The screening committee met June 2nd for several hours to carefully consider which applications to forward on to the next steps in the hiring process. We hope to have our new FCS agent in place soon after the county fair. In this newsletter, you will note a lot of summer and early fall activities. Thanks to Cheryl Stepp and Tracy Blevins for all their hard work on the FCS newsletter and all agent newsletters. Thanks to Sue McKinney for her input and assistance as well. Adult baking will be taken on Wednesday morning, 10:30 A.M. 12:00 Noon. We need volunteers to help with taking entries. If interested, please call the Extension Office at and let us know. Our entries have been down over the last few years. Even if you do not want to volunteer taking entries, you are encouraged to enter. A brochure with the classes is included in this newsletter.

2 FCS & Homemaker Newsletter County Annual Meeting We had a total of 31 attend this years meeting. Thanks to everyone who helped make this event a success. Estill County Fair Exhibit Hall Demonstrations Thursday, July 7 & 8, 2016 Page 2 Demonstrations by the Estill County Cooperative Extension Staff and Estill County FFA Thursday, July 7 2:00-4:00 P.M. Cupcake Wars The top junior and senior 4-H team will advance on to the state fair. This 4-H program is led by Isaac Hollon, 4-H Agent and LaDonna Dawes, 4-H Program Assistant. 5:00-6:00 P.M. Plate It Up Jessica Webb, SNAP-Ed Assistant, will demonstrate how easy it is to make Italian Chicken Summer Squash in a skillet. We can check pressure canner lids for accuracy. Just bring the canner lid w/the gauge, not jiggler type in to the office. Most of the time we can test it that day. Farmers Market Opening Day June 3rd 4-8:00 P.M. Fairgrounds 6:00-6:30 P.M. Proper Soil Testing 7:00-8:00 P.M. Calibrating Garden Sprayer Eric Baker, Agriculture/Natural Resources Extension Agent, will speak on how to get the most out of each soil sample and to calibrate your sprayer and proper application techniques. Friday, July 8 1:00-2:30 P.M. 4-H Talent Show (Open to Public) Photo by 3:00-5:00 P.M. Robotics Expo Estill County s youth have won 6 state championships, 3 runner ups, 8 district placements over the last 4 years. They would like to show you what they can do with an expo of their work. This 4-H program is presented by Isaac Hollon, 4-H Youth Development Extension Agent and the Robotics Leader, Callie Rogers. Grand Opening June 10th 4-8:00 P.M. 3 FCS & Homemaker Newsletter Page 3 ESTILL COUNTY EXTENSION WELCOMES SUMMER INTERN, AMBER HARGIS Amber is from Somerset, KY in Pulaski County. She and her family own a small beef cattle farm. They also raise corn and wheat. After graduating from Pulaski County High School, Amber attended Somerset Community College and graduated with an Associate s Degree in Science. She currently is attending the University of Kentucky and will graduate next May with a Bachelor s degree in Agriculture Economics with a minor in Business. This summer she will be working here in the Extension Office working with the 4-H Program. She s looking forward to getting some experience in other areas of Extension as well. This summer she will begin working with the Summer Feeding Program. God s Pantry and the SNAP-Ed Program will be working with us. We will be hosting lunches for children in the community and also providing them and their families with farm-to-table programming and activities after the meals. She looks forward to spending her summer here and working with the youth in Estill County. If anyone would like to volunteer with this program call LEADER TRAINING EATING SMART & HEALTHY THE MEDITERRANEAN WAY Monday, August 22, :00 Noon Estill County Extension Office Eating right can help prevent illness and chronic disease. It can also provide you with more energy so that you can be alert and a better decision maker. Eating a Mediterranean lifestyle includes a wellbalanced diet and a healthy relationship with food. 4 FCS & Homemaker Newsletter Page 4 Menu Labeling to Become a Reality in 2017 Source: Janet Mullins, Extension Specialist for Food and Nutrition Photo by When the U.S. Food and Drug Administration released its final guidance on menu labeling in late April, it was the last step in a process to require restaurants, convenience stores, take-out, retail establishments and supermarkets to publish the calorie content of their food on their menus. Some chain restaurants were already publishing this information on some items in anticipation of this announcement. Others have until May 2017 to implement the change. As food consumers, this means that for the first time, we are able to make informed decisions on all of our dining out meal purchases based on the food s nutritional content. This is good news, as about 40 percent of the average Kentuckian s food budget is spent on meals outside of the home. Kentucky is also known to have high rates of childhood and adult obesity. Choosing healthier items when dining out could help us stay within our daily caloric limit and reach our ideal weight. In the Dietary Guidelines, this calorie limit varies based on age, gender and activity level. To learn what these limits are for you, visit dietaryguidelines/2015/guidelines/appendix-2/#footnote-3. A 2011 survey conducted by Janet Mullins, University of Kentucky Extension Professor, showed the need for menu labeling. She found that at least half of the nearly 1,000 survey participants, which were professionals in nutrition-related fields, could not identify menu items with the fewest calories on their own. Several factors can play into an item s calorie count including preparation methods, amount of fat or oil used and portion size. 5 FCS & Homemaker Newsletter Page 5 Landscaping Mini Grant The Estill County Extension Homemakers received a KEHA Mini-Grant to develop a rain garden at the Estill County Extension Office. The project will begin as an educational workshop at the Extension Office. In this project you will be learning the planning of a rain garden and how to use Photos by plants, shrubs, and trees to get the desired results. Dates will be announced later. Buying Fresh Blueberries When you buy fresh blueberries, look for berries that are firm, dry, plump and smoothskinned, with a silvery surface bloom and no leaves or stems. Size isn t an indicator of maturity but color is berries should be deep purple-blue to blue-black. Reddish blueberries aren t ripe, and won t ripen once they are picked but you can use them in cooking. Avoid blueberries that look soft or shriveled or have any signs of mold. If you see juice stains in a container of blueberries, the fruit might be bruised. Refrigerate fresh blueberries when you get them home, either in their original plastic pack or in a covered bowl or container. Be sure to wash your blueberries just before you start snacking, and eat them within 10 days of purchase (that s the easy part!). Buying Frozen Blueberries You can find pre-washed, unsweetened frozen blueberries packed in poly bags or boxes in most supermarket frozen food sections. When you grab a bag of frozen blueberries, they should feel loose and not clumped together. They ve been individually quick frozen so you can remove a few at a time or use them in larger portions. Store frozen blueberries in the freezer and sprinkle them onto ice cream, yogurt, and oatmeal or pop them right in your mouth for a refreshing treat. Frozen blueberries are easy to use in smoothies and fruit shakes. They add a flavorful punch to burgers, and are ideal for baking blueberry muffins and scones. If you don t use the whole bag of blueberries, return the rest to the freezer promptly; if you thaw the blueberries, cover, refrigerate and use them within three days.
