Breakfast with Santa Saturday, December 3 Breakfast 9 a.m. Santa s Arrival 9:15 a.m. The cost is $12++ per person Santa will make a stop in the Ballroom on his way back to the North Pole for pictures with the children and gifts for everyone. Reservations are required to make sure Santa brings enough goodies for all the children. A toast will be held at 9 p.m. to salute the coming New Year with a complementary glass of champagne or house wine with each entrée purchase. Reservations are required. AROUND THE CLUB a Note from Chuck We have had a great year at the club and I m happy to say we are in the best financial position we have been in years. I want to thank all of our membership for their support and input over the past year. I want the membership to know that you are our best asset; you are our chief marketing tool. Your referrals are the lifeblood of our membership drive and the club still needs your support. Our fall & winter membership drive continues to offer low dues to new members while reducing dues to our referring members. We are also offering a bonus coupon book with $500 in savings for our new members who join during this drive. Please help us get the word out and share the great family experience that Cross Creek has to offer. Cross Creek is very proud to announce to the membership that we have a brand new fleet of golf carts arriving the beginning of November. We will be offering Ezgo s new TXT model golf carts with some nice upgrades from our previous fleet; a completely redesigned body and interior including USB charging ports. Make those T times and come out and try out our new carts for yourself. Fall is upon us and winter is just around the corner. Now is the perfect time to start planning your holiday parties. December is booking up fast with holiday office parties and family gatherings. I m here to help you out with those special events; stop by my office and book today. We have had our social committee, known as F.A.M.E (For All Events), hard at work organizing some exciting fall events for our membership to enjoy. Our first four events were a great success! We have a new member reception planned for November 3, to welcome our new members & provide a chance for all members to mingle and enjoy the evening. We also have an oyster roast scheduled for November 19 featuring live music by Robby Vanison. Don t forget to make a reservation to guarantee your spot. In service, Chuck Gardner General Manager 2 Chef Swing s Corner Butternut Squash Lasagna Recipe Ingredients: Oven ready lasagna noodles For the lasagna filling: 3 butternut squash 2 cups Ricotta cheese 1 cup milk 3 large eggs ¼ tsp ground nutmeg 1 tbl fresh basil 1 tsp kosher salt For the cheese layer: 2 cups lightly cooked spinach 1 cup Ricotta 2 cups shredded Mozzarella 2 tbl minced garlic For the top layer: 1 cup Mozzarella shredded ½ cup shredded Parmesan 1 cup basil 1 tsp paprika Procedure: Peel and de-seed the butternut squash, wrap in foil and roast minutes in oven at 325 or until tender. Once cooked and cooled add remaining ingredients for filling and mix with a rubber spatula. In a separate bowl mix lightly cooked spinach, ricotta, shredded mozzarella and minced garlic together until well combined. In a medium casserole pan, layer lasagna noodles, add butternut squash mixture then a layer of cheese mixture. Continue this process until you have 3 layers built up in casserole then on the final layer add the Mozzarella, Parmesan, basil

3 and paprika on the top layer. Wrap tightly in aluminum foil and bake in oven at 325 for minutes until top layer is golden brown and lasagna is hot in the center (145 or more). Be an Angel this Season We are once again sponsoring an Angel Tree in our front lobby, provided by the Salvation Army to help local children in need this Holiday season. The ornaments are cards containing the name and information of one of those children. Last year every card was selected and gifts returned to the club. To participate with this effort, simply select a card and return the items listed (unwrapped) to Cross Creek. Another option would be for Judy Atkinson (MAD Director) & Sherry Gordon to do the shopping for you. Simply pick out a child, put your money in an envelope and they will do the rest. The greens have recovered and cooler temperatures have begun to set in, we have been able to start back with our more aggressive maintenance practices, such as changing to Willie rollers on our greens mowers, using grooming reels, rolling more frequently, applying growth regulators and light frequent top dressings. The combination of these tactics will help us get back to the smoother firmer putting surfaces we all miss during the summer season. With that being said, please come out and enjoy this wonderful time of year and as always I look forward to seeing everyone on the course!
