madame Lilly Bollinger said it perfectly when asked this question, I drink champagne when I am happy and when I m sad. Sometimes I drink it when I m alone. When I have company I consider it obligatory. I trifle with it when I m not hungry and drink it when I am. Otherwise, I never touch it unless I m thirsty. So, my answer to the favorite wine questions is if I could only drink one wine for the rest of my life, I would drink sparkling wine of any kind; Cava from Spain, Champagne from France, Prosecco from Italy, etc. The other question I am asked often is how did you become a sommelier? or what is a Master Sommelier? The simple answer is, I became a sommelier after studying with a Master Sommelier in Nashville, Tennessee and taking an exam through the International Court of Master Sommeliers. However, the background behind the process is truly fascinating and difficult. The Court of Master Sommeliers is an international organization that was established to encourage improved standards of beverage knowledge and service in the hospitality industry. The first Master Sommelier exam was held in 1965 in England and the Court was established and recognized as the premier international examining body by There are currently 149 Master Sommeliers in the United States (only 24 are women) and 236 Master Sommeliers throughout the world. A person is eligible to take the Level 4 Master Exam once he or she has passed 3 other levels within the Court; Level 1, the Introductory Sommelier Course and Exam, Level 2, the Certified Sommelier Exam and Level 3, the Advanced Sommelier Course and Exam. The Level 1 Introductory Course and Exam accepts beverage and hospitality professionals to sit for an intensive review of wine and their regions, spirits, service and deductive tasting. This exam consists of 70 multiple choice questions about the wine & spirit world. A student must receive a score of 60% to pass. Someone who has passed this exam is knowledgeable about major wine regions of the world, spirits, beer, sake and proper wine service. They have the confidence and skill to serve and discuss a wide range of alcoholic beverages. They have also learned the Deductive Tasting Method that is the integral part of the 3 exams to follow. This method is the 16

17 stepping stone to what is known as blind tasting in which a person can identify a wine without any information. A student that has successfully passed Level 1 can recognize wine flaws and determine wine quality through this tasting method. This level is a prerequisite for the Level 2 Certified Exam. Your F&B Director, Steve Sheridan, has successfully passed this level and is preparing for the Level 2 Exam. The Level 2 Certified Sommelier Exam is meant to prepare professionals for the rigorous Advanced and Master Exams. A student that passes this exam is a Certified Sommelier and demonstrates skill in salesmanship, beverage program management, blind tasting abilities, and theoretical understanding of the wine and spirit world. This exam consists of three separate parts; deductive tasting, theory and practical service. During the deductive tasting portion of the exam, candidates must blindly identify the grape, country, region and vintage of 2 white and 2 red wines using the proper tasting format within 30 minutes. The theory portion is a written exam that tests a professional s understanding of wine, beverage and service through 45 multiple choice, short answer and matching questions and must be completed in 35 minutes. The practical service part of the exam tests an individual s ability to perform real restaurant wine and beverage service. This includes sparkling wine service, recommendations of spirits and wine pairings for menus, old bottle service and overall tableside knowledge and beverage salesmanship. Candidates must receive a score of 60% in each section in order to become a Certified Sommelier. I have successfully passed Level 2 and am considered a Certified Sommelier through the Court. This is exam is a pre-requisite for the Level 3 Exam. The Level 3 Advanced Sommelier Exam is formatted like the Level 2 Exam but is considered significantly more difficult. A candidate must have least 5 years of experience in order to apply to sit for this exam and must wait 1 year after the certified exam. This exam also has 3 parts for an individual to pass; practical beverage service and salesmanship, written theory and deductive tasting of 3 white and 3 red wines. A candidate can attempt to pass the 3 sections of the exam 3 times before they must start over. Professionals must also receive 60% in each section. Only 25%- 30% of candidates pass this exam the first time. I have passed the Level 3 Advanced Exam through the Wine & Spirit Education Trust and was awarded the WSET Advanced Sommelier designation. I hope to attempt the Court s Level 3 Exam within the next few years. The Level 4 Master Sommelier Exam and Diploma is considered the top designation for beverage professions. The format and content is similar to the Certified and Advanced Exams with three parts, a 50 minute oral (not written) theory section, deductive tasting of 6 wines or spirits, and practical service. A candidate must receive 75% in each section to pass and must pass the theory portion first before advancing to the other sections. Candidates have 3 consecutive years to pass the other 2 parts of the exam. This exam is only held twice per year. If someone doesn t pass all three parts in three years, they must begin the process all over again. The pass rate for the theory portion of the exam is only 10%. A person that has passed the renowned Master Sommelier Exam is an expert on wine areas, wine products, varietals and their cultivated regions, international wine laws, all wines, spirits, beers and mineral waters, cigar production and storage, service of all liquids, menu content and building, beverage pairings, cocktail creation, vintages and tasting. A Master Sommelier should be able to blindly and correctly identify the grape, country of origin, appellation of origin and vintage of any wine tasted a really cool skill and party trick. The pursuit of the Master Sommelier Certification is a long and arduous process; however, it is also extremely rewarding. 18 CULLASAJA Club Information RESERVATION POLICY Reservations are required for all Club social events. Reservations for á la carte dining are always recommended. If space is available and you do not have a reservation, we will make every effort to accommodate you on a first come, first served basis. SHIPPING Do you know the Club office will handle your UPS and Federal Express shipping needs? Just bring your package to the front desk and we ll take care of it from here. You pay shipping plus a $5 handling charge. MAIL SERVICE When you arrive at the Club for the summer, please be sure to change your address with the Club office. We will change your address in our records so you will receive your billing and Club correspondence without delay. It is very important for you to complete the forwarding and stop orders when you move back and forth. If your mail is left in your box for more than 10 days without being picked up, the Post Office is required to hold it for 30 days and then they will return it to the sender. CANCELLATION POLICY If you have a reservation for dinner or any event and find you will be unable to attend, please call the Club to cancel in a timely fashion so another Member may take your place. To avoid cancellation fees, all reservations must be cancelled as stated in the 2017 Club Rules published in the 2017 Membership Directory. HOLE-IN-ONE CLUB Sign up now for your chance to win $550.00! Membership is only $3.75 per person. When we have a winner you will be billed an additional $3.75 to replenish the fund. Sign up through the Pro Shop or Club Office. RESERVATIONS You may any reservation requests to Shelley Walker at swalker@cullasaja-club.com. Be sure to include your name, date, time, number in party and any special requests (high chairs, boosters, birthdays, anniversaries, special guests, etc.). reservations should be submitted no less than 48 hours in advance of an event. Shelley will confirm your reservation via . DRESS CODE Please observe the dress code for the Clubhouse, Activity Center, Golf Course, Tennis Center and Swimming Pool listed in the 2017 Club Rules, published in the 2017 Membership Directory. GENTLEMEN S HEADGEAR Gentlemen are required to remove their headgear when entering the social areas of the Clubhouse. SMOKING POLICY The Clubhouse, Activity Center and all adjacent patios and decks are smoke-free environments. Smoking is allowed only in designated areas outside of the buildings. AUDIBLE CELL PHONE POLICY Use of cell phones/audio media is prohibited in the Clubhouse, Activity Center and on the Golf Course, except for medical emergencies. MINORS AND CARTS Any minor who operates any golf cart on Club property must have a valid driver s license.
