1 THE SPRINT Sundance Running Club May 2016 The Prez Message Lately I have been starting my newsletter with a big thank you to last month s Fun Run Directors. I appreciate everyone who signs up to be the Monthly Fun Run Director and enjoy all the fruit, treats, and drinks brought each Saturday. I have to say that Clark and Connie Herzog went above and beyond the call of duty as the Monthly Fun Run Directors for April. They opened up their home because of inclement weather one Saturday and served warm waffles, sausage and fresh strawberry after one of the Fun Runs. The last Saturday of April, they brought homemade cinnamon rolls hot out of the oven along with mini cheesecake, fruit and delicious homemade bread. I have included a picture of one of the feasts from a Saturday Fun Run where Clarke and Connie supplied treats, Cecelia supplied fruit and Hector made a homemade Bundt cake. Talk about being in hog heaven!!!!! I ate way to much and enjoyed every bite! Thank goodness I start with exercise. I am sure my metabolism was still in high gear and burned every calorie I consumed. Clark and Connie -- Thank you!! Thank you!! Thank you!! Now the picture I am including was after almost everyone had made their first pass of the table. (If you notice both Bundt cakes are gone.) If you need more motivation than the health benefits of exercise and comradery of the group to get you to the Saturday morning Fun Runs just think of the food!! On to the April activities. April 2 nd was our 2 nd SRC Chocolate Fun Run and I personally consider it a success. After the Saturday Fun Run, Jerry (The Vice-Prez) and I (The Prez) served warm chocolate fondue and an array of delicious fruits and treats for the dippers. Since I did the shopping for the dippers, I chose my favorites which seemed to go over well with the group. Clementine oranges, strawberries, bananas, marshmallows, pretzels, graham crackers, thin mint cookies and homemade rice crispy treats made by your very own Prez were my choice for dippers. And if the fondue and dippers didn t catch your fancy, there was my homemade Vanilla Caramel Hot Chocolate with whip cream (which The Vice-Prez enjoys every Sunday) or of course coffee or tea to go along with the fondue. We are not only a running club, but we also have walkers and bikers that participate on Saturdays. May Meeting Date: Saturday, May 7th Time: After the Saturday Fun Run Place: Grupe Park The Prez will be making pancakes for those attending the meeting. Club Officers for 2016 President: Mary Hyatt run4chklit@sbcglobal.net Now that same Saturday, after returning home and cleaning up, it was off to Bob and Sharon Dunn s for the Pre-Cow 10 fun. About 10 of us gathered around the Dunn kitchen table to enjoy a feast of ribs, chicken, salad, pasta and rolls to name just a few of the items on the menu. Jack and Lynn Hoida came from the LA area just to enjoy the annual tradition. We played nines and though I don t remember who won, I know Sharon Dunn to the right of me has no problem playing cards. She has qualified to play in many a professional poker game. Needless to say she did not feed me winning cards. Though I don t remember who won, I do remember that there was much laughter, razzing and fun though out the night. Since we were walking, we were going to start earlier than official 9:00AM start time so that we would be back sooner to enjoy the potluck. Chiyo Shingu and Marlene Kinser decided to start early also so they could take their time and enjoy the scenery. Joan Jordan, a first timer to the Cow 10 started out with the group of early starters. Though there were only a few participants this year due to schedule conflicts, we that attended had an enjoyable day. The weather was perfect and with all the rainfall this year, the creeks were running swiftly. It was a terrific workout and many of us completed the entire 10 miles. I have come to the conclusion that I need to work my inner and outer thigh muscles more. Pushing off in order to get up those hills really worked those muscles. I was definitely feeling it but in a good way the next day. If you want to see all the pictures from SRC s Chocolate Fun Run or the Cow10, check out the pictures on Sundance s Facebook page. After rambling for almost 2 pages, I haven t even discussed May activities. So... May SRC meeting will be at Grupe Park after the Saturday morning Fun Run on May 7th. I will be making pancakes for all that wish to stay for the meeting. Come join us and help decide our activities for the up coming months. Also, don t forget May 8th is Mother s Day. Though it may have been started by Hallmark, what a wonderful day to remember your Mom and tell her how much you care. And to all the mothers, soon to be mothers and future mothers that come to the Saturday Fun Run on May 7th, there may be something special there for you. I like to extend holidays over multiple days so come check it out and start Mother s Day early. Better yet, bring your Mother and enjoy a healthy activity together! 4 Roast Chicken Breasts with Spiced Cauliflower Servings: 4 Prep: 20 minutes Cook: 30 minutes Ingredients 2 T olive oil 1 tsp ground coriander 1 tsp ground turmeric 1/2 tsp ground cumin 3/4 tsp kosher salt, divided 1/2 tsp black pepper, divided 1/8 tsp cayenne pepper 1 pound uncooked boneless skinless chicken breast, two 8 oz. pieces 1 pound uncooked cauliflower, cut into bite-size pieces Cooking spray 1T cilantro, finely chopped 1/2 medium fresh lime, plus wedges for serving Directions 1. Preheat oven to 450 degrees. Line a large baking sheet with parchment paper. 2. In a large mixing bowl, combine oil, coriander, turmeric, cumin, 1/2 tsp salt, 1/4 tsp pepper and cayenne. 3. Place chicken in center of prepared pan: brush each piece with 1/2 tsp oil mixture. 4. Add cauliflower to bowl; toss to coat. Place cauliflower around chicken; lightly coat chicken and cauliflower with cooking spray. Sprinkle chicken with remaining 1/4 tsp each salt and pepper. 5. Roast until chicken is just cooked through, minutes; let rest. Toss cauliflower with chicken juices in pan; continue roasting until browned and tender, about 10 minutes more. Add cilantro; toss. 6. Thickly slice chicken across grain; fan over serving plates. Divide cauliflower amount plates; squeeze 1/2 lime over top and serve with additional lime wedges. Serving size: 3 oz. chicken and 3/4c cauliflower. Weight Watcher Smart Points: 4 (without The Prez modifications) I made this recipe for dinner one night (with a few modifications) and it was delicious. I didn t add the salt that way you can add salt per your individual taste. I also didn t have the lime or cilantro on hand so I eliminated those ingredients. I increased the chicken from 1 pound to 1-1/2 pounds. Next time I will have the lime and cilantro on hand and add more cauliflower. I have to admit I am not a big fan of cauliflower but I really enjoyed it roasted in this recipe. Try it out. It was a really delicious dinner without a lot of effort. Enjoy!!! 6 Sundance Running Club P.O. BOX STOCKTON, CA PLACE STAMP HERE Around the World in 80 (Satur)Days We ve been running for 60 Saturdays now, and we ve traveled 16,830.3 miles. Along the Equator, that puts us at East Longitude. Many of you expressed being ill at-ease with our stop in Afghanistan last month, so I hope you will all be pleased with the variety of locales to visit along our current meridian. If you like desolation, we ve got western Australia and eastern Russia. If you prefer the island life, there are Indonesian islands galore. If it s the big-city excitement you gravitate towards, the great cities of Taipei and Shanghai are both on this leg of our trip. Wherever you make camp, don t tarry too long. We are about 1,830 miles behind the 80-day pace, which means we ve got 20 (Satur)days to cover the remaining 8,100 miles.
