Welcome to another edition of the Marlin Bill (be sure to thank Amanda for NAG NAG NAGGING me or it would not have been written for another week or so ) Lots of stuff has gone on since the last Bill so let me see how well I can recap the events. The Cinco De Mayo season opening party was probably the best event of the year thus far. The food was great, the camaraderie even better, and what can I say about the dancing and the Love Train. I warn you all now, I HAVE VIDEO! Great job to the Auxiliary, the hardest working staff in show biz, DJ Donnie, and of course all of the members for coming out and partying. Also at the season opening party we had the official dedication of the elevator plaque. I have said it many, many times, but I will say it again. Thank you John Sipple for all of your hard work. Many people helped the elevator come into being, but the head honcho, the big cheese of the project was John, hands down. With that being said, I would also like to thank John for his many years of service to the club as one of our Directors. With the dedication of the elevator complete John has decided to take some time for himself and has resigned from the board. I will miss having him at the meetings, but I know that I will see him around the club and at the docks. Thank you John. With John s resignation a vacancy was created on the BOD. Per the bylaws the vacancy was filled by the next highest vote getter from the most recent election. I would like to personally welcome Mike Diffendal to the board. I have known Mike for a number of years, and he is a capable and welcome addition to the board. Welcome aboard Mike. We have received the first handful of catch reports for the season over the past 10 days or so. All of them have been for tunas so far, but I am expecting to see some diversity in the next week or two. There have been some mahi caught, but they were over the fence, and of the makos caught thus far none have been by a club member. I am willing to bet we get a flurry of reports after this weekend. I wonder when Whitey or the Man in the Blue Suit will show up.. Speaking of this weekend, we have our first tournament of the season. The 3 rd Annual Memorial Day Bluefish Tournament is upon us already. The proceeds from this tournament will again be donated to the Catherine and Charles Kratz Memorial Foundation and Scholarship Fund. This is a great organization that benefits our veterans and I look forward to a good turnout for this cause. Lets hope the blue dogs are chewing!!! Continued on next page.

2 A Message from the President (continued) Did I say chewing? The billfish bite has been awesome in the Dominican Republic. The Billfisher has been down there getting in on it, catching good numbers of mixed bag billfish, including several slams. The Blue marlin bite has been consistently good in Venezuela too. My buddy Jimmy Grant has been fishing over there for the past 2 weeks, racking up the blue ones, along with some whites and sails. I have always said that if I could only fish in one place again it would be Venezuela. I might just need to hop on a plane! In closing this month, unfortunately, I do have some sad news to report. Bob Skillman, longtime owner of the charter boat Endeavor, passed away last week. His son Capt. Rob is a good friend of my family and I am heartbroken for him. The fishing community also lost another one of its characters this past weekend. Capt. Terry Hardesty died suddenly and unexpectedly in his home on Saturday. Terry was always a blast to be around and I can remember seeing his smiling face everywhere from Bahia Marina to the Keys to Los Suenos over the years. I understand that donations can be made in Terry s name to the Billfish Foundation. On behalf of the club I would like to offer heartfelt condolences to both the Hardesty and the Skillman families. Use matches instead of lighters Lighters are usually considered disposable so they will moist likely end up in landfills. You can use the cardboard matches which are much more eco-friendly because they are made of recycled material. 2. Don t get a paper phone book Instead of getting a paper phone book. Use an online directory instead. 3. Give things away Take things that you are not going to wear or use and give it to a charity or someone who will use it. 4. Go to a car wash Going to a car wash is a lot more water efficient then washing your car at home. 5. Stop paper bank statements Why waste paper getting your bank statement mailed to you when you can just check it out online. Interested in learning more? OCMC Member, Susan McHenry was so taken by the May 2-4, 2012 Weekly Special of Grilled Salmon that she photographed it. Served with parsnip whip, grilled asparagus, toasted beet and red onion salad. The dish was both memorably divine and exquisitely plated. Susan exclaimed, I took a photo because it looked so BEAUTIFUL!

9 Pictures taken by Susan McHenry Cinco De Mayo Season Opening Party May 5 MONTHLY RECIPE INGREDIENTS: 1 pound yellowfin tuna, cut in 1/2 inch dice 1/2 small red onion, cut in small dice 1 garlic clove, minced 1 to 2 serrano or jalapeno chiles, to taste, seeded & minced 1 tablespoon capers, rinsed & drained 1 ripe medium avocado, cut in small dice kosher salt & freshly ground pepper to taste 1/3 cup fresh lime juice 1/4 cup extra virgin olive oil 1/4 to 1/2 cup chopped cilantro to taste leaf lettuce, baby spinach or arugula, or radicchio leaves for serving DIRECTIONS: Prepare the tuna & refrigerate while you prepare the remaining ingredients. Please the onion in a small bowl, & cover with water. Let sit 5 minutes, then drain, rinse & dry on paper towels. In a medium bowl, combine the onion, garlic, chile, capers, avocado, salt, pepper and 2 tablespoons of the lime juice. Toss together gently. Add the tuna to the bowl. Stir together the remaining lime juice & the olive oil. Pour over the tuna, & toss the mixture together. Season to taste with salt & pepper. Cover & refrigerate for 15 minutes, stirring gently from time to time. Just before serving, add the cilantro & toss together. Taste & adjust seasonings. Line plates with salad greens, spoon the Ceviche on top, & serve. Yield: Serves four to six. Yellowfin Tuna Ceviche Advance Preparation: You can prepare the ingredients through step 3 several hours ahead and refrigerate. Do not toss with the lime juice until 15 minutes before serving.
