2 Make it a Date Hello Eyestone Families! Can you believe November is here already? I can't! It's already time to think about our Family Thanksgiving Luncheon. This year it will be held on Friday, November 20th. The menu will be Salad with pumpkin seeds and Craisins, selected fruit and vegetable bar, turkey/ gravy, mashed potatoes, peas and dinner roll. Uncrustable PB&J's will be available as well. As we draw nearer to the date a reminder notice will come home in a Thursday folder along with lunch times by grade so you can plan to join your student for lunch that day. Our featured fruit is pears this month and vegetable is cauliflower. Where I grew up in Long Island, NY, cauliflower was grown in the fields around us. It was one of my favorites as a child. My mom would cook a head whole, drizzle butter over it and sprinkle with Italian seasoned breadcrumbs. Yummy! We would eat the leftovers mashed before it became a popular lo-carb substitute for potatoes. I hope you are all enjoying the fall weather with your families! Thank you for the honor of serving your children, Patti Brandt Eyestone Kitchen Manager Used Book Sale One of our generous parents made a large donation of used books... come check out the large selection. 8 Running Club and Cougar Choir The Running Club and Cougar Choir are just wrapping up for our 3 rd, 4 th and 5 th graders and we wanted to share some of the experiences with you. Ask your child about earning feet and working toward their running goals. And ask about the Wizard of Oz songs and fun warm ups we sang. Here s what the students said about Running Club and Cougar Choir: Running and singing helps me be a nicer and better kid. If I run I feel so alive. Gr 3 Running club gets me pumped up for the day. I wake up with a lot of energy when it is choir day and I start to sing maybe even in my sleep Gr 4 This makes me want to go out and do Olympics Gr 4 If I didn t have singing I don t know what I would do. Gr 4 Running club and choir are both my passion. Gr 4 Before choir I wasn t a huge singer but choir made it fun plus I liked singing The Wizard of Oz Gr 5 Running club makes me run or walk and not sit all day on the couch or sleep. It motivates you to keep moving and get pumped Gr 5 After running club I m happy for the rest of the day. It helped me with soccer and basketball Gr 4 I love choir because I get to express myself and when I sing I am in a world that makes me feel like no one can stop me. Gr 5 you really inspired me to start exercising every day Gr 4 Music is where people can express themselves without anyone judging them. I enjoy running too because you can run like the wind with no one holding you back Gr 5 You made me not afraid to sing out loud. You got me singing in the bus, in the shower and all kinds of other places. Gr 4 I didn t like to run in the first place. I slowly learned to like it then I learned to love it Gr 5 I thought I wouldn t like it (choir) but it turns out that I love it. Also because we can show everybody what we can do Gr 3 Choir allows me to sing and dance my heart out Gr 5 After running club I seem to do better with paying attention and I notice improvement in speed, agility, and stamina..i enjoy choir because it helps me with vocal and social skills and it gives me an early start on what I will do in middle school through college Gr 5 continued Eyestone Elementary School 4000 Wilson Avenue, PO Box 69, Wellington, CO (970) page 8

9 Running Club and Cougar Choir (continued) You inspired me by singing with my true voice. Sometimes I wake up and sing without me knowing. Gr 4 I will never forget choir in my life and now I want to be a rock star Gr 3 I LOVE choir because you are singing and rising to beautiful music Gr 3.running club I improve on my running and I m getting wings because I can run faster than my dad and I have courage to do anything maybe I could be in the Olympics. With both I could be a first place champion and a famous singer. I give a round of applause to Mrs. Fetzer and Mrs. Nuttall because they re such awesome teachers! Gr 4 Running club gets me tired and I m in a lot better shape than I was before. Choir relaxes me and lets me just sing and not have anybody judge me Gr 3.I feel like I m a caterpillar that just sprouted into a butterfly. When I sing I m a little shy but that s why it s so cool you sing with people and that means no one is looking at you Gr 5 when I have free time now I like to run around the huge field at my park and also I always sing because sometimes I think about being famous Gr 4 I love running club you get to test your legs and make them stronger Gr 5 I like running club and choir because Mrs. Nuttall and Mrs. Fetzer are really fun and funny Gr 3 In running club you become a better learner in school and it s a lot of fun and good for your body Gr 3 In running club we get to earn little feet and we can walk and jog. It is also cause we can do it with a friend. Gr 3 I also love running club because once you ve run a mile or more you feel an accomplishment has been completed Gr 3 Keep teaching and keep choir and running club forever, I love it! Gr 4 Thank you for changing my life Gr 3 Kindergarten Eyestone Kindergarteners got to go to the Wellington Fire Station and the Wellington Post Office. continued Eyestone Elementary School 4000 Wilson Avenue, PO Box 69, Wellington, CO (970) page 9

10 Kindergarten (continued) PUMPKIN FRENCH TOAST BAKE Prep time 10 hours 10 mins Cook time 40 mins Total time 10 hours 50 mins Sweet and spicy pumpkin french toast is made the night before for an easy, early-morning preparation. Author: Minimalist Baker Recipe type: Breakfast Cuisine: French Toast Serves: 10 Ingredients 5 1/2-7 1/2 cups 1-inch bread cubes (depending on type of bread)* 7 large eggs 2 cups milk (any kind)* 1 tsp vanilla extract 1 1/2 tsp pumpkin pie spice 1/4 cup pumpkin butter (or 1/2 cup pumpkin puree)* 3-4 tablespoons brown sugar for topping nuts, like pecan or walnuts (optional) Instructions Cut any kind of bread into 1-inch cubes - I recommend a crusty, whole grain variety, but sandwich bread will work, too. Just use enough slice to fill a lightly greased 9x13 baking dish quite full. In a large bowl, whisk together eggs, milk, vanilla, pumpkin butter and pie spice until well combined. Pour over bread and push down with a spoon or your hands until it's all soaked and mostly covered. Cover with saran wrap or lid and refrigerate overnight. In the morning, preheat oven to 350 degrees, uncover and top with brown sugar, additional pumpkin pie spice and nuts (optional). Bake for minutes or golden brown and no longer wet. Serve immediately with maple syrup, honey or agave nectar. Store leftovers in the refrigerator covered for up to a couple days. Eyestone Elementary School 4000 Wilson Avenue, PO Box 69, Wellington, CO (970) page 10

11 Pumpkin Cheesecake Dip Yield: 10 to 12 servings Ingredients 1 (8oz) pkg Neufchatel cream cheese 3/4 cup powdered sugar 1 cup pumpkin puree (NOT pumpkin pie filling) 1 Tbsp pumpkin pie spice 1 (8oz) tub cool whip Instructions With a handheld mixer and large bowl, beat the cream cheese with the powdered sugar until smooth. Mix in the pumpkin puree and pie spice. Beat in the cool whip until mixed thoroughly and the beaters leave ripples in the dip. Optional: Top with a sprinkle of cinnamon or pumpkin pie spice. Serve with apples, pretzels, vanilla wafers or your favorite dippers. Apple Cranberry Walnut Salad Prep time 10 mins Total time 10 mins Crisp apples, dried cranberries, feta cheese, and hearty walnuts come together in a fresh Autumn salad. Author: Tiffany Recipe type: Side Dish Cuisine: American Serves: 4-6 Ingredients 6 cups salad (I used a combination of arugula and baby spinach, any spring green mix will do) 1 red apple 1 green apple 1 cup walnuts, roughly chopped (such as Diamond of California) ⅓ cup crumbled feta cheese ⅓ cup dried cranberries Dressing (see note) 1 cup apple juice 4 tablespoons apple cider vinegar (or white vinegar in a pinch) 2 tablespoons honey scant ½ teaspoon salt ¼ teaspoon black pepper ¼ cup oil Instructions Core and chop apples (thin slices or 1 inch chunks). Toss lettuce, apples, walnuts, feta, and cranberries together in a large bowl. Whisk together all dressing ingredients. Toss with salad immediately before serving. Enjoy! 12 Supplies you will need: empty small tissue box brown, red, orange and yellow paint paint brush brown cardstock paper white cardstock paper glue stick clear packing tape googly eyes small piece of yellow and red paper scissors Directions: 1. Start by painting an empty, small tissue box with brown acrylic paint. 2. For the feathers we painted card stock paper red, orange and yellow. Then we used the same paint to splatter the different paint colors on each sheet of paper. You can imagine how much fun this is for kids. Just make sure you do this step outside or cover your table with newspaper because it gets messy. 3. After the paint on your tissue box is completely dry, cut out a bowling ball type of shape out of brown card stock for the turkey head and body and glue it to the tissue box. 4. When your painted sheets of cardstock are dry, trace a feather shape on the back of them. Cut them all out. 5. Glue the feathers around the back of the tissue paper box and then use packaging tape to secure them at the back. 6. To finish the turkey, glue on some wiggly eyes, a beak made out of a diamond shape bent in half, and a red wattle. 7. Place a stack of thankful cards next to your turkey, and every day or every couple of days you and your family members can write what you are thankful for and place it in the box. Supplies Needed Clear Plastic Gloves Popcorn Colored Goldfish Crackers Red & Orange Felt (optional) Googly eyes (optional) Directions: 1. Fill the four fingers with the colored gold fish. 2. Fill the palm and the thumb with popcorn. 3. Cut a beak and gaggle out of some felt and glue them on along with a googly eye.
