2 Interested in being a part of the Youth Beef Team? Involving younger generations is crucial to keep the industry alive and flourishing. The Iowa Cattlemen s Foundation (ICF) fosters involvement of youth through the Youth Beef Team. This program trains and educates young beef industry advocates to positively promote Iowa s Beef industry. A training session equips youth (12 years and up) with the knowledge and skills to conduct beef promotional activities in their own and surrounding communities. Activities include presentations, letters to the editor, farm tours, brochure and recipe distributions, beef grilling events and more. If interested contact Mary Lou at or CEO for more information Online registration for 2014 State 4-H Camps Registration for the four State 4-H Camps to be held this summer at the Iowa 4-H Center is now live. The camps are open to students in grades 5-8; 4-H membership is not required. Registration for the statewide camps can be made online at The fee for each session (five days/four nights) is $240. Additional information about the themed camps is available online as State Camp FAQs. Contact Bill Beckley at wbeckley@iastate.edu with questions about registration and for more camp session information. * Scholarships available through CEO Iowa 4-H Youth Conference: Ticket to Success June 24-26th, 2014, The dates have been set for June 24-26, 2014 for a great three-day adventure at ISU for Iowa s youth. We also wanted to share that the registration cost for this year s conference has been set as well. Delegate registration costs will be $175 per person. (Bus Transportation cost $55) This is the same fee for both youth and adults and covers 2 nights of lodging, 7 meals, 3 keynote speakers, transportation for workshops and community service, facility rental, 2 dances, and a t-shirt, among other supports and services. Youth Committee has agreed to help with the cost, leaving the total cost to Jackson County participants $115 (Registration and Bus) Registration is located at: Food Safety and Quality Assurance - FSQA 4-H ers and FFA members who plan to exhibit beef, bucket bottle calf, swine, dairy, goat, sheep, poultry, and rabbits will need to be FSQA certified by July 1 there will be no exceptions to this deadline. Training option certification is valid for exactly one year the date of the training. Grade is determined as of January 1, th to 6th grade: Must attend FSQA training every year 7th to 9th: Can either attend a training each year or pass the Intermediate test. Test certification is valid until January 1st of the 4-Her s 10th grade year. 10th to 12th grades: Can either attend a training each year or pass the Senior test. Test option certification is valid until December 31 after the 4-H er s 20th birthday. 3 JACKSON COUNTY EXTENSION Horse Project IN-VIEW Horse project members are required to attend TWO project meetings this year. Meeting Dates with Horse/Pony at Jackson Co. Fairgrounds May 12th, 6:30 p.m. June 2nd, 6:30 p.m. June 23rd, 6:30 p.m. Sheep and Goat Project Weigh-In The Sheep and Goat Weigh-In will be held Saturday, May 3, 2014 at the Maquoketa FFA Building. To keep things running smoothly, we are asking all State Fair families to bring their animals between 9 and 11 am. Families who will be exhibiting at county fair only are asked to bring their animals from 11 to 12. New members are asked attend a new project meeting starting at 11 am during the weigh in. Families who will be weighing a large number of animals (15 or more) are asked to contact the CEO in advance of weigh-in for scheduling. 6 JACKSON COUNTY EXTENSION IN-VIEW Basic Recipe for 9 Double Crust Fruit Pie By Joan Oberfoell, Supporter of 4-H and Previous Jackson County Judge 3 cups of unbleached all purpose flour 1 ½ teaspoons salt 1 cup plus 2 tablespoons vegetable shortening such as Crisco or lard.(can use margarine or butter) 6 tablespoons ice water Method: Cut shortening or lard into small pieces freeze for about 30 minutes Sift flour and salt, gradually add frozen shortening, mixing with a pastry blender until the mixture is the size of small peas (stand mixer or food processor) Add 1 tablespoon of ice water at a time, until dough starts to ball up. Divide into 2 balls. On a lightly floured pastry cloth, shape one of the dough ball into a disk shape, with a stockinet covered rolling pin lightly floured, roll out from the center in all directions until to one to two inches larger than pan size about 1/8 inch thick. Roll dough back on rolling pin to transfer to pan, gently pat crust to fit pan, being careful not to stretch. Place in frig. Roll remaining ball to same size also put in frig. Basic Apple Pie Filling 7 cups of peeled, cored, thinly sliced baking apples about 2 ½ pounds ( 1 large apple equals about 1 cup prepared apples) 2 tablespoons lemon juice ½ cup each of white sugar and packed brown sugar ¼ cup instant cooking tapioca or ¼ cup flour or a combination of the two 1 teaspoon ground cinnamon Pinch of salt 2 tablespoons butter or margarine Method: In a medium bowl toss apple slices with lemon juice to prevent apples from turning brown. Combine tapioca/flour with sugars, cinnamon and salt, add to apples, mix well. Pour apple mixture into prepared crust. Dot with small pieces of butter/margarine Moisten edge of crust with water, center other crust over the apples. Press crusts together to seal. Trim excess crust even with edge of pan. Use favorite method of crimping crusts. Brush crust with water or milk, sprinkle with sugar crystals. Cut 4/6 vents near center of pie. Place in frig while oven is pre-heating to 425 degrees. Place pie on large rimmed jelly roll pan (to catch the drips) on lowest oven rack. Bake for 15 minutes, reduce temperature to 350 degrees Place pan on middle rack, bake for another 30 to 45 minutes until bubbling juice stops or a fork easily pierces the fruit through a vent and crust is golden brown. Cooling on a wire rack helps to prevent a soggy bottom crust

10 JACKSON COUNTY EXTENSION IN-VIEW Growing in the Garden and Summer Discovery Camps Youth currently in Pre- Kindergarten through 5th grade have the opportunity to participate in the Summer Discovery Camp and Growing in the Garden Camp this summer with ISU Extension in Jackson County communities. The Summer Discovery Camp is for youth currently in 3rd-5th grade. Youth participating in the Summer Discovery Camp will focus on will also make and eat tasty nutritious snacks and more. Locations and camp dates are as follows: Bellevue at Cole Park-Wednesdays, 9:00-11:00 a.m. from May 29-July 1(last day will be on Monday July 1 st.) Maquoketa First Ward Park-Wednesdays, 1:00-3:00 p.m. from May 29-July3 Preston at Preston High School (Shelter) -Thursdays, 1:00-3:00 p.m. from May 29-July 1(last day will be on Monday July 1 st.) The Growing in the Garden Camp is for 5-9 year old youth (Pre-K-3rd grade). Youth participating in the Growing in the Garden Camp will learn how to plant a garden, find out how plants grow, make fun nature crafts, create and eat tasty nutritious snacks from the garden, get your hands in the dirt and have fun. 15 JACKSON COUNTY EXTENSION IN-VIEW 4-H PHOTO CAMP at the Iowa 4-H Center Young people grades 7-12 in the school year have the opportunity to participate in PHOTO CAMP in Elm Village at the Iowa 4-H Center near Madrid. 4-H ers and non 4-H ers are welcome. 4-H Photo camp is designed to give kids, 7th through 12th grades, the opportunity to learn the basics and techniques of photography, while having a great time! Held in June at the beautiful Iowa 4-H Center near Madrid, Iowa, campers will learn from qualified professional photographers, and then get the chance to try out their new skills themselves. The three-day event places emphasis on landscapes, close-ups, composition, and people photography, as well as painting with light, and other special effects. Both point-&-shoot and adjustable SLR camera operation are covered, as well as a complete section on computerized digital photographic enhancement. Field trips in the past have included the ISU campus, Ledges State Park, the Iowa Arboretum, Reiman Gardens, The Bonebright Memorial Armory, and much more! Send as many campers from your county as you like until all the beds are full, of course. The dates are June Cost for this camp is $180 prior to May 1 st Late FEE $200 after May 1 st. The College of Design at Iowa State University is pleased to offer a number of summer youth programs geared toward immersing participants in the world of art and design. Middle and high school students can choose from the one-day Explore Design! or three-day Design Innovation workshop, or sign up for both consecutively. Students who will be sophomores, juniors or seniors in fall 2014 can also participate in Design Condensed, a weeklong residential camp experience. Culinary Challenge will hold a preliminary competition on the ISU campus on Wednesday, June 18. Top teams from each age division will then be selected to compete in the finale on Thursday, August 7 at the Iowa State Fair.
