Origin Green is the first national sustainability programme of its kind. Working at both farm and manufacturing level, Origin Green clearly sets out Ireland s ambition to become a world leader in the delivery of sustainable, high-quality food and drink products. Independently verified at every stage, this voluntary programme sees food manufacturers develop a sustainability plan that defines clear targets in key areas of sustainability, such as raw material sourcing, emissions, energy, waste, water, biodiversity and social sustainability including health and wellness. With the global population expected to rise by 2.4 billion before the year 2050, the world will need to produce up to twice as much food from increasingly limited resources. It has been said that over the next 40 years, we will have to produce as much food as we have in the last 8,000. In order to meet these challenges it requires everyone involved in the food industry to commit to producing more from less, necessitating the adoption of more sustainable practices. 4 IRISH ORGANIC SALMON FROM IRELAND Ireland is an international leader in responsible and organic seafood production. Irish organic salmon was the first seafood product to achieve the official French Agriculture Biologique (AB Bio) status and is recognised throughout Europe. Responsible stewardship and environmental protection are core principles guiding the development of our wild fisheries and aquaculture. Ireland s global market share in salmon production is less than 1% and production is on average 13,000 tonnes per annum. Close to 95% of our total production is now certified to an organic standard or quality labels such as AB Bio, Naturland, Irish Quality Organic and the European Organic standard. Irish organic salmon thrive in the wild pristine waters along Ireland s westerly coastline producing organic salmon since Much of the exposed westerly coastline has a 1A rating for water quality - the best there is. This, combined with the knowledge and expertise that has been built up over the last 3 decades, has given the Irish salmon industry a reputation for producing the finest quality organic salmon in the world. Irish salmon farming conditions are unique. Huge sea pens, located on the Atlantic coastline, expose salmon to strong marine currents and provide more than 10,000 cubic meters of water to swim in the equivalent of a large cathedral. Stocking densities are very low: approximately two fish per 1,000 litres of seawater and less than 1% of pen volume stocked with organic salmon. Over an average of 18 months, salmon swim an equivalent of 13,000kms before reaching market size, comparable to the distance travelled in their natural migration. 4 - IRISH SMOKED SALMON PRODUCER PROFILES

The strong nutritional profile of organic salmon is maintained through a high level of sustainably sourced marine proteins in organic salmon feed to guarantee high levels of omega 3 fatty acids in fresh Irish organic salmon when it reaches the consumer. 30 UMMERA In the early 1970 s, Anthony Creswell s father, a keen fisherman, started smoking the salmon he and his friends were catching on the local rivers, the Argideen, the Bandon, and the Blackwater. After much trial and error, he perfected methods which remain unchanged today. The word spread and so the business grew. As a result, Ummera Smoked Products Ltd was established. Up to the early 1980 s Anthony was involved in the wine business, in vineyards and wineries from Alsace to Australia. In 1984, he started helping his father with the smoking. Soon he could see a greater potential in smoking salmon than selling wine! In 1988 Ummera Smoked Products Ltd. was created. In May 1998, Anthony Creswell took over the running of the company from his father. The smoking was transferred in October 2000 to a new custom built smokehouse, 1 km upstream of its original location on the River Argideen; this has enabled Ummera to move into the 21st century with the confidence that the quality of its products will be second to none. 32 WRIGHTS OF HOWTH Established in 1893, Wrights of Howth is a privately owned family business, passed on through 5 generations. The craft has been passed down through the generations and little has changed. We still fillet the fish by hand and cure using only natural sea salt. We then smoke each fish for eight hours using pure oak chippings which give our products it s world renowned flavour.
