5 Leslie's Recipe & Recommendations CHOCOLATE WHISKEY CAKE By Leslie McGlynn (SERVES 8-12) Ingredients 3 small eggs 2/3 cup sugar ½ cup self-rising flour ½ cup cocoa powder 2 tablespoons warm water FOR THE FILLING: 3 tablespoons apricot jam 2 tablespoons whiskey 1-1/4 cups heavy cream, lightly whipped FOR THE CHOCOLATE COVERING: ½ pound dark chocolate 1 tablespoon whiskey 1 tablespoon butter 1 small egg 1 tablespoon heavy cream Directions Oven at inch cake pan Line the base of cake pan with parchment paper. Lightly oil both paper and sides of the tin. Beat eggs and sugar until very thick. Sift flour and cocoa powder and fold gently into the egg mixture one third at a time. With the last of the flour, add water. Spoon mixture into the pan and bake minutes. Allow to cool. When the cake is cold, cut into three sections (or use three 8 inch pans to make three layers). Spread one layer with apricot jam, sprinkle with 1 tablespoon whiskey and cover with half of cream. Place middle layer of sponge on top and cover with remaining apricot jam, whiskey and cream. Cover with last layer of sponge. Prepare chocolate covering by breaking chocolate into a mixing bowl over a saucepan of hot water. Add whiskey and butter and stir until melted. Beat the egg, and add with the cream to the melted chocolate, stirring well. The heat of the mixture will slightly cook the egg. Use this chocolate cream to cover the sides and top of the cake. Let it set before decorating. Decorating the cake is your option.. Source: In an Irish Country Kitchen By Clare Connery CULANN'S HOUNDS Culann's Hounds is a traditional Irish folk band from San Francisco. Founded in 1999 by Steve Gardner and Michael Kelleher as The Irish Bastards, the band began playing gigs and soon adopted the more broadly appealing name. The name Culann's Hounds derives from the Irish folk story of Cuchulainn, a great Irish hero chronicled in the Tain. Cuchulainn, meaning the Hound of Culann, earned his name after killing (in self-defense) a fierce guard dog owned by the blacksmith Culann. The boy repaid the smith by guarding his house until a new dog could be raised. The Hounds have toured in the United States and Europe, playing concerts and festivals with numerous top shelf acts from various genres, and every Irish band of note. The Hounds are preparing material for a new album, which will feature more of their original compositions. Some of these tracks were released in 2007 The House of Faith Session and 2008 One for the Road, though the latter is composed almost entirely of traditional songs. or
